Happy Pokémon Day! February 27th is the anniversary of the first two Pokémon games’ release in Japan, and it’s a minor holiday in my house, as a fun excuse to make Pokémon inspired food, watch some Pokémon shows or movies (we’re going to watch Netflix’s new Pokémon Concierge this year!), and get excited about upcoming games and releases. This year, we’re making a Pokémon Sword and Shield inspired burger-steak curry and I’m making a dessert from the Pokémon Cookbook by Victoria Rosenthal. It’s one of my favorite fandom cookbooks – all the recipes are vegetarian or vegan, to get around the awkward question of where does the meat in the Pokémon universe come from?
But that’s not all we’re making! Ever since Nicki and Isabel were released, I’ve been dying to do a post about them and Pokémon’s infamous “Jelly Filled Doughnuts”, better – and more accurately! – known as onigiri.
Tumblr media
Pokémon was released in the United States in 1998 via two Gameboy games: Pokémon Red and Pokémon Blue. The games quickly caught on to be one of the biggest pop culture phenomenon of the late 90’s and early 00’s, and as a kid at the heart of this explosion, I can’t overstate how much of a big deal it was. One of the great things about Pokémon – and probably why it has such lasting, widespread appeal – is that there are so many ways to interact with the franchise, and the marketing doesn’t skew hugely towards one gender or the other. Cool, tough Pokémon like Charizard got pretty similar billing to cute, pink Pokémon like Jigglypuff, and there were so many options for potential favorites that it was easy for any kid to find some creature to attach themselves to.
One of my petty complaints with Nicki and Isabel’s collection and books is the almost complete lack of mention of Pokémon and other anime that was really popular among kids in 1999. I know AG probably didn’t want to shell out for licensing deals with Nintendo or The Pokémon Company, but their stories just don’t feel accurate without discussing their prized binder of Pokémon cards or begging their parents to take them to see the Pokémon movie in theaters. Maybe the authors were just a little too old to get caught up in Pokémania?
I’ve also always thought its close overlap with the Beanie Babies crazy helped get millennial children like me very into the “gotta catch ‘em all” aspect of the franchise. Is this why I’m such a crazy toy collector as an adult? Who knows.
The Pokémon anime was one of the main ways kids like me got hooked on the franchise, because not everyone was allowed to have a Gameboy of their own (me), and not everyone liked video games, but even if you didn’t like video games, the cartoon might appeal to you. Although it was far from the first Japanese cartoon to air on US television, Pokémon was one of if not the first truly mainstream favorites of the 1990’s. 4Kids, the company in charge of dubbing the show into English, decided that American kids wouldn’t understand or be open to certain aspects of the show that reflected its Japanese roots, and so made a lot of strange choices in rewriting the script. One of the most notorious was deciding Brock’s rice balls were actually jelly filled doughnuts:
Tumblr media
Onigiri – also known as omusubi or nigirimeshi – are balls of rice with a variety of fillings inside. They’re often compared to sandwiches, as an easy, quick, cheap meal or snack that combines carbs and other ingredients. While the concept of taking a rice ball and stuffing it full of other tasty treats goes way back to ancient Japan, the triangle shape became popular in the 1980’s thanks to a new machine that automated the filling process. Further developments over the last 40 years have created unique ways to prepackage onigiri without making the nori wrapping sticky. The ones we made were an attempt at recreating the “Hawaiian” (spam and pineapple) rice balls from our favorite food hall back in DC. One of my favorite pandemic indulgences was getting take out from the food hall, which often included a sampler of some of my favorite onigiri, and I haven’t been able to find anything close to similar where we are now. One of the many reasons I’m excited to move!
Even as a kid, I wasn’t convinced the food in the anime was fried dough with fruit jelly inside, because they sure look like rice. I also think 4Kids didn’t anticipate that Pokémon’s widespread popularity would inspire many of its fans – including me – to become absolutely obsessed with Japanese food and culture. I would’ve been more excited if they’d just been straight with me and shown more Japanese food on the show, and then probably begged my parents to make it or take me to a restaurant that made it. While I can’t confidently cite numbers of how many other people were first exposed to Japanese culture and food through Pokémon and franchises like it, I do think it’s a bit of a missed opportunity to highlight how things like this exposed kids like Nicki and Isabel to parts of a culture outside their own!

