The other day I made meatbuns again but usually someone ELSE marinades and cooks the meat first before I recook it and add vegetables and seasoning. So I did that for the first time and totally messed up. Too much water, not the right color, charred the sides, it ended up being kinda flavorless. So when I recooked it I added a bit more oyster sauce just so it would taste like SOMETHING. Somehow, everyone else likes it better than usual. It's sweeter than usual, but I prefer salty meatbuns so I'm the only one not satisfied :/
#talking tag#marinade pork in xia siu powder bought from the store after its sat for like 8 hours sear the sides on the frying pan#then cover the pan then flip after 15 minutes then flip after 15 minutes idk this is the part i messed up on dont trust me then add a bit#of water to let it steam i guess and cover it then once its all cooked through and not charred take it out chop into half centimeter cubes#then dice half an onion then add oil to the bottom of the pan and cook the onions until fragrant then add the meat cubes then add 1 large#spoonful of hoisin sauce oyster sauce and suger then add a mixture of a half cup of water and a large spoonful of flour then stir and cook#until the water dissipates and it just kinda looks like moist meat slop then set it aside and let it cool and like stir it up every now and#then so it cools faster yknow then to make the dough you get 1 cup of room temp milk and add 2 tsp instant yeast then mix and set aside#then get 500g flour 90g sugar 0.25 tsp salt 1 egg 1 stick of butter softened add the milk and yeast mixture then knead#let rest for 20 minutes then divide into 12 portions#flatten with roller and wrap filling with dough then brush egg yolk over the top bake in oven at 320F for 15 minutes then change temp to#350F for 15 minutes take it out then brush a mixture of equal parts melted butter and honey over the top except i skip this part because it#makes it sticky and gross to store in a plastic bag#one time i made the filling out of leftover rotisserie chicken and cabbage and the same sauces and sugar so the filling can be anything#i also once had leftover dough so i made biscuits. they taste like biscuits i dont know what i expected. i dont like biscuits

It might be the old person in me, but is there anything better than sitting out under a porch, in the rain, while the sun sets and thunder and lightning echos across the valley? It smells like rain outside. And it smells like flowers. The sky is gold and gray, and way to the south i can see dusty blue strips between clouds. I smell like dirt and sweat, and i can feel clay under my nails from weeding. The garden is happy. I feel alive.

Things I have said to my friends who were driving from their big cities to visit me in the middle of nowhere
Maybe make a d��tour so as not to drive through [village], they’re holding their onion festival this weekend, the main street will be blocked. And probably all the other streets too, so visitors can park their cars. (“All the streets? Will there be that many visitors to the onion festival?” “um yeah???”)
Don’t take that road, it’s blocked by a rockfall. It’s been a while and the mayor promised he’d send someone to clear it but there are like 2 of us using that road so he keeps forgetting. Maybe once you’re here you can go to the town hall pretending to be an angry Dutch tourist who was very inconvenienced by the rocks, that’ll put some pressure on him!
if you see a cow loitering on that road, her name is Sarriette and you can’t shoo her away by waving your arm or a stick or anything. You need to open the car windows and put the radio on very loudly. Make sure it’s people talking, not music, she doesn’t mind loud music
If the cow has small horns, that’s not Sarriette but her new apprentice
Oh and speaking of music, it’s too bad you’re not crossing that village two weeks from now, that’s when they hold their musical boots concert! (my confused friend asked, “as in, hay?” because we use the same word, botte, for boots and for bales of hay) (I said no, bottes as in shoes, they use boots like percussion instruments. You’re right though, it would make more sense if the concert involved hay) (“I mean, not really”)
You’ll want to wear a bra for that portion of your trip because the forester is cutting some large trees and dragging them over the dirt road so right now it’s very very bumpy. Trust me. (She didn’t trust me) (she said “i’m not wearing a bra to visit you in the woods I’m a feminist” and then told me she had to drive one-handed and hold her boobs with her other hand the whole time, which. I told you)
You can stop to visit that village’s museum if you want, it only has 1 room and the theme is old-timey dolls. You’ll be the only person in there and the room is very dark and the dolls look very interested in you, just a warning
There’s a barn on that road that looks like it’s saying “oh!!” because of its big round door and wide-eyed windows <3
200 metres after the surprised barn you’ll see a dirt road on your left with a sign that advertises homemade soaps and cough syrups. There’s a spelling mistake on the sign and the lady who wrote it is MORTIFIED about it, she told me at the market that it really bothers her but if she tries to correct it she worries it’ll draw more attention to it. I told her she could draw little petals around that extra letter to make it look like a flower and last I heard she was considering it

