As an omnivore who likes vegan and vegetarian cooking I think the mistake a lot of people make when trying to convince meat eaters to go plant based is trying to convince them that something you’ve got will replace meat for them.
I like vegan nuggets and real chicken nuggets for different reasons. They taste different. They only taste identical to you because you haven’t eaten meat for five years.
When cooking for myself I only eat meat maybe like three times a week because vegetarian cooking is often cheaper and it tastes good.
Like just give people the actual recipes you use that aren’t pasta. Every time you ask what to eat on a meatless day people are like. Pasta. I don’t want pasta every day.
Point out the foods people already eat that are vegetarian. Like sweet potato fries, veggie chow mein, grilled mushrooms, mashed potatoes, black bean enchiladas, peanut butter sandwiches. Tell people what you microwave when you’re drunk at 3am. Show people that vegetables are so good they’ll want them in their diet.
Also some people are just never gonna go vegan. They’re just not. I’m certainly not, and I love vegan food. But since I’ve fallen in love with vegetarian cooking I eat meat much less and I’m much more careful about picking the meat I do eat. Doesn’t that align with a lot of your goals?
Impossible burger doesn’t taste like meat. But you know what tastes really good? A mushroom fajita taco. Falafel. Potato pancakes with applesauce. Smoky vegan collared greens. Hot potato salad with herbs. Palak paneer with rice. Tofu Pad Thai with extra peanuts. Some of my favorite foods of all time, and I’m a dirty rotten meat eater. Use THAT to get your foot in the door. And be more accepting of some half-assed victories. I’m on your side for the most part, believe it or not. But stop trying to claim certain things are just like meat. You and I both know you don’t plan most of your weeknight dinners around meat substitutes.

The thing that a lot of American vegans dont understand is that vegan food that tries to imitate meat(Impossible burger, veggie 'chicken nuggets') sucks because its NOT meat, it doesnt taste like meat, we all know this, but its till sold as being indistinguishable from meat(even though it totally isnt)
Vegetarian/vegan dishes are best when they arent pretending to be or taste like meat: Mushroom risotto, eggplant parm, falafel, grape leaf rolls, drunken noodles(yea they can be served with meat, but often arent), pretty much any paneer dish from india(yea okay not vegan). All delicious and not one of them is claiming to taste like meat(because they dont)

I am also steak-indifferent. And I do like a good cheesed burger. But i believe the superior way to eat red meat is cubed and stewed in a curry for several hours
I don't think I've had red meat in a curry, I think I've only had chicken and paneer in curry? And potatoes etc. I guess. In Japan they have beef curry and it's not spicy. Like it's this gravey-ish heavy beef dish, although there's like chicken curry and stuff too. The beef one is the one I always hear about. I haven't tried it but it doesn't look like I would like it massively. It looks kinda meh to me but idk. Interesting historical fact: you might think that curry was introduced to Japan many centuries ago because Japan is in Asia, so you might analogize it to Thai curry or so on. But of course curry comes from India, and Thailand (along with the rest of SEA) had much more contact with India historically than Japan ever did. Curry was introduced to Japan by the British navy during the Meiji period. But today Japanese curry is one of the most popular dishes.

I need ideas since I can't really eat most of what my family makes lol
i like to cook from scratch so i don't know how helpful I'll be but I'll lay out some of my favorites
i eat a lot of pasta tbh. fettuccine alfredo, meatless spaghetti (or if i can find the tofu meatballs, that), pasta primavera. I'm trying some mac and cheese with gochujang in it, I'll let you all know how that is.
easy as hell feta tomato pappardelle
not to be cliche and say salad but the nashville hot pickle and spinach dijon make me (a salad hater) like salad. they sell these at walmart or raley's.
i make a vegetarian noodle soup with vegetable broth sometimes. depending on where you are, there's an amy's brand one that's canned. zuppa toscana is a fun one to make if you have veggie italian sausage (i wouldn't put white wine in it. i rarely put wine in anything.)
also korean and indian food is usually vegetarian by default. japchae is really good. it's very vegetable-heavy. i make a cold soondubu (it's usually hot but this is a very good cold for hot days version). this is kong-guksu, which is a peanut sauce ramen dish (better than it sounds).
my favorite indian dishes are palak paneer, tikka masala (i make it with cauliflower or tofu depending), chana masala, basmati rice, and naan.
falafel is vegetarian, and you can make yellow jasmine rice vegetarian easily by making it with vegetable broth instead of chicken broth. and of course, there's hummus and baba ganoush
if you like mushrooms, they're a good substitute for steak on philly cheesteak and this recipe for vegan po' boys is phenomenal.
i make black bean burgers from time to time (i usually buy them bc I'm lazy but they're fun to make). also, black bean and corn tamales are very good. quesadillas are easy too. or cheese enchiladas. they sell vegetarian refried beans too. if not, pre-boiled (or canned) whole pinto beans + vegetable shortening.
we have decent vegetarian sections at the stores i go to. i find safeway and sprouts (I'm not sure if this is a national chain or not) have the best options. i wish i lived in la or sf where all the vegans are.
when in doubt, you just buy nacho fix ins. not healthy but fun and everything that needs to be hot goes in the microwave.

