Today we are going to be making FLAN from Great Britain, 1974. Now the last time I had English cooking, it wasn’t my favorite. Let’s see if they improved things.

This recipe does not come from a cookbook! It is printed on the inside of the flan pan made by Ashley Ceramics. This was a trend in the 70s that I absolutely enjoy, although it makes for an awkwardly large and very breakable recipe box.

I'm very excited about making this, because I love flan! I had a neighbor who used to make it when they had extra milk. It's like pudding with a little caramel hat, what's not to love? 

BUT This is not a flan pan. This is a tart dish. Ashley, what are you flanning?

[He reads the recipe printed on the inside of the dish.] 

 OKAY so we're starting with 8 ounces of SHORTCRUST PASTRY, which is not something that belongs in a flan. 

[Cut to Steve mixing flour and butter in a bowl, then another cut to him rolling out pastry on the counter. He speaks to the pastry gently.] 

I'm baffled that you exist, but I love you anyway.

We're going to take the pastry and line the flan dish, which is a careless and shocking disregard for the potential for a humorous rhyme scheme.

Next we cut 8 ounces of cooked ham into small pieces, and WIPE AND SLICE 6 ounces of mushrooms. That is NOT the type of mushroom I'd have expected in my cream, but to each their own.

 [Brief frame of chopping.] 

 You know, genetically mushrooms are closer to people than to plants, so wiping and slicing them seems a little concerning. 

Cook the mushrooms in oil for about 5 minutes.

FIYAH!

Put the mushrooms in the pastry case with the ham while we make the custard, so they don't escape while we aren't looking:

Next we make the   custard, which takes us comfortably back into flan territory. 

1/2 pint of MOO JUICE -- 1/2 pint? That's--that's one cup, why would you say 1/2 pint?

3 EGGIES

SALT!

PEPPER!

1/2 tsp dried mixed herbs. What kind of herbs? The kind I was prescribed to smoke in 1939 to help my asthma, or the kind my grandma kept unlabeled in a jar? We don't know. What kind of herbs would you put into this to make you think it's a FLAN?

WHISK together, pour into the dish, and bake at 400 for 35-40 minutes, which is the EXACT amount of time it takes the Secret Herbs to magically transform THIS into a FLAN.

[Steve puts the dish in oven, cut to him removing the baked flan]

It's still not a flan, but it can be served hot or cold.  I've dated some guys who were like that.

It doesn't look like a flan, it doesn't smell like a flan. Look, I know a flan when I see one and this ain’t it.

It’s supposed to be jiggly. I’m very disappointed in you. 

[He takes a bite.]

[Incredulous yet angrily pleased laugh] 

It's good. It's FLAN-tastic.

Out with it, boy they say. He barely refrains from waving his hand in a go on then motion. “Steve and I… we’re, uh,” Eddie’s smile turns soft around the edges, and his hand goes to Steve’s beside him, drawing it into his lap and lacing their fingers together, “we’re going steady now.” Or, Wayne finds out that Eddie and Steve are EddieandSteve.
