Cherry Bulldog

We’ve had errands to run in the morning, and I need to finish packing, as well shall take a night bus heading Southwards tomorrow; but a much-deserved holiday can finally begin! And I’m kicking mine off with this bright-red and deliciously refreshing Cherry Bulldog, to finish off the last of the beautifully ripe little gems I found at a good price in the shop the other day (a rare enough occasion not to jump on it!) This gin cocktail could easily become a favourite of mine, but I know I can only have it when the cherries are cheap! This was an early birthday treat then, perhaps; and a very good one!
Ingredients (serves 1):
6 ripe cherries, rinsed
half a lime, cut into wedges
1 star anise
1 tablespoon demerara sugar
75 millilitres/ 2 1/2 fluid ounces (5 tablespoons) good quality London Dry Gin
15 millilitres/1/2 fluid ounce (1 tablespoon) Ruby Port
ice cubes
Halve and pit four of the cherries. place cherry halves in a shaker, along with lime wedges, star anise and demerara sugar. Muddle thoroughly with a muddler, until you have a bright red fruit purée.
Add the Gin and Port, and fill the shaker with ice cubes. Close tightly, and shake energetically, until well-chilled.
Double strain into a chilled cocktail glass. Spear reserved two cherries onto a cocktail pick, to garnish.
Enjoy Cherry Bulldog immediately!

Cherry and Pistachio Cake

This beautifully moist and fluffy Cherry and Pistachio Cake, my take on this month’s The Simple Things’ Cake in the House, makes a delicious dessert to bring to a Neighbourhood street party! As the picture shows, I did not have time to photograph it before slices of it were happily taken away! I did get a chance to taste it, though; and by the end of the party, it was all gone! It is fantastic with very chill Champagne in this it, but also pairs nicely with a cuppa, for those rainy Summer days!
Ingredients (serves 12):
1/4 unsalted pistachios, shelled
200 grams ripe cherries, rinsed
3 tablespoons sunflower oil
1/3 cup plain or Greek Yoghurt
half a medium lemon
1 tablespoon Homemade Vanilla Extract
3/4 cup plain flour
1/2 teaspoon baking powder
4 large egg whites
a pinch of salt
3/4 cup caster sugar
3 large egg yolks
Icing Sugar
In a small frying pan over a high flame, toast pistachios until fragrant, a couple of minutes. Remove from the heat and let cool completely. Set aside.
Halve and pit cherries, placing cherry halves in a small bowl. Set aside.
Preheat oven to 180°C/355°F.
Lightly grease a xcm/”” pan with a little sunflower oil, and line with baking paper. Set aside.
In a medium bowl, combine remaining sunflower oil and Greek Yoghurt. Grate in the zest of the lemon halve, and thoroughly squeeze in its juice. Add Vanilla Extract, and whisk energetically until well-blended; set aside.
In a small bowl, combine flour and baking powder. Give a good stir; set aside.
Roughly chop toasted pistachios. Set aside.
In a large bowl, beat egg whites with a pinch of salt, gradually increasing speed to high, until soft peaks just form. Continue beating on high speed, gradually adding sugar --saving about a tablespoon of it-- until stiff peaks just form, and you have a shiny, glossy meringue.
Whisk egg yolks, one at a time, into the meringue. Then, whisk in Yoghurt and oil mixture. Finally, sift in flour mixture, and gently fold in, along with three-quarters of the chopped pistachios.
Add reserved sugar to the cherry halves, and toss, to mix. 
Pour the batter into prepared tin. Scatter the cherries on top, pressing them slightly into the batter. Sprinkle with half of the remaining chopped pistachios.
Place into the warm oven, and bake, at 180°C/355°F, for 35 minutes. Remove tin from the oven, and let the cake cool in the tin, 10 minutes, before lifting it out.
Gently peel off baking paper, and sit cake onto serving plate or tray. Dust with Icing Sugar, and sprinkle with reserved chopped pistachios.
Serve Cherry and Pistachio Cake with well-chilled sparkling white wine, like Champagne or Prosecco.
