I had the brief thought a while ago like, if Sans really is the same in deltarune as undertale, what if there's a point in the game where he just stops showing up? Like you go over to his and Papyrus' house and there's no answer because they've both been ripped out of the dimension and you just know they can't come back (I'm not going insane thinking about this at all)
that's actually something i ponder about a lot! mostly because I can't shake the feeling that it would be very out of place. deltarune already has its main, wholly original cast, and as a separate piece of media, it has every reason to keep the focus on them and the conflicts they raised. where do you find space for sans and papyrus in that...? at least in a way that makes them central to the narrative. i have a feeling, what with gaster trying to create "a new future", that the sans and papyrus we know and love might have come from the one deltarune we couldn't save.
leaving their past implied would work really well, because 1) it would allow toby to focus the actual plot on the deltarune characters 2) it would keep the air of mistery and ask fans to dig for explanations like they always have (you can't exactly say their lore is up in your face in undertale, after all) and 3) if we go full meta with deltarune being a game/simulation/unstable + gaster messing around with dark fountains and determination as per entry 17 and the missing SAVE file in the code + sans being from deltarune, "trying to go back" and having worked with gaster...
hm. i wonder if our mysteryman might have gone for "take #2"

Deltarune’s Future “Important Character”
This is a topic I hardly see discussed, but two years ago on the official Deltarune website, Toby teased a future “Important Character” who would appear in one of the game’s future chapters after Chapter 2. To wit:

At the bottom, you can see “Important Character” listed with 100% first-pass progress. This was part of Toby’s 2020 Deltarune progress update released on Undertale’s 5th anniversary, meaning that this “Important Character” has likely had much of their design completed by now.
So the big question is: Who is this important character?
We can make a number of assumptions based on this limited information:
This character is not fully implemented in Chapters 1 or 2 (hence the need for development in Ch 3+)
This character is “important” to the story and/or the overall gameplay experience
This character is likely conceptually complex or resource-intensive in some way (hence their own separate entry on the progress list)
This character may or may not be counted among the game’s bosses, given they’re listed on the same line
I don’t have any solid idea of who this character could be since our information is so limited, but I have a few theories:
The Vessel

We see a glimpse of the Vessel at the beginning of Chapter 1 before it’s “discarded.” However, the customization options that we input are still saved in the game’s data. Given that the Thrash Machine returned in Chapter 2, I’m inclined to believe the Vessel will return in a future chapter.

Although the Vessel has technically been designed already, I could see Toby’s team going the extra mile and ensuring that the Vessel maintains whatever customization we initially gave them. This would necessitate several sprite variants and some extra programming to ensure that the custom head, body, and leg pieces fit together seamlessly while in motion.
It’s possible that the Vessel could also receive a dark world form and/or dialogue portraits—these would also likely correspond to our customization choices and make the Vessel several times more complex to design than an ordinary character.
Gaster

It wouldn’t be a theory post without Gaster somewhere, right? If Mysteryman is Gaster then technically he’s already designed, but this wouldn’t account for alternate forms, portraits, or a unique manner of speech.
In particular, I suspect that Gaster may have some voice-acted lines if he makes a proper appearance in future chapters. Although Entry No. 17 implies that Gaster has a (slightly atypical) typer sound like many characters, we have seen the Shadow Crystal holders Jevil and Spamton (who are likely connected to Gaster) make use of voice lines in their battles or theme music.
There’s also the fact that the Deltarune title screen features a voice saying “Deltarune,” mirroring how the entity who took over the Undertale Twitter ended their initial announcement by shouting “DELTARUNE!”

It’s also possible that the old “abc_123” sound file from Undertale that warned about not spoiling the game’s secrets could have been connected to Gaster, given that it makes use of text-to-speech voices (which are seemingly sampled in the Entry 17 “Gaster” typer sounds).
If Gaster does have voice acting then not only would that require recording/generating various voice lines but also making sure they play in sync with whatever dialogue or character interactions that Gaster could conceivably have in a cutscene, which would make such scenes more difficult to plan out. 
The “Important Character” line could also be a subtle reference to the Egg’s flavor text that refers to it as “not too important, not too unimportant.”

