My rainy-day project
I could re-caulk the bathroom sinks on this rainy day, but I have a craving for vegetable-venison soup and it's not going to make itself.
I'm saving the backstraps from the doe I killed last week for an upcoming special dinner, but the rest of the meat is fair game, so to speak.
On Friday I finished the final step in taking the deer from field to table: Having already vacuum-sealed and frozen the main cuts, I ground what remained into burger, adding a little bacon to boost the fat content.
All in all, it's a big job, which naturally leaves a person hungry for old-school VV soup and a hunk of good bread - particularly on a rainy autumn day.

comforting myself by recalling the HR manager gasping excitedly and asking if i've ever had fried gator on a stick. trying not to laugh at her and explaining that's mostly a gimmicky tourist thing, but i've had it. then i added personally i find reptile meats best in soups/stews. and the store manager goes "sorry, reptile meats plural?!" in the most aghast tone

Stew
prep: 15 mins • cook: 1 hr 15 mins • total: 1.5 hrs • servings: 6
Ingredients
1 lb. venison, diced with all sinew removed (or beef chuck)
1 Tbsp olive oil
2 1/2 cups diced potatoes (about 3 medium potatoes)
2 cups carrots, diced
1 cup celery, diced
1 small onion, diced
2 garlic cloves, minced
2 tsp oregano
1 tsp salt
3/4 tsp black pepper
1 can (15 oz) diced tomatoes
4 cups unsalted beef stock
4 dashes Worcestershire sauce
Directions
Add the olive oil to a large pot or Dutch oven and heat over medium-high heat.
When the oil is hot, allow the venison to sauté for 5-7 minutes or until the edges start to
brown. Remove the venison from the pot and set aside.
Turn the heat down to medium and add the potatoes, carrots, celery, and onion. Allow the
vegetables to sauté for about 8-10 minutes, or until they begin to soften.
Add the garlic, oregano, salt, and pepper and cook for an additional minute before adding
the tomatoes, broth and Worcestershire sauce.
Add the venison back to the pot. Stir well and bring the stew to a boil.
Once a boil is reached, turn the heat to low, cover the pot with a lid, and allow the stew to
simmer for 1-2 hours until the venison is tender.
