【Solidbean Coffee】硬豆下的分享柔軟學

三十世代的女子 開拓自己的咖啡園地

 從台中高鐵一路程車前往，抵達在精誠三街上的Solidbean Coffee Roasters時，純白的建築被暖陽曬成閃閃發亮，白屋外有一塊由小葉欖仁樹守護的綠地庭園，這片綠意連接到大門前，看得出來主人翁們對於景觀的用心。初次見到三位女主人，感受到如沐春風的舒適親切感，恰好，這與Solidbean(後稱：硬豆)的精神主軸不謀而合。

三位女主人分別是，張榆欣(Corey)、張玉錞(Dana)、劉千薇 (Nicole)，Corey與Dana是一對親姐妹，頂著一頭湛黑微卷短髮的Dana，熱情有條理的她，負責站吧台與客人溝通，是硬豆最佳的外交官；而帶著深棕色俐落短髮內斂的Corey，運用前貿易公司工作經驗，負責會計與網站維運、創意發想的後勤部隊，最後另一旁有著個性靛紫短髮的Nicole，則是Dana的前咖啡廳同事兼比賽好夥伴，負責店內咖啡風味與咖啡吧台的風味把關角色。 

「分享」成為學習的基石  Corey與Dana倆姐妹，帶領著初來乍到的我們參觀了硬豆的空間，偌大的空間裡，一樓為主要的營運空間，有可以工作的高腳椅個人座位，或者適合聊天談心的靠窗雙人，甚至連團隊開會的工作台都有，沿著階梯步上二樓，則是Nicole一周至少待三到四天的烘豆空間。參觀過程中，問到為什麼想開店，「因為想分享。」她道出這句話，也是一路以來得到最大的收獲。

一位對咖啡一知半解的女孩，如何與世界咖啡接軌？Dana回憶，就從第一份正職工作「The Factory Mojocoffee」的五年時光開始，Mojocoffee老闆陳俞嘉從美國歸國後，在台中大業路(已搬遷至精誠六街)開設自己的咖啡廳，以自家進口公平貿易認證咖啡生豆、烘豆，在台中深耕14年的咖啡品牌，不但要求店員參與每月一場英文分享會，培養英文能力，更不時與店員分享國外咖啡的動向與資訊，為她打開國際眼界；之後更因為參與WBC比賽與Nicole結為比賽夥伴，培養出良好的互助默契，參賽過程中認識了好友吳則霖(2016WBC咖啡大師冠軍)，從他身上看見「帶周遭夥伴一起向上的精神。」激發上進心。

在Mojocoffee工作五年的過程中，因緣際會認識了香港的咖啡師後，得知香港自烘豆的店家不多，多仰賴進口國際咖啡大廠烘焙好的豆子，卻讓當地的咖啡師練就一身，無論取得什麼咖啡豆種、焙度，都能沖出好咖啡的功夫。Dana開始反思自己，台灣自家烘焙的咖啡豆多，相對品質穩定，不確定是否也能香港咖啡師一樣，在沖煮咖啡上具有彈性與調整空間的能力，因而決定前往澳洲，跳出舒適圈挑戰自己的可能性。 

品質大於視覺的澳洲咖啡文化 到了澳洲墨爾本，她發現當地的華人多，加上初期在咖啡廳工作時，難以適應澳式口音，溝通不良的狀況，藉著詢問同事們的分享，逐漸融入當地。在咖啡廳工作半年時間內，讓她發現了澳洲獨特的咖啡文化，Dana分享：「澳洲人的習慣，去咖啡廳吃早餐，就像我們街角的美而美一樣。」因此，她回憶，澳洲咖啡廳一天就用掉15公斤的咖啡豆，約750杯以上，相較台灣咖啡豆平均一天約3公斤，約200杯來說相當驚人。因應當地人的需求，發展出許多咖啡飲品，每天吧台人員忙到只有抬頭三次「上班、午休、下班」，雖然每天都很累，但澳洲相當重視衛生，每日都要用清潔劑將冰箱、器材清過一遍，卻也讓她看見不同的咖啡文化，而且在澳洲，比起拉花的奪目視覺外，更強調基底的表現，他們認為好的咖啡萃取就是基礎。 

出國與創業的兩難抉擇 看過世界咖啡的廣度後，究竟是在國外尋求更���的發展，或是回台開店創業？Dana坦言，有太多可發展的枝芽攤眼前，頓時讓她無從選擇。因此她找上了前老闆陳俞嘉商量，最後被陳俞嘉一句：「現在不做，以後就有心而無力。」說服了，加上從澳洲回國後，腦袋有許多想與消費者分享的咖啡想法、觀點、文化，決定找來學商的姐姐Corey，好夥伴Nicole創業。 

無負擔啜飲一杯好咖啡 三人將Dana在澳洲感受到的自由放鬆氛圍融入在硬豆裡，身處的空間裡，望眼過去以簡約的北歐美學陳設，她們低調地將咖啡專業全沉澱在一杯咖啡杯裡，喝上一口就能品嘗到Nicole用心烘焙的花香氣、水果酸甜風味。現在，你可以用新台幣二百元左右的費用，在硬豆找到「1+1 義式濃縮加短笛Piccolo」、「澳式長黑咖啡Long Black」……等，澳洲派系常見的特色咖啡，也能在此找到硬豆自烘的「產地手沖咖啡」，或者喜歡嚐鮮的人，不妨就試試看花了三個月時間研發的「啤酒咖啡」，喝起帶有啤酒花香氣卻沒有酒精的奇妙氣泡口感。喝上一口咖啡，聽著她們分享著，來自不同的咖啡文化體驗與產地故事，一早的煩悶都隨著花果香氣消散在陽光裡了。

Maybe the attention he got from fighting with Jimmy had stopped being enough - and maybe people thought he was actually being a bully, that he actually hated Jimmy. (Not that he cared, but it could be annoying.) Maybe he wanted more smiles and fewer frowns from Jimmy. Maybe he wanted to make jokes and see Jimmy’s eyes light up, see him throw his head back in his ridiculous laughter.  Maybe he wanted to just hang out more, to sit up till all hours in his silly saloon and talk about nonsense and just have fun. Maybe he wanted to ask Jimmy to make a baby with him, and maybe he was shocked Jimmy said yes, maybe he was emotionally unprepared for the consequences - and maybe he deeply regretted leaving their child on Hermitcraft, but there was definitely nothing to do about it. 

Maybe he never expected Jimmy’s whole villain shtick to last more than a few days. Maybe he couldn’t stand the idea that Jimmy might decide Joel was his enemy, instead of the other way around. Maybe he was deeply unsettled and worried over Jimmy destroying his builds, maybe he decided he would do anything it took to keep Jimmy as his friend, maybe he’d had many, increasingly elaborate, backup plans if Jimmy hadn’t reacted well to the mural.

好久沒有搭巴士到台中啊…其實還挺快的啊…票價又便宜…只是竹北到清大的計程車錢要加上去就是

因為太早了…飯店還無法check in  於是乎…在科博館下車…來探訪一家咖啡館

台中厲害的咖啡館真的太多了  前幾次來的時候特地把台灣Best25裡面的台中的四家給喝了…各有特色
