Slow-Cooker Arroz con Pollo (Chicken & Rice) - 299kcal/28.8g protein

Servings: 8 - 299kcal/28.8g protein per 1 1/4 cup
3 large red, orange, and/or yellow bell peppers, chopped
1 small onion, chopped
3 cloves garlic, minced
1 (15 ounce) can no-sodium-added tomato sauce
1 (15 ounce) can no-sodium-added diced tomatoes, undrained
1 ½ cups reduced-sodium chicken broth
2 tablespoons chili powder
1 tablespoon paprika
1 teaspoon salt, divided
½ teaspoon ground pepper
½ teaspoon ground cumin
½ teaspoon saffron or 1/4 teaspoon ground turmeric
2 pounds boneless, skinless chicken thighs
2 cups instant brown rice, such as Minute Rice
1 cup frozen peas
½ cup chopped green olives with pimientos
¼ cup chopped fresh cilantro (Optional)
Combine bell peppers, onion, garlic, tomato sauce, diced tomatoes, broth, chili powder, paprika, 1/2 teaspoon salt, pepper, cumin, and saffron (or turmeric) in a 6-qt. slow cooker. Nestle chicken into the mixture until submerged. Cover and cook on Low for 5 1/2 hours.
Stir in rice, peas, and the remaining 1/2 teaspoon salt. Cover and cook until the rice is tender and most of the liquid is absorbed, about 30 minutes more.
Using 2 forks, shred the chicken in the slow cooker. Top each serving with 1 tablespoon olives and garnish with cilantro, if desired.