However, if Gaster does show up then I think it’s likely he’d be a late-game reveal or a secret boss, so it’s possible he may not even appear in Chapters 3-5. Even if he did show up, I think it’d be out of the question that we’d get a Gaster boss fight anywhere other than during an endgame scenario, so it’s questionable how many development resources would be spent on an early-bird Gaster appearance.
An “Omega Flowey”-esque Endgame Boss

This is a catch-all category for any genre-shifting spectacle boss that would close out Chapter 5. Flowey’s boss fight was Undertale’s biggest visual spectacle and it’s likely we might see another fight of its caliber in Deltarune. Flowey’s boss form was designed and animated by Everdraed, who has continued to work with Toby throughout Deltarune’s development.

But why would a boss fight like this would happen in Chapter 5 instead of Chapter 7? Well, Flowey’s fight wasn’t the final event in Undertale’s True Pacifist route, and with Deltarune’s expanded team and development time it’s possible we may get more than one endgame fight with a similar level of polish.
I also have a sneaking suspicion that Chapters 3-5 are going to provide some form of closure, equivalent to Undertale’s neutral route/ending, with subsequent Chapters serving as an analogue to the True Pacifist ending. That’s just a hunch, though.
As for who this boss could be, it’s anyone’s guess. Three candidates that jump out to me are the Roaring Knight, the Titans, or the Angel.

None of them have any more supporting evidence than the others--each are likely be late-game bosses and possibly the final boss. It all depends on what direction the story will go. One could debate whether the Titans or even the Angel qualify as “characters,” or conversely debate whether the Roaring Knight would require many development resources if they’re just a lightner we’ve likely already met. 
Kris

I figured I’d end this list on a bit of a curveball. Kris seems like the last person who’d be “in development,” given they’ve been the protagonist for the whole game. However, I’m referring to Kris’ true self—without the Soul influencing their actions.
We’ve caught glimpses of the true Kris, but never for any extended interaction. Do they have a dialogue portrait? What would a human’s portrait look like? Some early concept art subtly implies Kris could have a portrait.

Does “true” Kris have a unique typer sound? A voice, perhaps? And let’s not forget that, despite having the same “design,” true Kris has completely different movement sprites from Kris when the Soul is in control.
Things get more interesting when we consider the dark world. We’ve never seen true Kris in the dark world. They’d likely move differently and perhaps even carry a different weapon, which would require most of their sprites to be redone. There’s also the possibility that Kris’ true form could become a battle mechanic (assuming some future reconciliation between Kris and the Soul). Maybe “True Kris” would function as some kind of devil trigger/limit break transformation that places the battle on auto-pilot or does more damage? Just a thought.
Chapter 3 seems geared to be a Kris-focused chapter, given that we’ll be exploring a dark world of their own creation. It also feels like Kris has been exerting greater influence than in Chapter 1, given that they can affect the way certain dialogue choices are delivered.

Kris also seemingly gains greater ability to railroad the Soul’s choices at the end of Chapter 2, depending on how one interprets the narration.

