That Methi Muthia Breakfast For My Building's Security Guards - Done As you know I give the guards in my complex's tower breakfast everyday. I send down an extra portion so that whoever's on duty can call a guard friend from another tower & they can break bread together. Since so many of you asked for the recipe, here goes I mixed together whole wheat flour, chickpea flour, yogurt, leftover cooked methi aloo subzi, fresh coriander, salt, red chilli powder, turmeric powder, coriander powder, cumin powder, sugar, Eno, lime juice & oil into a smooth dough I portioned it out equally into cylinders & steamed till done in an oiled steamer I allowed to cool a bit & sliced I tempered oil with mustard seeds, cumin seeds, sesame seeds, curry leaves, asafoetida, green chillies & pan fried the muthia pieces in this till crisp on the outside Served with a coriander coconut chutney & ginger tea This was truly a wholesome nutritious breakfast. That Au Revoir Vegetarian Meal For My Parents - Done We were leaving for Pune & since Chatt Pooja is approaching, my parents' cook @wakilmukhia was going to drive back with us to spend the festival with his family. Even though there was enough food in the fridge to tide them over the next couple days, I made this meal for them just as a back up Clockwise : 1. That Rustic Cabbage & Potato/Bandhgobi Aloo I tempered seasoned mustard oil with mustard seeds, curry leaves, green chillies, asafoetida, garlic slivers & onions. I added in diced potatoes, salt, a touch of sugar, fresh coriander, coriander powder, kashmiri red chilli powder & cooked till done. I added in finely shredded cabbage & diced tomatoes & tossed till cooked but still crunchy 2. That Super Flavourful Milijhuli Dal I pressure cooked equal quantity of skinless split pink lentils /masoor dhuli & skinless split mungbeans in salted water along with asafoetida & turmeric powder. Once done I churned & left to simmer with fresh coriander I tempered ghee with smashed cloves of garlic (skin on) & once brown I added cumin seeds, curry leaves, green chillies, asafoetida, & onions. Once brown I added coriander powder, turmeric powder, that foofoo kanda lehsun masala from my home State - Maharashtra, fresh coriander & tomatoes. Once pulpy I added into the simmering lentils along with a generous squeeze of our farm's lime 3. That Freshly Steamed Basmati Rice 4. Those Farm Cucumbers & Lime 5. That Chilled Farm Guava With a generous sprinkle of salt & red chilli powder Simple meal but I knew my parents would relish it. Nothing beats cooking with farm fresh veggies. That Last Lunch At The Farm - Done All good things come to an end & our time at the farm for this visit was coming to an end. Every Sunday there's a weekly market here where they sell the freshest veggies & fish. We chanced upon super fresh baby bangdas/Mackerels so we decided that we'd have that with a mixture of the leftover lentils we had in the fridge Clockwise : 1. That Freshly Steamed Kolum Rice 2. That Tudkewaali Milijhuli Dal/Tempered Mixed Lentils We had leftover skinless split pigeon peas /tuvar dal & skinless split pink lentils/masoor dhuli. I put them both into the blender & blitzed. I left the mixed lentils to simmer together along with fresh coriander I tempered ghee with pounded cloves of garlic (skin on), cumin seeds, curry leaves, asafoetida & red chilli powder & poured this into the simmering lentils 3. That Farm Fresh Salad Cucumber, onion & lime from the farm 4. Those Super Fresh Stuffed Fried Mackerals I made a thick chutney out of fresh coriander, green chillies, garlic, salt, turmeric powder, red chilli powder, coriander powder, chaat masala, malvani masala, lime juice & white vinegar I made slits on both sides of cleaned & washed mackerals & stuffed this thick chutney into each slit & rubbed all over the fish I fried the fish in seasoned mustard oil till done It was such a fabulous meal & befitting for a last meal for this visit. That Diwali Bhog On The Farm - Done My parents @neelam.diddee, @ravindradiddee, @beingbengt & I decided to spend Diwali on the farm. If you've been watching my stories, you'll see all the awesome produce there is. Along with @wakilmukhia we jointly made this Bhog for Lord Ganesh & Maa Lakshmi today 1. That Foofoo Malvani Paneer I tempered ghee with mustard seeds, curry leaves, green chillies, garlic & onions. I then added coriander powder, turmeric powder, red chilli powder, & cooked tomatoes till pulpy. I added a foofoo spice mix from the Malvan region of India, fresh coriander & added in hot milk & simmered till