All of It
But didn’t you have the whole world, the wind and clouds – Olav H. Hauge And the bluebirds, the worn footpaths, and the wilds for anyone brave enough to tread; stoic mountains on the horizon that grew more powerful in communion; a hawk circling above, kiting as if being lifted by music and floating between sky and cloud; the lifeblood of rivers, creeks and brooks, veins and arteries pumping back…

Here in New Orleans for example, there's a huge Vietnamese population, and that's because of the shrimp boats - they're all owned by Vietnamese fishermen, and so you see a lot of that in the culinary landscape here. There’s so many people that travel and migrate, and they end up bringing about changes to the landscape of so many places. Everybody can relate at some level on food. Compton, do you think that food can change the world? This interview has been edited and condensed for clarity.Ms. And hopefully they become not the minority, but the majority. We have to support them and help more of them grow. Some of them are very small, so if it means I can only order from them once a week, I will do it. We also work with Kahawa 1893, a coffee company owned and run by a Black woman that is based in Africa and employs Black women farms for harvesting coffee. Locally, we work with Le Petit Jardin which provides the most beautiful produce. One of the biggest things I’m trying to do now is shine a light on Black producers because we don’t have a lot of them. It’s about getting people to respect sustainability and farmers, and know where their food source is from. If it’s not for a sauce, it’s for a puree. If it’s not for a garnish, it’s for a sauce. I also pride myself on telling staff in the restaurants that we don’t waste anything. If we couldn’t use it, it would become compost. It’s not just putting a seed in the ground and everything flourishes. I think a lot of people don’t understand how hard farming is. Growing up with access to fresh produce taught me a respect for those things. What did that experience teach you about food sustainability? Your family had a farm when you were growing up, which they still have. It’s always about the seasonality on the islands. Whenever it’s mango season, you pick your mangoes and you can make mango salad, mango jam. I miss mango trees, avocado trees, papaya trees… all in our backyards. We’d have grilled fish with a very simple citrus or lime sauce, or pepper sauce. What do you miss most about living in the Caribbean? I was also able to cook with chefs I admired, who became lifelong friends, people like Tom Colicchio and Padma and Gail, also people like Emeril Lagasse and Donald Link who are still in New Orleans. I was able to not think about things and just cook on a whim. So I just saw it as, “I’m just gonna enjoy each challenge,” even though it was very stressful. I want to earn a title.” As each episode went by, it was less about winning and it was more about enjoying the moment because I didn’t really know if I would make it that far. I went in with, “I want to win the grand prize. What were some of the most surprising or enjoyable moments you had on Top Chef ? It was a meeting spot for people to get together. When I did get to open my first restaurant, Compère Lapin, that made it even more special for me, because people-especially here in New Orleans-were very excited that somebody was cooking Caribbean food in a restaurant. It was about showing that each island is very different. One of the things I wanted to do was showcase Caribbean food and really let people know it’s more than jerk chicken, rice and peas, or conch fritters. I wanted to be a part of that.īut it was being on Top Chef that kind of changed everything for me. The biggest thing for me growing up was seeing my mom and my grandmother in the kitchen, always doing something very special. Of course on the weekends, that was also a big moment, sitting down as a family and talking about things. We’d always sit down and have lunch together, which is commonly the biggest meal in the Caribbean. For all my siblings, and my mom and me, things were always centered around food. Growing up in the Caribbean, my family was very close. What have been some of the formative cooking and eating experiences throughout your life? Sweet July caught up with Compton to talk about the experiences that have shaped her relationship with food, her time on Top Chef, and what her family’s farm taught her about sustainability.

Ranking the Restaurants
Now that I’ve been back a few days, I’ve had time and distance to reflect on my trip, and the amazing food odyssey that I experienced. As a part of that, I thought it would be interesting and fun to score the restaurants.
I decided to borrow my ranking system from the Washington Post’s Tom Sietsema. Here’s how it works:
First, any restaurant with a star is excellent. Just to make the list and be scored means that the place is worth a visit. The good news is that thanks to my research, I had very few restaurants come through with zero stars, but they’ve got their own space below. With that in mind, here’s what the various stars mean:
**** — Outstanding. Really something special. Usually marked by an interesting point of view, innovative or elevated approach to the food, technical excellence and great service. Among the best restaurant experiences I’ve had anywhere, beyond this trip. *** — Excellent. Great food. Great service. But not quite as distinctive or elevated as a four star place. ** — Darn good. A place that I’d be happy to visit again. * — Perfectly fine. Often these were places that I liked, and was glad to have tried, but wouldn’t go back. 0 — Crap. No good. I’m sorry I visited, and I discourage anyone else from going.