I'm bored and it's like 2AM so here's some mid/low effort food, mostly cause I hope it helps someone but also so I can have a list I can reference quickly when I don't know what to cook/get in a slump and can't put much effort into cooking
Broccoli and rice
- Cup of broccoli (or more, I like more)
- Butter (salted or unsalted or margarine, just some kind of oil, whatever you have lying around)
- Some kind of instant rice (I usually use minute rice for rushed meal prep so keep that in mind during the instructions)
- Curry powder
- Boullion cubes
- Optional; garlic powder, onion powder, and parmesan
1) Start making your rice (minute rice usually has a 1:1 ratio of water and rice)
Add curry powder (measure with your heart) and boullion cube to the hot water before the rice (for the cubes I use, one cube = about 2 cups of stock, so I cut them roughly into quarters to adjust when cooking only for myself)
Leave it alone. Seriously leave it alone until you are done cooking do not touch it you don't need to touch it.
2) Cut or rip apart your broccoli into bite sized chunks
3) Heat a pan over medium heat
Melt some butter (again, measure with your heart. Mostly because I genuinely did not and never have measured this; the important thing is making sure you have enough so nothing sticks)
Chuck in your broccoli
Cook until most of the broccoli is crispy and browned
Take off the heat (add garlic powder, onion powder, and parmesan here)
4) Chuck broccoli and rice onto a plate or into a bowl
*Asparagus is really good cooked like this too if you want to add it or sub out some of the broccoli
Tortilla Pizza
- Tortillas (Two large tortillas is what I usually have lying around and is a meal for me, this is surprisingly filling for what it is)
- Pizza sauce
- Grated cheese
- Optional; literally any other topping you have the time and energy to prepare
1) Set oven to 350°F
2) Spread sauce on tortillas; add cheese and any other toppings
3) Bake for about five minutes
*I'd put this on parchment paper and just bake directly on the rack of your oven; idk about you but I don't have a pan that comfortably fits two large tortillas
*Keep an eye on this while it bakes; you may need to go a little longer, but don't let the edges get too brown, tortillas burn easily
Meat and Cheese Board (Grownup lunchables/"Whatever I had in the fridge")
- Block or sliced cheese
- Fruit (Apples and grapes immediately come to mind)
- Jam/jelly/marmalade (World's your oyster; I like fig marmalade and dandelion jelly, they go well with apples and cheddar)
- Crackers
- Deli meat (Turkey/chicken breast slices my go to; even better if you have real turkey/chicken breast leftover from another meal)
- Crackers (Any kind; triscuits, saltines, melba toast, pretzel crackers, crusty bread, whatever)
- Optional; peanut butter, cream cheese
1) Measure ingredients with your heart; what can you/want to eat?
2) Cut fruit and cheese into bite sized pieces
3) Put any jam, jelly, marmalade, or other spreads/dips into bowls (or drop directly on your plate/cutting board for less cleanup)
4) Put everything either on a plate or the cutting board you used
*Yes this is a valid dinner, it does not matter that it's just a bunch of random shit thrown on a plate. It has fruit. It has protein. It has carbs. It has fats. It has things you like. It is both body nourishing and soul nourishing. It is a good dinner.
*Sub out or add things where you see fit. Peanut butter can become almond or soy butter, apples can become pears, add some vegetables, use any kind of cheese you want/have at home, if you have leftover meat from last night use that instead, don't use meat at all; this is my favourite "I don't know what to make" meal because you literally can't fuck it up and best case scenario you only have to wash a knife, a cutting board, and whatever utensils you used to scoop out any jam or peanut butter
Mason jar noodles
- 1L Mason jar
- Rice noodles (I use the ones that are already separated into single serves because I cannot for the life of me accurately measure how much rice noodle one person can eat
- Vegetables (frozen or fresh, whatever you have/can manage today. I like broccoli, baby corn, and peppers)
- Cooked chicken breast, shredded or cut into chunks
- 1 tbs low sodium soy sauce
- 1 tbs sriracha
- Chicken stock cubes
- Minced garlic (maybe like a teaspoon or two? I never measure this)
1) Cut vegetables into bite sized chunks and chuck them into the mason jar (if they're frozen and already bite sized just go ahead and chuck them into the jar. Measure with your heart, only you know how much vegetable you want)
2) Put sriracha, soy sauce, garlic, stock cube, and chicken into the jar and mix everything around. Rest rice noodles on top (as mentioned before, my stock cubes would make a lot more chicken broth than I need; I usually cut them in half but it usually ends up being a little too much)
3) Close up the jar, store in fridge until ready to eat. When it's food time, pour in enough hot water to cover the noodles (I eat straight out of the jar with chopsticks but it's a lot easier to pour them into a bowl if you can
*Bring your jar to room temperature before eating; I am begging you to not subject your glass jar to thermal shock and end up with glass in your hands
*Disclaimer that I heard this one from a dietician on YouTube (Nutrition By Kylie), and that this was intended to be meal prep and eaten at a later time, but nobody stops me from just chucking everything into a bowl and eating it then and there so nobody is going to stop you (maybe take some time on a good day/a day you aren't busy and prep a few of these ahead of time so that you can just pour boiling water into a jar and you have food ready to go on days you just can't cook for one reason or another)
Chicken Wraps
- Chicken strips (or nuggets, or chicken burgers, or leftover chicken breast; any chicken that you don't have to do much with, I just like crispy chicken so that's what I wrote)
- Tortillas
- Lettuce
- Sauce of choice (I like caesar or ranch)
- Shredded cheese
- Optional; bacon and tomato
1) Cook chicken strips according to directions (or cut/shred and reheat chicken breast)
2) Tear or cut lettuce into shreds (or just use the whole leaf, I don't bother cutting it half the time)
3) Put everything on a tortilla; roll it up
*Obviously not the end-all-be-all of chicken wrap possibilities, change whatever you want about it, this is just a reminder that you can do something ~different~ with and add to your chicken strips if you're getting sick of them
Yogurt (Hey, sometimes the simple stuff escapes us when we're overwhelmed)
- Cup of vanilla greek yogurt (or whatever you have lying around, my family just always has greek yogurt and it has a decent protein content)
- Berries (blackberries, raspberries, and blueberries don't need to be cut; strawberries don't *need* to be cut but I'd suggest it if they're a decent size)
- Granola (crush up a crunchy granola bar if you really want to)
- Optional; honey, dandelion jelly, some kind of jam, etc.
1) Put yogurt in a bowl
2) Sprinkle on granola
3) Throw berries and optional honey/dandelion jelly/jam on top
*I use enough granola to make a layer on top of my yogurt but I also love granola a little too much to be normal; one serving for most store bought granola is roughly 1/4 cup
*I cover about half of my bowl with fruit
*Home made granola is also 1000x better than store bought and if you have not made your own before please try it at least once
Ready Made Food
*Also a perfectly valid thing
*They aren't the best nutritionally but the important thing is that you are eating
*If all you can do today is put pizza pockets in the microwave or open a lunchable, you are still eating and that is good
*Focus on eating consistently first we can worry about nutrition later
*Do not feel bad over canned ravioli