World Tofu Day
World Tofu Day is annually observed on July 26, in honor of tofu, a plant-based alternative to meat that is manufactured from soybeans. Tofu has seen a surge in popularity as more people switch to a plant-based diet. For vegans and vegetarians, it is particularly appreciated and enjoyed because they can avoid eating meat, but still get some much-needed protein from it. Even if you are not a vegetarian, but you’re curious about tofu, today is a good day to give it a try.
History of World Tofu Day
The Eastern Asian diet, which relies heavily on tofu, is a staple in many countries around the world. As important as dairy products like milk and cheese are to regular eaters, tofu is an indispensable part of every vegetarian diet. It may be newer in the West, but tofu dates back to 900 A.D. in Japan, where it is most popular.
Tofu, or bean curd in English, has several different names in the Chinese and Japanese languages. The term ‘tofu’ wasn’t coined until the 1800s when English translations of cookbooks began to appear. In the 1970s, as the meat replacement gained widespread acceptance in the West, cookbooks began to use ‘tofu’ as an official designation. People who prefer to adopt a vegetarian or vegan diet have grown to rely on tofu. It has become a classic meal and a nutritious alternative for them.
Each Japanese province has its distinct method of producing tofu, reflected in the wide range of ways it is consumed. When soybean production is executed well, it is enjoyed by a large number of people. Tofu is one of the most versatile and nutritious foods available worldwide. National Tofu Day seeks to highlight the numerous ways tofu has influenced people around the world while giving them the required nutrients.
World Tofu Day timeline

Tofu gains popularity in Japan when it becomes more widely accessible to people besides the rich.

“The Book of Tofu” is published, introducing tofu to the Western world and promoting vegetarianism and veganism.

World Tofu Day FAQs
What is the purpose of the tofu in recipes?
Silken tofu, which is made by pureeing firm tofu to a silky paste, is used in a variety of dishes to enhance the creaminess and texture. It can also be used in place of eggs. Regular tofu, often known as bean curd or Chinese-style tofu, is much more widely available.
What's the best kind of tofu to use in a recipe?
If you’re looking for all-purpose tofu that can be sliced and cubed, extra-firm tofu should be your go-to. It can be used for pan-frying, stir-frying, baking, grilling, and scrambling.
Which method of cooking tofu is the healthiest option?
Tofu can be cooked in a steamer, which is the simplest and healthiest method. Line the steamer basket with paper or a cabbage leaf to keep the tofu from breaking apart.

To make tofu, soybeans are separated into lumps and then pressed together again to form blocks. A good source of protein, tofu is low in fat and carbs. It is made up of fewer saturated fats, a good source of iron, magnesium, manganese, selenium, and calcium, as well as vitamins and minerals.
Many people believe tofu is tasteless which makes them unwilling to try it. When cooked properly and flavored with the right ingredients, tofu is very delicious. It acts like a sponge, soaking up the flavors of whatever it is cooked in. Tofu is a versatile ingredient that can be used in a variety of dishes, from salty to sweet. It can even be used to make cheese.
Tofu is surprisingly affordable and relatively easy to make from scratch. Most supermarkets, grocers, and Asian specialty shops carry tofu. It's a great ingredient for large-scale meals for a large number of people.