So, with the scoring system sorted, let’s look at the scores:
**** Stars Outstanding, innovative and elevated.
Peg Leg Pete’s Pensacola Beach, Florida
Michelin’s criteria for two stars is “excellent cooking, worth a detour.” I would happily plan a long weekend in Pensacola just to return to Peg Leg Pete’s. Yes, it’s a dive bar. Yes, the menu is almost entirely fried. Yes, the food was served on styrofoam. And I don’t care a whit. The seafood was fresh and perfectly cooked. The beer was local and excellent. The staff was kind and welcoming. And the Key Lime Pie was made by someone’s grandmother in her home kitchen. The bill was less than $30. For all of the high-end places I tried, this was the best meal of the trip.

Shagbark Richmond, Virginia
Chef Walter Bundy spent years creating high-end, French-inspired classics at Lemaire. Now he’s using those techniques to elevate southern cuisine, making the most of local and seasonal products, and delivering something that’s next-level good. If a Michelin inspector ever made it to Richmond (fat chance), Shagbark would be worthy of serious consideration for a star. Bundy’s food isn’t as playful and evocative as Sean Brock’s: The experience is more serious and considered. But Shagbark would be a great restaurant in any city. Richmond is lucky to have it.

Pimento Cheese and Ham Salad at Shagbark.
Fisher’s Orange Beach, Alabama
Fisher’s has pulled down big accolades. Like Brock and Bundy, Chef Bill Briand is elevating southern food, and using the best ingredients, plucked out of the sea and delivered to his kitchen from the fishermen who use his marina. I’m sorry I didn’t get to try his fine dining offering, but his ability to elevate a simple fish taco, reimagine sweet potatoes, and deliver it with a sense of humour across a bar tells me all I need to know. Like Peg Leg Pete’s, I would happily go out of my way to return to Fisher’s.

Ajax Diner Oxford, Mississippi
Located on a busy town square in the middle of a college town, you could forgive the Ajax for turning out burgers and beers. Instead, they produce home cooked classics that you’d be happy to eat at your grandmother’s kitchen table. The Ajax was probably the most traditional place I went, but they embrace tradition all the way, revel in it, and turn out great food flavoured with love. If I lived in Oxford, I’d be a regular.

*** Stars Excellent. Great food and service.
Commander’s Palace New Orleans, Louisiana
High-class throw-back cooking in New Orleans most beautiful neighbourhood. What’s not to love? Great ingredients brought together into some of the south’s most iconic recipes. Service with a smile and laugh.
Gallatoire’s New Orleans, Louisiana
Cornerstone of the French Quarter. Stand in line with local residents and well to-do out-of-towners, then revel in some of the best cooking around. Trust your waiter. They know what’s fresh and tasty.
Husk Nashville, Tennessee
Sean Brock’s Nashville spot. His menu was playful and brilliant. The food was excellent. And I totally buy into his philosophy. I wish I’d been able to go for dinner, as I suspect that would have been a more elevated experience.
Indian Pass Raw Bar Port St. Joe, Florida
They harvest the oysters, then shuck them, then bake them, in just a few hours. Serve yourself. Pay for what you eat and drink. Settle in for the afternoon, or the evening. Worth a detour. You won’t regret it.
Le Bakery Biloxi, Mississippi
Vietnamese is now local cuisine across the gulf coast, and this is one of the best spots to find it. Fresh bread that a Parisienne would love. And you couldn’t find a better Banh Mi from Hanoi to Ho Chi Min City.
Monell’s 6th Avenue, Nashville, Tennessee
Home cooking around a communal table, making new friends over great food. What’s not to love? Ultra-traditional with fabulous flavours in big bowls. Another place that I’d love to be a regular.
Ravenous Pig Winter Park, Florida
Husband and wife team, James and Julie Petrakis doing their bit to elevate and renew southern cooking with a real emphasis on pork. From the homemade bread to the pork porterhouse, I left happy and full.
The Regional Kitchen & Pub West Palm Beach, Florida
Chef Lindsay Autry getting into the elevated southern game with her brilliant cooking. More homestyle than Husk or the Ravenous Pig, but building from underused classics like Devilled Crab. Homemade parker house rolls were a winner, too.
