Tteokbokki

Tteokbokki is a well-known Korean street snack that is particularly popular among students. Rice cakes, fish cakes, and sometimes hard boiled eggs are all cooked and coated in a delightful spicy sauce that can be slightly sweet in the traditional version.

There are so many various forms of tteokbokki now—you can add ramen noodles (cutely referred to as ra-bokki), there are different sauce variants, such as the new rose tteokbokki, and they typically come in different types of combos with dumplings, blood sausage, or tempura.

Tteokbokki: What Is It and How Does It Taste?

You're in for a tremendous treat if you've never heard of tteokbokki. According to Korean Bapsang, the sweet and spicy Korean street dish is a classic snack appreciated by people of all ages.

Tteokbokki combines all of the ingredients for a great snack: sweetness, spice, a tangy and garlicky sauce, and chewy rice cake bits. It's a great comfort food that's also completely customisable, allowing you to add or remove ingredients to suit your preferences. For those who are afraid of a lot of heat, gochujang without any extra gochugaru, or red chili flakes, will moderate the spice while retaining all of the flavor (via Korean Bapsang).

Tteokbokki sauce is made from a broth made from dried anchovies, kelp, and mushrooms, which gives it a strong umami flavor. Are you pressed for time? Delish claims that vegetable or chicken broth can simply be substituted. The same applies for sweetness; instead of corn syrup, use honey or brown sugar for a sweeter, but slightly distinct flavor.

Try a new take on the classic tteokbokki.

While more conventional versions of the meal (such as Korean Bapsang's recipe) keep the rice cakes and green cabbage chewy and smooth, some varieties like to add a new texture to the mix. For example, in Bon Appétit's rendition, the rice cakes are seared to provide crispiness and bok cabbage is added for crunch. The beauty of tteokbokki is how versatile it is in terms of what you may add or subtract to make it your own.

Chef Eunjo Park's marinade for tteokbokki, as well as a variety of other excellent Korean dishes, can be found in this collection of recipes from Food & Wine. The soy and pineapple marinade is used in the base for a more natural and tangier sweetness, and honey is added at the conclusion of the tteokbokki recipe. For added taste, some ginger and onions are added to the concoction. Basically, the world is your oyster — er... anchovies — when it comes to this Korean comfort dish.

Tteokbokki can be enjoyed in a variety of ways.

People have gotten incredibly inventive with ways to create and eat tteokbokki because it's such a popular street food/snack. You can make it with eggs, ramen noodles, or as a dip for other street foods.

Any combination of twigim (tempura), mandu (dumplings), soondae (blood sausage), and odeng broth is a popular method to enjoy tteokbokki (fish cake broth).

There are many tteokbokki versions with slightly different sauces, such as the new rose tteokbokki with milk to make it creamy. This was my first time trying it a few months ago, and while it was tasty, I still like the classic tteokbokki.

To make it appear attractive, you can add sesame seeds and chopped green onions, however most Korean restaurants do not use these ingredients. Personally, I don't enjoy the flavor it imparts, but you might!

大家好! 'Undressing' fish: I did it when SW and I had beer battered barramundi and chips for our set lunch mains. The pumpkin soup was nice, our shared side of mashed potato with truffle oil and mushroom gravy was yummy; as for the fish... erm, it looked ok when our mains were served, but 1 bite and the chow yow yik (stench of too much grease) was overpowering! I cut it open, dug out the flesh and left the outer flour coating behind. If I must have a heavy meal (and that's coming right up), I want to fully enjoy the experience.

It was only in recent weeks that I found out TL loves xiao long bao (soup dumplings) as much as I do. We got talking about them, developed a craving for them and decided on a whim that we'd have a meal and eat nothing but xiao long bao. At the dimsum restaurant, there were 3 options: original flavour xiao long bao (6 or 10 dumplings per serving); multiple flavours (8 dumplings); and individual servings of different flavoured xiao long bao (6 or 10 dumplings). We each ate 1 of option 2 and shared option 1. They were divine!

JL, MS and I explored the food court at MBS, where I ordered mackerel and spinach soup with rice. We also introduced MS to the place which serves tom yum yu tang (fish soup) the next day. This time we chose clear broth and blanched fish slices instead of fried fish to go with rice (for MS and me) or noodles (for JL). Succulent fish, silky smooth tofu cubes, plenty of veggies and flavourful broth - a great combo of filling, delicious and nutritious. Yu tang is a popular option locals turn to for a moderately healthy meal and food stalls keep it interesting with their variations of the dish.

