Spent the evening prepping a big pile of apriums (75% apricot 25% plum hybrid) to make wine! I've made plum wine like 3 times before but only with the little italian prune plums that grew at my old house. It always came out nice so I'm excited to see what comes of this experiment too!

So far I've cut up and pasteurized a couple boxes full of the slightly off fruit from my work at the farm stand. I cooked it till it was a pretty homogeneous slurry then let it boil a while to kill any potential bacteria and hopefully break down a few of the starches into more fermentable sugars. That does mean I have to rely on yeast I introduce instead of wild yeast, which is more standard but different from the ways I've done it before where I would do a wild ferment first and inoculate it with champagne yeast after about a week.

So tomorrow I gotta go get my yeast, still going with my champagne yeast standby cause it tolerates high alcohol well and I want to make a pretty strong batch, plus bottling some a little early to have sparkling bottles is always fun. I'm also gonna grab sugar and do a couple other little fun twists that I think will taste good with it. I saw a video about beer brewing that pointed out that the sugars produced when grain is roasted darker can create a sweetness that doesn't get fermented out because they aren't the kinds of sugar that yeast can digest. So I figured since this is basically apricot flavored, a little bit of caramel flavor would be a welcome complement so I'm gonna cook a couple more apriums down into a really dark caramelized paste to add along with the sugar and maybe a some molasses as well. I think those darker notes will help with balancing the more acidic side of the fruit as well.
