Every atla AU is like "aang was found later" or "aang was found earlier" or "aang died and someone else became the next avatar" or "aang never got encased in ice and died 100yrs later and yue became the next avatar" but what about an AU where Aang never got found at all and remained encased in ice forever?
The world would have to accept that the avatar will never be reborn. No one knows what happened to the cycle. Even spiritual experts are absolutely baffled bc by all measures, the cycle shouldn't have stopped at all. People assume the young airbender would have been killed during the fire nation raids, while in the avatar state. But there would have been reports of that. People couldn't have missed a glowing kid? And if the cycle is supposedly gone, why do we still feel Raava's presence?
All contact with the spirit world eventually ceased. Even spiritual elders like Iroh eventually aren't able to meditate into the spirit world anymore. The Fire Nation's drill plan would have succeeded. They would have conquered the Earth Kingdom fully. The only true free nation remaining would be the Northern Watertribe, who remain in their ice fortress locked away from the rest of the world forever. Airbenders remain extinct.
Zuko gives up on his search for the Avatar after 4 years. At this point the 17yr old realizes he was sent on a fool's errand. It was his father's intention for him to never return. Him and Iroh abandon the ship, and make it to Ba Sing Se, where they settle and become Earth Kingdom citizens. Sokka and Katara leave the Southern tribe around the same time, in search of Hakoda. With Katara's limited waterbending skills they make it to Whale Tale island and catch a boat from there. Then they travel the Earth Kingdom with the limited information they have to find their dad. Toph eventually runs away from home to go to Earth Rumble competitions all over the Earth Kingdom. Her goal is to become the world champion. Suki's ambition to help refugees and fight in the war would cause her to take a troop of Kyoshi warriors and leave Kyoshi Island.
These people were destined to meet, with or without Aang. Their paths would cross one way or the other. A banished prince, the son and daughter of the Southern Watertribe chief, the leader of the Kyoshi warriors, and the only heir to the Bei Fong estate, they would make a team and devise a plan to stop the war. But they would always feel like something is missing. And that something is beneath the ice, in a deep eternal slumber. Would they even succeed?

Toph: My dad says it would be catastrophic but he's always wrong about everything so he must be wrong about it too.

Not rude at all!
At first, Toph is wary of Bumi--the guy seems a little weird and she's not super interested in having some old fogey teach her what's what when she's already the coolest earthbender around, thank you very much. She's not sure what to expect when she's invited to Omashu on a special solo trip...turns out Bumi thinks her seismic sense technique is so cool that he would like her to be HIS earthbending mentor. Having a student seven times her age is a flex she just can't pass up, and the two become a chaotic duo.
When people ask Toph how they are related, Toph introduces herself as Bumi's uncle. If you ask Bumi, he says that Toph is Flopsie's uncle.
Speaking of Flopsie, Toph loves the goat gorilla and dreams of riding him into battle to strike fear into the hearts of her enemies. (She's had enough practice riding Appa that lack of vision shouldn't be a problem). Since battles make themselves somewhat scarce after Aang defeats Ozai, she has to settle for riding him into international peace talks to strike fear into the hearts of Fire Nation diplomats instead. (When Bumi is asked why he lets her borrow Flopsie so often, he replies, "Well, she is his uncle.")
One ride on the mail system is more than enough. She does help him reformat the ride to add an underground passage, but riding it again is a huge nope.
Bumi helps Toph come up with some amazing ideas for testing the skills of her Bending School students.
Toph's parents are extremely excited to have their daughter bring a king for dinner...until the first course culminates in a toe war (like a thumb war but with toes) and dessert is interrupted by a mud fight.
In Omashu, there is a huge statue of the two of them holding a giant badger mole over their heads. It is made out of rock candy.

Thoughts on Toph becoming a cop?
Its dumb but unless you think toph is opposed to the concept of society it makes sense. She sees republic city being formed and realises she has a chance to make the rules and make them fair, unlike the 4 nations whose rules were carbed im stone centurues ago

No, I don't.
With the caveat that of course anyone can write what they want in their own fiction, I don't think we have met Lin or Suyin's fathers, and I suspect we never will. And truthfully I like it that way. I feel like it adds a depth to Toph's character and the world that we wouldn't ordinarily get, a sense that her life continues on whether or not we get a peek into it.
Also, contrary to what YA literature likes to show, most people don't meet the people that they date in their 30s and 40s, back when they were teenagers. Toph had her two children decades after the show ended, with a decent gap between the two of them, with two different men, neither of which we will probably ever meet, and both of whom she probably met not all that long before she had a child with them. A year or two rather than twenty or thirty years.
And like, we have no evidence that Toph actually had a particularly meaningful relationship with either of the fathers of her children. Or even that Toph ever had a long-term relationship. I think that's a daring and cool characterization choice for her. And this is part of why I find speculating about the fathers of Toph's children, especially in the form of shipping and shipping related stuff, to be absolutely uninteresting.
I'm sorry, I'm aware this is probably not the answer that you were looking for. These are just my particular thoughts.
