Potato Chip Crusted Crispy Tofu Banh Mi Sandwich using spud loves nacks thick cut organic potato chips. Get the recipe right here and don’t forget to enter my giveaway I posted few days ago. I am giving away a variety box of SpudLove Organic Potato Chips and Ninja Air Fryer Oven! Crispy Tofu Banh Mi sandwich with SpudLove potato chips. Makes 4 servings * 14 oz of firm or extra-firm tofu * 1 baguette sliced in 4 pieces, sliced in halves * Vegan mayo, to taste * 2-3 fresh sprigs of cilantro * half of red bell pepper sliced (optional) * Sriracha, to taste * INGREDIENTS FOR THE PICKLED VEGGIES: * 2 small carrots, julienned * ½ small cucumber, seeded & julienned * 1/2 red onion sliced * ½ fresh jalapeño, thinly sliced * ¼ cup white wine vinegar * ¼ cup of rice vinegar * Pinch of sugar, to taste * Pinch of salt, to taste * INGREDIENTS FOR THE TOFU MARINADE: * 1 Tbsp extra-virgin olive oil * 2 Tbsp tamari or soy sauce * 1 Tbsp of lemon juice * 1 fresh garlic clove, minced * ½ tsp fresh ginger, minced * Black pepper, to taste * 2 tbsp of corn starch Finely crushed jalapeño flavored chips for the crust. DIRECTIONS FOR PICKLED VEGETABLES FOR BANH MI: 1. Place the carrots, cucumbers, and jalapeños in a medium-sized glass jar. Top with both kinds of vinegar, sugar, and salt. 2. Cover the jar and chill for at least an hour. You can store it in the fridge for up to a week. Crispy tofu method: Press the tofu to release all the water and slice it in cubes. Add it to the bowl and mix it with the marinade ingredients. Let it sit for at least 10 min. Take the tofu cubes out and dust it with crushed potato chips. Air fry in for 20 min at 390 F for 15 min or until it’s crispy and golden on the outside. SpudLove Snacks’ new potato chip line will be made from organic potatoes grown at Threemile Canyon Farms in Boardman, Ore., the Hermiston Herald reports.
