Teriyaki chicken with smokey sweet potato fries & breaded zucchini fries 4 bone-in chicken thighs ~1/4 cup of Kinder’s teriyaki sauce 1 large sweet potato 1 tbsp of Primal Palate smokehouse rub 1 large zucchini 3 tbsp of Italian bread crumbs 3 tbsp of grated parmesan Olive oil . DIRECTIONS Coat the chicken thighs with the teriyaki sauce and spray your air fryer with olive oil. Remove once the chicken is cooked through & the skin is crispy. Slice the sweet potato into wedges, coat in olive oil, and sprinkle the smokehouse rub. Place on parchment paper on a baking sheet and bake for ~40 min at 400 (depending on how thick the fries are). Cut up the zucchini, pat dry, drizzle with olive oil, and add the parm + breadcrumbs. Evenly coat each piece, add to baking sheet lined with parchment paper. Sprinkle more breadcrumbs on top & bake at 400 for ~30 min. These will be more soft but if you want them crispy, toss in an air fryer instead. . . . . Pesto chicken meatballs with roasted cherry tomatoes & spaghetti squash 👉 INGREDIENTS 2 lbs ground chicken 3/4 cup of italian bread crumbs (we used Vigo) 3/4 pecorino romano 2 large eggs 1/3 cup of pesto Salt & pepper 1 yellow onion 2 cups of cherry tomatoes 1 large spaghetti squash Olive oil . DIRECTIONS Pierce holes using a fork on all sides of the spaghetti squash (like 5 times). Microwave for 3 min. Cut the stem off and slice lengthwise. Drizzle the inside with olive oil, salt, and pepper. Place cut side down on a baking sheet with parchment paper & bake at 400 for 45 min. Once done, scrape the seeds out with a fork & then pull the rest of the spaghetti squash flesh out (transfer to a bowl- add salt/pepper). Place cherry tomatoes drizzled with olive oil in a baking dish. Bake at 400 for 25 min. Chop the onion and add to a pan with 1 tbsp of olive oil. Cook until tender (~10 min), adding more olive oil as needed. In a large bowl, add ground chicken, eggs, sautéed onions, bread crumbs, pecorino romano, pesto, and a generous amount of salt & pepper. Using your hands, mix thoroughly tg. Spray a baking dish (or baking sheet w parchment paper- no olive oil needed) with cooking spray, form the ground chicken into balls, and place in the dish. Cook at 350 for 30 min. Serve with the tomatoes, and spaghetti squash with more pesto on top if desired!! * This made ~34 meatballs and prob 3-4 servings for the spaghetti squash just fyi. Butter lettuce 1 hard boiled egg Avocado Tomato Kalamata olives 1/2 lemon . . DIRECTIONS Mix together tuna, yogurt, Dijon mustard, lemon juice, walnuts, celery, red onion, & salt and pepper. Put the tuna salad on top of butter lettuce. Serve with avocado, cut up hard boiled egg, tomato, & olives. I added juice from 1/2 a lemon to the olives, tomato, & avo once plated up. Baked BBQ tofu bites with cheesy chickpea bowties & baby broccoli 👌 INGREDIENTS 1 14 oz extra firm block of tofu @kinderssauce bbq sauce Olive oil 1 tbsp cornstarch Green onion Chickpea bowties Shredded plant based cheddar Vegan butter Almond or coconut milk Spinach Baby broccoli . DIRECTIONS Press the tofu by wrapping the block in paper towels and putting something heavy on top for 15-20 min to get rid of some of the water. Carefully cut up the tofu into bite-sized cubes & put them in a ziplock with olive oil, sea salt, and cornstarch. Toss gently to evenly coat each piece. Bake for 20 min on 400 degrees, pour on about 2-3 tbsp of bbq and make sure each piece is evenly coated. Bake for another 10 min & then garnish with green onion once done. Steam baby broccoli then sauté in olive oil and minced garlic. Cook pasta as directed. Strain and then move the pot back to the burner on the lowest setting. Steam spinach then add it to the pot along with cheddar, milk, and butter. Mix thoroughly until creamy (add more milk if needed). Top with sea salt once done. Credit-@kissmywheatgrass_ . . Miso mushroom breakfast bowl 🍽 Ingredients 🥝🥑 4 eggs 1 cup of raw mushrooms ~ 1.5 to 2 cups of brown rice Spinach 1 avocado 1/2 tbsp Cold Mountain mellow white miso Splash of almond milk Olive oil . 