it thickened. I added in paneer cubes, lime juice & simmered till done 2. Those Mixed Farm Veggies I tempered seasoned mustard oil with dalle chillies, asafoetida, coriander stems, smashed whole garlic cloves(skin on) & onions. Once brown I added salt, coriander powder, turmeric powder & cooked potatoes in this till half done. I then added in eggplants, cauliflower, tomatoes & more fresh coriander & covered & cooked on a low flame till done 3. That Rassewalla Aloo Recipe in comments because of lack of space in caption 4. That Naralachi Aamti/Coconut Lentils Recipe in comments because of lack of space in caption 5. That Khamang Kakdi/Cucumber Salad Recipe in comments because of lack of space in caption 6. That Freshly Steamed Basmati Rice 7. Those Whole Wheat Trikona Puris I rolled out whole wheat dough into the size of a chapati. I cut into four & deep fried in hot oil 8. That Chawal Ki Kheer/Rice Pudding I boiled milk & added in rice & boiled till it cooked through. I added in sugar, green cardamom powder & allowed to thicken a bit. Finished by topping with vark & slithered almonds 9. Those Store Bought Sweets For Bhog I was so nervous offering this to the Gods simply because I couldn't taste for salt & flavour balance before offering it to Them. But when we tasted afterwards, everything was in perfect balance. I guess what they say is true - food made with love can never ever go wrong. Do you agree? That Fully Loaded Requested For North Indian Meal To Take To The Farm - Done We are going to spend Diwali at the farm & my parents wanted me to take these two dishes along as we're all going to be busy planting seeds at the farm on the first day we arrive & there won't be time to cook. I made a lot to take along & instead of cooking more I served some of this for our lunch today. Both these dishes are repeatedly made in my home & are our family favourites Clockwise : 1. That @thegutlessfoodie Signature Chicken Kadhai I shredded @reddystandoorirestaurant tandoori chicken & discarded the bones I charred green capsicum & onions in very little oil & added it to the shredded chicken I tempered ghee with whole garam masala & once it sputtered I added turmeric powder & red chilli powder. Once the rawness left I added @daburindia tomato puree & kasuri methi /dried fenugreek leaves. I then added in the chicken & veggies, some @milkymistdairy fresh cream, a touch of sugar & simmered till done 2. That Makhmali Paneer Matar/Velvetty Cottage Cheese & Peas I tempered ghee with whole garam masala, green chillies, curry leaves, asafoetida, ginger-garlic pastes & onions. I then added tomatoes, @daburindia tomato puree, salt & cooked till pulpy. I then added dried fenugreek leaves /kasuri methi, fresh coriander, turmeric powder, coriander powder, red chilli powder, garam masala powder & cooked till the rawness left. I then added peas, some unsweetened khoya that I bought from @punjabsind & simmered paneer in this till done 3. That Ever Present Rangpur Lime 4. Those Chilled Quick Pickled Onions I sliced 2 onions & marinated them in 1/2 cup white vinegar + 2 pills stevia/1 tbspn sugar + 1 tbspn salt 5. Those Cucumber Sticks 6. That Under 30 minutes Meal - Done I had absolutely no veggies at home & had loads of chores to do before we all go to the farm to spend Diwali there. No time for my more elaborate meals so whilst multi tasking I came up with this yummy meal in literally under 30 minutes Clockwise : 1. That Simplest Milijhuli Dal/Mixed Lentils I pressure cooked equal amounts of skinless split pink lentils/masoor dhuli & skinless split mungbeans /mung dhuli in salted water along with asafoetida & turmeric powder I tempered equal amounts of ghee & butter with cumin seeds & whole garlic cloves. I poured this into the simmering lentils along with fresh coriander 2. That Freshly Steamed Basmati Rice 3. Those Chilled Quick Pickled Onions & Lime Sliced onions marinated in 1/2 cup white vinegar + 2 pills stevia/1 tbspn sugar + 1 tbspn salt 4. Those Foofoo Prawns I marinated prawns with white vinegar, coriander powder, turmeric powder, red chilli powder, cumin powder, salt & lots of black pepper powder I tempered coconut oil with lots of green chillies, garlic, curry leaves & onions. Once translucent I cooked the marinated prawns in this till done along with fresh coriander I ate this soulful meal slowly on a day that promised to be fast paced. That Fully Loaded Sourdough Baguette - Done We are totally crushing on the sourdough from @leflamington which we now have a weekly subscription to. We got these beautiful sourdough