Growing up, Piper Mommy would put a lot of effort into researching traditional holiday meals in the US. I made Bahamian souse inspired dinner tonight at the request of @hatsofmatt . Though I served it with sourdough crumpets (because I needed to feed Fred) rather than Johnny cakes. The tiny dish contains fine chopped fresh Scotch Bonnets in lime juice. . It's hard to find Scotch bonnets in our area markets, particularly the yellow ones, so I home grow them in pots and save seeds to grow more every year. . Years ago, I was shopping in an HMart and a Korean auntie was cooking food as samples. She asked me if I'd ever cooked Korean rice cakes before and I said no. She said, it's easy. Good for New Years. Just brown ground beef or pork and maybe garlic, add water, simmer, add rice cakes and cook until the rice cakes are soft. Cut up seaweed to add at the end. . I made ข้าวมันไก่ (Thai Khao Mun Gai - whole poached chicken with chicken rice and clear soup) today. . The thing I love about this dish is taking the excess skin from the chicken and frying it to extract the oils, the using that to fry aromatics like garlic and spring onions and ginger to add to the rice as it's steaming. The result is a fragrant, rich batch of rice to accompany the gentle flavor of the poached chicken. . I also turn the poaching liquid into a nutritious clear soup with cucumbers (or winter melon when that's available). . The sauce is key to give the whole meal pop.