👉DIRECTIONS Bring a pot of water + 2 tbsp white vinegar to a boil. With a spoon, begin stirring the water in a circular motion and individually drop in the eggs. Remove after around 3 min (I lower the heat a tad). In a large pan, add the raw mushrooms & a splash of water to steam. Once soft, add the miso + a splash of almond milk. Once they’re all evenly coated, add olive oil & remove after ~2 min on medium heat. Place a bed of spinach in each of your bowls, then brown rice, the mushrooms, 1/2 of an avocado & two eggs in each. Lastly, sprinkle with Himalayan salt & chives or green onion. DIRECTIONS Steam mushrooms & spinach in a large pan. Once soft, add some minced garlic and cook for another 2ish mins. Then add the cooked pasta and however many spoonfuls of cacio e pepe sauce your heart desires. Shake up your oat milk really well then pour in to thin out the sauce (can use pasta water, almond milk, etc instead). Keep the pan on the burner (but on warm) and stir to make sure everything is evenly coated. Serve and top with salt, pepper, and toasted pine nuts. Butter Chicken and Peppers with Basmati Rice & Toasted Pita 👉INGREDIENTS @mayakaimal butter masala Chicken breast (1 lb) 1 yellow bell pepper Basmati rice Pita bread Cilantro Olive oil Primal Palate’s ginger cilantro spice Fresh cilantro . 👉DIRECTIONS Pound the chicken breast and then cut into cubes. Dice the yellow bell pepper. Place both in a large pan with a drizzle of olive oil & sauté until they are lightly brown (~ 4-5 min). Pour in the jar of butter masala ja(I did around 3/4 of the hard). into the pan & lower the heat so it’s at a simmer. Let sit for 10-15 min with the top on. Coat pita bread with olive oil (it was easy using cooking spray for this!) and sprinkle on ginger cilantro spice on each side. Air fry until browned on the outside. Serve the butter chicken and peppers over basmati rice & toasted pita on the side. Add lots of fresh cilantro on top!! Credit @kissmywheatgrass_ . . BBQ sweet potato bowl 👉 INGREDIENTS👇 2 sweet potatoes 4 chicken thighs (bone in, skin on) 2 cups of broccoli florets @kinderssauce zero sugar bbq sauce @primalpalate smokehouse rub seasoning (new!!) Olive oil *Serves 2 . 👉DIRECTIONS For the chicken, coat in olive oil & a *nice* amount bbq sauce and place in a baking dish. Bake at 400 for 45-50 min then broil for 4-5 min (keep an eye on them so they don’t burn!!) . For the sweet potatoes, cut into fries. Coat in olive oil & smokehouse rub seasoning and place on a baking sheet with parchment paper. Bake at 400 for ~40 min. Halfway through, remove from the oven, coat with more olive oil + seasoning & return to the oven. Can turn it on broil for 2 extra min for a little char! . For the broccoli, steam on the stovetop then once soft, add olive oil, salt & pepper and up the heat. Sauté until they start to char. . ^those are instructions for dinner then for lunch the next day, I cut up a chicken thigh and threw all the ingredients onto a big pan on the stove. Added olive oil & smokehouse rub seasoning & sautéed until hot. Served over arugula & topped with more bbq sauce. Baked salmon with honey balsamic brussel sprouts & red onions😋 Ingredients👇 Salmon 1 bag of @traderjoes shredded (shaved? I can’t remember) brussel sprouts 1 small red onion Olive oil . For the sauce: 3 tsp of honey 3 tsp olive oil 3 tsp balsamic vinegar 1 tsp dijon mustard 1/2 tbsp minced garlic 1/2 tsp salt & pepper . 👉DIRECTIONS Add the shaved brussel sprouts to a large bowl. In a small bowl, mix tg the sauce ingredients and then pour into the large bowl. Use your hands to massage & makes sure all the brussels are evenly coated. Add salt & pep! Place on a baking sheet and roast at 400 for 20- 25 min (move them around at 10 min just to flip) . Coat the salmon in olive oil, salt, and pepper. Bake at 400 for 17 min then broil for 5.