Menu Seventeen
Menu Seventeen from Rowan Bishop and Sue Carruthers' "The Vegetarian Adventure Cookbook".
Tumblr media
Spicy Pumpkin and Lentil Soup: brown lentils, water, cumin, tumeric, coriander, butter, onion, pumpkin, salt, vegetable stock, tomato relish, pepper.
Celery and Orange Salad: celery, orange, lemon juice, olive oil, balsamic vinegar.
Corn Bread: plain flour, baking powder, salt, wheatgerm, semolina, egg, milk, butter.
Spinach Frittata: spinach, onion, butter, dried basil, nutmeg, egg, sour cream, milk, salt, pepper, chilli sauce, tasty cheddar cheese.
Menu Seventeen, Week Seventeen, I write about it now in a state of purgatory, a liminal space, during a three week break from Bishop and Carruthers and their Vegetarian Adventure Cookbook. The weather was hot, dry even, it was Summer at home. It had been two weeks of warm soup, only this time I didn’t want it. I had passed my sickness on to my flatmate and guest, a singular person. I was thinking a lot about change, as usual. Not violent change, that I’ve learnt are done to you, but the changes you make yourself. The ones that take you out of a city, a country even. This had nothing to do with the fact I was travelling to Japan at the end of Week Seventeen.
The schedule that week was busy, I couldn’t really afford to dedicate it to the journey, but I did anyway. I left the prior week believing I wanted to move somewhere else during the next year and that I wanted to leave this Vegetarian Adventure Cookbook where it belonged, in New Zealand. Because of this, Week Seventeen and Menu Seventeen needed to be completed that week. I had most of the ingredients at home. I went to the Fruit and Vegetable store on Tuesday after a troubling Monday, it was hot and I wished people would turn off their read receipts. I returned home feeling worse, I had spent $38 on four items in a store I believed was always the cheapest option. I wondered if I had been swindled, this was my comeuppance for swindling the lady at the other fruitstore for the $3.99 watermelon back during my birthday week. It wasn’t even the same store. I said “no” when the girl at the till asked whether I wanted a receipt, was she taunting me? I’ll never have the answer to what happened, and that seems to be the way about a lot of things. I was still positive about the way that change could be something you did to yourself. I would cook the pumpkin and lentils and I would change them into a soup. Whether or not I wanted to eat it. I would leave the country one day and maybe I would never return.
Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media
Soup and salad prep, half a pumpkin that cost $25?
It was another easy menu to make. I had all afternoon. It was hot. I wore a pair of mini shorts and a top that had “alcoholic” written across the chest then proceeded to not drink a thing. I started with the soup, first boiling the lentils, then the pumpkin. The state of the flat oven meant I needed to prepare and bake the Corn Bread and Spinach Frittata at the same time. I had a brand new guest that night, from another city even. I had quite a few guests in total that night. Before anyone arrived I sat on the floor of the kitchen listening to personal-to-me version of “Last Christmas”. There were four days till Christmas and dinner was ready. Later I would fail as a host as I served too early, forgetting the last one was coming.
Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media Tumblr media
Frittata and Corn Bread
As we ate, we discussed how the Corn Bread tasted like banana cake without bananas. Really, it was corn bread without any corn, because I had substituted semolina for the cornmeal that Bishop and Carruthers had listed in the ingredients. The following night I declared at work drinks that this had been the worst year of my life. A week later, I was in Tokyo, homesick for something I couldn’t put my finger on. Maybe the “Vegetarian Adventure Cookbook”. Two weeks after that, I returned home. It was a new year. The “Vegetarian Adventure Cookbook” wasn’t where I left it and I panicked that it would be another thing lost in the year before. Five minutes later I found it, hidden behind the mirror on the mantelpiece in the dining room, the last violent change of the year before.