“Does it hurt to open your mouth like that time you were gonna be mean to my grandpa?”
He jolted and turned quickly to see the small girl as she stood in the hallway with him. He had been so focused on trying to cut the wires he hadn’t noticed her coming up behind him.
“You won’t fix those like that!” she laughed and pointed, “you don’t have any tape!”
“I-I--” he stammered as his mind raced trying to figure this little human’s game out. She reached into her suit’s pockets and pulled the electrical tape out, “Pick me up I’ll show you how mom taught me to fix those!”
He frowned but did as she asked. She was so light he couldn’t help thinking about as she sat on his arms and began to tape the wires he had just cut. Vanessa would chew his head off for failing to cause another power outage but it couldn’t be helped.
“So are you like one of those mean aliens mom told me about?” she asked as she taped.
“If I was, wouldn’t it be bad to approach me alone?” he raised a brow, because while she wasn’t persay wrong, she was a bit dumb. He should just get rid of her but if he did that, then her mother, uncle, grandfather… he’d have half the ship on his tail. He sighed. He needed to get rid of the adults first but that was difficult when he froze up every time he tried.
“Yeah but I have a panic button in my suit.” she giggled as she finished tying a bow with the tape, “there! Not as pretty as mom’s work but I’m learning! I want to be a marine biologist when I’m older not an astronaut! Space is so boring!” she laughed.
“It is not!” He gasped in shock, “Haaarr..Harriet? Harriet? That’s your name right kiddo?” he furrowed his brow, “yourrrr mother is… Amaris?”
“Pffft! Don’t call mom that! She’ll bite your head off!” She snapped her teeth and made a playful growl. She tapped his chest, “Down please!” 
He set the child down who spun around happily, “thank’s mister purple!” She ran back down the hall and he simply waved in his confused state until she vanished around the corner.

OH i want to go off so bad ok. ok. first thing first you know how when deltarune first dropped and people found out about the "garbage noise" telephone line they went "look, it's the gaster noise from entry 17!"? well sure they're the same sound, but they shouldn't have used e17 to explain the garbage noise, they should've used the garbage noise to explain e17. they got it backwards!! ok fine, mus.smile is associated with gaster, i understand colloquially calling it "gaster noise" but TECHNICALLY??? it's not. it's not his soundbit, which you can clearly hear, beeping and booping above the audio track (he sounds so stupid godbless), nor his theme, which we can find ready and labeled in the sound test room AND in the goner maker sequence. so what IS mus.smile? you can't really tell from e17. you can tell from deltarune however: it's the sound you hear when you're trying to contact someone outside of the world you're in. like kris calling toriel... or spamton and his helper. it's also the sound you hear next to the bunker (which is 100% a dark fountain, come on) though slowed down by 666%.
now, here's a list of completely unrelated words i decided to put together for no apparent reason:
mus.smile indicates a connection and/or proximity to a different world;
mus.smile plays during entry 17
entry 17 is recorded immediately before an experient, presumably the one that was gaster's downfall
"photon readings negative"
dark worlds are created w dark fountains

we connect with him in dr during the goner maker sequence
the wavy texture in the background of the goner maker sequence is the same as the one inside the dark fountains when you're about to close them.

monsters' bodies in undertale can't handle determination like ut humans can

Deltarune: The two Knights theory
MAJOR spoilers for Deltarune Chapter 2 ahead. Strap yourselves in, this post is a long one.
So, as the title suggests, this theory postulates that there are not one, but two knights in Deltarune: The Old Knight and Kris.
The New Knight, Kris
As we see at the end of chapter 2, Kris creates a dark fountain right in the middle of their living room. Presumably, they could have created the fountain in the library in between the end of chapter 1 and the beginning of chapter 2. This would make Kris the Knight that Queen refers to.

The blade shown in Queen’s cutscene is clearly a knife, much like the one Kris uses. Given that Queen confirms the cyber Dark World was only created today, Kris’s soulless moment at the end of chapter 1 fits into that timeframe.
Knight is a Title
Going by the continuation of Queen’s dialogue:
“This Power Of Determination…” “Is This Not Something That All Lightners Possess…?” “If One Was Simply” “Determined Enough” “Could Not Anyone Make A Dark Fountain?” “So Then” “If The Knight Has Taken Its Leave” “Then I Will Simply…” “Make New One”
Queen’s theory is that any sufficiently determined Lightner can create a dark fountain. This would make such a Lightner a New Knight.
It’s possible Kris only becomes the New Knight after chapter 2. Queen’s dialogue could be what gives Kris the idea to make their own fountain.
Escapism as Possible Motivation:
u/_snout_1’s theory on reddit postulates that Deltarune’s main theme is about escapism. Kris using the dark worlds as a form of escapism fits as a probable motive behind their actions to create more dark fountains. So despite Ralsei’s warning of the Roaring, Kris makes a new fountain knowing they will seal it by the end of the day; playing as a hero.
(Or maybe Kris is just getting possessed during the soulless scenes, but that’s less interesting imo)
 Why the Old Knight is NOT Kris:
The reason I theorize there’s two knights is because of King Spades, Jevil, and Spamton.
If Kris was the only Knight, then I think at least one of these three would recognize Kris. While King Spades could believably fall for a disguise, I don’t think Jevil would. I admit that is purely speculative, but I think the best evidence that there is a Knight separate from Kris comes from Spamton.

