it’s funny, isn’t it, that I can’t eat coconut without feeling faint. that the texture of stuffed olives turns to foul rot at the back of my tongue, that cauliflower makes me sick for days.
isn’t it funny, mama, that the very food you love is what turns my stomach? xanthan gum instead of sugar, cauliflower instead of pizza dough. coconut fat instead of butter, coconut milk instead of dairy, coconut fat instead of oil, coconut laced in everything that ever touches your pans.
when i am fourteen, i bring home cadbury chocolate from England. to share, I say, smiling still. in the morning, none of it is left. my mother turns a whole packet of baking powder into her cake batter. i won’t eat that, i say.
she laughs.
when i am twenty-four, I try a vegan dish a friend made me, hours of love poured into a plate. you can’t taste the coconut at all. the first bite i take is foul by the time I swallow. it takes all day to get the taste out of my mouth.
(when I was just a child, I once ate twenty tablets of sweetener and cried for days. my mother looked at me and sighed.)
all my life, my mother diets. all my life, she swaps out fat for coconut. all my life, she weighs and she prods and chocolate disappears from the pantry.

Today is going to be great! I have nothing I have to do but drive Ender around. I drop him off at school; then I’m going to workout and have coffee / read until it’s time to pick him up. Then I’m going to pick him up and take him to my mom’s house. Then I’m going to have a leisurely lunch all by myself and then do some shopping. My mom is ADAMANT that she buys me like, a nice thing for Christmas this year, even though I have repeatedly said that I really don’t need anything, but it occurred to me the other day that this might actually be a great opportunity to get the doc martens I want (the black leather Chelsea boot). So I’m going to go try some on today. I like the look of them a lot just don’t know how I’ll like them on me. I also need to get a couple remind house things and things to make a spicy charcuterie board for family Christmas next weekend - we’re all making charcuterie boards with varying themes. I’m gonna do hot wings, some sort of spicy mini meatballs, buffalo cauliflower bites, chili cheese dip, salsa, and tortilla chips. Oh, and ranch, obviously. Maybe spicy ranch? So I need to get food and probably some sort of display containers and board for that.
But that’s all I have to do today! I’m also going to try and finish ACOTAR (maybe 40 pages left?) and order pizza for dinner. I’ve cooked elaborate dinners every day this week and I’m over it, lol.

Levi is sitting with the Lynch family as they get ready for pizza night.
Everyone is ecstatic when Luis comes home with the boxes of pizza and a plastic bag full of sodas. Evidently this place has a great reputation for delicious pizzas.
Eliza takes some of the boxes and sets them on the stovetop, looking for her veggie supreme on cauliflower crust.
Reuben sneaks his box of BBQ brisket pizza and takes one of the 2-liter sodas and walks off to his room.
Levi sits there, nervously tapping his fingers on the table.
Luis check up on him “hey, are you okay?”
“Hm, oh I-I think I am okay.” Levi replies “I am not used to being down here during dinner.” Luis could see the excitement was getting to him a bit.
Luis pats his back and walks back over to the stovetop, grabbing a pizza box and a smaller box and bringing them over.
“Here, I got you some chicken wings too.” He said setting them down in front of him.
Levi looked shocked. “Oh!”
Eliza was taking a bite when she saw this exchange “Oh!” She raised her hand in front of her mouth to finish her bite. “The wings from this place are amazing! I wish I could get them again. You’ll like them Levi”
Levi took the boxes from Luis and looked at them blankly “this is- thank you.” He looked up at them, tears in his eyes.
“Of course buddy.” Luis said “did you want to eat here or in the living room? I was gonna put on a movie.”
Levi thought for a second, his arms still embracing the pizza boxes “I think I will join you in the living room.”
Luis nodded and grabbed the last pizza box, a small Hawaiian for him, and took it with him as he left the kitchen “Oh, and that other soda is for you. It’s ginger ale, helps with upset tummies.”
Levi looked over at the golden soda bubbling in its bottle “ooo.”