The Roosevelt Richmond, Virginia
Chef Lee Gregory’s place helped renew Church Hill and contributed to Richmond’s food renaissance. The Roosevelt manages to balance fine dining and neighbourhood stalwart, with great food I’d be happy eating every day.
Sally Belly’s Kitchen Richmond, Virginia
Nearly a hundred years old, and still delivering great food every day. If there’s better potato salad on the planet, I don’t know where to find it. Also, cupcakes. And egg salad. And, and, and. Visiting Richmond and missing Sally Bell’s should actually be a crime.
Spoonbread Bistro Richmond, Virginia
Stylish spot in the Fan by Chef Michael Hall. Another perspective on elevating southern flavours. Local and fresh. Great food driven by clever ideas. Another place I’d be a happy regular.
** Stars Darn good. Worthy of a return visit.
Allman’s Barbecue Fredericksburg, Virginia
Great Virginia-style barbecue. A classic. Huge portions. Yes please.
Blue & White Diner Tunica, Mississippi
Old-fashioned road-side diner with stellar Sunday buffet. The only place to eat in Tunica.
Cafe Bouchee Franklinton, Louisiana
Superb local fare with a cajun accent. Worth passing by.
City Grocery Oxford, Mississippi
Big reputation, but merely darn good. Chef Currence is evidently innovating elsewhere.
Dandguerre’s Nashville, Tennessee
Local meat and three that the tourists haven’t found yet. Definitely worth trying.
The Kitchen West Palm Beach, Florida
Weird atmosphere. Good food. Great coconut cake. That’s enough to bring me back.
NOLA New Orleans, Louisiana
Emeril Lagasse’s French Quarter spot. Cajun reimagined sort of works.
Obrycki’s BWI Airport, Maryland
Crab cakes in an airport. Are you kidding? No. If you’re in BWI, eat at Obrycki’s.
Pierce’s Pit Cooked Barbecue Williamsburg, Virginia
Great Virginia-style barbecue. An institution.
Puckett’s Nashville, Tennessee
Tasty breakfast. Favourite of local police. Good food and nice service.
St. Roche Market New Orleans, Louisiana
Food truck food behind permanent counters. Glad I went. Wish I lived nearby.
Taylor Grocery Oxford, Mississippi
Great catfish and other local delicacies.
* Stars Perfectly fine, but I wouldn’t return.
Apalachicola Seafood Grill Apalachicola, Florida
Local ingredients, but lacking the care and attention. Go elsewhere.
Away from the World Burger & Beer Bar Cedar Key, Florida
Decent burgers with a view.
Ballpark of the Palm Beaches West Palm Beach, Florida
Hot dog before the game, with a fixings bar that included sauerkraut. #winning
Brickhouse Barbecue Columbia, Tennessee
Perfect adequate barbecue if you’re just passing through.
Cafe Beignet New Orleans, Louisiana
Good beignets without the queues at Cafe du Mont. Next door to my hotel. Winner.
Champion Stadium Lake Buena Vista, Florida
Hot dog before the game. Yes, please. And darn tasty.
Cilantro Mexican Vicksburg, Mississippi
A much needed Mexican diversion.
Felix’s Oyster Bar New Orleans, Louisiana
No substitute for Acme just across the street. Go there.
Pancho & Lefty’s Tacos Nashville, Tennessee
Great tacos just off broadway.
Ruby Slippers New Orleans, Louisiana
Breakfast to battle the French Quarter hang over, just outside the Quarter.
Starlite Lounge Richmond, Virginia
Hangover cure: burger with chilli and a fried egg. Tastes better than it sounds.
0 Stars Dreadful and Disastrous. Avoid.
The Island Restaurant Cedar Key Florida
The infamous culinary crime. How could you serve clams and pasta with no sauce? I still can’t believe it. Catastrophic.
Mary Mahoney’s Old French House Biloxi, Mississippi
Frozen in time, but in all of the wrong ways.
The Grill at Libbie and Patterson Richmond, Virginia
Good sandwiches. Wretched service. Will never return.
Woolworth on 5th Nashville, Tennessee
Great idea. Amazing history. Bad food. Rooting for it to get better.

