he's a cook from the heart type of guy and it always turns out (surprisingly) really good
most of the recipes he has memorized are probably comfort meals or hangover cures
this man is so well meaning, standing behind you and helping you with every damn thing no matter how small the task. he does the thing where he holds your hand when you're chopping anything with a knife or stirring and guides you. it gets a bit overbearing but he's trying his to help
probably acts like you have never seen an oven/stovetop before and is constantly reminding you its hot as if thats not the whole point of it
he likes playing music while he cooks with you (most likely a shared playlist between the both of you) he likes humming along to it and he likes it even more when he can hear you hum along with him
the meal he defaults to making with you is probably chicken pot pie that tastes just like home
kyle "gaz" garrick
this man can BAKE. cake? muffins? cookies? he's got a recipe for it and you bet your ass its a damn good recipe.
he probably enjoys having the great british bake off in the background while he cooks
out of all the guys in TF-141, gaz is probably the one you should trust the most in there with you. when its the two of you in the kitchen not only do you get things done efficiently, it ends up being super fun with minimal chaos!
you definitely made each other those super cute lunchbox cakes for each other at one point
as much as he loves trying new recipes with you, making strawberry rhubarb pie from scratch with you is one he will always default to. he prefers his slice with a side of whipped cream <3
john "soap" mactavish
i dont think any of the guys are completely incompetent in the kitchen, when left alone in a kitchen soap could probably make a pretty good meal. emphasis on him alone in the kitchen
but when it is you two in the kitchen it will take a lot longer than expected or go to shit (but will still be edible!)
gets into flour fights with you even if the recipe doesn't call for any. he just grabs it out the pantry and WHAPOW it looks like the pillsbury dough boy just fucking exploded
he also keeps eating things he's not supposed to. raw cookie dough, batter, straight up flour, etc he probably took a bite or two for "taste testing purposes" of course. he's lucky he's got an iron stomach because if his immune system was even the tiniest bit weaker food poisoning would be beating his ass
one thing that you would enjoy making together would probably be crème brûlée. of course he get the honors of the little blowtorch part but you could get away with doing a few if you ask very nicely
gary "roach" sanderson
he takes the smaller tasks like chopping things up, washing fruits and veggies, or keeping the countertops organized and he does a really good job at whatever small task you give him
ask him to slice something up for you and trust they will be in the most perfect even slices you have ever seen in your life
if you're baking together he would love watching whatever delicious creation you made together rise in the oven. he likes just sitting criss cross applesauce on the floor, feeling the warmth radiating from the oven as he watches the baked goods cook. the first time he did this you didn't realize he was just sitting on the floor so you tripped over him
your go-to thing to make together is definitely chocolate chip cookies. roach likes putting small designs on top with chocolate chips like hearts, smiley faces, or just cuss words because he's silly like that
they come out really good but if you share with someone else make sure you don't hand them one that says "dick" in all capital letters
simon "ghost" riley
he has all the measurements with him and a scale to measure ingredients so you think he's precise and it will be all fine right? wrong. sure he measures his ingredients but if he goes over he probably doesn't try to fix it. ghost is the type of guy to shrug it off and adds it to the bowl anyways. to him measurements are suggestions
this bitch doesnt level his measuring cups
this usually goes well for cooking but for baking not so much
has forgotten to add in seasonings on a number of occasions so right before you put it in the oven you have to do a whole checklist to make sure that everything that should be in there is actually in there
favorite thing to make together is probably pesto pasta. most of it is measured by heart which he definitely appreciates and also less dishes to wash!

This weeks post is something a bit thrifty, reducing of waste and getting the most out of what ones got and given~
Just as a heads up, if you don't like seeing raw meat please don't read further. You've been warned! There will be pictures of raw meat! As well as handling and use of animal products.
Homemade Chicken stock!
We usually get a large pack of chicken thighs, usually about i wanna day 10lbs?
Anyways~ the chicken comes as a thigh, bit of spine and a drumstick.
I like to cut it into smaller peices, one thigh can usually make 4 peices

The bit of spine area and the in-between cut into two peices
The drumsticks and the thigh areas are either baked, friend or grilled throughout the week for us to eat. Those are the easy parts to figure out .

