Jonathan finally snaps and expresses a desire to leave, knowing that if he waits till the morning that it will already be too late, Dracula will be shipped off, and no one will come to get him. And Dracula relishes in it.
Even now, he hasn't quite broken Jonathan. Jonathan still keeps up the pretense, he still has too much of his mind to dare to accuse Dracula of any wrongdoing. Jonathan knows better, and that's part of what makes this so thrilling for Dracula. So, he indulges him. He lets Jonathan have a tiny sliver of hope before casting it away, making it clear that he'd throw him to the wolves and miss out on having his own fill of him before he'd ever let Jonathan live. The choice Jonathan is given is to die, not as a man but as a prey animal ripped to pieces, or to never die, to forfeit his soul.
Jonathan, of course, begs him to close the door, but it is no longer out of the hope that he can find another way out. He does it out of fear. For a moment, he fears death worse than what he claims is a fate worse than death, and when he returns to his room, he can do nothing but wallow in his despair. He hears Dracula boasting that he will have him first, and there's nothing he can do but throw himself to his knees and cry.