Pizza night menu idea
For this menu, I envision a variety of toppings ready to go so guests can easily customize their pizzas. Have the pizza crust ready and perhaps already sliced. Once it has finished dehydrating, you can keep it in a warm oven [turned off so it doesn’t burn] until guests are ready. 
The crust:
high protein pizza crust: this delicious pizza crust makes a fantastic base for any toppings all sorts of toppings.
fiber-rich pizza crust: if you prefer a springy crust, try this one. it has psyllium husk in it. [this is the pizza pictured above]
Pizza toppings: 
fermented cashew cheese: try mixing in sundried tomatoes or Italian seasoning
marinated mushrooms
cauliflower crumbles or really anything from this tag
Sauces:
Basil pesto
sundried tomato sauce
garlic alfredo sauce: I can’t be the only one who loves alfredo on pizza. I recommend using Italian seasoning in the sauce.
Other good toppings include:
olives
pineapple
thinly sliced spinach
veggies such as tomatoes or bell peppers. you can marinade and dehydrate them or leave them as-is.
avocado
truffle oil
Side items:
So many things go great with pizza. I’d recommend one of these:

Drink:

Pizza Problems
I know all marriages run into rough patches from time to time.  It could be something like money problems to differences in how to deal with the children.  Heck at one point the wife and I locked horns about this little Hula Dancing Dashboard Doll that I picked up at a yard sale and displayed in our car.  Just looking at her bouncing around made me smile.  Well, my wife hated it.  She was hula dancing for two weeks and then surprisingly I found her in a kitchen drawer.  My wife said she was putting her foot down about that little Hula Girl in the grass skirt who loved to dance.  To be honest to this day I get a little sad when I watch NCIS Hawaii.  Let's be honest we wouldn't appreciate the sunny days as much if we didn't have a few storms once in a while. Well, the wife and I have come upon something that is causing tension in our home.  The weird thing is this was something that I thought made our marriage stronger and now it's causing tension between us.  I can sum it all up in one word.  Pizza!  We used to go out as a family and get a couple of pizzas and laugh and share about our day.  Now as soon as we go to order I start to get that feeling like when the dentist is getting ready to give ya a novocaine shot.  I like cheese and pepperoni and I'm fine.  You want a couple of mushrooms on it or some tomatoes, even green peppers.  You do what makes you happy.  I can live with it. (I'm a pleaser.)  The kids have the same attitude about our pizza.  But over the past year, my wife's topping & cooking demands for her pizza have gone off the rail.  My children even look at me with hopeless expressions as they hear what their mom demands on the pizza.  We used to order two pizzas to enjoy as a family.   We still order two but only one the three of us enjoy and my wife demands her unusual pizza that no one will touch but her.  She'll have two slices and no one will touch the rest. (She'll say to her massive amount of leftover pizza.  "Honey, we'll take it home and you can take it to work for lunch tomorrow."  )  That's not gonna happen.  My dog even sticks her nose up in the air when offered a slice of my wife's pizza.  We went out the other night for pizza and as the waitress took our order my wife told her she wanted her pizza well done.  The waitress replied; "Oh don't worry we do all our pizzas really well.  My wife goes "No I want my pizza well done, as in I want the bottom of it cooked to where it's almost burned.  I want a crisp bite on my pizza."  The poor waitress was woozy as she left our table.  I asked my wife if every time we order pizza now it has to be a production.  I just want a simple cheese and pepperoni pizza.  I do not want a cauliflower crust.  No jalapenos, no goat cheese.  Please no sprouts or leafy things on the pizza.  Pizza should bring us closer not push us apart.  I've always believed pizza is the food of love and togetherness.  I've always thought that in the Garden of Eden if Eve would have had the option of a slice of pizza or the apple, she'd have taken the pizza.  My wife and I for our first date had pizza.  A plain cheese and pepperoni.  That's where the magic all started.  The other night when we were eating pizza and she had her crazy topping pizza I just looked at her and thought where is my cheese and pepperoni lady love at?  I'm hoping this is just a phase.  My children won't join me with an intervention because their mom spoils them too much so even though they agree with me they will not do anything to mess up the gravy train they have with their mother.  So as of right now I'm being patient praying my lady will eventually regain her pizza sanity.  But to help me through this tough time my Hula Dancing Dashboard Doll is going back up in the car.

One of our favorite parts about the Super Bowl (Feb. 12, 2023) is how it can bring people together, united over one common goal—watching Rihanna in the halftime show. 😉 We jest, obviously we’re talking about the food!
