All Lore from the Dragon Age: Official Cookbook: Taste of Thedas
This is going to be a long post with all the lore from the cookbook collected in one post. This is only going to be counting the lore in the "blurbs" so to speak as the actual recipes themselves, which are not meant to be set in-world.
Additionally, it should be noted that I am unable to say one way or the other if the props used in the photos or the etching art shown on some recipes are to be taken as reflecting the canon the cookbook narrator is in. For the sake of completeness, I have included the less conclusive elements.
Shoving everything below the cut for length as well as to help people avoid spoilers. Think I got everything... There is a lot in this book honestly.

Cookbook Lore
World State
Cassandra is Divine.
The Hero of Ferelden is a Cousland Warden.
The Warden gave Leliana Schmooples.
Hawke is a non-mage, as Varric knows Bethany.
Hawke is diplomatic in personality.
Bull's Chargers, Krem, and Bull are all alive.
Cullen stayed off lyrium.
Celene is empress; Briala and Gaspard are still alive.
Alistair is king.
Varric is viscount.
Uncertain aspects of the world state:
The suggested lore based on the art, props used in photos, and vague wording in blurbs. These are not for certain this is the canon.
Briala is described as a spymaster and lover, implying she was possibly reunited with Celene.
Celene, Briala, and Gaspard are possibly working together in the truce. But the wording is vague it could simply be Celene ruling alone while Briala and Gaspard live.
Cole was encouraged to be more human and is traveling with Maryden Halewell.
Cullen got his mabari.
Josephine was romanced by the Inquisitor.
Morrigan has Keiran.
The Hero of Ferelden romanced King Alistair.
Food Lore
Lentils and onions are common ingredients to find in pantries across Thedas.
Ferelden has reliable access to tomatoes that allows them to use them regularly in their food.
Fereldans are known for their love of soups, stews, pickled eggs, and turnips that it is regularly joked about and seen as a stereotype. Devon regularly comments on the known expectations.
Turnip and Mutton Pie is a classic Fereldan dish served in taverns across the nation.
Nevarra food culture holds that food is suppose to be a feast for the eyes and mouth. Leading to their plating to be dazzling and seen as works of art.
The Jade Ham, is a smoked Anderfels ham with a particular glaze made from wildflowers and turns the ham as hard as jade.
The Anderfels are hostile and often considered inhospitible in certain areas. But despite the harsh environment, pigs farm well there and as a result are much larger than elsewhere in Thedas.
There are custard connoisseurs across Thedas.
Lichen ale is toxic, though most dwarves are able to handle it. However, non-dwarves can only tolerate a few sips of the drink.
Isabela has a drinking game based on how many enemies you have, it has killed at least one person.
The Rivaini tea blend is said to have healing properties such as helping alleviate headaches.
Dwarves underground raise giant spiders like people on the surface raise cattle and goats.
Orzammar has a contest where one is crowned as Orzammar's Best Sauce, the competition is so fierce people get underhanded in their attempts to acquire recipes. This has led to eateries, and in general people of Orzammar, to guard their recipes from others.
Orzammar also farms various mushrooms for eating.
Rice is commonly found in Antiva and Rivain, however it is not a large export for Antiva so it is a rare grain for folks in Ferelden. Due to it not being exported, rice is a cheap food item in Antiva and is very common in the more mundane foods of commoners.
Wyvern, like phoenix, can become deadly poisonous if eaten when they aren't prepared properly.
A jam maker lives in Orzammar, importing individual ingredients so they can make the jam themselves and hopefully sell it cheaper than imported jam.

The golden nug statues do exist in Thedas, Devon mentions seeing one in Haven and hearing rumors of there being more.
Fereldans who worked for the Inquisition would leave Commander Cullen pickled eggs on his desk while he was going through the worst of his lyrium withdrawal symptoms.
Spring time is gurgut mating season, and travelers are advised to keep their distance.
Starkhaven is oval in shape, shaped by rings of tall, grey stone walls, is filled with lavish estates, fountains, and sits on the Minanter River.
Makes reference to the ambient events of where Cole dumped a bushel of turnips onto a fire.

So I'm going to headcanon that Par Vollen is the culinary equivalent of the Americas in Thedas (since we already know from Iron Bull's banter that they also have cocoa) and that there has been sufficient international trade in agricultural products (probably via Rivain) for potatoes and other New World staple crops to be grown in southern Thedas.