This is usually the parts I used to have a hard time using, but not anymore~
I save them up to put in a pot of water (you can use as much or as little water as you want)
I use a regular smallish stock pot, like for making spaghetti. You could use a crock pot and overnight it if you want. I just had time to stovetop it tho.
You can add veggie ends and bits too (celery ends, carrot tops, onion skins, etc etc) I used half an onion and celery seed plus a bit of crushed garlic to add extra flavoring.

I cooked on med-low for a long slow boil and this is what it looks like before straining.

Also those bit used for broth making have a bit of meat, I let it cool from the strained stuff and picked off the usable parts. This'll go into soup or be used for chicken salad.
Its very rich and fatty, if you wanted it more lean its best to let your broth cool and then let it sit in the fridge overnight, the fat can be taken off in a puck at that point and whatever you want to do with it go for it (you could likely use it as an oil for frying potatoes or making a savory pie crust im sure!) I tend to use it as is for soup making or rice cooking.
It tends to be simple, but it makes awesome bases for soups, rice, gravies or anyplace you'd use chicken stock and it helps keep a bit of waste out of the trash system and makes use of every part of the chicken :)
As a bonus you can do similar with just plain chicken bones from rotisserie chickens, I like to pick the carcass as clean as possible then use the 'leftovers' in similar fashion as above.

2. I cook like a lot. From dinners to baking I just love to be in the kitchen making food like. Food is so great and I just love eating. Some of the best things I made so far have been pot roast, meat pie, caramel rum cake, garlic bread grill cheese, orange, and rosemary roast chicken, roast duck, killer mash potatoes, garlic parmesan chicken, chipotle roast squash, chicken meatballs in squash suace . And when it comes to parties I'm always the one willing to cook for everyone

This is such a cute idea! But we got so hungry while thinking of these…hehe. Hope you like these~
Zen:
He had a show one Saturday morning
It’s a play in the park
He knows you’ve had a busy few weeks, so he invites you out to see him and to lunch with im afterwards
You weren’t expecting the picnic he planned
He laid out a blanket in front of the stage and had a basket ready
There were goldfish shaped buns, and since he can’t cook, he just made some triangle sandwiches, and of course some beer
For entertainment, he asked some of his coworkers to chip in
So there was live music, a few poetry recitals, and sometimes the backdrop changed
All in all, it was really sweet and romantic
Yoosung:
He planned for you two to go on a hike together on a trail nearby
He had packed a basket for a picnic
But he wouldn’t tell you what food was inside
The hike itself was…well, he had forgotten how out of shape he was
He needed a few moments to breathe when you got to the top
Finally, he unloaded the basket of everything he cooked
Each piece of food had a memory associated with your relationship
There was heart and star shaped sandwiches, chocolate milk, omurice, and other cute snacks
You guys spend a lot of the time just talking and enjoying the view
Near the end, he brings out his polaroid camera and snaps a bunch of pictures for his photo album
The hike back was tiring, but nothing could wipe the smile off of your faces

You both finally had a weekend free in a very long time
When Jaehee heard the weather was nice, she asked if you would accompany her for a picnic in the park nearby
She tells you to meet her there
When you do, she set up the whole thing in a nice secluded area with picnic tables and a bench
She had table cloths, plates, and cutlery already set out for you
She had just finished barbecuing some meat she marinaded herself
She had brought a tiny coffee maker so you two could enjoy fresh iced tea and iced coffee
For dessert, she made cookies ahead of time which were decorated with a bunch of your favorite things
To end off the day, you dragged her to the playground nearby
You just talked while on the swings for the next few hours
Jumin:
He invited you over for lunch one weekend, but he didn’t tell you what he had planned
One of the security guards led you to the garden and gave you a note from him
The note held an invitation for a picnic for two…you just had to find him in his garden
It was a sweet gesture, but you kept getting lost
He came and found you in the end
In the centre, near a beautiful fountain, he had a blanket set up on the ground
Inside the basket was sandwiches and side dishes he had made himself, since he wanted it to be special
You were so touched at how thoughtful he was
The crusts were neatly removed, and the sandwiches were cut in perfect squares
When he casually announces it only took him two hours, you were about to melt
You were resting your head on his lap and nodded off
He tried to take some pictures, but they all came out blurry
You made up for it and took some photos of you both that came out nice and clear
It was one of the most peaceful days you had
Seven:
He had this weekend planned ahead of time
He had already made you save the date and had already planned a picnic at night under the stars
But it just happened to pour down rain that day
He didn’t want to cancel, so he tells you to come over anyway
When you get there, his entire living room is transformed
He put some lights and glow in the dark stars on the ceiling and dimmed the lights
He set up a blanket in the middle along with a few pillows in case the floor was hard
He was so busy setting up the living room that he didn’t really cook, so he ordered out burgers for you two
But, he did make sure there was lots of snacks (HBC) and drinks (Dr. Pepper)
You guys spend the rest of the evening just talking or finding the constellations he hid in the lights
You didn’t know you both pulled an all nighter until your usual morning alarm went off
Saeran:
He noticed how stressed you’d been lately
And also how you’ve been wanting a home cooked meal since you were too busy to cook
So he wants to plan a nice lunch for you
He invites you over to his house one weekend and takes you into the backyard
He has a pot of spaghetti and meatballs laid out on the picnic tables
“Aww! Saeran, you made the meatballs into heart shapes!”
“Yeah…uh…that was definitely, totally on purpose.”

