i got my mother the NYT Cooking subscription as a gift and we are REALLY enjoying this shit, do you know how fucking wild it is to look up a recipe and not see three banner ads, four in-line ads, and a video turtorial you have to click out of
anyway i'm making this today in the slow cooker and its still cooking but MAN the broth tastes fucking AMAZING so fuck paywalls

INGREDIENTS
1 pound Yukon gold potatoes, scrubbed, peeled and cut into 1- to 2-inch chunks
1 pound cauliflower, chopped into large bite-sized florets and stems
2 (15-ounce) cans cannellini beans, drained
½ yellow onion, minced
3 garlic cloves, smashed and minced
3½ cups vegetable stock
3 tablespoons unsalted butter
2 tablespoons dry white wine
1 sprig fresh thyme or ½ teaspoon dried thyme
½ teaspoon garlic powder
Coarse kosher salt and black pepper
1 teaspoon lemon juice (about ¼ lemon)
8 ounces sour cream (1 cup), at room temperature
½ cup chopped chives (about 1 small bunch)
Potato chips, preferably sour cream and onion, for topping
Shredded Cheddar, for serving
STEP ONE
In a 6- to 8-quart slow cooker, combine the potatoes, cauliflower, beans, onion, garlic, vegetable stock, butter, wine, thyme, garlic powder and 1½ teaspoons kosher salt. Cover and cook until the vegetables are very tender, about 8 hours on low.
STEP TWO
Remove and discard the thyme sprig, and turn off the slow cooker. Add the lemon juice. To make a completely smooth and creamy soup, purée the ingredients using an immersion blender. (Or, purée the soup in a blender in two batches, transferring the puréed soup to a different pot.) To make a textured, chunky soup, smash the ingredients using a potato masher in the slow cooker. Stir in the sour cream and chives. Taste and add additional salt if necessary. Serve in bowls topped with black pepper, crushed potato chips and shredded Cheddar. For leftovers, gently reheat the soup on the stovetop or in the microwave until it just barely bubbles around the edges; don’t let it boil or the sour cream will break.

Maybe it's weird, but I have accepted that at least once a year, usually in the winter, I will make a meal that is entirely white or beige or brown. This time, it was creamy mac & cheese, life-changing roasted cauliflower with garlic everything bagel seasoning, and miso soup with daikon, cabbage, and leeks. So delicious! So monochrome. Recipes (such as they are) behind the cut.
Cauliflower: Pre-heat the oven to 250C and chop the cauliflower into large pieces. Dress with plenty of olive oil, salt, and pepper, transfer to a dish, and roast covered in foil for 5~10 minutes. Reduce the temperature to 210, remove the foil, and cook another 5~10 minutes. (Or, if you don't have a Japanese oven that drops the temp to 210 automatically "for your safety" (😑), enjoy your freedom.) Turn off the heat and sprinkle with everything bagel seasoning (mine has poppy seeds and roast garlic chips). Toss to mix. Let sit I. The oven until ready to serve. Lose your mind eating--this is SO good.
*If you’re making everything, while the oven is preheating, boil the water for the pasta and the soup.
Soup: Boil water and add dashi powder. Peel daikon and slice into half moons. Chop cabbage into chunks, separating the ribs and the leaves. Chop leek into thick diagonal slices. Add daikon, cabbage ribs, and leek to the boiling water. Once tender, add the cabbage leaves. If making ahead, turn off the heat when the cabbage leaves are tender. Dissolve miso paste into the liquid when ready to serve.
Mac & cheese: Boil water for pasta. When the pasta is 5 minutes from done, in a separate pan, make a light roux. When the texture is right, add a splash of milk and mix thoroughly. Add more milk until you have enough liquid to create a sauce for the pasta. Season to taste with salt, pepper, powdered mustard, a dash of nutmeg, cheesy seasoning if you have it, and chili pepper (I used smoked ghost pepper). Add shredded cheese gradually and mix until desired texture/taste is reached. Drain and add pasta, stir to coat.

Prompt: 27. Soup
Micah’s happy voice sounds through the front of the house. “Angel~ I'm home!”
“In the kitchen!” she calls back. 
