So Morrowind had quite a few quest mods release very recently as part of a modathon, and I played through (I think) all four of them.
Greymarch Dawn is a Jigglebags based faction mod that serves as a prequel to Shivering Isles and probably ended up my favorite of the lot. A lot of these had a lot of interesting scripting stuff in them, but Greymarch was the first that actually surprised me when I realized some of the tricks it was doing (particularly that the tower loops). I am not usually surprised like that, which shot it up to the top of the list. There's a lot of unique assets in it that are used effectively, and though it's relatively short, there's a lot packed into it.
Probably my only two criticisms (one of which was quickly rectified) was that the game's rewards were pretty basic looking (again, no longer the case), and that it ended up having a dwemer ruin when, honestly, not every mod needs to have a dwemer ruin.
Lord of Rebirth was a space pirateyesque mod that didn't have too much that surprised me, but had a lot of solid assets and design work in it. It was pretty short (all these mods kind of are), but there are a few nice set pieces overall. The rewards are a little lackluster in terms of appearance and some of the quests were a little bit too much "find this one thing" kind of stuff that I've grown to dislike, but overall it takes the #2 spot.
Halls of Colossus is, as the name implies, a mod that takes place in the Numidium's big storage tank, with a lot of time travel and time loops involved. By far this mod had the most impressive scripting of the three, and probably the most useful rewards overall with a lot of time manipulation spells. The basic premise was a lot of fun, very Dishonored 2.
BUT a lot of the actual visuals were really disappointing (in particular, the actual Numidium chamber was fairly undetailed and largely unlit, despite being the big climactic area). Fairly weak level design and lighting overall, with a few texture/mesh errors that needed my own patching. It also didn't really stick the landing, with the whole quest sort of just ending, more or less.
Finally, Terror of Tel Amur was the smallest of the four: a horror/house mod that mostly consists of a dungeon that becomes a house later.
This one was fairly basic and to be honest, I didn't enjoy it too much. Too much running around in overly dark corridors with not a lot of detail to make up for it while wondering if the things I could interact with were part of the quest I was doing, with not a particularly interesting payoff.
All in all, check them out.

Started my first *real* Morrowind playthrough (that I will absolutely try my hardest to see through and finish) today. This is a 63 year old mother of two that’s managed to survive (and kill) a dark brotherhood assassin, made out with a rando on the road, set up a booty call between a thief and some random bitch who gives away gloves, and now she lives with a shirtless skooma addict. What is even happening. I love it here.
Oh and this is her drip currently (she looks like a mess):

I've been meaning to get into Morrowind for a while now, what mods/setup would you suggest?
OHOHO!!! I have just the thing for you, Rendar!
Here is the big cool tutorial that I used. It has everything you'll need, tells you what's compatible with what and how to install. It took me several hours to fiddle with everything because I'm so rusty with installing mods manually when it's required, but this post was a godsend and I'm VERY happy with the resulting Morrowind experience.
Even if you decide not to grab a ton of the additional mods, there are lots of customization options are available within steps 2 & 3's add-ons. As the OP said, those add-ons are your foundational basics and will get your game running smoother while patching many vanilla bugs.

also does anyone know of a good inventory management mod compatible with openMW? I'm specifically looking for functionality like not having to click on both containers to store/take items, maybe a select multiple option, stuff like that.
having to put my many, many ingredients away after finishing a potion making session is driving me a little batty.

I do actually have a list of graphical mods I use, covering everything from shaders to texture replacers, UI improvements, animations, and sounds. It's not fair that only the Dragonborn gets a mod that makes his unread books glow. The Nerevarine is far more attractive AND bathes far more regularly than that lizard yeller.  Thanks to the magic of MWSE-Lua, such a thing is now possible.

Quickly getting irritated that all of the walkthroughs I can find for modding Morrowind assume the reader/viewer already knows something about modding or has working knowledge of computer software.
Neither of which is me.
Also, the walkthroughs use terms I don't have any familiarity with and the files n shit they're clicking on aren't on my laptop (or if they are, they're named differently, e.g. there is no 'computer' listing in file explorer, but when I click 'This PC' it takes me to C drive like the listing named 'computer' does) and I am absolutely a dumbass when it comes to computers so unless I know EXACTLY what I'm clicking on and aaking the computer to do with zero amiguity, I'm not touching a thing because shure as shit I'll like delete the phyical device or something. Also between ADHD and Autism I can't 'connect the dots' bases on context clues like an NT person can; when I try, shit goes very, very badly.
I want a walkthrough that politely treats me like a boomer with alzheimers and hearing loss, takes me step by step and goes over any errors I could possibly encounter (I got one earlier and when both me and my spouse googled it to find out hownto fix it, nothing came up), doesn't use any initialisims or if it does, it tells me what the fuck a UAC is, and also lists ALL of the terms that might be used for the same thing.
But, so far I can't find anything like that and it's starting to flat piss me off because one of THE main reasons I dropped 1k on a gaming rig was to play modded Morrowind.

I recently finished playing Morrowind for the first time, and I definitely needed some mods to modernize the experience. There's tons and tons out there, but here are my recommendations based on my recent 50 hour playthrough:
Cosmetic Overrides - transmog your clothes! Amazing.
Strider's Nest - 4 companions that really give you an old school "party-based rpg" feeling
MGE XE: makes Morrowind pretty in a simple, all-in-one package
Morrowind Enhanced Textures - what it says on the tin
Kezyma's Mechanics Remastered - magicka and health regen, Fast Travel!
Smart Journal - sort by quests instead of just chronologically
Skyrim Style Quest Notifications - so you can tell that you have a quest update
Multiple Teleport Marking Mod - More teleportation = more better
