honestly, it really depends on what you want to read. like platonic, romantic etc

i do recommend the works of apollo by @firealder2005 / @apollosgiftofprophecy (they're the same person).

technically this isn't a fic but an analysis which are commonly called the apollogisim essays by @flightfoot and an ongoing reading (but not technically) book series gods' eye view

literally most (pjo) things by @tsarinatorment are great but i do rec eclipse and the stolen god

there are so many more wonderful fics, these are just the ones that popped into my head instantly.
