This week we retested two of our very favorite Christmas cookies that we grew up with in Italy - our family’s recipe for ‘Roccocò’ and ‘Mostaccioli’ or ‘Mustaccioli’ as my Neapolitan family would say. ‘Roccocò' are ring shaped cookies that typically contain candied fruit or candied orange, while ‘Mostaccioli’ are soft, diamond-shaped cookies coated in dark chocolate. These spiced cookies are a gastronomic tradition rooted in Neapolitan culture for generations and are always the delicious ending of all lunches and dinner gatherings with family and friends during the Christmas holiday. After several tries, we were able to convert them into gluten-free deliciousness. Our 'Mostaccioli' needed to be a bit thicker, so we will continue with our 'kitchen chemistry' process until they are perfect.