Arrivals & Departures 1932 - 12 October 2023 Collette Rossant
Colette Rossant (born 1932) is a French-American cookbook author, journalist, translator, and restaurateur, who is a member of the Pallache family.
Born in Paris, Rossant traveled with her mother to Cairo to live with her father and her father's family during World War II. Her mother spent much of the war in Beirut (part of the French Mandate for Syria and the Lebanon), while her brother Eddy Palacci remained in Paris with their mother's parents.
After World War II, Rossant returned to Paris and lived with her grandmother and brother, joined occasionally by her mother. In Paris, she studied at the Lycée La Fontaine. She spent a year learning English at Roedean School near Brighton, UK. She earned a B.A. in Comparative Literature at the Sorbonne in 1954. She married American architect James Rossant in 1955.
Moving to New York with her husband in 1955, Rossant pursued several careers, often simultaneously like teaching, writing, translating, restaurant business, and raising a family.
Rossant spent many years teaching French. She was first a language instructor at the Browning School (1957–1961). She then taught French at Hofstra University (1961–1970). She became head of the French department at St. Anne's School (1970–1983). Her last position was as Liaison Officer at the New York branch of Crédit Lyonnais (1985–2000).
Exploring New York, Rossant became very interested in bettering the food she found there. She published her first of seven cookbooks in 1975 (and last to date in 1991). Her third cookbook, A Mostly French Food Processor Cookbook (1980) sold more than 50,000 copies and made a name for her in the Food industry. She became "underground gourmet" for New York Magazine in the 1980s. She served as food and design editor for McCalls Magazine (1983–1990). She then became a columnist for the New York Daily News, where she wrote a popular Wednesday column called "Ask Colette." Currently, she contributes to Food Arts and Super Chef magazines.
Rossant helped launch two restaurants in New York. Buddha Green (1998–1999) opened in Midtown Manhattan and featured original, vegetarian "Buddhist" cuisine. Dim Sum Go Go (2000–2003) opened in Chinatown and featured original Imperial Cantonese cuisine, although Rossant has stopped consulting there. Her husband James Rossant helped design both, while son Tomas Rossant helped on the interior at Buddha Green.
Rossant has traveled abroad (often with her husband, whose architectural design work took him to countries like Bhutan, Tanzania, and Turkey). Her lifelong interest in Asian cuisines took her to China and Japan, reflected in her cookbooks and restaurants.Dorceau in Orne, France, near Rossant's home since 2002
With children grown and married, Rossant's most recent books have been memoirs: Apricots on the Nile (2004, originally published as Memories of a Lost Egypt in 1999), Return to Paris (2003), and The World in My Kitchen (2006).
In 2002, Rossant moved from New York back to France, but rather than return to Paris again (as she had as a teenager), she went to live in the department of Orne, two hours west of Paris. In 2009, Rossant's husband of 55 years died. She continues to live in their home near Condeau, France, on whose town council she has served. She continues to contribute to Super Chef, Food Arts, and Pays du Perche magazines and is writing a twelfth book.
In November 2010, Rossant received the Prix Eugenie Brazier for the French translation of her first memoir, Mémoires d'une Egypte perdue (Editions Les Deux Terres 2010).
Rossant appears during an interview in Rebekah Wingert-Jabi's 2015 documentary Another Way of Living: The Story of Reston, VA, along with excerpt of an interview with late husband James

RECIPE: Rhubarb and rose frozen yogurt (from The Modern Cook’s Year by Anna Jones)
This sweet-shop pink frozen yogurt is as cheerful as it is delicious. Thanks to the bright bubblegum color of the forced rhubarb and the gentle cloudy white of the Greek yogurt, it ends up the most beautiful tone of rosy pink. This year we ate it from good waffle cones in the garden on my birthday in early April, on one of the first warm days of the year; I couldn’t have been happier. If you use outdoor rhubarb for this it will be less pink.
I infuse the rhubarb with some rose geranium leaves. I have a plant that sits on my windowsill but you may not, so you could use a couple of teaspoons of rosewater in their place. The rose geranium has a fresher, less perfumey rose note, though, so use it if you can.
Makes about 4½ cups (1 liter)
1 pound (500 g) rhubarb
1 cup (200 g) superfine or caster sugar
6–8 rose geranium leaves, or 1–2 teaspoons rosewater, depending on how strong it is
The zest of 1 unwaxed orange
2¾ cups (800 g) Greek yogurt
A pinch of flaky sea salt
Chop the rhubarb into roughly 1-inch (2.5-cm) pieces and place in a medium saucepan with the sugar, rose geranium leaves, orange zest, and a couple of tablespoons of water. Cover with a lid and place over medium heat for 3 minutes, until everything is steamy and smelling fragrant, then turn the heat down and let the pan blip away for another 7 minutes, until the rhubarb is completely soft and bright pink. Transfer to a bowl to cool for at least 20 minutes.
Once the rhubarb has cooled, remove the rose geranium leaves and mash up any big pieces of rhubarb with a fork. Stir the yogurt and salt into the rhubarb; you can leave a bit of a ripple here if you like, but I mix mine quite well.
Churn in your ice-cream maker until the frozen yogurt has thickened to a scoopable consistency. Transfer to your freezer if you like a really set frozen yogurt.
If you don’t have an ice-cream maker, chill the yogurt and rhubarb mix in the fridge for at least 1 hour, then transfer to a 4½-cup (1-liter) container with a lid. Freeze for 1 hour, until its wobble is no longer visible, and beat with a whisk or fork to incorporate all the frozen pieces and ensure the frozen yogurt has an even consistency. Mix twice more over the next couple of hours, and remove from the freezer a few minutes before serving.

