Did the Spartans ever get a traditional education? Or did the kids that got snatched/recruited only learn about weapons?
I've always been under the impression that Halsey cared genuinely about the Spartan-IIs' education. It was definitely very focused on military history (from a specifically pro-UNSC bend), tactics, and foundational principles like math and physics over things like art and literature, but I think it was more than just raw pragmatism. Halsey was a prodigy who thrived in academia. I think it's likely she believed in knowledge and education and giving people tools to draw conclusions and solve puzzles, which is why she'd bother with teaching the Spartans things like physics instead of just writing it off as a topic that would be out of their reach/not useful to them as attack dogs.
Halsey regretted what she was doing to the Spartans from pretty much the moment things began in earnest, and her characterization is riddled with small ways that she couldn't actually make up for it, but tried to find things she felt like she was able to do "right" by them.
Ackerson and Kurt were not people I see this in. Kurt cared very sincerely about the Spartan-III recruits and loved them, but Kurt was also a Spartan-II. He never had a civilian background, much less a civilian academic one, and his taste in what ideas he thought were pertinent and practical would likely have been much more concrete. Even when he fought to get the later two classes of S-IIIs more time in training, he was scrambling to keep them alive and didn't really have the luxury of worrying about whether he was giving them a foundation to be inquisitive self-sustaining human beings on.
Ackerson was just straight-up cold-blooded and I don't think he gave a shit about those kids, he was much less involved and I think he would have cared more about the economic factors for the S-IIIs: Make a lot of them, make them fast, and keep it cheap. Don't waste time, you don't have much of it as it is.
To be fairer to him than he deserves, Ackerson was running the vicious numbers and the war was going very very badly vs Halsey's position where the Covenant hadn't struck yet.
(But Ackerson is always a vicious shitweasel everywhere we see him and I find him a very, very difficult character to defend.)

What Spartans Remain?
Because I went down the Halopedia rabbit hole and I'm an obsessive nut, I've put together a list of all the Spartan-IIs, just to figure out who's alive, who's dead, who's missing, and the numbers which are unaccounted for
Alright so, there were at least 150 candidates considered for Spartan-IIs, half were conscripted, and of that 75, we have at least 50 named (or at least numbered) individuals
Alive (when last we saw them):
Jai-006
Naomi-010

Malcolm-059 (2552)
Sheila-065 (2544)
Solomon-069 (2544)
Spartan-073 (2525)
Arthur-079 (2544)
Grace-093 (2552)
Victor-101 (2557)

Oscar-129 (2525)
Cal-141 (2544)
Roma-143 (2557)
Unidentified Trainee (2525)

Maybe Dead:
James-005 (2552)
Vinh-030 (2552)
Isaac-039 (2552)
Beta-Romeo Actual (2552)
Red Fifteen (2552)
Red Four (2552)
Red Nineteen (2552)
Status unknown:
Kirk-018 (washout, possibly rehabilitated)
Keiichi-047 (alive as of 2531)
Soren-066 (alive as of 2527)
Rene-081 (washout, possibly rehabilitated)
Joseph-122 (alive as of 2525)
Carris-137 (alive as of 2520)
Spartans-116, 118, 119, 121, 123, and 124 (possibly the unidentified trainee and Spartan, as well ass Beta-Romeo Actual, Red-Fifteen, Red Four, and Red Nineteen)
Missing numbers:
Spartans number 001, 002, 003, 004, 007, 009, 012, 013, 014, 015, 016, 017, 020, 021, 022, 024, 026, 027, 032, 033, 035, 036, 038, 040, 041, 045, 046, 048, 049, 050, 054, 055, 056, 057, 060, 061, 063, 064, 067, 068, 070, 071, 072, 074, 076, 077, 078, 080, 082, 083, 085, 086, 088, 089, 090, 091, 094, 097, 098 (according to the silver timeline, Spartan-098 is named "Nora"), 100, 102, 105, 106, 107, 108, 109, 110, 112, 113, 114, 115, 126, 127, 128, 131, 132, 133, 135, 136, 138, 139, 140, 142, 145, 146, 147, 148, 149, 150 (I'm sure I messed up somewhere)
obviously given that not all 150 candidates were recruited, some (about 70) of these numbers did not actually become Spartans, trainees or otherwise, such as Caleb-095, the father of Olympia Vale
Additionally, Spartans-028 (Riz), 125 (Kai), and 134 (Vanak) do exist per 343's internal documentation, but as of yet have not appeared in the Prime timeline
therefore there are about 19 confirmed living Spartans, 24 confirmed dead, 7 possible dead, and 12 unknowns, for a total of 62 (or 65 counting the silvers), so there are at least 10-13 other Spartans we have not met, be they active, retired, washout, dead, or missing

Happy birthday to Spartan Kelly-087!
Today is her -487th birthday!
Kelly was born on Imber in 2510. She was identified as an exceptional child by Catherine Halsey and selected to be conscripted into the SPARTAN-II program. On the day of her kidnapping, she evaded ONI agents for several hours, coming out only because she thought the ordeal was a game for her upcoming birthday.
Like all Spartan-II conscripts, she was brought to Reach and trained under CPO Franklin Mendez. There, she met John-117 and Sam-034, the first friends she made after her conscription, and the foundational members of Blue Team. Kelly became known for her incredible speed, easily outpacing the other trainees during exercises. The augmentation procedures were particularly difficult for her, and she nearly died. While she took the longest to recover, once she did, her natural speed became unparalleled.
Like all Spartan-IIs, Kelly participated in hundreds of missions and engagements over the course of her life, and particularly during the Human-Covenant war. After the fall of Reach, a heavily-injured Kelly was brought to Onyx with Dr. Halsey, where she would be introduced to the Spartan-III candidates and assist in training them.
Sarcastic, stubborn, and cynical, Kelly is perhaps the most emotional member of Blue Team, and the most likely speak up and challenge others. She is incredibly resilient, having been near death multiples times yet always making a full recovery. While she has served in more engagements than any other Spartan besides John, and, as a result, is heavily decorated, Kelly doesn't care for or pay attention to her accolades.
At the close of the war, Kelly continued to serve, rejoining Blue Team to face the threat of the Didact, and then Cortana and the Created. It is unclear if she was on the Infinity when it was attacked by the Banished.
In canon (~2560), she is turning 50!
