Tears of the Kingdom confirms that 100 years old is about middle age for Zora which is perfectly in line with what information we had been given in BotW regarding Zora age and growth.
Rivan was the only Zora to give a concrete age being "over 130" and claimed that he and Link swam together as childhood friends when Link stayed at the Domain along with the rest of the "Big Bad Bazz Brigade".
"Well, it has been 100 years since then. And now I'm over 130 years old..." / "We used to swim together when I was but a child... Remember?" –Rivan

Furthermore, Rivan has a daughter named Dunma who was very adamant about being not yet 100 years old. She claims that she doesn't speak like those over 100, and now in TotK, another Zora mentions that Zora over middle age of 100 speak differently, more "eloquently".
"We Zora tend to speak more eloquently after reaching middle age." / "I hope that when I reach 100 years, I will also speak as beautifully as our elders. Unless that is too...OLD-fashioned, heh." –Fronk (TotK)

It's hard for me to tell in English, so I can't tell whether Dunma has changed her manner of speech which could suggest she is now 100 years old—she didn't seem that far from the milestone in BotW.

So we can get a good picture of Zora age to maturity with Rivan: he was over 130 in BotW, his daughter was under 100 meaning that he conceived her in his 30s to 40s which suggests that full Zora adulthood is about that age like adult humans hitting about 20 years old. For simplicity, I assume Hylian 20 is about Zora 40.
We can use Rivan to determine how old he was when he called himself a child using Link's age. I assumed that Link was younger than Zelda at first because he is so short, but it turns out he is older since Paya's age was actually influenced by Link so that there be a character around his age:
"Initially, Paya was to be a very young girl, but due to a lack of girls around Link's age in the world, she was changed to be a young woman between 18 and 20 years old." –Creating a Champion

So I will assume Link is about 19 for simplicity.
If Link was 19 during the Calamity and was 4 when he first arrived at the Domain, then 15 years ago, Rivan who was (approximately) 35 during the Calamity would have been 20 years old. Considering that he was approaching 40 when he had Dunma, 20 years old for Zora may align with Hylians at 10 years old.
Since Rivan belonged to a group of friends along with Link, they were probably around a similar age. That includes Gaddison and Bazz in the "Big Bad Bazz Brigade"

I will also include that Mipha died very young for a Zora since her spear is meant to accentuate her youth being taller than she is. Her short hight is a large part of it, but did you know that initially the adult Zora were meant to lose their tailfin? In the Creating a Champion book, the standard adult Zora design doesn't have a tailfin and their is a comment on the child Zora concept art states that all child Zora have the tailfin "like Mipha". This tailfin detail was not kept since all the Zora have tailfins in the game probably because their bare butts look pretty funny, haha.

Since Rivan had a child in his 30s-40s quite soon after Calamity while Mipha was still so short, it seems that she was younger than Rivan.
It's hard to put a number on Mipha's age since we don't know when Zora hit that "growth spurt", but it is safe to say that she is in the middle of that growth. She did say that Link always seemed to grow a lot faster than she did, so this growth that she is going through isn't very fast compared to Hylians.
...
I would like to mention the elder Zora especially Dorephan who was incorrectly depicted in Age of Calamity. Age of Calamity simply reuses his model from BotW, but it is wildly inaccurate to how he is described 100 years ago in BotW.
The elder Zora seen in BotW were in their prime during the Calamity 100 years ago. Their generation was the one defending the Domain at the time, and Dorephan was described fighting a Guardian some time after the Calamity which resulted in his forehead scar seen in BotW. This event is stated to have happened 100 years after he became king and since Sidon appears to be taking on that title in TotK (I haven't finished the Domain, so this was gleamed from his appearance in the last trailer), then it may be safe to assume that Dorephan was about a similar age to Sidon when he became king being over 100 years old (middle aged).

Rivan is yet again a good example of Zora age and maturity since his father Trello is in BotW and is wrinkled and old like the other elders while he and his daughter look quite similar in age.

This shows that Dorephan who is part of the same generation as Trello would not be so old 100 years ago like he was depicted in AoC—with that forehead scar no less. (I liked AoC but this detail irritates me)
Considering the info available to us in BotW and TotK, Dorephan is likely over 200 and is in his elder years. It is safe to assume that Zora pass away before reaching 300.
So there you have it, an analysis on Zora age and maturity. They are still considered children in their 20s while they reach maturity around 40, they are middle aged at 100 and die of age before 300.