The Modern Cook’s Year offers more than 250 vegetarian recipes for a year’s worth of delicious meals. Acclaimed English cookbook author Anna Jones puts vegetables at the center of the table, using simple yet inventive ingredients. Her recipes are influenced by her English roots and by international flavors, spanning from the Mediterranean to Sri Lanka, Japan, and beyond. Attuned to the subtle transitions between seasons, Jones divides the year into six significant moments, suggesting elderflower-dressed fava beans with burrata for the dawn of spring, smoked eggplant flatbread for a warm summer evening, orzo with end-of-summer tomatoes and feta for the early fall, and velvety squash broth with miso and soba to warm you in the winter, among many others. The Modern Cook’s Year shares Jones’s uncanny knack for knowing exactly what you want to eat, at any particular moment.

National Tofu Day
Tofu, the bean paste meat replacement, is enjoyed and appreciated by  people all over the world. For vegans and vegetarians, it is the perfect  way to be able to avoid eating meat while still getting enough protein  in the diet. Tofu has been around for centuries as a traditional eastern  dish.
Tofu can be prepared in a variety of delicious ways and can be placed  in so many dishes that it is the perfect filler. Tofu Day aims to  celebrate the creativity that tofu incites in people and celebrate its  long history as a beloved dish by many.
For those who don’t think they are really fans of tofu (because,  honestly, the name “bean curd” isn’t doing anyone any favors), this  would be the perfect day to try it – or try it again.
So get some tofu on that plate and get ready for Tofu Day!
History of Tofu Day
Tofu is considered to be an essential part of the diets of people in a  variety of different cultures, especially in the Eastern Asian diets.  Having much the same importance as meat, milk, and cheese, tofu is  undoubtedly a staple. Although it might be newer on the scene in the  West, the earliest recordings of tofu were in 900 AD, most significantly  in Japan.
Tofu, a word literally meaning bean curd, has been called numerous  names in the Chinese and Japanese languages, some meaning “morning  prayer” and other interesting cultural references. It wasn’t until the  1800s when English-speaking translations of cookbooks came around that  the term tofu was used. Then, later on down the road when the meat  substitute really began to gain popularity in the West, cookbooks in the  1970s began using the term Tofu as its official name.
After being passed down through thousands of generations, Tofu today  has become an iconic food and healthy alternative, particularly for  those who wish to live a vegetarian or vegan lifestyle.
Tofu can be prepared in numerous ways, and in Japan, each province  has its own way of preparing tofu individual to its local culture. This  soybean creation is loved by many people, as long as they know how to  use it well.
Tofu Day aims to celebrate the long and intricate history of tofu,  and showcase how it has influenced cultures everywhere. Tofu Day is  celebrated on this day each year all over the world as one of the most  versatile and nutritious foods on the planet!
How to Celebrate Tofu Day
On Tofu Day, people go out of their way to eat tofu and get creative  with their cuisine by adding tofu to any dish. It’s fun and easy to try  something new with tofu, or to go back to a well-known and appreciated  standard recipe. Try out these ideas for paying homage to this versatile  and amazing food on Tofu Day:
Try Making Dishes with Tofu at Home
Tofu can be used in so many dishes, so one of the best things you can  do on this day is to look up recipes involving tofu and give it a try!  Try a hand at making pad thai, bibimbap, tikka masala, and soba salad  with tofu.