baguettes yesterday so instead of just making bruschettas @beingbengt requested for a @subway_India inspired fully loaded subs. Since it was Sunday, I indulged him I mixed together soya sauce, @leekumkee.india oyster sauce, black pepper powder, vinegar, chilli flakes & chicken stock cube & marinated chicken pieces in this I pan fried bacon & set aside. In the fat of the bacon I fried chicken pieces till done. In the same fat I fried a couple of eggs I slathered the sourdough with @greentokri mayonnaise & then topped it with iceberg lettuce, onions, tomatoes, cooked chicken, cooked bacon, pickled gherkins & pickled jalapeños I slathered the other half of the baguette with mayonnaise too but kept it plain for the photo because look how pretttty the crumb is!! I had just enough time to take this photo before @beingbengt devoured them. That Stuffed Idli Chutney Breakfast For My Building's Security Guards - Done Again. SO many requests for this😱 I had asked for suggestions for a good idli/dhokla steamer. Whilst the majority suggestions were for @ttkprestige (I will not buy from this brand ever again as they do not follow through with after sales) @pigeonkitchenappliances & @hellotocello (btw this is a brand I adore) I finally went with a suggestion made by @ambikanikki & @mona.punjabi17 & bought Kavitha brand only because it seemed to have the deepest idli moulds I pressure cooked potatoes in salted water. Drained & mashed I tempered oil with mustard seeds, curry leaves, green chillies, ginger-garlic pastes, asafoetida, pre-soaked channa dal & onions. Once they softened I added turmeric powder, fresh coriander, a touch of sugar & mixed in the mashed potatoes. Cooled & portioned into flat discs I poured a little @idfreshfood idli batter into oiled moulds. I placed a potato disc into each mould & topped with more idli batter. Steamed till done Served with a foofoo coriander-coconut chutney with ginger tea Whilst the breakfast turned out really yummy, Unfortunately the steel plates warped after first use & the lid wouldn't fit. So I had to return it. The quest for a deep idli mould is still very much on. Now I'm dreaming of this yummy breakfast. That Tricolour Mock Sandwich Khaman Dhokla Breakfast For My Building's Security Guards - Done Again as promised, here's the recipe for this mock fusion "dhokla" I ground fresh coriander, green chillies, ginger, garlic, fresh mint, lime juice, salt, sugar & water into a thick chutney I thinned down store bought idli batter into thick pouring consistency by adding a little oil, salt, ginger paste, yogurt & eno. Mixed well & divided into 3 portions. I mixed 1/3rd of the batter with the chutney I poured a layer of the plain batter into a well oiled cake tin & then steamed till done. I poured the chutney batter onto the steamed batter & steamed again till set. I then poured the leftover batter (in which I also added turmeric powder) on top & steamed till done. I made a very thin sugar syrup & allowed to cool I tempered oil with mustard seeds, curry leaves, green chillies, asafoetida, sesame seeds & poured into the sugar syrup & mixed well. I then poured this over the dhokla. I allowed to cool before cutting into squares Served with hot tea to the guards & styled on this gorgeous platter that I bought from @pattterned_studio You have to be a little patient with this because you have to steam it thrice but the result is yum!! Those Sesame Masala Parathas For My Building's Security Guards Breakfast - Done I usually make about a dozen of these at one go & eat them as a snack during the day. They are super nutritious & are very yummy to eat. Since so many asked for the recipe, here goes I made a soft dough by mixing together whole wheat flour, fresh coriander, spring onions, green chillies, mint, garlic, ajwain/bishop's weed, sesame seeds, chaat masala, salt, turmeric powder, coriander powder, red chilli powder & yogurt I portioned out into equal sizes balls, rolled out, baked both sides on a hot tawa, applied very little oil to both sides & cooked till done Served this to the guards smeared with @amul_india butter along with a foofoo green chutney (ground together fresh coriander, green chillies, garlic, curry leaves, mint leaves, salt, sugar & lime juice), homemade mango pickle & tea Such a nutritious breakfast & a great way to kick start your day. That Country Proud Meal For Alessandro - Done We have an Italian neighbour whom @beingbengt has been friends with. I met him for the first time a couple of days ago because he's leaving our complex & offered his plants to