rant
I’m a chef who is also a woman and I’ve spent the better half of this day extremely angry at the men in my profession, all of them. The men I work with. Mario Batali. Anthony Bourdain. Tom Colicchio. Even Emeril fucking Lagasse. YEP EVEN HIM. Yes all men. I am making sweeping generalizations here but I’m pissed and for women in the restaurant industry, and specifically in the back of house I just feel like there’s been a great and utter failure to really address the problem of sexual harassment in the workplace or from people in positions of power. Perhaps it’s because I work with mainly men, I get to see how they really feel to a certain extent. They’re learning nothing. It goes one of two ways. It’s either “Why are you surprised?” or “Oops, sorry I bumped into you, I don’t want to get sued for sexual harassment.” Or in New Orleans the ever rage-inducing caution of “on your BESH”. As in John Besh, our fallen culinary hero who raised an empire out of the flood waters of Katrina. The dreamy chef with the floppy hair who turned out to be a sexual predator.
“On your BESH” is funny to dudes, HILARIOUS, because when dealing with fire and sharp objects if one is ever passing behind a fellow cook and they can’t see you, it’s your responsibility to say “on your back” so you don’t get stabbed or burned or the other person doesn’t trip over you. And now every time I hear someone say “ON YOUR BESH” instead while snickering behind me I want to turn around and say “SHARP” with my knife pointing in the direction of their balls, but I don’t because i have class.
And who am I if I say “that’s not funny guys.” I am a ruiner of fun. I am a bitch. I can’t take a joke. I am just one more catalyst in the toppling man’s man’s club that is bro culture in the restaurant industry.
It’s either a shrug and a “why are you surprised”. Or it’s some hyperbolic bullshit OOPS I BETTER NOT TALK TO YOU lest I be sued for sexual harassment. There is no actual conversation. There’s just business as usual, except all the big names are going down and none of the cool kids like them anymore anyway. p>
Chef Tom Colicchio has been quoted as saying “no one should be surprised”, about Mario Batali. WELL THANKS FOR THAT COLICCHIO. It’s like someone shrugging and being like “you should have known.”
NO I’M NOT SURPRISED. AND ALSO YES I AM. I AM ALLOWED TO BE SURPRISED, ASSHOLES. Don’t tell me what to think. How to feel. Nope. Not now. Not anymore.
And Anthony Bourdain, who’s career was what I once aspired to, “chef, author, traveler,” likes to make his supportive tweets, but would he still be tweeting them if he were not dating one of the Harvey Weinstein whistleblowers? It’s great that he’s so on our side, I really expect nothing less, but what if the spotlight was not on you? Where were these guys a year ago? 5 years ago? 10 years ago? When the love of food exploded and more women were getting into the kitchen. Why not then?
Just don’t tell me how to feel. Don’t tell me how to react. Don’t turn it into a joke. I once respected Mario Batali, I’ve watched him give lectures, his knowledge of Italian cooking had me floored, his inspiring words gave me goosebumps. He had me on the edge of my seat, proud of my profession and my place in it, and now I have to accept that his charisma was used to sexually harass women. We looked up to him and when some of us met him, he really let us down. Men in that executive chef position are treated as rock stars in a kitchen sometimes. All they hear all day is “YES, CHEF”. It takes a certain type of person to handle that kind of absolute power with grace and sadly I do not believe that most deserve it or can wield it with integrity. I’ve seen too much.
Now that Batali has been on a million cooking shows and has his own line of cookware, knives, and orange crocs, he’s not nearly as regarded among the current rockstars anymore. Once you get that famous you lose your cred, you’re seen as selling out. But still, his recipe for ribollita made my heart sing and I’m allowed to be fucking disappointed.
Being a woman in a kitchen is not easy. It’s fucking hard. When you are as authoritative as a man you’re seen as a bitch. When you don’t stand up for yourself you will become a doormat. It’s a Catch 22. I’ve accepted that, and I’ll proudly step into the role of BITCH.
Yes. I’ve definitely been sexually harassed at work, most of it happened when I first started at my current job and people didn’t yet know how far they could take things with me. The answer turned out to be NOT FAR. The kitchen hardened me though, and there’s both good and bad things about that. A woman has to work twice as hard in a kitchen as a man does, for a sliver of the respect he gets as soon as he walks in the door. She has to prove herself to be strong, that she won’t break into tears on a Friday night elbows-deep in tickets with the chef screaming at her. It’s already assumed that a man is strong on his first day. Being in that environment has turned me colder, I completely acknowledge that, and sometimes I don’t know why I do it anymore. But then I think about how on the best days, the kitchen, the restaurant, really is like a family.