omg. its pretty basic! i make mine in an instant pot but i saute onions and jalapeños, then use brown rice, black beans, diced tomato, cumin, chili powder, garlic, salt, pepper, lime juice, and vegetable stock. after its cooked i mix in fresh green onion and cilantro, and then garnish with more fresh cilantro, green onion, jalapeño, and lime as needed when i serve it up ^_^

I'm excited to try today's noodles! I've had them lying around for a while for this blog, and what's special about them is that they're organic. I've seen very few organic instant noodles, and as a proponent of sustainable agriculture I would love to see it spread to the "cheap junk" world that we all love.
what we've got is Perfect Earth tom yum flavour, a favourite flavour of mine for instant noodles. it looks like the noodles are made with brown rice, a first for me.

The instructions say to steep the noodles for five minutes and then cool for two minutes, which makes them pretty long-steeping for instant noodles. The bag is very sturdy and has no notches, there was no way to open it with my bare hands but the flavour packet did rip open pretty easily by hand. the noodles have a very unique look, shiny like a lot of vermicelli rice noodles are, but a golden brown. unfortunately as i pour the powder on, i am hit with a strong smell of artificial lemon, it smells like tart plastic and nothing else. Pouring water on improves the smell a little bit, but we'll see.

coming back to the noodles after the 5 minute steep, they look very nice. it looks like they've plumped up quite a bit and it looks like this might be one of the more filling types of instant noodles. interestingly, they've turned white as well. The taste of the noodles is of brown rice first and of lemony broth second. thankfully the flavour doesn't have the strong plastic aspect that the smell had. the noodles are really nice. slightly firm, almost springy, and the taste is very pleasant. the broth, though, barely leaves a taste on them. tasting the broth on its own, it really doesn't taste like much. it certainly doesn't taste like tom yum. it's like if lemonade was a warm savoury broth instead of a sweet cold drink. thin lemonade, too. it does have spice! i would call it a strong medium. for those who like spicy, it's a pleasant non-challenging level that warms your mouth. the three pieces of dried scallion weren't necessary, though. I feel like with freeze dried veggies you put them in or you don't. the money you spend half-assing it can be better spent improving the taste or lowering the price.

the lowest effort good foods i know how to make are:
baked potato - put a potato in the oven and leave it there for 30-60 minutes depending on size of potato. take it out when it’s crispy, mash in butter or margarine and salt and pepper and it’s delicious
rice, soy sauce, sesame oil, fried egg on top - that’s it that’s the recipe. if you have extra energy you can add microwaved sweet potato and chopped green onions or some spinach or pretty much whatever you want. you could also mix in chilli paste or chilli oil with the rice.
quesadilla - empty a can of beans (i like black beans, pinto beans are good too) into a bowl, add handful of grated cheese, teaspoon each of cumin, paprika, cayenne, chilli powder and mix. spoon this into a tortilla and fry in oil until crispy on both sides and cheese melted
noodles with cupboard sauce - cook instant ramen noodles, instead of using the flavour packet mix together some siracha, soy sauce and a little bit of brown sugar and eat with that. you can add tofu, onions, fried egg, other stuff to it but it’s also good with just the sauce.