us. We felt the least we could do was to invite him for a meal. I'm very country proud. And I feel that one of the best ways to showcase our great Nation is through it's huge variety of food. I made my signature North, South, East West Indian Thali for Allesandro yesterday - but with clear partiality to my home State - Maharashtra Clockwise : 1. That Freshly Steamed Basmati Rice 2. That North India Inspired Kadhai Paneer Recipe in comments because of lack of space in caption 3. That South India Inspired Pepper Chicken & Potatoes Recipe in comments because of lack of space in caption 4. That West India Inspired Prawn Curry Recipe in comments because of lack of space in caption 5. That West India Inspired Naralachi Aamti/Coconut Dal Recipe in comments because of lack of space in caption 6. That West India Inspired Salad - Khamang Kakdi/Cucumber Salad I lightly crushed together chopped cucumbers, crushed salted peanuts, fresh coriander, green chillies, freshly scraped coconut, a touch of sugar and lime juice 7. Those Whole Wheat Parathas 8. That Ever Present Lime 9. That East India Inspired Homemade Rasmalai I mashed malai paneer till smooth & then rolled into medium sized spheres I heated sugar & 4 times the amount of water & dropped the spheres in it & boiled till they doubled in size. I removed them from the sugar syrup & dropped into plain water - if they sink, they're done I boiled milk in a heavy bottomed pan till it evaporated a bit. I added sugar & continued to boil till it evaporated to half quantity & was thick. I added in saffron infused milk, green cardamom powder & almond slivers I squeezed the paneer spheres & dropped into the thickened milk. I chilled & served I could see sheer unabated joy on Allesandro's face as he sampled & then took generous seconds of each dish & happily took back doggy bags of each & every dish. That Foofoo Egg Bhurji For My Building's Security Guards Breakfast - Done 😱SO many of you messaged me for this recipe. I'm thinking I need to start another insta feed only for these breakfasts 🤣 This is not a traditional anda bhurjee/scrambled eggs. It's my version of it & it tastes amazing. I tempered oil with green chillies, garlic & onions & cooked till the rawness left. I added in turmeric powder, red chilli powder, coriander powder & that onion-garlic spice mix(kanda lassun masala) that's from my home State - Maharashtra. I added tomatoes, salt & once pulpy I added a mixture of beaten eggs & fresh coriander & kept stirring & scraping the sides of the pan, making sure the eggs didn't stick & were done Served with hot buttered toasts & tea. That Mangalorean Style Doodhi Curry - Done My papa @ravindradiddee 's assistant Mary, is a Mangalorean Catholic. Often when we were kids, she doubled up as my brother @sammelier949 & my baby sitter. Sometimes she'd sleep over at our house & often we'd go to hers for a sleepover. Whilst everyone in my family will remember all the yummy non-veg food in her house was, funnily a the dish that I remember loving the most was this Doodhi/bottle gourd curry that Mary's now Late mother - Marceline D'Souza used to make. Marceline aunty was the kindest, gentest, most loving soul & today whilst making this dish with a few twists of my own, it brought back so many fun childhood memories of us & Mary's entire family In very little coconut oil I fried coriander seeds, cumin seeds, urad dal/skinless split black gram, channa dal, sesame seeds, dried red chillies & salt I cooled & ground to a fine paste along with tamarind pulp & water I tempered coconut oil with mustard seeds, curry leaves, green chillies, dried red chillies, asafoetida & shallots. I added bottle gourd, turmeric powder & fried for a few minutes. I then added water, covered & cooked till almost done. I then added the fine paste, coconut milk, a touch of jaggery, dried fenugreek leaves /kasuri methi, fresh coriander & simmered till done Oh my I was transported to those days when Marceline aunty used to hand feed me morsels of this delicious curry with rice. That Masala Pav Breakfast For My Building's Security Guards - Done As promised to literally 100s of DMs, I'm sharing this recipe here instead of replying individually. This is a recipe I created drawing inspiration from the very popular Sindhi snack - seyal double. This isn't authentic - like most of my food. So all purists - please look away now. I ground onions, tomatoes, garlic, green chillies, salt, & fresh coriander into a coarse chutney I tempered seasoned mustard oil with cumin seeds, chopped curry leaves, asafoetida, coriander