Great Wagyu tasting event last night by @wagyuofjapan, featuring @guythebutcher @thebutchershopbyniku @saltandcharcoal @michelecasadeimassari @lucciolanyc and @jspec.wagyu.nyc! This was my first time trying Wagyu round. Chuck roll was still king for me, but I thought it was really unique that all three cuts of Wagyu came from the same animal out of Kagoshima. I also learned a new word: "Sashi" is the fine fat/marbling that's so coveted in Wagyu beef. Wagyu is usually associated with rarity and exclusivity, but with Tokyo Tokyo, who knew it would be this easy to enjoy Wagyu? It was my first time eating Wagyu beef, and I cannot deny that I was captivated. The savory flavor of the Wagyu Beef blended quite well with the Japanese aesthetic vibes of the restaurant.
The Wagyu Beef Cubes coated with Unagi Sauce were so flavorful and savory to my liking. The beef was delicious, Umami-rich, and delicate to bite. The corn and mushrooms as side dishes were my preference as it complements the Umami-rich flavor of the Unagi Sauce. Also, since I prefer sweets but not too much of them, the sticky, mildly sweet rice mixed with the Unagi Sauce was to my liking.
Their Wagyu Cubes Classic Bento is affordable at P225.00, comprising three skewers of tender steak cubes prepared from premium Wagyu beef, along with rice, corn, and mushrooms served in a bento box with red iced tea.

Kenapa sih daging Wagyu mahal? Pertanyaan di atas pasti pernah terlintas di imajimu ketika setidaknya kamu sudah pernah memakan steak minimal satu kali. Seperti semua komoditas lainnya, kualitas atas suatu komoditas selalu berbanding lurus dengan pengorbanan untuk mendapatkannya—atau simply kita menyebutnya, biaya atau harga. First and foremost, wagyu itu apa sih? Wa berarti Jepang, dan Gyu berarti sapi. Hence, sapi Jepang. Semua sapi keturunan ras Jepang namanya wagyu. Kenapa kita menyukai wagyu? Tentu saja karena rasanya, mulut bisa bohong tapi tidak dengan lidah (dalam hal kenikmatan). Aroma wagyu terbakar semerbak dari jauh lalu meleleh kala masuk mulut. Juicy dan buttery. Sulit diuraikan dengan kata-kata, pokoknya hakiki. Selain itu, takseperti daging merah pada umumnya, lemak pada wagyu ini 'dilabel' sehat untuk jantung. Lagi, kenapa mahal? Jepang punya standar tinggi dan peraturan terketat dalam per-sapi-an duniawi, bahkan peternak sapinya tidak boleh sembarangan. Sapinya dimanja-manja, dibesarkan dengan kasih sayang (halah), diberi makan dengan kuantitas dan kualitas terbaik, dan 'digendutkan' secara alami, gak boleh stress. Selain itu, daging wagyu disertifikasi, dengan nomor produk atas ras tertentu (WTF). Dan banyak lagi alasan lainnya, takut kepanjangan. Lalu, berapa sih harganya?
