3-Ingredient Chroizo & Egg Bell Pepper Rings
Nutritious, delicious, and a colorful way to start your day, these chorizo and egg bell pepper rings are sure to be a family favorite. Simply stir-fry some chorizo for some spice, add in the bell pepper rings, and carefully crack an egg into each ring for a dish that looks just as great as it tastes. 
Apart from being completely keto-friendly and packed with protein, you’ll get a nice dose of fiber and nutrients from the bell pepper. While it may seem strange to have vegetables for breakfast, you can actually find bell pepper in many of your brunch favorites—including shakshuka, breakfast burritos, and savory muffins. 
One of the main reasons this dish should be on your next recipe rotation is the convenience. It takes just under 15 minutes (including prep), and only 3 ingredients, most of which we’re sure are already in your fridge or cupboard! Best of all, you can make a batch of these ahead of time, and keep them in the freezer for an easy and delicious meal prep option to grab on the go. The chorizo sausage is definitely needed for optimum umami notes and flavor depth, but you can also substitute it with ground chicken, ground beef, or another sausage of your choice. Don’t be afraid to add in your favorite herbs and spices, like parsley, coriander, or garlic powder. What cannot be substituted, however, is the red bell pepper. Slicing them evenly creates beautifully vibrant rings that provide a necessary base for the eggs.
Yields 2 servings of 3-Ingredient Chroizo & Egg Bell Pepper Rings
The Preparation
4 ounce chorizo sausage
1 medium red bell pepper
4 large eggs
salt and pepper, to taste
The Execution
1. Gather and prep all ingredients. If your sausage is cased, cut the case open with a knife and scoop out the meat.
2. Slice the pepper into 1/4 – 1/3″ thick rings.
3. In a pan over medium-high heat, cook the chorizo until browned and slightly crispy. About 5 minutes. Remove from the pan, leaving any leftover grease.
4. Reduce pan heat to medium to medium-low. Place the pepper rings into the pan, then crack eggs into the rings.
5. Season eggs with salt and pepper to taste. Spoon the crispy chorizo over the top. Optionally garnish with some fresh chopped cilantro and a squeeze of lime juice.
6. Serve hot and enjoy!
