I know they’re OTT but I absolutely LOVE Crazy Shakes occasionally. This is a memory that came up from our visit to Black Tap a few years ago. The NYC eatery is a legend for their massive cake, cookie, dessert-topped thick shakes. We revisited them here in Kuwait. Playing in the powdery snow plus reading a book set in the South and watching Top Chef New Orleans last night reminded me of the sugar-covered, pillowy goodness of beignets. So, of course, I had to make some. I truly love them with a hot cup of tea - coffee for my hubby. Here’s a recipe so you can make your own: Dough - made two hours before frying: - Add 7 g fast action yeast, 1 teaspoon sugar and 3/4 cup lukewarm water to a bowl and stir to dissolve the sugar. Leave for 10 minutes. (I know that you can add this yeast directly to the flour but believe me that mixing it this way first is much better for these beignets. I’ve tried it both ways). - In another bowl, mix 1 egg, 1/2 cup evaporated milk, 1/2 teaspoon salt and 3 tablespoons of softened butter. - Sift 3.5 cups bread flour into a large bowl. - Add the egg mixture to the yeast mixture and then add this to the flour. Bring it together in the bowl with your hands until it forms a dough. - Turn the dough out onto an un-floured surface and knead until smooth and elastic - approximately 5 to 10 minutes. - Place the dough in a lightly oiled bowl that’s large enough to hold double the dough’s size. Cover with lightly oiled cling film. Leave to rise to double it’s size - for about 2 hours. - Once it’s risen sufficiently, take it out of the bowl and roll it to about a 1.5 cm thickness. Cut into equal sized blocks - about 5 cm. - Fry in a deep fryer or pot in hot oil (about 160 degrees Celsius). First on one side then the other. The dough will puff up into little pillows when frying. - Drain on kitchen towel then, while still warm, transfer to a plate and dust liberally with icing sugar. Serve with Café au lait (milky coffee), hot chocolate or tea. This day 2019 - our last pre-Covid family vacation to the Maldives. This was hands down the most mind-blowing lunch I’ve ever had - 5.8 meters below the sea, enclosed in a glass structure so that you’re literally sitting in a magical underwater world. It all starts with a bit trip to the island with hubby followed by a walk across the sea and down spiral staircases as we watched the waterline rise then disappear. The restaurant is a marvel of light and shades of blue. I expected Poseidon to pop by but he sent loads of colorful reef fish instead to greet us. The food was delicious, service faultless and going to a fine dining establishment in shorts and without shoes on, suited my hubby just fine. I’ve been so bad with posting and messages etc - I’ve been catching up with “settling in a new country tasks” now that Covid restrictions have lifted a bit and we can complete those chores. Plus, there’s been some work done on the house and I’ve had a surprising amount of theory and prac prep at the cookery school. I’ve got my first term’s final exam tomorrow and our final prac exam on Thursday. Then, off for a week and a short trip to the highlands. My first time in the highlands and I can’t wait. I’ve heard so many wonderful descriptions of the Scottish highlands and lochs. I’ve still got stacks of photos to go through and post but I plan to do a bit of that next week and to catch up on messages too. Valentine’s Baking Countdown and Recipe Share ~ ❤️ Blueberry & Coriander Bavarois, Black Pepper Shortbread, Blueberry Compote, Frosted Blueberries and Dried Blueberry Powder. 🫐🌿 Swipe for recipe. I love Bavarois. It’s creamier than panna cotta and because I love dunking biscuits, this dessert is perfect as it practically begs for a biscuit to scoop some of it up. I wanted to use blueberries and a look at the flavour thesaurus, matched it perfectly with coriander.... I was skeptical but it worked! Beautifully. This dessert is a blueberry explosion with blueberries served in a variety of ways. I needed that cookie and something that can do justice to the sweet and tart dessert. I found the perfect cookie for it on the @ent_cookeryschool website - black pepper shortbread. The flowers from @wellockshome gave it that final pop I wanted. Burns Night cooking and recipe share countdown Day 3. My adaptation of Modern Cullen Skink by @chefmarkgreenaway . I’ve had the traditional Cullen skink before so dived straight into a deconstructed one. I felt such a sense of