Mass Effect: The Official Cocktail Book
Coming from Insight Editions, the publisher of Dragon Age: The Official Cookbook: Taste of Thedas, is an official cocktail book for Mass Effect! The authors are listed as by Cassandra Reeder and Festante. There is a product listing for it which currently contains a placeholder title page and placeholder, mock-up style preview pages. If the listing is anything to go by, it's due out on October 22nd 2024. Link to the product listing below.
Apparently it will have suggestions for non-alcoholic substitutes and alternatives, and similar to the Dragon Age cookbook, it sounds like it will contain new lore.

Are we going to talk about how scary being the Inquisitor is for a Lavellan or…?
I mean, the more and more I have played this game, the more the Chantry shit is terrifying. Over and over again, you see painful and irrefutable evidence about the shit humans did to elves in the name of the Maker. The Exalted Plains is an obvious example.  (I consistently call it Dirthavaren you don’t like it fight me bitch) 
Like I think the entire fandom can agree on fuck that bitch sister Amity. The Chantry crusades destroyed what was left of the elves, destroyed them. Culture, body and spirit. Like be honest, there aren’t many Dalish clans left and each time a new game/book comes around, another one bites the dust. It’s so easy to lose your clan in Inquisiton and even easier to accidentally kill off Marethari’s. Hell, you can choose to kill Zathrian’s. 
The Dalish are dying out, any way you slice it.
Then suddenly a hole rips open in the sky and everybody thinks Lavellan did it. It destroys the Conclave…don’t tell me for one second that the humans didn’t immediately start developing an ‘elves and vengeance and antiMaker’ conspiracy theory. The ‘remain silent’ dialogue option in that first interaction isn’t a stoic ‘I don’t give a fuck’ to me, it’s more of a ‘whatever I say doesn’t matter I’m already dead’ for a Dalish Inquisitor. 
The true horror is knowing that they wont just kill you, they’ll call for a bloodbath on elves across Thedas.
“For the elves were guilty of the greatest sin, of turning from the Maker.”
You’ve damned them all and you can’t even remember how or why. For a First, it must be terrifying to realize even if you try to diplomatically talk your way out of it, they’ll never believe you. As a hunter or warrior, you know it’s hopeless. All you can do is throw yourself forward as the villain, claim that whatever happens you acted alone and take as many of these shems out with you as you can.  As a mage you know if they take pity on you, you’re condemned to their mage-slavery prisons.
“Whatever you think I did, I’m innocent!”
But then they believe you (barely, like thank the Creators the Lavellan clan taught you how to talk to humans civilly and not panic) but it’s basically a hostage situation. There’s one other elf with you and even if he’s not Dalish thank Mythal because shit you were scared and you’re still scared but at least it’s something. His name is ‘Pride’. You take it as a sign from the Creators that it’s not time to give up yet. Suledin, you think.
There is an orb, a weapon that caused this. Solas tells you it’s elven and your heart sinks.
“Eventually, the humans will find a way to blame elves…”
You become Inquisitor and things are a little better but the humans call you Herald of Andraste. You don’t believe in their Maker but none of them care. You know your clan would feel betrayed, think you’ve given up your gods. You haven’t of course but the terror is there…what if the gods think you’ve given up them? You talk to Cassandra and Leliana, trying to understand the human chantry and maybe figure out a way for your two beliefs to coexist. 
 But no.
You realize it wont help. Cassandra talks about spreading the Maker’s word to all corners of Thedas…you remember the lonely howls of the wolves across Dirthavaren. You know what ‘spreading the Makers word’ means. Leliana at least acknowledges what the Chantry did, but she dismisses it with words. All those lives and hopes and dreams dismissed with the words ‘that hate won’t just go away if you dissolve the Chantry’. You understand what she really means, though. 
She’s saying that the hate will never go away, not until the elves are just like humans. The Chantry will never stop.  She says she wants elves to be part of the chantry so they survive and you try not to taste bile in the back of your throat when you think of what that means.
“My father says humans are like weeds that choke out the grass…”’
Slowly, slowly, slowly...they consume you.

