Pastéis de Nata (Portuguese Custard Tarts)

I've always wanted to eat a Pastel de Nata, and I always thought I would when visiting Portugal. But I haven't been there yet, and I reckon Os Lobos (The Wolves) winning their first ever World Cup game Sunday night is cause for celebration (especially as there was only a point in it; and Fiji also qualified for the quarter-finals!) It was a beaut game, I thought the Portuguese couldn't hold that level of intensity for 80 minutes and they did! They even scored that winning try when the Fijians were finally flying again and had taken back momentum. Talk about going out with a bang! It deserved some effort on my part, so I made puff pastry and baked these beautifully flaky, delightfully fragrant and creamy Pastéis de Nata! And do they go down a treat, indeed! Happy Tuesday!

Ingredients (makes 8):

a small lemon

a cinnamon stick

1/3 cup caster sugar

2/3 cups water

300 grams/10.5 ounces Rough Puff Pastry 

a little ice cold water

2 level tablespoons plain flour

1 cup semi-skimmed milk

1 teaspoon Homemade Vanilla Extract

2 large egg yolks

Cut three wide, thin strips of lemon zest, and add to a small saucepan, along with cinnamon stick and sugar. Stir in water, and bring to the boil over medium-high heat. Once the sugar is completely dissolved, boil rapidly for about 3 or 4 minutes, until syrup just thickens. Remove from the heat, and allow to cool and infuse. Set aside.

On a lightly floured surface, roll Rough Puff Pastry into a large rectangle, but thick enough.

Brush Puff Pastry rectangle lightly with ice water, and roll tightly, horizontally, to form a sort of "sausage". Wrap in cling film, and chill in the refrigerator.

Spoon flour in a medium saucepan. Gradually whisk in a little of the milk to combine well. Then, whisk in the rest of the milk.

Heat over a medium flame, whisking constantly until mixture thickens, like a smooth Béchamel sauce. Remove from the heat, and stir in Vanilla Extract.

Strain in cooled lemon and cinnamon syrup, gradually whisking it in until well-blended. Set aside, to cool.

Preheat oven to 240°C/465°F.

Generously butter 8 cups of a muffin tin. Set aside.

Remove Rough Puff Pastry "sausage" from the refrigerator, and cut into 2,5cm/1" chunks. Working with one round Pastry chunk at a time, flatten with your thumbs into a muffin cup, easing onto the edges of the cup with your fingers to form a cup. Repeat with remaining Pastry chunks. Return to the refrigerator, 10 minutes.

Once the lemon and cinnamon cream has cooled, whisk in the egg yolks, one at a time until well-blended.

Retrieve muffin tin from the refrigerator, and fill each Pastry case with about two heaped tablespoons of the lemon and cinnamon custard (about three-quarters, as they will puff up when cooking).

Place muffin tin in the middle of the hot oven, and bake, at 240°C/465°F, 15 minutes, until puffed up and golden brown. Remove from the oven, and allow to cool, 10 minutes, before lifting the pastéis out of the tin.

Serve Pastéis de Nata warm, plain, or sprinkled with cinnamon like they do in Lisbon!

A primeira memória que Nandi tem da infância é a rejeição materna. A mais nova de dois filhos da mulher, ela veio a se tornar o maior arrependimento de sua progenitora. Era nítida a preferência da mãe para com o seu irmão mais velho, legítimo de seu casamento com um nobre, porém, todos os esforços da criança para chamar a sua atenção culminaram no pavor que a mulher sentia da própria prole que nascera com a profecia favorável aos vilões.

Nandi, na época, não tinha culpa. O sangue de Scar corria em suas veias; ela era, afinal, filha de um homem que havia nascido com o poder verdadeiro para governar. Mostrava ser uma menina inteligente, porém extremamente ardilosa, participando de brincadeiras com as crianças da sua idade, e com o irmão, que acabavam em consequências graves — mas que para Nandi não passavam de uma espécie de diversão. Tudo piorou quando a faísca se manifestou pela primeira vez nas pontas dos dedos, deixando uma cicatriz permanente no rosto do irmão mais velho.

Aquele foi o ponto de ebulição para que a mãe desejasse se livrar dela. Pagou os serviços de um espião que rastreou Scar por todos os reinos. e quando o empregado reportou tê-lo encontrado em Pride Lands, a mulher não pensou duas vezes em mandá-la embora sem um adeus. As últimas palavras que Nandi escutou da mulher que lhe dera a luz foram que ela era um monstro.

Ao contrário do que possa parecer, a mudança não afetou Nandi negativamente — ah, não. Ser parte da gangue e aterrorizar Pride Lands finalmente deu à ela um propósito, uma maneira de descontar toda aquela raiva que residia dentro dela em algo útil. Com Scar, as coisas melhoraram. A relação deles era fria, despojada de afeto, porém, existia algo muito maior entre os dois, que avigorava o elo de pai e filha.

O orgulho.

Embora Scar não tivesse a criado desde os seus primeiros dias, ele se enxergava em Nandi — e não havia nada melhor que isso para um homem tão egocêntrico. Ele poderia moldá-la para que o ajudasse a prosperar outra vez, para que enfim alcançasse a vitória que lhe fora tirada não uma, mas duas vezes — e foi exatamente isso o que fez. Nandi se alimenta em trazer orgulho para o pai, afinal, é o mais próximo de carinho que ela recebe, mas não se indispõe de ambições próprias e, talvez, piores que as do pai.

E foi assim que veio até a Seleção.

Manipulação de raios — Nandi é capaz de produzir raios de tonalidade azulada nas pontas de seus dedos. Quando atingem um alvo humano, deixam uma cicatriz de mesmo formato que, dependendo da frequência usada no raio, pode ser permanente. Os raios partem do interior de Nandi, e são movidos por sentimentos negativos. A água pode ser uma aliada dos raios da garota, causando uma corrente elétrica perigosa a qual ela é imune. Geralmente, a Askari usa os seus raios para torturar e aterrorizar as vítimas em Pride Lands.

Food And Drink in Lisbon (No. 2)

Ginjinha or simply Ginja, is a Portuguese liqueur made by infusing ginja berries (sour cherry, Prunus cerasus austera, the Morello cherry) in alcohol (aguardente) and adding sugar together with other ingredients, with cloves and/or cinnamon sticks being the most common. Ginjinha is served in a shot form with a piece of the fruit in the bottom of the cup. It is a favourite liqueur of many Portuguese and a typical drink in Lisbon, Alcobaça, Óbidos, Marvão, Covilhã and Algarve. The Serra da Estrela ginja, centered around Covilhã, has protected designation of origin.

The Ginjinha of the Praça de São Domingos in Lisbon was the first establishment in that city to commercialize the drink that gives its name to it. A Galician friar of the Church of Santo António, Francisco Espinheira, had the experience of leaving ginja berries in aguardente, adding sugar, water and cinnamon. The success was immediate and Ginjinha became the typical drink of Lisbon. In the 2000s, the business was in the hands of the fifth generation. Around 150,000 litres of Ginjinha are produced each year, around 90% is consumed in Portugal and only around 10% is exported, the majority of it to the United States. The traditional liqueur is served all around Portugal, but is especially prominent in the Oeste and Lisbon regions.