I’m basically just disappointed in all these dudes. In their hubris. Arrogance. Their dick measuring I have to listen to every day in the kitchen. The egos. The meticulous and well thought-out and yet condescending statements for PR sake. From those we’re supposed to look up to. Nope. Not good enough anymore. Not for me.

Lets' communicate buying. There are shops anywhere in Las Vegas. Whether you want to shop for clothes from France or chocolate from Holland. I once spent over an hour in a sports activities memorabilia shop on the Mandalay Bay Casino searching at signed footballs. Not some distance from the strip is the Las Vegas Premium Outlet Mall, which has over a one hundred twenty stores like Armani, Calvin Klein, Liz Claiborne, Nike, Tommy Hilfiger, Zales Outlet, and plenty extra. Basically if you could purchase it anywhere in the world, you can in all likelihood find it in Vegas  dan de 72 con 188xoso Do you experience best eating? The restaurants in Las Vegas are worlds finest and offer each sort of delicacies you believe you studied of. Ever wanted to consume at a celeb chef's restaurant? Well in Las Vegas such notable cooks as Wolfgang Puck, Michael Mina, Bobby Flay, Nobu Matsuhisa, Tom Collichio, and Emeril Lagasse all have eating places. If fancy eating is not your component do not worry in Las Vegas accommodations you will produce other options like world elegance buffets, coffee shops, and even your favourite rapid food places.
Tumblr media
Maybe you will you like to play a few golf even as your in town, nicely that is not a hassle with over 30 publications in Las Vegas many that were diagnosed via Golf Digest as amazing publications. The Wynn casino even constructed a golf direction across the resort right on the strip. Remember to e-book your rounds of golfing on the weekend early because the tee instances fill up fast. So convey your golf equipment with you and play a few rounds.
The Hoover dam is about 35 miles faraway from Las Vegas and can be an incredible escape. There are some of tour alternatives to get there or even excursion the inside of the dam while you get there. You cannot truly imagine the dimensions of the Hoover dam till you truly see it.
For the bold among you there are numerous agencies that provide helicopter and small aircraft excursions of the Hoover Dam, the Grand Canyon, and of path Las Vegas. I took the night time excursion of the city lights for best approximately sixty bucks, and it's far an incredible sight. I become happy to get returned on strong ground though.
If your considering taking your youngsters, check and spot which casinos have things for them. You can continually visit the Circus Circus motel, where the circus is on the town yr spherical, and the Midway is usually ready for motion. Treasure Island is continually a first rate region for children. Just approximately all of the casino mega accommodations have sights for children from roller coasters to video games. Most Casinos' even can set up babysitting so the adults can have a night time in town.
Traveling to Las Vegas has never been simpler, or less high priced. With the ability to analyze room charges and holiday packages on the Internet you could usually get a great deal. So do not delay book your Vegas excursion to and revel in!

Ten best food shows on Netflix, Amazon Prime, Disney+ Hotstar
New Post has been published on https://apzweb.com/ten-best-food-shows-on-netflix-amazon-prime-disney-hotstar/
Ten best food shows on Netflix, Amazon Prime, Disney+ Hotstar
Tumblr media
Let me say it straight away— I am not a big fan of food shows. Cruelly aspirational, my kitchen looks nothing like the fancy ones on the show, and even if I were to follow the simplest of recipes, where the chef du jour is just throwing things together to create a fabulous dish, it would unfailingly turn into an unpalatable mess.
Being vegetarian by choice, I find it difficult to watch all that meat. But duty calls and as I dived headlong into the world of food shows on streaming platforms, I discovered the meditative calm of sushi, the anthropological evidence for Prometheus, the heart-breaking beauty of Havana, the unfailingly-disturbing Lord of the Flies and the joy of desserts. One of my favourite Bob Dylan lines suddenly popping up in the middle of a show was an added bonus. So here, in no particular order, are 10 shows you could check out to learn about the emotions, history and techniques of food.
MasterChef Australia
Tumblr media
Disney+Hotstar, Seasons: 12, Episodes: 768, Runtime: 30-120 minutes
With new judges, restaurateur and chef Jock Zonfrillo, food writer Melissa Leong and season four winner Andy Allen replacing Gary Mehigan, George Calombaris and Matt Preston, Season 12 of the cooking reality show is different yet with the same amounts of drama and intrigue. The mystery boxes, pressure tests, and immunity challenges do not fail to thrill as contestants create works of art from duck’s oesophagus, (really) chocolate, parsnip, parsley, fennel coconut, chilli, mango, lemon chicken and potatoes.