accomplishment after making this. I will not be lying when I say that I’ve been dreaming about this dish ever since I saw the recipe last week. It was remarkably easy as the instructions were super clear and ingredients easily found. I added a bit of “me” to the recipe with the addition of saffron and bay leaves in the soup. My hands always move towards a spice jar, it seems. I also added some quick fried samphire! It was sooooo good. Perfectly moorish. I don’t think I can eat Cullen Skink any other way after this. Burns Night cooking and recipe countdown day 2. My teen kid: “What’s for dinner?” Me, deadpanned: “Cock-a-Leekie.” My kid: “What is leaking?!!!” Lol 😂 With a name like that I HAD to try out this Scottish, chicken (the cock) and leek (yeah, you got it - the leekie) soup. First, I made the traditional version (swipe for pic) which was wholesome and delicious. I used @felicitycloake ‘s article in @guardian as a guide and added thyme to mine. I made a consommé with my homemade chicken stock, poached the veg in non-alcoholic Chardonnay and poached the chicken in strongly reduced stock and non-alcoholic white wine and crisped up the chicken skin to make crackling. Burns Night 🏴󠁧󠁢󠁳󠁣󠁴󠁿 cooking countdown and recipe share. 👩‍🍳 Our first Burns Night in Scotland is coming up on the 25th - where the Scottish celebrate the birthday of the famous poet with much merriment. As lockdown has put a stop to that, I figured that I’d create my own kind of Burn’s Night for my family. With me, that of course, involves food. 😜 I found so many awesome Scottish recipes and grocers that the only way I can try it all out is with a cooking countdown! I found this gorgeous starter recipe on the @visitscotland website - smoked salmon cannelloni by @chefmarkgreenaway (thank you). I adapted the recipe slightly - I used dill instead of chives in the mousse and I made mini oatcakes to add as a garnish so I could scoop up the mousse with it. The starter is super simple to make and looks like art. I had a bit of extra mousse leftover which was a great snack with little oat cakes. I used the oatcake recipe in the ebook too (I don’t know which chef contributed that one) but added 2 tablespoons nutritional yeast and chives for a bit of extra flavour (so, so good). With lockdown looming on the 26th Dec and the current 6 pm curfew, we decided to go out for Christmas Eve 🎄afternoon tea ☕️ 🫖 at my favorite afternoon tea venue ever! We dropped off homemade treats and Christmas 🎅 cards at every house on our street today. 🎁 Covid safety may be preventing us from meeting our new neighbours, in our new country, but we figured out that we could still wish them Happy Holidays and send that positivity out there. It’s going to be a lonely or quiet Christmas 🎄 for many. Moving to a new country during Covid is tough as it is and the restrictions are very isolating BUT I honestly don’t want to dwell on that. So, my amazing hubby (who supports all my mad ideas) and I decided to remind ourselves to be so, so grateful and to do something FOR others as we can’t do anything WITH others. (Masks and gloves were worn, food safe anti-bacterial measures taken and 2 meter distances maintained). Burns Night cooking countdown and recipe share Day 5. I’ve experimented with haggis and in three different ways. Swipe for my Cape Malay Haggis Curry recipe. Cape Malay curries are mild but bursting with flavour. It’s the curry I ate a few times a week growing up. You can always up the heat by adding chillies. In the first pic, I made spicy veg haggis bajias with a buckwheat, preserved lemon, herb and avo salad. I used @simonhowiebutcher veg haggis.In the second is the Cape Malay Haggis curry served with pea pilaf and tomato and onion sambal. (Recipe shared in my story today and swipe the pics for it.) Lastly, I tried Finlay’s of Portobello’s Asian haggis with neeps and tatties (mashed swede and carrot and mashed potatoes). One would think that I’d be all haggis’ed out but nope... not al all. Panna watta, panna scotta, panna cotta. (Sorry couldn’t resist.) 😁 Burns cooking countdown and recipe share days 4 and 5. (I was too busy cooking to post yesterday so today’s a twofer. 🥘) I’m in love with this Scottish cheese - the perfectly creamy, slightly salty crowdie. Transformed into a luscious panna cotta, and served with delectable toppings such as butternut crisps, beetroot purée, cress and oatcake crumbs, it’s sure to be a crowd pleaser (yeah, couldn’t resist the cheesy pun 😁).