Micah practically trots into the kitchen with his nose in the air, dropping the shopping bags onto the island countertop. “Oh, you brought out the big pot!”
She giggles, turning from her stirring. “What did you bring home?”
She can almost see imaginary ears popping up from his hair as he lights up.
“Angel, I went down that market street you told me about? There was produce EVERYWHERE!” He starts pulling out ingredients from the various cloth and straw bags. “I got carrots… sweet potatoes… bok choy - I hope I said that right - tomatoes, corn, red and white onions…” 
Micah separates a smaller amount and pushes the pile across the counter to where Angel is waiting with her sharpened knife. She transfers all she can carry to the sink to wash and peel as necessary.
“Don't think I'm done!” He says excitedly, although there's no way she possibly could've when he came in with four large bags stuffed to capacity. She listens as he continues unloading his haul like a proud gatherer. 
“I didn't even know cauliflower came in yellow! I got the regular white, too. I got all four colours of sweet peppers, white and purple cabbage - why do they call it red? Red onions aren't even red, either!”
Angel chuckles at his tone, bringing over bowls to separate the prepped ingredients. Her husband’s insistence at an excessively wide countertop was currently much appreciated. They could host a full family reunion to this thing.
“I got a bunch of beans and stuff, too! I found those ‘lentils’ you kept asking about, and Lima beans, and black beans, red beans, split peas…”
“Micah Yujin, who are we feeding with all this?” She asks with a laugh. The carrots had been diced and she was on to the broccoli he had purposely not announced. Her eyes roamed over the various mushrooms and pumpkin, lighting up at the butternut squash.
“Me and you, my love,” he answers in a posh tone. “You told me to bring home veggies for soup. This will ensure we execute only the grandest soup possible.”
“It'll be healthy, that's for sure,” she murmurs as Micah pushes the bags to the opposite end of the counter. 
He goes over to the sink, washing his hands before returning with his apron hanging from his neck and a knife and cutting board in his arms. “You didn't think I was leaving you to prep all this alone, did you?” He gasps dramatically. “I'm hurt, my angel, that you think so little of me after living as my sweet wife all this time.”
“We've been married for three months, Yujin.”
“And clearly I haven't demonstrated myself enough in those 90 days, Mrs. Yujin.” He makes quick work of the onions, using the excuse to have tears accompany his exaggerated sniffling.
Cassie shakes her head as she sets aside a bowl of greens, clearing her cutting board for the cabbage. “My apologies, my sweet.”
“No!” Micah huffs with a pout, leaving the tears as he moves on to the bell peppers. “This is my failure as a husband. I am more than just a provider, a bringer of raw materials for sustenance. I must prove myself!”
Cassie raises an eyebrow as he pushes away the peppers, dutifully wiping his knife before smacking down a sweet potato. God bless him because as much as she loved the things, cutting them was a workout. She would gladly watch him strongarm that vegetable into submission for their pot.
Micah turned everything into a performance or a good time. Even with his antics he was an efficient kitchen assistant, and pretty soon everything they wanted was in the pot and bubbling away. 
He sniffs the air, a confused look on his face. “Angel, is the oven on?” He bent to look but couldn't tell.
“Should be,” she responds as she rinses the dishes. “I've got bread rising in there.”
She squeaks into a laugh as she's suddenly hugged from behind, dropping a - thankfully plastic - bowl. She squirms as Micah peppers her cheek with kisses. “It's just bread, babe, relax!”
“My Angel made bread from scratch with this timing and I must relax?” He asks incredulously. “I shall not!”
“I'm assuming that informing you that my first attempt at a garlic confit is also in there will earn me more physical affect- Wah!” She squawks as she's raised clean off her feet and walked out of the kitchen.
“Mm-mm, mm-mm” Her husband repeats in her ear. “You're not allowed to do this to me. You're showing me up.”
“Micah-”
“ I'm the giver in this relationship, missy. Stop stealing my love language!” They topple onto the large sofa where he smothers her and her protesting laughter in kisses. 
It's a good thing they have a rather loud and intrusive kitchen timer.