When asked about the Knight, Spamton is about to tell Kris something before suddenly his text shifts from all uppercase to proper case usage and he apologizes profusely. I believe the Old Knight somehow knows they are mentioned and stops Spamton from revealing anything. This also hints at the Old Knight being the one who helped Spamton’s career in his backstory.
 Spamton’s Backstory:
The NPCs in the trash heap after the Spamton NEO fight talk about Spamton’s backstory. They talk about how someone over the phone helped Spamton become a [[BIG SHOT]]. Eventually, the help Spamton was receiving disappeared and his career fell apart as result.
 Gaster’s Connection to Spamton

“The day he was to be evicted from the Queen’s mansion,” “I went to his room to check on him…” “But he wasn’t there.” “There was only a phone hanging off the handle” “He must’ve left in the middle of a conversation,” “Because I could still hear someone on the other end…” “…” “But when I put the receiver to my ear…” “There was nothing but garbage noise.”
Garbage noise is the same phrasing used to describe the sound that plays when you use your phone in the dark world. This sound is mus_smile, which plays during Undertale’s Entry No 17. This is strong evidence for Gaster being involved here.
 Eggs, The Old Knight, and the many fragments of Gaster
Recall back to Undertale: this particular Gaster follower

“They say he shattered across time and space.” “Haha… How can I say so without fear?” “I’m holding a piece of him right here.”
This confirms here that Gaster himself is not whole. There are at least 3 main pieces of Gaster in Deltarune that are important here. The Voice that talks to us at the beginning and in the twitter, The Man that gives the eggs, and The Old Knight
The Voice matches Entry 17’s speech patterns of VERY, VERY, INTERESTING. As well as the music playing being AUDIO_ANOTHERHIM, with Gaster’s theme in Undertale being mus_st_him.
The Man that gives us the eggs is likely the Mysteryman sprite we’ve all come to love
Given that the narration vaguely describes him in each scene “Well, there is a man here” As well as how he disappears in each scene is very similar to the Mysteryman in Undertale. It’s also possible that each instance of the Egg Man is a separate fragment. Maybe the eggs themselves also contain small pieces of Gaster? Very speculative there.
The Old Knight’s best evidence for a Gaster connection I’ve already shown with Spamton’s section. However, there is another piece that many others have pointed out. EGG in WingDings is EGG
One Side and Two Up: matching the movement of the knight piece in chess.
 Additional speculation about the Old Knight’s connection with Gaster
The Old Knight either is a fragment of Gaster or has a fragment of Gaster like the follower in Undertale does.
If the Old Knight is a piece of Gaster, then one of their goals is most likely to become whole again.
If the Old Knight has a piece of Gaster, the same goal to make Gaster whole again could very well apply. Or, the Old Knight is against making Gaster whole so they can abuse the piece they own for some unknown purpose.
 Summary and Closing Thoughts
Based on what Queen has said, Knight is more of a title than a singular entity. The title applying to a sufficiently determined Lightner that creates a dark fountain. This makes Kris another Knight as shown in the end of chapter 2.
Evidence from Spamton shows the original Knight is a separate entity from Kris.
There is also evidence that links the original Knight to Gaster. We don’t know the exact connection, but given the Gaster was shattered into pieces, I believe the Knight either is or has a piece of Gaster.
That’s my theory on the Knight(s)! I’m very excited for how the plot develops in further chapters.