I have really been wanting to try out merit and saie beauty recently; I have absolutely loved their branding and philosophies so it’s only a matter of time before i get some of their products for myself. I am someone who doesn’t really like traveling with powder products since they are more likely to shatter; i’d rather have cream products, where even if they break, i can use them in a different container instead of having powder everywhere. All of these formulas are creams or liquids that are perfect for me to travel with. Plus, all of these products would be what I would reach for when I wanted a little pick me up, not so much full glam full cover makeup. I think the last time I did that was for my high school senior pictures. Because I was being professionally photographed.

Most of my skincare wants are just more rich moisturizers. I tend to have dry skin, unless it’s peak summer when it feels like I’m in a rice cooker, since that is super humid.
No matter how much I love beauty products, I do not wish to have the 2016 makeup collections, where there is so much that it is useless. If I ever get there in my career, I fully intend to give that surplus to someone who could use the bulk of it, like a makeup artist. I don’t know if I’ll ever get there, but I know I don’t want 80 foundations just rolling around in a drawer. That goes for skincare too; I do not want the skincare tiktoker collection that will expire in 6 months. I think, in a small thought, the best way to actually review that much product without wasting it would be to keep notes on the different products and how they worked, and how they compare to other products as a frame of reference, then use the product. I know for me that if I really need to use a skincare product before it goes bad, I’ll use it on my body. But that also would take more effort than a lot of people want to put into something, and I’m aware of that.

Recipe: Empty Your Pantry Burrito Bowls
Hey, guys! Here's another recipe I made very recently! There will be images included at the end of the post.
The entire inspiration for this recipe is to empty your pantry or freezer! I have a TON of beans, frozen potatoes, and instant brown rice, so I got some of it used up in this recipe! I will also say this is higher calorie, but I struggle to get all my calories in as most days I don't feel that hungry, but you can always cut the calories by removing rice and putting in WAY more veggies!
*This recipe is also fairly easy to make vegan or vegetarian, just replace the ground chicken with plant-based meat or lentils, and replace the beef broth with vegetable broth or stock!
Total Cost: $13.49

Ingredients:
1 LB Perdue Ground Chicken ($3.64)
1 Bag Bird's Eye Oven Roasters Sweet Potatoes Carrots & Red Potatoes ($2.97, was on sale)
5 Servings (1/2 cup dry) Great Value Instant Brown Rice: $.90
1 Can Great Value Chickpeas: $.78
2 Cans Great Value No Salt Added Dark Red Kidney Beans: $1.56
1 10oz Can Rotel No Salt Added: $1.24
1.5 Cups Great Value Unsalted Beef Broth: $.50
1 Orange Bell Pepper: $1 (got it in a pack of 3 for $3)
2 Servings Great Value Seasoning Blend Frozen: $.70
2 TBPS Great Value Classic Olive Oil: $.20
Seasoning for Rice: Onion Powder, Garlic Powder, Cumin, Chili Powder, Paprika, a SMALL amount of Cayenne, Black Pepper, added Accent when finished.
Seasoning for Chicken and Veggies in Pot: The exact same minus Cayenne, but added Accent while it was cooking.
I HIGHLY recommend following the instructions on the packaging for any rice you use and if you plan to bake your veggies! (Or look up a recommended cook time.)
I followed the directions on the Oven Roasters, making sure to preheat my oven before I started prepping anything else. I lined a pan with aluminum foil (highly recommend doing that for easier cleanup! It saves me HELLA time.), tossed the veggies on, and gave them a light spray with canned olive oil. This is not necessary and does not add any calories, but I like crisping my veggies up a little so they hold their crunch when I freeze them.
After getting that into the oven, I put the broth and water for the rice on to boil (I counted the broth into the rice's needed water), then got my olive oil heating to medium heat in a large pot. You want a pot big enough to hold everything but the rice and oven veggies!
When the olive oil is heated, add the frozen seasoning blend (or onions, onions and peppers, etc) and give it roughly 5 minutes to cook and thaw the onions before adding the bell pepper. After adding the bell pepper, give the mixture another 5 minutes to sweat the vegetables.
When the water is boiling, get your rice in.
After the veggies have sweated, get the ground chicken in the pot. Season both the rice and the chicken veggie mixture. (I go pretty heavy with seasoning as I don't add salt to anything due to my diet.)
Set your rice and the oven veggies to the side, and turn your full attention to the chicken mixture.
When the chicken is about 3/4ths of the way cooked (most of it has changed color, there can still be some pink just not much), add in your chickpeas. This gives them time to soften a little and start soaking in all that seasoning. You can add the Rotel and beans in now as well, or wait till the chicken is starting to brown.
I believe I gave it an additional 15-20 minutes to let the flavors mix and merry.
When everything is done, either serve with the chicken mix on top of the rice and oven veggies, or if you meal plan like I do, I used those long rectangular bowls that have no sections, and put my rice on one side, the chicken mixture on the other, and the oven veggies on top of the middle area!