powder, turmeric powder, red chilli powder & the coarse chutney. That Foofoo Shevachi Bhaji Breakfast For My Building's Security Guards - Done I'm getting so many requests for these morning breakfasts!! So for a few days I'm going to be posting breakfast posts that you'll have requested recipes for. This is one dish that I've realised people either love or hate. There are no in-betweens I dry roasted khobra/dry coconut till it turned golden brown & aromatic I fried pieces of ginger, garlic cloves & onions till they turned golden brown I ground the onions & coconut mixture into a smooth paste along with fresh coriander I tempered oil with mustard seeds, curry leaves, slit green chillies, the smooth paste, Maharashtrian Kala masala (you can add goda or garam masala), turmeric powder, red chilli powder & salt till it turned aromatic. I added tamarind pulp, a touch of sugar & boiling hot water (this is imperative to achieve that glistening layer of oil that is required for this recipe) & simmered till done. I added in store bought spicy & mild shev & mixed well (most people don't add the shev till just before serving - I prefer to add the shev whilst the gravy is hot so that the flavours blend) I served topped with fresh coriander, lime along with pav (didn't have the flour to make the traditional bhakri) & tea It was so endearing when the security guard came to give the plates back - he said thank you madam I never eat this because I have never liked the ones I have eaten before. Those Mini Stuffed Dal Parathas For My Building's Security Guards Breakfast - Done Firstly, thank you to the hundreds of people who have joined me in this morning breakfast Ritual. I feel so happy to see the photos you send on DMs!! Secondly, as promised to mannnnny, here is the recipe for this entire breakfast including tea because I got more DMs asking me how I make this tea🤦‍♀️ I pressure cooked skinless split pink lentils /masoor dhuli in salted water along with asafoetida & turmeric powder for only one whistle. I tempered oil with cumin seeds, green chillies, asafoetida & onions. I added in fresh coriander & the cooked dal/lentils & mashed coarsely I made a whole wheat dough by mixing whole wheat flour & water I portions out the dough & made dough cups with each portion. I added in the coarse dal mixture into each cup, closed the top & using my palms I flattened out the dough into thick discs I pan fried each disk till done - no these weren't deep fried even though they look a bit oily For the homemade mango pickle I grated raw mangoes with the skin still on & mixed in @bedekar_official mango pickle masala & salt I tempered oil with mustard seeds & asafoetida & poured into the mango & mixed well Adrak Tea I boiled crushed ginger, water, sugar & tea leaves togerher. Once it boiled I added in milk & boiled till done Served these to the security guards with homemade mango pickle & tea Such a filling & nutritious breakfast. That Hearty West Meets South Meets North Indian Pure Vegetarian Meal - Done I was sending food to the seniors in my area & over time I've understood their food preferences. Usually I cook separately according to their medical dietary needs. Today, since it was Friday & almost weekend, I felt like treating them so I sent each of them portions of all three dishes Clockwise : 1. Those Foofoo Ghaati Beans Aloo/Potatoes I tempered oil with mustard seeds, curry leaves, asafoetida, green chillies & onions. I added coriander powder & that crazy Foofoo ghaati masala that you can buy at the food stop on the Mumbai Pune expressway. I added tomatoes, salt & once pulpy, I cooked beans & potatoes in this till done & finished with tamarind pulp & fresh coriander 2. That @thegutlessfoodie Style Tendli Sundal I tempered coconut oil with mustard seeds, curry leaves, green chillies, asafoetida, garlic & onions. Once cooked I added a touch of cumin powder, red chilli powder, salt & cooked tendli in this till half done. I added fresh coriander, tamarind pulp & freshly scraped coconut & tossed till done 3. That Much Loved @thegutlessfoodie Style Kadhai Paneer I charred onions & green capsicum & set aside I tempered ghee with whole garam masala & once it sputtered I added red chilli powder, turmeric powder, salt & fried for a minute. I added tomato puree, dried fenugreek leaves /kasuri methi & cooked till the rawness left. I added in milk, mixed really well & simmered on the lowest flame till the milk thickened up. I added in the charred onions, capsicums & paneer & simmered till done 4. Those Whole Wheat Parathas 5.