One Sunny Day
(Stardew Valley) (Haley x Female Farmer)
Chapter 5
TODAY is the day I am going to get groceries and seeds. Unless for some reason he is closed Thursdays now as well.
I lay in bed for a few more minutes before getting up and notice how sore I am already feeling. I groan and rise slowly out from the comfy blanket. I get up for another day of farm life and throw on the same. Exact. Overalls. I really need another pair or two if this is going to be my standard fit. However, I put on an old, red t-shirt which is more of a tank top now since I ripped the sleeves off in high school. I didn't like the way the sleeves constricted my biceps. I throw on a red ball cap to cover my unwashed hair that I threw back into a loose ponytail.
I begin my walk to town square once again. My legs are going to be ripped from all this walking. Scratch that, all of me is going to be ripped from the work I'm doing.
I slept in today, which means Pierre's should be open. I triple check the sign next to the door before even trying the door.
"It says it's open today. Hopefully my timing isn't wrong or something." I yank the handle of the building once again. This time, it opens.
I waltz inside and take a glance around. Shelves are jam packed in every spot you could put one without completely overlapping the other. The aisles are just big enough that nearly two people could fit back to back.
"I take it you tried to come here yesterday, Danny?" Gus chuckles as he heads over to me. "I noticed you triple checked the hours of operation."
"I sure did. Out of all the days I decided to come here it was on a Wednesday," I roll my eyes and smile.
"Happens to me all the time. I lose track of the days and bam, I show up on a Wednesday. But what can ya do? Allows me to get a good walk and keep these legs in shape," Gus looks down at his legs and back up at me. "You have a good day, now," he nods his head and exits through the glass door.
Carefully, navigating through the aisles, I begin to grab items I'll need for the farm. I had made sure to grab a basket from the stand near the entrance before so everything had been piling up in it.
My basket consists of parsnip, cauliflower, and potato seeds. As well as some bean starters.
"This should be enough to get me started," I mumble.
I saunter over to explore the groceries, filling my basket with everything I think I'll need in the next few days.
"Ugh, you again?"
The sudden voice causes me to spin around so fast I almost gave myself whiplash. It was Haley.
"Yes, me again. Can I not shop at Pierre's?" I snap back.
"I didn't say you couldn't. I'm just disappointed I have to see you again." She rolls her eyes and struts down the aisle closer to me.
Suddenly, I'm feeling flustered and forget what I am looking for. There is a long, awkward silence between us as we both scan the opposite shelves of the aisle. Oddly enough, she doesn't walk away.
"You look like a plumber by the way."
I snap my head back to look at her, "What does that mean?!"
We both start looking over my outfit. I don't know what part of a red shirt, red hat, and blue overalls is giving "plumber".
"Are those the same overalls from the last several times I have seen you?!" she gasps in disgust, turns her head, and pretends to gag.
"Yeah and what about it!?" I poke back childishly. I adjust the basket I'm holding to my other hand. Haley's eyes seem to light up as she seemingly watches my arms as I transfer the basket between hands. Her eyes flicker back up to meet my gaze and she blushes and turns away. I look at my arms to see if I have dirt or mud on them. There is not even a speck.
She sheepishly turns back to the shelf once again. I continue to forget what I am looking for and scan the shelves up and down until I find whatever it is. I hear a few noises from Haley fumbling with the items on the shelf behind me. That is, until I hear a can hit the ground and notice it roll to my feet in front of me.
When I turn around this time, her feet are stepping on the lowest shelf while her one hand is stretched upward to the top shelf. She senses me looking at her in confusion and turns to get down too quickly. Her ankle rolls as she tries to step off the bottom shelf which causes her to stumble and nearly fall. Actually, she would've fully fallen if it wasn't for me standing nearby. She involuntarily latched onto my arm to stop herself from falling all the way to the ground.
Haley realizes what she is doing after a moment and shoots right back up. To save face, she shoots me a scowl and just says, "ew," while brushing her hands on her pink skirt as if I'm just that dirty. To her dismay, her cheeks are flushed pink so anything she is trying to do to insult me is not working.
"Do you need some help there, pretty lady?" I tease. Her cheeks go bright red now instead of just the light pink. It's fun rubbing it in more when she is already flustered.