Hello and welcome to my detailed descriptions of what I assume things in the Dragon Age universe taste like! Part one of probably many, and feel free to comment requests of even the most unhinged items. I have an oral fixation and chewing problem, so chances are that I would find out anyway if I were living in Thedas.
I'll start out with the basics!
Elfroot;
Herby and slightly bitter. There would be a sort of richness and iron-y taste, similar to that of spinach, but likely much softer. I'd also wager that there's a slightly minty tingle or freshness as well.- When brewed into a tea, health potion, or tincture, it would likely deepen the bitter taste and bring out the tingling. Like angry, unsweetened mint tea and spinach water.
Deep Mushroom;
Probably a bit like woodear mushrooms or Morels. Earthy, fluffy, and ever so slightly mineral enriched. Some might complain that it tastes like dirt, but that's probably because they aren't washing their foragables well enough. Still, there's a slightly musty taste to it, for lack of a better word; but velvet certainly comes to mind when eating it. Regardless, you're sure to get a burst of energy after eating.
*Blue* Lyrium powder;
I wanna eat this shit so bad, I wish I was kidding. It's a very fine, sparkly blue powder that looks ever so slightly crunchy. What's not to love? I would attempt to eat a fistful of this and probably die. Regardless, I feel like it would taste sort of.. Lightning-y. Like a rich mineral, for sure. But also sort of like sparkling water or TV static. It would feel warm and fuzzy in the mouth, like when you're trying to plug your charger into an outlet in a dark room and accidentally shock the shit out of yourself because you can't see what you're doing. I feel like lyrium potions would taste very similar, but diluted and maybe slightly sweet.

How do you think the Thedas holidays are celebrated in the circles?
because they’re andrastian holidays and circles are an andrastian institution, i would be very surprised if they weren’t celebrated! but a little differently, due to the circumstances. more sermons than getting out and celebrating, i fear. nevertheless, good plentiful food and a break from work are the typical markers of a medieval-ish holiday. i would certainly expect a day off from studies and a feast in the great hall for circle mages! perhaps performances and displays of their work... here’s a great canon letter from a retired knight-commander to his knight-templar grandson that gives us some insight:
“My Dear Boy,
Your pious outrage might earn you some approval with your knight-lieutenant, but I beg you to join the rest of us in the real world, lad. Do you have any idea just how wealthy the Circle of Magi can be? The amount of gold the nobility pays for enchanted goods would overflow a well. Many mages—particularly Lucrosians—are from good families, used to entertainments and the finer things in life... and Maker knows they can afford them. So why shouldn’t they indulge a little?
Besides, a few musicians and dancers and an elaborate dinner is nothing. There are a dozen acting troupes in Val Royeaux and Halamshiral who specialise in bringing plays and stories into Circle Towers. A little collapsible scenery, the right costumes, a sprinkle of artfully chosen scent, and they can transform a workshop into an enchanted forest, a cold courtyard into a war tent on the eve of battle, or a dining hall into a darkspawn lair.
It does the mages good, too. When you see the same dreary walls day after day, a change to the familiar is a taste of freedom.
When mages entertain themselves, now, that’s a sight. No mere “tricks” there. I’ve seen ones who could juggle fire into ice or breathe a word into one hand and release a song from the other. I once saw a mage build a cathedral out of playing cards, upside down, yet it was impossible to knock it over! Even a game of battledore and shuttlecock takes on a new dimension when the players can move objects with their minds.
It isn’t all idle entertainment, either; most mages I know are eager to put their hands to useful work. Those gorgeous wooden panels in the teyrn’s castle at Ostwick? The ones that show the Qunari Wars on the Waking Sea? All carved by an enchanter at the city’s Circle, over the ten years he spent there. More than a few palaces have benefited from the artistry of mages: tapestries, stained glass, anything that takes time and patience.
In some day, some knight-captains frowned on mages spending their time and magical power for “frivolous ends.” Frivolous? Any mage with enough fine control to keep an audience enthralled, or to build a mosaic of Andraste, has better mastery of their magic than one who only uses it to destroy. Leave the moralising to the revered mothers, my boy. It’s not for us to say how a person should stay occupied in their own home.”
as for the more specific festival traditions, i wouldn’t be surprised if city-based circle mages were asked to send talent to perform magic for some festivals. the fires on funalis, perhaps. and i wonder if the most lenient circles ever have some kind of templar mage role swap for the day on satinalia lmao. or at the very least have a little apprentice be first enchanter for the day. i wouldn’t imagine they have much of a coming of age for summerday because maturity is much more marked by your harrowing

While there was some new art, previously seen concept art, there was also the use of ending credit slides. Some possibly denoting certain world states that I briefly referred to in the master post here.