Get Creative with Tofu Dishes
The problem some people have with tofu is that they think of it only  in one way: chunks of a slightly soft and slimy substance. But it  doesn’t have to be that way! The complete versatility of tofu means that  it can be cooked (and even baked) into a wide variety of dishes that  will enhance and complement the flavors.
Try these interesting ideas for creative ways to use tofu at home:
Vegan Creamed Spinach. For those who have  chosen a healthier, more earth-friendly vegan lifestyle, they may be  missing out on some favorite dairy dishes. Tofu is a great way to bring  those favorites back by using a tofu cream cheese substitute.
Vegetarian Taco Bowls. Tofu isn’t just for Asian type foods! Try substituting the meat from tacos with tofu and create a whole new style of food.
Crispy Tofu with Maple Soy Glaze. Tofu  doesn’t need to be soft! Change the texture by draining it and then  cooking it in hot oil. Drizzle with glaze and garnish with scallions.
Host a Tofu Day Party or Gathering
For those who are looking for something to do closer to home, then  celebrate Tofu Day by hosting a party with all tofu dishes. Invite  friends and family to the celebration and help them learn more about the  benefits tofu can offer. Plus, if they are a little skittish, this is a  great opportunity to open their minds about the way tofu can really be  very delicious.
Take a Trip to Japan for Tofu Day
Those who truly want to experience tofu in all of its glory should  head on over to Japan, where tofu started. In the midst of various  tourism activities, take the opportunity to try some delicious tofu  dishes on the eastern side of the world.
Between the bamboo forests, cutting edge skyscrapers, and placid  religious temples, Japan is a place like no other. And because they  invented tofu, they also know how to make it better than almost any  other place on earth. Try out these Tokyo restaurants for some excellent  tofu dishes:
Asakusa Hamasei Tofu Kawakaze. Just a  delightful ten minute walk from the subway stop, this restaurant offers  daily specials and seasonal menus that will delight the taste buds. Its  location offers a sense of calm and serene in the midst of a busy city.
Tofu Room Dy’s.  Enjoy a meal in or get a quick lunch to takeaway–or enjoy a quick bite  with a traditional afternoon Japanese tea. For dessert, don’t forget the  Tofu Cheesecake which is delicious and refreshing.
Sasanoyuki. This  famous, old-fashioned restaurant offers traditional charm with some of  the best tofu in Tokyo. This place is considered by some to be the  inventor of the silken tofu.

Taking you from India to Indonesia, Singapore, and Japan, by way of China, Thailand, and Vietnam, East will show you how to whip up a root vegetable laksa and a chard, potato, and coconut curry; how to make kimchi pancakes, delicious dairy-free black dal and chili tofu. There are sweet potato momos for snacks and unexpected desserts like salted miso brownies and a no-churn Vietnamese coffee ice cream.

Arrivals & Departures 18 January 1932 Colette Rossant
Colette Rossant is a French-American cookbook author, journalist, translator, and restaurateur, who is a member of the Pallache family.
Career
Moving to New York with her husband in 1955, Rossant pursued several careers, often simultaneously: teaching, writing, translating, restaurant business, and raising a family.
Buddha Green (1998–1999) opened in Mid-Town Manhattan and featured original, vegetarian "Buddhist" cuisine.
Her lifelong interest in Asian cuisines took her to China and Japan, reflected in her cookbooks and restaurants.
Recently
Rossant appears during an interview in Rebekah Wingert-Jabi's 2015 documentary Another Way of Living: The Story of Reston, VA, along with excerpt of an interview with late husband James.