A mild Gordon Ramsay and Katy Perry are celebrity judges while the contestants are winners from previous seasons. If reality shows are your thing, you cannot go wrong with this veteran based on a British show from the 90s where amateurs and home cooks competed for the ultimate cooking prize. Season 12, which started to air on April 13, is into week 5 which is the Twists Week.
Jiro Dreams of Sushi
Tumblr media
Netflix, 81 minutes
When the hurlyburly’s done, when the battle’s lost and won, (cooking and restaurants always remind me of Macbeth), it is time to move to sushi. David Gelb’s documentary about an 85-year-old sushi master, Jiro Dreams of Sushi (2011) is beautifully calm. While the movie is all about the perfect cut, the freshest seafood, massaging the octopus for 45 minutes instead of 30, Jiro Dreams of Sushi also tells the story of fathers and sons.
Jiro Ono started working at the age of seven at a local restaurant. A formal portrait of young Jiro with his father holding his hand is all he has of his father, who seems to have lost his money and taken to drinking. Jiro says he did not go to his father’s funeral. Jiro’s elder son, Yoshikazu (50) who will eventually take over the restaurant, still works for his father. Jiro speaks of the kind of tough love he has dispensed to his sons (the younger son has opened his own sushi restaurant) to ensure they will be able to carry on. Even if you are not a fan of sushi, Jiro Dreams of Sushi, with its evocative music and dazzling photography is irresistible.
The Chef Show
Tumblr media
Netflix, Seasons: 3, Episodes: 20, Runtime: 26-34 minutes
This is a delightful show for all nerds, geeks and comic-book fans. In 2014 Jon Favreau wrote, acted and directed Chef, a charming film about a successful chef who gives it all up to run a food truck. Roy Choi, the creator of the gourmet Korean-Mexican taco truck, Kogi, was consultant for the film and trained Favreau on all the ninja chef moves.
Incidentally, Favreau directed Iron Man, the movie that set the ball rolling for the gargantuan Marvel Cinematic Universe. The Chef Show which premiered on June 7, 2019 is a spin-off of the film and features Favreau and Choi experimenting with fun recipes (yes that grilled cheese is a star) and breaking bread with some of the biggest names in the entertainment business. It was fun watching them do a pepper pot for Gwyneth Paltrow (nudge, nudge) at Goop and have Tom Holland discuss his audition with Robert Downey Jr.
Ugly Delicious
Tumblr media
Netflix, Seasons: 2, Episodes: 12, Runtime: 45-55 minutes
Chef David Chang uses popular food to dissect the concepts of travel, history, culture and the notion of authenticity. The first episode, which premiered on February 23, 2018 looks at pizza—from the uber traditional pizzas in Mark Iacono’s pizzeria, Lucali, in Brooklyn to a tuna mayonnaise one in Savoy in Tokyo and one from Dominos! There are also stops in Frank Pepe in Connecticut, Antillo’s pizzeria in Naples and Bæst in Copenhagen.
With a variety of guests, including food writer Peter Meehan, comic Aziz Ansari and TV show host Jimmy Kimmel, Ugly Delicious is an in-depth look at everyday food. Watching Chef Floyd Cardoz enjoying Awadhi cuisine in the episode on Indian food, which also featured Padma Laxmi, was particularly poignant as Chef Cardoz passed away on March 25, 2020 of COVID-19.
Salt Fat Acid Heat
Tumblr media
Netflix, Seasons: 1, Episodes: 4, Runtime: 40–48 minutes
The four-part show, which premiered October 11, 2018, is based on Samin Nosrat’s bestselling cookbook, Salt Fat Acid Heat (2017). The show sees the chef, TV show host and food writer travel the world to investigate the four pillars of cooking namely salt, fat, acid and heat. She travels to Italy to explore fat and the concept of “noble meat,” Japan for salt, Mexico for acid and Chez Panisse (where she worked her way up from bussing tables to chef) for heat. Salt Fat Acid Heat is an interesting way of looking at food buttressed by a charming host and Instagram worthy locales.