Since there was time after our meals, MS joined JL and I on our stroll to help with digestion. We circled the office building twice before heading for local coffee. Taking slow walks after eating is becoming a routine for JL and me. She tries to eat more healthily when we're together and chooses qing dishes over oily ones. I ate qing over the weekend too - steamed fish, egg tofu with diced veggies and stirfried mixed veggies with zhou (porridge) as well as iced local coffee.

This past weekend, like the 1 before, was a more active 1. On top of my daily exercise routine, I did some walking and aerobics. In addition, I introduced Pa to anago and he loved it! More details in the next post. 下次见!

Notes:

Zao Cha House had been tucked in my Instagram ‘Saved’ section for a while. We finally decided to grab a meal there. Tucked in an alley, this cute little dumpling restaurant won our hearts with its woody, Zen interiors that remind you a of meditation cave.

With asymmetrical windows panning their walls, they seated us on the first floor. We watched the sunlight play on red, orange and green leaves while sipping on Yum Cha Iced Tea--- a mandarin-based orange cooler which is refreshingly tangy and sweet.

We asked Andrew, our server, in order to recommend vegetarian dimsums. His recommendations turned out to be really tasty. We started with the Corn and Waterchestnut Dumpling. I’ve had this pairing before, but Zao Cha surprised me. They created a harmony out of these two vegetables in a way where the crunchiness of the waterchestnuts almost blended with sweetness of the corn.

I say this to my friend very often, “You know it’s a good dumpling when you can eat it just as it is. No dipping sauce needed.”

I tried a bite of this with their roasted pumpkin sauce and the combo was stellar. Next, we had their Handrolled Avocado Spring Roll. The fried skin was light, flaky and crunchy. Served on a bed of avocado pieces, they sautéed these with salt, pepper and butter. But the standout was dunking the spring roll in that Sriracha Mayo. Damn, that was good. Surprisingly, there was a certain cheesiness to the filling without there being any cheese in it.

Let’s come to the Vegetable and Chives dumpling. This was a bit on the sweeter side. However, I love a slight sweetness in my dimsum fillings. This one went beautifully with both, the chili oil and the roasted pumpkin one.

I am going to take a moment and applaud the Vegetable Yang Fried Rice because it was so well-made. With a stickiness similar to sushi rice, this one was cooked in the wok to perfection, lending it a smoky, light fragrance. I ate a couple of servings of this rice just as is. So good.

Their Tofu & Wild Mushroom Clay Pot, Bok Choy was beautiful. Again, it was a bit sweet versus salty, however, I loved the mild kick of Thai chili and the lovely root-flavor of the mushrooms. The Bok choy was cooked in a way where the crunch of the stem wasn’t lost. So delicious. Lastly, *that* tofu. Oh man, it literally made me sigh out of pleasure. Melting straight away on my tongue it was a delight to eat.

I don’t think I can forget this meal. And I am very grateful for the restaurant and Andrew, our server, who made our lunch such a memorable experience.💕

I am very timidly trying to expand my limited food palette and I got to try some new things this week:

Tofu (extra firm, pan-fried): Tastes like absolutely nothing, which I like. Crispy outside and inside texture like a slightly more rubbery egg, which doesn't sound as pleasant as it actually was. I think I'm going to try making this a regular food for me and see what happens.

Instant miso soup from a powder: really unpleasant experience. I couldn't get even a spoonful down. I think my problem was with either the kelp or fish on the ingredient list—seafood is really difficult for me. I think I'd like to try miso soup in another context though! I tried it in hopes I wouldn't embarrass myself by not liking it if I ordered it in a restaurant, but maybe a little courage would pay off here.

A chicken alfredo bowl with rice, broccoli, and mushrooms from the restaurant where I work: really good! I ordered it with the sauce on the side the first time, because I don't usually like chicken with creamy or cheesy sauces, but I liked this combo! I have a history of disliking mushrooms and cooked vegetables in general so my backup plan was to just eat chicken and rice, but I ended up eating the entire thing with no problem!

Cheeseburger with carmelized onions: so good, I'm really happy that I've made peace with the texture of cooked onions.

Frozen dumplings, labeled as Korean-style but dubious in terms of authenticity: better than I was expecting! Again, this was exposure therapy with cooked vegetables, and I really liked all the flavors together. Any problems I had (mostly inconsistent texture) could be attributed to the fact that these were frozen microwavable convenience food. I don't think I'll buy more but I'd definitely try out another dumpling with similar ingredients.

Pomegranate rooibos and hibiscus rooibos teas: I don't necessarily like them but I can finish a cup. My irl friends tend to enjoy sampling lots of teas so this is useful information for me to have.

I really want to learn to like and to tolerate more foods. Food can be such a great power of connection, but it has potential to alienate if I'm not careful about it. I want to be careful to respect foods even if I don't enjoy them because they could be important foods to others.