dynamight is clearly trying to go unnoticed in the grocery store, but you recognize him, anyway, despite the mask and low-pulled hat. knowing makes you feel even worse about approaching him—because you'd be too afraid to, otherwise—but you're not sure what else to do at this point.
you lean in close to him as he's standing in front of the produce, poking through the same bin.
"ooh, we need to get an onion, too, remember?"
he startles enough away from you that you can feel the foundation of your last ditch efforts crumbling. even beneath his hat, his light eyebrows pull down hard, gaze narrowing, and on the other end of such a fiery glare, you're reminded exactly why you've never wanted to meet him before: he's terrifying, handsome as he is.
"hah—"
you smile at him and hope it looks real, squishing into the space he's created even though your hands are shaking. "the guy by the juice followed me all around the store from the parking lot and i don't know what else to do." you widen your eyes, and you want to look, you do, but your facade is hanging on by a thread. "please help me."
dynamight swallows, and you hope his expression only seems so guarded because you're so close; enough to smell his subtle yet sharp cologne, to see the dark blonde wisps of his eyelashes. when he blinks, they brush against his mask, feather-light.
"okay," he nods once, and the gravel of his voice makes your stomach turn in some teenage way, that has your cheeks flaring.
(this is really not the time to be getting shy.)
he doesn't look towards the juice either, thankfully, and instead adjusts his stance, leaning into you in return, large and wide and formidable enough to nearly shield you from view. "an onion, huh? think we got one at home."
you can feel the warm press of his body against your own and it has you releasing a breath that had been trapped deep in your chest, has tears stinging behind your eyes. the sharp pain in your sternum lessens, and when you feel his hand come up to sit, carefully, against your lower back, dynamight murmurs,
"y'r alright,"
and you are.

actually yknow what, no. this is not being limited to discord, yall get it too.
some general cooking tips (in which there is a brief senshi posession):
moisture is the enemy of crispy skin. pat dry with paper towel, and if you have the time and spoons, give a thorough but even coat of baking powder and let sit uncovered in your fridge overnight. this will dry out the skin nicely. for pork belly, create a tight foil boat so that only the skin is showing, and cover in salt to draw out moisture, repeating a couple times if necessary.
furikake seasoning, for the fellow rice lovers, is just nori (seaweed), sesame seeds, sugar, and msg/salt. you might have most if not all of these things already in your kitchen.
chai spice mix is just cinnamon, ginger, cardamom, cloves, nutmeg, & allspice.
pumpkin spice is just cinnamon, nutmeg, cloves, and ginger.
to cure your own bacon, you only need water, white and brown sugar, and a non-iodized salt - himalayan pink salt is not iodized, if you cannot find butchers curing pink salt. from there, you can add any seasoning/flavoring you want.
the truly adventurous may cook their rice in green tea for a fresh clean taste.
you can tell if a fish is truly fresh by their eyes - clear and bright is fresh, while cloudy is older or potentially has been frozen.
it's cheaper to buy a large block pack of ramen from your local asian market and repackage the bricks into sandwich bags, than to buy a box of individually packaged ones such as maruchan or top ramen.
when buying meat, look at it's fat content - more fat marbling usually means more tender + flavorful.
you can save onion skins and other vegetable scraps to make your own broth with. you can also save bones for this. mix and match ratios to create your ideal flavor.
bay leaf will always make a soup or broth taste better, but Watch Out (they are not fun to bite into on accident).
msg is, in fact, not The Devil, that was just a racist hate campaign against the chinese and other oriental races. it's literally just a type of salt. it is no more dangerous to eat than any other type of salt.
washing your rice is important because it not only improves flavor and texture by removing excess starch, but it also helps reduce any residual pesticides or dirt, or even insect fragments (please remember that rice paddies are essentially giant ponds that all kind of things live in and swim around. you should also be washing all your produce in general.)
please salt your cooking water for pastas, it just tastes better and you will be happier for it.
boiled potatoes are also improved by salt water.
if you hate vegetables, please consider trying them fried in butter or perhaps bacon grease. it is healthier to eat them fatty than not at all.
healthy food does not in fact have to taste miserable. thats a lie. they are lying to you. free yourself from your blandness shackles. enter a world of flavor.