I don’t get home til late and a good chunk of my time before bed is spent making myself dinner and next day’s lunch, but I’ve discovered something I like that’s pretty easy so I wanted to share it.
I present, lazy man’s cooking: fried rice
Ingredients:
Instant/microwave white rice
Soy sauce
Seasoning (I use garlic powder and onion powder)
Butter
OPTIONAL: egg, vegetables, meat
Steps:
Make instant rice
Heat a pan on the stove at about medium-low. You don’t want to worry about burning the rice
Put a slice of butter in it and sort of swirl it or push it so that melted butter covers the bottom of the pan
Pour soy sauce into pan, this is “to taste” so start with a little and you can add more later
Mix soy sauce and butter, then dump rice into pan
Mix the rice in the pan so the soy sauce is distributed equally (no patches of dark brown or bright white)
Add your seasonings, mix
Add your optional ingredients, mix
If you want, add more soy sauce or seasoning here. Just make sure you mix it in well
Turn the stove off, pour rice into whatever dish you’re using
Celebrate, you have fried rice now

i baked these chocolate cookies and for some reason they remind me of like nesquik chocolate cereal? here's the recipe
200g margarine, melted (i used it to substitute butter in the original recipe, it makes cookies more crispy rather than chewy)
30g olive oil (refined, not extra virgin, but that would be interesting to try) (i used it because i ran out of margarine)
2 eggs (around 140g combined)
310g flour
60g cocoa power (store brand, nothing fancy)
10g instant coffee powder (not granules, they are harder to dissolve)
1 tsp baking soda (i don't use baking powder because it is basically just baking soda with an acid, and i'm afraid that it would get less potent over time from moisture in the air allowing its components to react and then i wouldn't know how much of it i should add. for best results you would have to balance the pH levels of your ingredients but it doesn't take a lot of acid to neutralize baking soda (cocoa and coffee used here are slightly acidic) and i think it's okay if my dough is slightly alkaline because it promotes browning)
1 tsp salt
1/2 tsp vanilin (apparently it's not as available in the west as vanilla extract and it does have less depth of flavor than the extract, but i suspect that the moisture would mess with the texture of the cookies, so i would advise to use vanilla sugar instead)
i mixed the wet ingredients and added the dry ingredients just kind of on top of the wet and mixed them up a bit before combining with the wet because who wants to dirty a second bowl just for mixing dry ingredients, i don't even have a second bowl big enough for this
then i left the dough in the fridge for like 10 minutes? while the oven was preheating.
then i scooped the dough with a spoon and scraped it out on the tray with a silicone spatula, didn't flatten them or anything, foolishly thinking that they would spread out while baking, forgetting that it's the moisture in the butter that makes them do that. as you can see they're pretty thick. this recipe makes two trays of around 14 cookies each.
bake at 200°C (392°F) for 20ish? minutes until solid in the middle.
i can't really compare the texture to anything else. it's not crispy or chewy, cakey or crumbly, just sort of in the middle? i think if you made them really small they would actually be pretty close to chocolate cereal, they would be dryer then and you would have to bake them for a shorter amount of time. i guess the vanilin gives them that commercial flavor that cereal has, and there's some kind of oil in cereal as well. nesquik specifically contains wheat, corn and rice so adding corn and rice flour would probably get the cookies even closer to that flavor.