All the unique Zora... or mostly unique as the black one from the right is Khira and her pallet swap is Chroma, but the files were still marked NPC and not UMii so yeah... unique Sidon head does not fit into the mask. the model has separate head model when he wears the mask that hides big portions of his head X"D (Also will he grow as large as Dorephan? there might be something about rulers of Zora that make them grow larger than typical Zora, as Muzu is still normal adult size and Dorephan? that's a big boy) Once again past champion is smaller that others. She is still a teen Zora then.
My headcanon is that Zora growth is different from Hylian. The proportions change for a time until some early teen years and then they just grow bigger. So Adult Mipha would look same as teen, but closer in hight to Chroma or Yona OH also YONA! She is older that Sidon right? Probably still younger that Mipha but still, older that Sidon... nice. (I like Yona, she is cute and they make nice pair with Sidon <3) One more thing. I like Dorephan costume so much more in TotK, but Sidon got sillier in TotK X"D

Tell me, why is Mipha gasping here in the JPN ver upon seeing Link staring at Zelda? What narrative purpose does this sequence of animation serve?
Why does her diary talk about Link "ever looking past" her and she have this reaction if they were supposedly in a relationship? The math here doesn't add up, sorry

I made this crossover comic since early fall for fun but didn't post it so I decided to do it as a celebration for indigo disk coming out this week!
This is my first time drawing Sidon as an adult and I hope he doesn't look off. I'm sorry if he does. Hope it doesn't ruin your enjoyment of this mini comic.
Also for those who are wondering why Sidon is so desperate for wanting a Dratini and why it took him 100 years well I tell you!
Before the calamity happens when Sidon is a child he saw one of the hylian knights having a Dragonite and was amazed by the heroic tales and history about dragonite make it become one of Sidon's dream pokemon.
The reasons it took him 100 years, Sidon did search for one before the calamity happens but sadly Dratini are pretty rare and mostly live in quiet waters also him being a Prince he couldn't travel outside the domain for long or without escort since Mipha is busy with preparing for Calamity Ganon.
And the sad thing is after calamity the habitat lakes where Dratini were known to spawn were lost to the monsters and some of the lakes turn to muddy water.
Dratini was never seen after calamity making people think they went extinct but Sidon with his optimistic beliefs they're not and still search for one in his free time. He's right it's just like Eevee, Dratini became extremely timid and scared off by any small noise thanks to the monsters.
Plus with Sidon... You know our beloved Zora Prince can't be a quiet swimmer and with a big bright personality that even makes the sun jealous, scared of the Dratini without noticing it. 😅
Funny thing is that Link spotted Dratini in lake Floria many times during his journey but was nonchalant about it thinking they're common while he still having amnesia.

I updated my Zora lineup from 2021 with the new TotK characters (and added the AoC guys too while I was at it).
To my knowledge these are all the named NPCs across the three games who use the generic adult male Zora model. I liked the idea of giving them more personality and trying to figure out unique features, all while staying faithful to the model (so no accessories, body modification etc).

More details on each character (all 14) under the cut:
Ahrt Secro and Ettu are the merchants that exist only as character portraits, but I decided to count them as individual NPCs regardless. I made an exception in "no accessories" rule for Ahrt Secro here, because of his... unconventional name (and him living in Goponga instead of the Domain); he's justified in not following their fashion standards. Ettu's only character trait iirc is that he dislikes plants. Which make up most of his stock. Rip.
Kayden is the oldest non-elder Zora guy (140ish?), calm, responsible, etc. He's an another accessory exception, with the little belt attachment. He's married and it's the "zora armor" he got from Kodah. I like to imagine that non-royal Zora women also propose with "armor", just bit more budget friendly - a single accessory or a piece of jewelry.
Capelo has basically no personality, his only few lines point to him being older and somewhat responsible. So I put him here and made him... idk, look big and serious.
Bazz! He's perfectly average when it comes to height and looks, but visibly more buff than most Zora guys. Also on the older side.
Rivan's whole thing is being Very Tall and Very Pretty. In my canon he's basically the most handsome guy in the Domain, with his long fins, smooth features and warm brown colored scales.
Ledo is like, the most average guy you've ever seen. He looks younger than he is but has no special features otherwise. Surprisingly level headed. Not very fit (for Zora standards).
Tie is another one of the new undercharacterized TotK guards, his only thing being that he complains about being out of shape. I think I like his design the least, but come on, I had nothing to work with here.
Numien, the only new guy who actually had more than two lines, all of them making him the most annoying prick in my eyes. He's just... too enthusiastic and eager to praise his superiors. I like to imagine Bazz despises him for being such a kissass (Bazz is canonically pretty judgemental) but can't do much about it. The guy is competent enough to be put in charge of the Lookout Landing squad after all. Anyway, I did my best to make him look at least a bit unhinged.
Fronk, the only man in the domain whose eyebags could compete with Bazz's, courtesy of his airhead wife Mei. He's also wearing the "zora armor" she gave him.
Resco wins the prize for least characterization. His only single trait is that he admires Gaddison. That's it. So I made him try to emulate her energy in his lineup pose.
Cleff, the shopkeeper with crab obsession. One of the prettier younger guys, although the crab thing is not working in his favor. The last one of fully adult guys in the lineup (around 90ish).
Gruve is, amusingly, the one sole unemployed Zora guy. His occupation is therefore officially, A Problem. He's very much the tall lanky teenager type.
And Tottika, another tall lanky teenager (70ish), but this time with a job. It's not canon, but he's commonly considered a twin brother of Torfeau and I quite like this idea. He's not the smartest but tries his best.
That's it, thanks for reading if you did! Next up are the ladies, which I have sketched out but not colored yet. Also I'm still pondering if I want to do elders and kids, just for the sake of having all the Zora properly catalogued...
