It was the day after the festival was canceled. In the heart of Las Vegas, I found myself at Soul Belly restaurant, savoring the rich, soulful flavors of a delectable breakfast. Little did I know that this evening would become unforgettable.
As I relished every bite of artfully flavored pulled pork, I received a text message from the friend I was staying with. It turns out she was working the event, not needing her own ticket. She revealed quite the shocker: an extra ticket to the When We Were Young festival, the music event of a lifetime!
Within moments, I asked for my check and was on my way to the festival grounds, anticipation mounting with each step. The thought of witnessing my favorite bands and reliving cherished memories filled me with uncontainable excitement.
Las Vegas had just become the backdrop for an unexpected adventure, an afternoon of music, camaraderie, and pure exhilaration. It's amazing how a simple meal at Soul Belly had turned into an unanticipated journey that would create memories to last a lifetime. I was ready to let the music take me back to the days when we were young.

Hiii!!! Not a weird ask at all, I'm happy to assist!
In general traditional Polish cuisine is rather heavy: you'd get a lot of meats, potatoes, fried stuff. I'm case your spouse likes stuff like that, he will love it here. Otherwise the big cities tend to have a lot of food from around the world, including an expanding offer of plant-based options.
When it comes to regional treats, well - that again depends on where he'd be going. If you're after sweets, I recommend two cities: Toruń and Poznań.
Toruń is the city of Nicholaus Copernicus, as well as gingerbread (sin. piernik, pl. pierniki). You can get a variety of these there, from small ones filled with jam and dipped in chocolate, to a more traditional variety, more spicy, sliced and delicate. There's also a crunchy variety, slightly reminiscent of the Dutch speculaas. And more, that's honestly just a tip of the iceberg!

When it comes to Poznań, there's a treat that's traditionally only made on one specific day: 11th of November, and only there, but well, it's so good it's sold all throughout the country almost year round. I'm talking about the white poppyseed crescent rolls (rogale marcińskie or rogale świętomarcińskie).

They're sweet and filling, and absolutely worth trying when you have the chance!
If he's in the Tatra mountains area in the South, he might stumble upon places that sell oscypek: it's a type of smoked cheese made out of sheep's milk. The flavour is quite intense. They're known for being quite decorative as well.

However! If your spouse isn't in the mood to drive around searching for regional treats, you can't go wrong with Ptasie Mleczko (literally Bird's Milk or rather Bird's Milky).
It's a rectangular marshmallow-type treat (vegetarian) coated in chocolate. The most classic variety is vanilla-flavoured and dipped in dark chocolate, but at this point there are several different variants. You can find them in most grocery shops.

Burns Night Dinner
If you know me --and even if you don’t-- you might know or suspect I am a bon-vivant! I love food, I love eating and I love cooking and baking. And I love trying new things, discovering tastes and making meals from all over the world. Perhaps it is because I also love travelling, and one can only go to so many places a year (not many) and so in the meantime I cook! In that same spirit, and because I believe food (like literature and language) is such a wonderful way to discover a culture, I often make feasts  for National Holidays celebrated, well again, all over the world. Thus, on Burns Night, and indeed during all the day of the 25th of January, I pour myself a good Scotch Whisky or two, read Robert Burns’ evocative poetry, and dine on Scottish cuisine! Here are recipes for a delicious Burns Night Dinner. Have a good one friends, whether or not you’re a Scot!

truffle mascarpone cream
candy bacon, fine herbs: smooth and creamy, a little *too* mushroomy for my tastes, but the Mrs loved it.But once you take a spoonful with the candied bacon, the combined flavour simply made sense. 4.25 stars.

chicory, ricotta, pears, candied walnuts
hot honey fig dressing: yes, it's merely salad. But what a tasty one; I enjoyed every bite. 4.25 stars.

When you see bread at a high end restaurant that's $10, it's usually a good sign. It does not disappoint; like AnnaLena's amazing torn bread, Riley's brioche is an enormous, decadent, elevated feat of baking. 4.75 stars.

6oz Bacon Wrapped Tenderloin -
whipped potato, winter roasted vegetables
peppercorn sauce:
The steak was good enough to stand on its own, so I was able to use the peppercorn sauce for the incredibly fluffy mashed potatoes. Plus the bacon already acted as seasoning on the steak. 6 Oz doesn't sound like it would be enough, but I was full enough after dinner. The carrots were as buttery as you could imagine.

This would've been a 5 star entrée, but there were a couple of random hits of salt on my plate (tail end of 1 carrot, the broccoli) that lowered it to 4.75 stars. Someone was a little rushed during dine out.
We could've upgraded to wagyu or added fois gras for an additional charge.
Lobster Squash Ravioli -
east coast lobster meat, crispy sage
mushroom, sweet and sour squash:
To quote the Mrs: this is all she could've asked for, for a lobster ravioli. Personally, I would've enjoyed a cream sauce, but everything on that plate was delicious. I don't even like mushrooms on their own, but they managed to even elevate those with a buttery finish & non rubbery texture (it's usually the texture that ruins them for me. But not here!)
The individual, perfectly cooked pieces of lobster were quite generous as well.
5 stars.

The cake was light and fluffy, not too sweet, with the Almond brittle providing the hit of sweetness and crunch. 5 stars.

vanilla chantilly, shortbread tart
lemon curd:
Perfect sweetness and tartness, but the vanilla creme on the side was better served with the chocolate cake. Shortbread crust was crispy and buttery. 4.75 stars.
Recommend: everything we ordered.

I was counting down the days to go back to New York City with my best friend. Tonight, we were meeting up with my long-time friend for dinner. We chose Mr. Broadway, a charming kosher restaurant, as our rendezvous point. Her familiar smile and warm embrace felt like a treasure amidst the bustling city. It took the waiter several tries before we were ready to order with the catch-up, we prioritized. I ended up ordering the breaded chicken po boy, a favorite comfort food of mine.
With each bite of the perfectly crispy chicken and the blend of flavors in the po boy, the conversation flowed effortlessly. We shared stories, laughed, and reminisced about the moments that had brought us to this point.
New York City provided the perfect backdrop. In that restaurant, amidst the bustling city, I felt an overwhelming sense of gratitude for the enduring connection I had with both of my dear friends.