Cooked
Tumblr media
Netflix, Seasons: 1, Episodes: 4, Runtime: 50-58 minutes
Samin Nosrat is described as “the chef who taught Michael Pollan how to cook” and features in Cooked, Pollan’s four-part documentary based on his eponymous book. The documentary travels the globe to explore the different aspects of cooking, which serendipitously correspond with the four elements—earth, water, fire, and air. Pollan, a writer (The Botany of Desire, The Omnivore’s Dilemma) activist and professor looks at the socio-cultural impact of food on our lives.
In collaboration with Oscar-winning filmmaker Alex Gibney, Cooked travels with an aboriginal tribe to hunt goanna (a type of monitor lizard) and tries to bridge the gap between our “meat transactions which are hidden behind feed lots and abattoirs” and our plates. There is also singer-songwriter James Taylor singing a song to his pig, Mona.
Street Food Asia
Tumblr media
Netflix, Seasons: 1, Episodes: 9, Runtime: 30-34 minutes
Released on April 26, 2019, Street Food Asia looks at street food in Bangkok, Osaka, Yogyakarta (Indonesia), Chiayi (Taiwan), Seoul, Singapore and Cebu (Philippines). Looking at the bustling Mangal Chat Wale, the delicious kebabs at Karim’s and batura at Nand di Hatti in the Delhi segment, one can only imagine the silence on the streets now with the lockdown and the number of livelihoods affected. Truoc’s Snail Stall in Ho Chi Minh was a revelation of the number and variety of edible snails.
Chef’s Table
Tumblr media
Netflix, Seasons: 6, Episodes: 30, Runtime: 50 minutes
David Gelb, who also created Street Food Asia, considers Chef’s Table a spiritual successor to his Jiro Dreams of Sushi. The show which premiered on April 26, 2015, profiles professional chefs, their inspirations, dedication and determination to make it. Chefs from all over the world including Italy (Massimo Bottura), Argentina (Francis Mallmann), Sweden (Magnus Nilsson) Brazil (Alex Atala), South Korea (Jeong Kwan) and Russia (Vladimir Mukhin), are featured. Gaggan Anand and Asma Khan represent India though their restaurants are in Bangkok and London.
The episode featuring Christina Tosi, founder and owner of Milk Bar and creator of the infamous crack pie was a revelation into what drives these men and women to create delicious works of art. It also revealed the workings of a restaurant including the family meal, where the crack pie (a pie so good it is addictive) was born. Seeing David Chang (he hired Tosi and encouraged her to open the Milk Bar) gives that special joy of connections.
Eat the World with Emeril Lagasse
Tumblr media
Amazon Prime, Seasons: 1, Episodes: 6, Runtime: 30 minutes
Emeril Lagasse, the star of cookery shows in the 90s and nougties, travels the world with other chefs discovering the cuisine of different places. The entertaining and informative show was first aired on September 2, 2016. Eat the World… sees Lagasse in Sweden exploring New Nordic with chef Marcus Samuelsson, searching for the Shanghai soup dumpling with Mario Batali, exploring modernist cuisine in Barcelona with chef José Andrés, Jeong Kwan’s vegan cuisine in South Korea and Franco Pepe’s pizza with Nancy Silverton in the Campania region of Italy. In colourful Havana, Emeril and Aarón Sánchez taste the freshest of vegetables from urban gardens in an Ajiaco stew, a fine roasted pig with a cigar instead of an apple in its mouth—it is Cuba after all – and dine at a paladar (restaurants run out of homes).
Kantaro: The Sweet Tooth Salaryman
Tumblr media
Netflix, Seasons: 1, Episodes: 12, Runtime: 24 minutes
This is the perfect dessert to end a food show marathon. Based on the manga series, Saboriman Ametani Kantarou by Tensei Hagiwara, Kantaro: The Sweet Tooth Salaryman follows the adventures of Ametani Kantarou, (Onoe Matsuya) who quits his job as a programmer and joins a publishing house to indulge his sweet tooth. In the first episode, which aired on July 7, 2017, he zips through his sales calls to visit the Kanmidokoro Hatsune, a traditional sweet shop in Ningyōchō. There he samples anmitsu and is transported into dessert fantasy. His rhapsodies over the jelly, fruit, gyūhi and agony over choosing between white and black syrup are endearing.

Will Selfies Save the Flower District?
Tumblr media
New York’s flower district, more than 100 years old and a home mostly to wholesalers, used to thrive like a jungle along Sixth Avenue. Now it is concentrated in just one block of West 28th Street.
Long said to be on its way out because of a changing industry and continually rising rents in Chelsea, its surrounding neighborhood, the district could be saved, at least symbolically, from the very thing threatening its existence: gentrification.