These are all new images with three of these looking to be concept art: the presumably Orlesian woman looking at Andrastian themed items, the antaam spearman preparing to throw a spear, and the table setting of what looks like it might be for Rivain or Tevinter based on the aesthetic. Though I lean more Tevinter due to the snake on the basket.
The bowl and platter look to maybe be prop designs, and they are distinctly bird themed with what looks like feathers around the base of the bowl and then mirrored crows on either side of the platter with a dagger etched in the center.
The red bear shown here is new, though it is similar to a mural in Dragon Age: Inquisition in the barn where there is a green-ish bear with stars on its muzzle breathing what might be fire, while holding the white silhouette of a figure with antlers. (Couldn't attach it due to there being a photo limit.)
Then to further note that the dark blue building image looks similar to some concept art/Development images from Dragon Age: Dreadwolf (DA4)

Overall the world state makes a lot of sense I think, they went with the one that would be less quantum - so no one is dead or could be dead and is in an important role; hence Cassandra being Divine,
Summary
Inquisition is disbanded
Grey Wardens are divided; though as of the comics and Tevinter Nights we know regardless all Wardens have been called back to Weisshaupt. Unclear if the civil war mentioned in DAI is actually happening.
Morrigan has Kieran and he doesn't have the old god soul anymore
Cole is human
Josephine had her personal quest done.
Leliana wasn't killed in Origins, she is fully human and now retired.
Alistair is king
Cassandra is Divine, no clear answer on the state of the Seekers.
Cullen is retired and established the sanctuary for former templars.

Note
I figured new world crops spread to the continent when the qunari invaded. Trade seems less likely.
The Qunari invasion never reached southern Thedas, so potatoes and other New World staple crops would have to have spread to Ferelden via other means. Hence my headcanon that it would have been via trade with Rivain, which was basically a Qunari colony from 6:32 to 7:84.
So that gives us ~150 years for the Qunari to establish their own agricultural practices in Rivain, and another ~150 years since Rivain was liberated for them to trade seed potatoes etc. to the rest of Thedas.

