Prisha and I went to the library today. Our neighborhood library has a park right next to it and it was a lot of fun watching Prisha play with the other kids. She is super friendly and I am saying this considering that she was born during the pandemic. When she got tired, we went inside the library and there is a big section dedicated to the kiddos. They have toys and a castle and home all made with cardboards. There were legos and Prisha happily played with them. Then it was time for lunch and so we had to come back home. We had a very simple lunch today - Saag bhaja and rice as the first course and Alu Kopi Borir Jhol and rice in the main course. Prisha normally sticks with butter rice but I still offer her whatever we are eating. Sometimes she eats and likes, other times she doesn't. The recipe I am sharing today is very simple yet special to me. I grew up eating and loving this spinach stir-fry. I still love it. You cannot eat this dish as a main course but it does make the perfect first course to go with steamed rice. Add a dollop of ghee and it tastes heavenly! I always used to wonder why do the kids have an aversion towards green leafy stuff? Prisha normally eats everything just fine but you cannot repeat anything with her. So, she might eat Saag bhaja today but if you repeat (even within a few days) she won't eat it. My tip to you - Prepare this Saag bhaja with fresh spinach in small quantity and enjoy this as the first course of your lunch with steamed white rice. Do you know a Spinach recipe? Soya ( Dill ) Methi Alu #sikandalouscuisine A winter favorite , normally I like using small round unpeeled potatoes cut into halves or quarters depending upon the size. Soya/dill adds in a beautiful aroma and a unique taste of something that has fennel, anise and celery ! 400 Grams Methi. 100 Grams Soya / Dill. 350-400 Grams Baby Potatoes. 1/2 Teaspoon Jeera. A Pinch of Hing. 1/2 Teaspoon Haldi. Chillies. Salt. 2 Tablespoons Mustard Oil. 1. Dice methi and soya , salt methi for 15-20 minutes , wash well. 2. Heat some mustard oil , splutter jeera , then add a few chilies and a dot of hing . Now add methi & soya along with haldi powder and saute till methi darkens and emits that lovely aroma. 3. Add potatoes and salt , saute well , and cook uncovered till done .You can cook covered too , I prefer cooking uncovered as the pototoes tend to remain nice and firm . That South meets East India Thali - Done . I truly detest wasting food. But I don't like eating the same food when there are leftovers. So, I like to further yummify my food & make it into a new yumyum. . Clockwise : 1. That Freshly Steamed Rice 2. That Yummified Dal I had a foofoo leftover dal. I didn't want to eat it again in the same way. So, I tempered groundnut oil in a pressure cooker with mustard seeds, curry leaves, asafoetida, onions, tomato puree & sambar and masala powder that @lifewithspices gave me. I added on the cooked dal, drumsticks & pressure cooked for one whistle. So yummy!! 3. Those Simplest Beans & Potatoes I tempered seasoned mustard oil with mustard seeds, curry leaves, asafoetida, garlic & onions. I added in just a little coriander powder, cumin powder, red chilli powder & salt & cooked the potatoes in this till half done. I then added in the beans & tomatoes & cooked till done. 4. Those whole wheat parathas/flatbreads 5. That Lime🤣 Such a simple hearty meal and done in 30 minutes! I find these kind of meals so soul satisfying!