first ship - Detty, my OTP ❤️ Although I feel like Lizzie x Gordo deserve a mention since that took up a large portion of my childhood (and adulthood who am I kidding), I just didn’t know what shipping was back then 🤣
last song - I’ve just come back from holiday and haven’t listened to music in a while but I think the most recent was my film/TV score playlist, specifically The Queen’s Gambit and Loki soundtracks.
last movie - Where The Wild Things Are, watched it on the plane home.
currently reading - The Power by Naomi Alderman, this is my second attempt reading it and still struggling to get into it…but I’ve heard good things and the adaptation looks good so I want to persevere! (My progress will not be helped by the release of a new book in one of my favourite series in a couple of days though!)
currently watching - Only Murders in the Building (just got into it and LOVE it), Destined With You, E.R. and Sex Education.
currently consuming - I’ve just woken up and haven’t had breakfast yet, but had an excellent homemade paneer curry for dinner yesterday and a hot chocolate afterwards 👌
currently craving - A (vegetarian) burger and dominos (the dominos craving is fairly constant 😂)

I woke up late today. When usually breakfast happens at 7:45-8, today it happened at 10.30. Post breakfast, impromptu plan to head uphill because someone said that it's sunny in the hills.
The drive uphill took longer than usual because it's been a long time since I went uphill. Only once after July and then too I came back halfway through because of the road conditions.
Anyway, it was a nice drive. I didn't speak much through the drive. Just kept making the needed sounds to keep responding to the conversations. I just wanted to give more attention to the road. And no audiobook. That sound would have been more welcome.
Uphill, stopped at a cafe for something to munch and they had a paneer zigzag burger. One of the most delicious burgers I've eaten in recent times. Melt in your mouth goodness. A cup of tea and some pictures later, it was time to head back. The drive back was faster because downhill.
Left at 12.30 and got back at 4. Good change of scenery.

bestie that is an impossible question:') i'm a hardcore foodie so choosing feel like disemboweling a body part
but some of my comfort foods: my mom's pasta, kara bun, parotta, pachipindi, aloo tikki chaat, onion dosai with orange chutney and jalapeno cheese dip, the burgers from burger singh (NOT king), tedhe medhe, frozen frooti, dry yippee noodles, kodubele, garlic naan + malai kofta, paneer things in general, kachodis, luchi + choler daal, the zingy parcel and the tacos from dominos, thattai, veg biryani (shut up it's a thing), cookies and cream ice cream, this chinese samosa thing they'd give at our old school, cheesy potato nuggets, mangoes!!!
pretty much anything with lots of spice, garlic, masala, onions and cheese:D

Comfort tag
Aww, this is going to be lovely. Thank you for the tag my dear friend @winterandwords!
Comfort movie: LOTR. Moulin Rouge. Pride. The first Avengers. 
Comfort food: Palak paneer, spice level 800. But also, literally any food that is not fruit or vegetable or dessert. Things like pasta, soup, burgers, fries, seafood, rice, sushi, stir fry, burritos, straight-up cheese and crackers. I hate this question I’m hungry.
Comfort clothing: Tights with some kind of celestial markings, a tight tank top and a loose long-sleeved shirt, probably tie-dyed or otherwise colorful.
Comfort song: God, anything by Vienna Teng. That’s my lady and I always come back to her music when I am in a state and she brings me back to myself.
Comfort book: The Great Gatsby. It is the only classic I come back to over and over. 
Comfort game: I don’t think I’ve ever played a game for comfort in my life. 😅
