What's your favourite recipe for gluten free chocolate cake? Do you take an toppings like fruits or fillings like jam? Or douce/ infuse it in juice or wine ? :D

So, it's basically whatever is your favorite cake recipe, but with a mix of rice flour and chestnut flour (usually 50/50) to replace regular flour - and lactose-free milk too ahaha, cause why having a single problem when you can have two? (I don't have a specific recipe off hand, it's my mom's recipe LOL)

Most of the time, I don't add anything. Chocolate cake is chocolate cake. But if it's the season, I might add some raspberries. And failing that, I might add raspberry coulis.

Raspberry and dark chocolate are my two favorite flavors in the world. So, can't go wrong with that combo ;-)

I find that chestnut flour works pretty well for cakes and tarts. Not so much for savory things. Rice flour is pretty neutral, so it works well too, for about everything. Except no flour can make decent puff dough (the kind necessary for French pastries), so gotta forget that...

The brand Céliane makes pretty decent cookies and madeleines. Their chocolate ones and the lemon ones are my favorite.

Took me a while to figure that one. How would I know? It would depend on what has become of future me. And even so, wouldn't future me remember past me anyway? And that's when it hit me. What if I didn't remember me? All ressemblance with a show I'm currently obsessed with would be pure coincidence. You're the one who asked!

So, what would I tell my future self, if she didn't remember me? Don't be too hard on me, your past self. I did my best.