Since I am significantly taller than the little rat, I reach up to grab the item she was aiming for. She watches in silence with her arms crossed and while tapping her foot rapidly against the ground.
As I toss the item into her basket, I meet her gaze. I am so much taller than her, that she has to crane her neck to look me in the eyes. She is shorter than the average person. I am just sightly above average height.
She squints her eyes in annoyance and looks away. We both go to leave the aisle finally, but walk in the opposite direction of the other. Causing us to crash shoulders.
"Watch it you big lug," She hisses while unapologetically looking me up and down the same way she did in the saloon. My face suddenly goes warm as if I am blushing. I notice her smirk which signals that must be the case.
We try leaving once again, but manage to get past one another this time. She shoots me an unreadable look over her shoulder as she turns the corner to the next aisle.
What is this woman's deal? I say in my head. Shaking my head, I carry on with shopping. I hear the bell above the door ding meaning Haley must've just left. I walk over to the guy behind the counter with my stuff in the basket and let him start scanning.
"Well if it isn't Miss Danny, the new farmer! I'm Pierre, owner of this wonderful, local general store. I see you've found the seeds! A little agriculture could really inject new life into the local economy. My wife, Caroline, and I have been dying to meet you. We hear you have already met our daughter Abigail?"
"Yeah at the saloon the other day. Her and her friends were hanging out in the arcade when I went for dinner," I reply.
"That's great! I hope you enjoy living here. It may get boring at times, but trust me when I say the next day will be an interesting one!"
Pierre finishes up scanning and bagging my items. After saying my goodbyes, I am on my way back home to figure out what to do with, and where to put all my groceries. I don't exactly have an oven, or fridge...or a kitchen in general.

Creamy Garlic Chicken Breast
Prep Time 15 mins Cook Time 20 mins Total Time 35 mins Servings: 4 people
Ingredients
For The Chicken:
    2-3 large boneless and skinless chicken breasts halved horizontally to make 4
    4 tablespoons flour (all purpose or plain)
    4 tablespoons finely grated fresh Parmesan cheese
    2 teaspoon salt
    1 teaspoon garlic powder
    1/2 teaspoon Black cracked pepper
For The Sauce:
    5 tablespoons olive oil
    2 tablespoons butter
    1 small onion finely chopped
    1 whole head of garlic peeled and divided into 10-12 cloves
    1 1/4 cup chicken broth (stock)
    1 cup half and half or heavy cream (or evaporated milk)
    1/2 cup finely grated fresh Parmesan cheese
    2 tablespoons fresh parsley, to serve
Instructions
    Season the chicken with salt, garlic powder and pepper.
    In a shallow bowl, combine the flour, parmesan cheese. Dredge chicken in the flour mixture; shake off excess.
    Heat 2 tablespoons of oil and 1 tablespoon butter in a large skillet over medium-high heat until pan is nearly smoking. Swirl pan to coat evenly.
    Fry 2-3 chicken breasts until golden on each side, cooked through and no longer pink (about 4-5 minutes each side, depending on the thickness of your chicken). Transfer to a warm plate. Set aside.
    Wipe pan over with a sheet of paper towel. Repeat with remaining oil, butter and chicken breasts. When cooked, transfer the chicken onto the same plate.
    Reduce heat to medium. Sauté the onion in the remaining oil/juices in the pan until softened.
    Smash 6 whole cloves of garlic with the blunt edge of the back of a knife
    Add the remaining oil to the pan and heat through, mixing it through the onions. Sauté smashed garlic cloves and whole garlic cloves until fragrant, about 2-3 minutes. Add the broth to deglaze the pan. Scrape up any browned bits and let simmer and reduce to half, about 5 minutes.
    Reduce heat to medium-low. Pour in the cream. Bring the sauce to a gentle simmer and season with salt and pepper to your taste.
    Mix in the parmesan cheese. Continue cooking gently for about 2 minutes until cheese melts. Add the chicken back into the pan. Let simmer for a further minute to thicken the sauce to your liking and soak up all of the flavours.
    Garnish with parsley and a little black cracked pepper.
    Serve over pasta, cauliflower mash, zucchini noodles, rice or mashed potatoes.