The battlements were quiet that night.
Torchlight shone faint in the darkness. The range between the dying embers had grown long and sparse where a sentry was not required. Absolute darkness reigned wholeheartedly, where repairs to the old crumbling masonry had not yet been completed. Only the starlight kept you company here, on this stretch of stone that had become yours and yours alone. Moonlight  illuminates the heart you allow to bleed on your sleeve in the presence of no one but the Maker, Andraste, the Elvhen gods of old.
Skyhold was at peace, after such a harrowing win. A raging celebration had cloaked your base from the stables all the way to Leliana's aviary - a collective exhale, finally, breathed new life into not only the Inquisition itself, but those supporting the cause you had, once upon a time, questioned on your own. It was infectious, this taste of victory, especially when the road to get here was long and cruel and tedious. Roaring fires have calmed to kindling now, the rest of the Keep not too far behind for the night. 
There was still much to be done, but this night provided a vital respite that no one seemed to oppose.
It was a calm thing, at such an hour so late. The pathways up into the depths of the stronghold were occupied by the occasional pair, group, lone survivor stumbling to bed in their own corner of the castle.
Your time was your own, now - and by the way Bull kept sliding rounds of Maraas-Lok your way - it was a welcome thing, slipping away from your friends. Dawn was fast approaching, and you hoped to at least have your head about you when the time came to greet it. Sleep sounded a welcome way to temper the evening, but - exhausted as you were - it would never stay for long. So, here you came. Slipped away through the shortcut passages that were less traveled, less well known among those that weren’t under your direct chain of command. 
Not many knew to look for you here. Save Cole, because he was Cole. He watched over you, here at Skyhold. Out of sight, always, but without a doubt, at your back nonetheless. Leliana, of course - the Nightingale was spymaster of the Inquisition for a reason. And, finally -
"Oh, I - there you are. I've been looking for you."
Cullen.
So lost in your thoughts as you were, with your gaze tipped up, up, up, towards silver-lined clouds wisping over bright constellations and velvety darkness alike. The steady breeze gliding over your skin had a calming effect this evening. Gentle as it was, a natural balm to any sleepless night, especially on the worst ones. You hadn't realized this serenity had been broken by heavy footfalls on stone, and, hidden by the wind swirling past, was the familiar rustle of the fur cloak he never went without.
"Didn't I leave you fast asleep in my quarters?"
Starlight painted a smile upon your lips, and you wore it with all the grace and beauty of the Divine. Cullen had to stop, when your face turned from the heavens to him, down here on Thedas. If it weren't for the brisk mountain air grounding him here and now, he would be drifting away, lost in the radiant presence of the Inquisitor - his Inquisitor. A smile began to rise upon his lips, and he ducked his head in shadow. A blush began to bloom, and he knew you wouldn't leave it be.
"You did," he says to the stones. "And you -" He steps closer, eyes tipping up towards yours, watching him. There's a glint in your eye; the one he’s learned to mean mischief. At his expense tonight, no doubt. " - slipped away without a trace."
A small laugh escapes you, loud in contrast to the quiet of the night. Your hands drummed upon the chipped stone in front of you, an idle movement to occupy your body. You had become so much more restless, since you were crowned Inquisitor.
"I didn't want to wake you."
"You didn't think I'd notice you were gone?" This time it was Cullen, who chased away the silence with a quiet laugh of his own. He reaches for you, a hand skimming along your spine. It's gentle, his touch, softer without the leather gloves always hugging his skin. "My love, I always notice when you're gone."
Your smile is warm, his words taking root in your chest to grow a beautiful garden in your heart. As for it reaching your eyes, as it so often does. . .
Cullen notices, of course, when it doesn't.
His smile wavers, all space between you disappearing when you lean into his touch. Your name is quiet, when it leaves his lips. It's spoken with reverence, always his favorite prayer to sing even when you are no longer near.
“Are you all right?”
It was unintentional, to laugh at his question. And yet, that didn’t stop the sound from spilling into the night, swirling above with the snow that had just begun to fall. They were both gentle in delivery, the flakes weightless and fluffy as they shone bright in the rays of moonlight that remained. The clouds were thick and glowing now, heavy under the weight of unfallen snow. Your voice was loud in the darkness, loud in comparison to the quiet worry that Cullen always held for you.
But, the world had become heavy, even in victory. Leading the Inquisition came with a price you kept to yourself, most days.
Heavy is the head, as they say.
“I don’t think I have a choice but to be, do I?”
His touch stills, and you both turn your eyes out towards the darkness, out into the world beyond Ferelden, beyond Orlais, where trouble is no doubt lurking. Somewhere, it’s hunting for you. It never stops.
The breath Cullen takes is unsteady, yet his tone remains soft. Tender. “In front of the Inquisition? Your troops and allies? No, I’m afraid not - the stakes. . . None of us have that luxery. Though -”
It’s gentle, when he pulls you into him. You breathe in the comfort of leather and sandalwood, the faint air of celebration and strong liquor still clinging to him for dear life. The hand that isn’t holding you rises to rub circles along your back. Traces soothing lines down your side to twine his fingers through your own. It doesn’t take long before you're burying your face into his furs.
Cullen says your name again, all quiet and warm and strong. “You have a choice with me. Always.” a kiss is pressed to your crown, and it lingers. Lingers. Lingers. “With all of us in your council, really. Just as we know we have a choice around you.”
Too soon are you creating space from one another, but Cullen is stepping back to tilt your chin up from the safety of him, to the uncharted glory of the sky. Snowflakes are swirling just a little bit quicker now, the wind coming to bite, rather than soothe. You bring your eyes down to meet his veiled amber gaze, breath shaking at the warm look he’s giving you now. It’s the one you’ve seen only  when you come home hurt.
You nod, the heaviness of your crown resting a little easier now. A little less heavy, but a little more snug. Cullen offers you a smile - something small, something aching, and he begins to tug you forward by the hand. You don’t fall into him again, because he’s walking backwards in time with your steps, back the way he had come.
“That’s it, love. What do you say we continue this back inside? It’s getting a little too cold for my taste.”
A smile of your own begins to take shape upon your lips. “Welcome to the dregs of the Inquisition, Commander. Most of us don’t have a shiny rack of Templar armor to cozy under, believe it or not.”
“Oh, is that what you think? That it is warmer than it is dreadfully heavy?,” he tugs you harder with the next step, and this time he has to catch you so you don’t trip. The noise of shock that pierces through the snowfall mixes with a laugh as Cullen keeps teasing. “I brave the cold to find you, and then you twist your dagger where you can, hm?”
“I suppose -” you begin. The grin spreading across your lips is coated in irony and dripping with sugary sweetness. “- someone other than Sera should keep you on your toes. Unless, of course, you’d rather I leave it all up to her and her bees-”
“Don’t you dare.”
“You didn’t like the bees?”
“Inquisitor.”
“Yes?”
“Maker’s breath - just - I - let’s go inside.” Cullen huffs, turning on his heels to leave you laughing in the face of the dark of the night. Snow was catching in his furs, his golden hair still glowing bright in the ethereal glow of snowfall - a beacon for you, in the darkness. The grip on your hand tightened, and you couldn’t help squeeze back, laughing an apology as you finally kept pace with his strides.
When you begin to shiver, the weight of a fur cloak is slung around your shoulders; the warmth burying you in a wave of peace - the first you’ve felt in months - and you rode that wave all the way to your quarters through dawn.