hai i’m online and would like to know what your go to lazy meal is when you don’t feel like cooking extensively! as inspiration for me loool
oooh okk hmm…
1. pasta with ready made sauce (the kind you can just stir into a pasta that took 5-10 minutes to cook) is what i’ve been doing lately lolol.
2. congee!! even faster with already cooked rice. any stock + any protein and vegetable leftovers + elevate with fried shallots (can get them in bulk), sesame oil and soy sauce. when i was young i loved simple congee with cucumber pickled in soy sauce + the pickle juice (LOL trust me)
3. miso butter on toasted bread — mix 1 part miso to 1 part butter. if using red type miso, I don’t add extra salt. also just miso soup so delicious… add seaweed for some iodine 😗 paired with rice bcus ofc
4. soba noodles — well, any noodle theoretically (i dislike wheat personally haha 😆). instant soba is extremely fast to cook and you only need to add in the dipping sauce/broth. i also love korean cold noodles (mul-naengmyeon) — you can buy the broth and pickled radish in bulk + add finely cut carrot and cucumber, boiled egg, and vinegar/gochujang/etc. to liking
5. japanese curry!!!!! my favourite :) finely diced brown onion, potato and carrot + tofu (any kind, try tofu skins too!) because it cooks the fastest
6. sometimes just a fried egg on toast guy. salt/pepper/garlic powder + sriracha (maybe kewpie too)
7. id put quiche with a premade puff pastry but im still fighting to perfect the consistency of the filling😞

my favorite way to prepare cauliflower is sauteed in a high-heat-friendly neutral oil (canola<3), with turmeric, black pepper, cumin, paprika, chile powder, a few drops of dark soy sauce and like 8 grains of dark brown sugar. it's so incredibly delicious on its own or as a side to basically anything, or throw some small white potato chunks and chickepas in the pan too and serve it as a main course
my favorite way to prepare napa cabbage and similar is to cut off the tips of the leaves, wash and lightly salt them, let them sit for the time it takes to make an instant pack of spicy kimchi ramen, drain the liquid from the cabbage, then pour the hot ramen broth over them (serve in the same bowl as the ramen!). the broth will cook it slightly without making it lose crunch, and it's light and refreshing to bite into it while you enjoy your noodles
my favorite way to prepare king oyster mushrooms is to cut them into strips (or just use seafood/enoki mushrooms whole instead), saute with butter, light and dark soy sauce, lime juice, and an eensy bit of hot sauce. when theyre cooked, serve them as the main flavor component in sushi or spring rolls, with carrot and/or cabbage and/or tofu and/or red bell pepper and/or salmon etc. delicious!!!!
my favorite way to prepare kale is to massage it (with a dash of rice vinegar if you want) until it becomes softer and slightly brighter green, then serve as the base of a salad with fried tofu or tempeh, steamed sweet potatoes, a scoop of cooked brown rice or farro, cucumber slices, and a thin peanut sauce
omg :’) this is so sweet, i am delighted. i am 100% trying these, ESPECIALLY king oyster in sushi, that sounds amazing. the tip about napa cabbage in ramen is excellent too. thank u so much for sharing with me 🥬💚🥬💞

Alright so I'm watching the anime The Way of the Househusband on Netflix and writing my thoughts as I watch. This might be a tad unhinged, but here we go. As always if you liked this content feel free to be me a coffee. Also, yes, I do know that there a multiple episodes in each episode but I'm going to number them by how they're contained and labeled through Netflix as that's how I'm watching it :)