In between the shops offering garden accessories and roses or ferns in bulk, several trendy hotels have recently opened on the block. Instead of pushing out the local shops, they are relying on the uniqueness of the flower district to lure visitors.
The Moxy Chelsea opened on West 28th Street in February. The property is covered in flowers. In the lobby is the first retail shop of a well-known floral design company, Putnam & Putnam, which has its workshop across the street. Vertical gardens are on the second floor.
The hotel’s crown jewel is the Fleur Room, a lounge and nightclub on the 35th floor. Cocktails are dressed with blossoms (some are even lodged inside ice cubes). Couches are covered with a floral velvet. Vases of flowers are placed strategically between tables.
“It is all inspired by Dutch floral paintings from the 17th century,” said Angelo Bianchi, who operates the Fleur Room alongside Tao Group.
Part of his attraction to the project was that it was on this particular street. “I moved to the city when I was 17, and the first time I discovered this block I felt it was a magical oasis, one of the coolest blocks in the city because you just don’t expect all these flowers of different colors here,” he said. “Being on this block is essential to our identity.”
On weekends young people line up for the Fleur Room. And lines are not something to which this neighborhood is accustomed.
Historically, the sidewalks of West 28th Street have been more cluttered with potted plants than people, with the exception being early in the morning, when florists, event planners caterers and other trade professionals visit. But now, throughout the day, tourists and New Yorkers alike are visiting. And lingering. The vegetation, it turns out, is proving to be popular backdrop for photography and general loafing.
“The flower district has become more of a fun neighborhood,” said Tom Weisse, who owns Caribbean Cuts, which has been on the block for more than 30 years and specializes in tropical flowers and foliage. “People come in wanting to take pictures,” he continued. “Some people have even asked to rent my space out.”
Troy Baksh, the owner of JRose Wholesale Flowers, which has been on West 28th Street for seven years, said people are also looking for Instagram moments inside of his shop. “It’s forcing me to do a better job cleaning my floors and walls,” he said. “You never know who will see those photos.”
Whether this interest in the neighborhood will be lucrative for the flower shops is up for debate. But interest means attention, at least. And some people on the block are capitalizing on it.
Lewis Miller, a florist and event planner based in the district, has started a “flower flash” where he sets up elaborate displays in trash cans, subway stations and against random brick walls all over the city. “Surprising these jaded creatures who live in this urban jungle with a surge of flowers when they least expect it is a total joy for me and hopefully for them too,” said Mr. Miller, who has over 120,000 followers on Instagram.
Others businesses in or around West 28th Street are also cropping up, making the neighborhood more of a destination for those outside the flower trade. Two years ago, a hotel on the block since 2009 rebranded as the Hotel Hayden and opened a buzzy rooftop bar, Mykonos Blue. In January Emeril Lagasse helped open a restaurant in Hotel Henri, four blocks away. A Peloton studio and a Cha Cha Matcha are also close by.
“The area was very deserted,” said Audrey Stipanovich, who owns Pastoral, a flower shop on the Lower East Side, of the flower district, where she still conducts business at least once a week. “There wasn’t even a place to get coffee to go.” She now has breakfast at the Chelsea Moxy, where she bumps into other florists. “It’s quickly become a local spot, a place we can hang,” she said. She even spent the night at the hotel once, when she needed to be at the market early the next day.
The growth has inspired shop owners already in the district, like Mr. Baksh, to create a more inviting environment for clients. In the next two months he’s opening a space in his store for customers to get bagels and coffee. “I want to show them how much we appreciate them,” he said.
Still, there are downsides to the rapid development, the main one being parking. “The parking garage where our clients used to park has been torn down,” Mr. Baksh said. “Now they have to park on the street. It’s a nuisance for them.”
Mr. Weiss said having lots of random people browsing in his shop is not helpful for professional florists who come there to focus. “A lot of my customers need to come in here and get out,” he said. “I can feel their frustration. It isn’t as easy for them.”
Then there is the unfortunate fact of renting in a hot neighborhood.
“Is the flower district dying right now?” Mr. Baksh said. “No, but rent is going up, and eventually flower shops won’t be able to afford it. It’s going to cause a slow death.”
In the short term, Mr. Baksh hopes that the new businesses continue to honor the neighborhood’s history and identity. “At least the Chelsea Moxy has Putnam,” he said of its mini store. “At least they are keeping the flower market surviving.”