He's so loud, Again the food in this series really does deserve its own analysis post, overtime is exhausting,

urg the rap battle, so unnecessary, the explanation of what a rap battle is, the punch of silence, well ok
take it easy (yeah no, this guy has no chill), febreze the sheets, instant noodles as a vice lol, Masa helping him take it easy but as a horror show, Tatsu kicking him as a flight or fight moment
Wanting second place instead of first for the rice, and Miku wants the vacation, what a bribe, the kid wins of course
buffet battlefield, welp I'm hungry now, fruit with cream cheese is a delicious combo, aww the splitting of a desert
Oh, the dad wants to do the hotpot, Dad and Miku cooking like each other, Miku being a wild child (this explains so much), aww the dad saying she has someone else to protect her now and then Tatsu saying he has the dad's back, the mom being the true master is perfect

Virus depicted as a group of punks, trying to head off a cold through early preventive measures is such a mood, Miku being the light aww, the light with grenades lol
new threads, Masa is so not subtle, the brown powder as opposed to the white powder, and Masa has officially broken, Pine Dew huh, Tatsu sleeping with eyes open, the utter chaos and Masa being the sober one, the next day drawing of them is adorable

counting to try and get to sleep, calming sounds turning to dark past is hilarious, also him without glasses is rather adorable, accidentally made a whole meal (he's got adhd a bit doesn't he), the cat being awake

My Husband Said This is the Best Chicken Casserole I’ve Ever Made
I was making our family’s weekly meal plan the other day and wrote down chicken casserole with broccoli and parmesan truffle bread for Monday. I have made chicken casserole a hundred times, but wanted to change things up a bit this time.
Every time I make it, I always kind of combine a few recipes I’ve found on the web, and I think I finally came up with my own recipe that our family likes best. The only problem is, I haven’t ever written it down to remember it for later. Until now!
When I made this the other night, PJ immediately said it was his favorite chicken casserole I’ve ever made. Is there a higher compliment than that? Since it got his seal of approval, I thought it only appropriate to share it with you.
Here’s what you’re going to need:
Ingredients:
2 cups instant white rice
2 chicken breasts
1 (10.75 oz) can cream of mushroom soup
1 (10.75 oz) can cream of chicken soup
2 cups of water
1/2 white onion, chopped
4 tbs olive oil
1 Hidden Valley Ranch Seasoning packet
1 stick of butter
2 sleeves of Ritz crackers
1/4 cup of chives, chopped
Garlic powder
Onion powder
Salt and fresh ground pepper to taste
Directions:
Preheat oven to 400 degrees.
Pour 2 cups of water into pan on medium to high heat. Bring water to a boil and pour 2 cups of instant white rice. Cover for 5 minutes. Set aside.
Then, butterfly chicken breast. Season to taste with garlic powder, onion powder, salt and pepper. 
Pour 2 tbs of olive oil into nonstick pan and cook chicken, about 5 minutes on each side. Side note: I cooked ours longer because PJ likes his chicken kind of overcooked and crispy, and poured a about 1/4 cup of water into the pan to give it more of a blackened vibe.
While the chicken cooks, chop onions and chives.
Once the chicken is done, remove from pan and set aside. Pour 2 tbs of olive oil into the same pan cook onions and chives on medium heat, about 5 minutes. 
Shred the chicken and place into a large bowl. 
Then, stir rice, cream of chicken soup, cream of mushroom soup, onions, chives, and ranch packet into the large bowl with the chicken. 
Grease the sides and bottom of a large pan with butter and pour the mixture into the pan.
Meanwhile, melt the stick of butter in a large microwave-safe bowl. Crush up the Ritz crackers in the packet and pour them into the butter and mix well. Pour the crackers and butter mixture evenly over the top of the casserole.
Cook the casserole in the oven for 20-25 minutes or until the Ritz crackers turn golden brown on top.