You suggest putting ice cream in the middle of them to make ice cream sandwiches
He looks at you with such love in his eyes
At the end, neither one of you want to leave so you go inside and spend the rest of the night watching movies together

So it was no surprise when he invited you to his place for lunch
You weren’t expecting the blanket on the ground with a basket on his patio
He decorated the small area by hanging pictures of you two around
He places a flower crown on your head, which makes you a little confused, but you go with it

He pulls out a small bowl of prepared pasta salad
He also made some chicken parm sandwiches with fancy bread
For dessert, he even baked pie with a design on the crust
When it’s all done, you take a long walk around the lake nearby
As gentlemanly as ever, he takes you home and  kisses you at the door

Yotam Ottolenghis recipes for Easter lamb
Traditional roast lamb has its place, but try something new this Easter by looking to China, north Africa and Thailand for inspiration
Lamb, for all its associations with anchovy, rosemary, garlic and the Easter weekend, is a wonderfully non-denominational meat. As much as I thought I was going to stick with tradition this week, Im tickled as pink as a just-cooked fillet with how global (and, therefore, pan-religious) my recipes for lamb are. Theres a salad that takes inspiration from Thai beef salad, with the meat rare and cut thin and the salad fresh and fragrant; a shepherds pie with a north African twist from the addition of harissa, olives and dried apricots; and a lamb braise that uses all sorts of Chinese cooking staples.
The food we eat at Easter is, of course, symbolic and meaningful. Theres a reason and a story behind the traditions of our tables this weekend: the 11 balls of marzipan on top of simnel cake, say, the mark on top of a hot cross bun and the sacrifice of the lamb. But we also all have our own traditions and stories that we create with family and friends. These are the traditions we return to simply because its lovely to get together to celebrate over the long weekend, and lamb is a particularly lovely thing to do that with.
Spiced lamb shepherds pie with butterbean crust
A north African take on the classic dish, with a butterbean tahini mash topping instead of a potato one. You can assemble the pie up to two days ahead, and refrigerate, in which case add five to 10 minutes to the baking time, to allow for it being cooked from cold. Serves four generously.
90ml olive oil 3 garlic cloves, peeled and crushed 3 banana shallots, peeled and thinly sliced 600g minced lamb 2 tsp cumin seeds 3 tsp ground allspice Finely grated zest of 2 lemons Salt and freshly ground black pepper 3 tbsp tomato paste 3 tbsp rose (or regular) harissa 100g dried apricots, quartered 280ml chicken stock 220ml white wine 80g pitted green olives, cut in half lengthways 670g cooked butterbeans (ie, 3 tins worth, drained; alternatively, soak 400g uncooked beans in water overnight with a teaspoon of bicarbonate of soda, drain and boil until cooked) 3 tbsp tahini paste
In a large, heavy-based pan for which you have a lid, heat three tablespoons of oil on a medium-high heat, then saute the garlic and shallots for about five minutes, stirring often, until soft and golden. Turn up the heat to high, then add the lamb, cumin, allspice, half the lemon zest and half a teaspoon of salt. Fry for five minutes or so, stirring every now and then, until browned all over, then add the tomato paste, harissa and half the apricots. Fry for two minutes more, then add the stock and wine, turn down the heat to medium, cover and leave to simmer for 30 minutes.
Once cooked, set aside the meat to cool, then stir in the olives and remaining apricots, and spoon the stew into a 20cm x 25cm high-sided ovenproof dish and refrigerate for at least half an hour. This will firm it up, making it easier to spread the mash on top.
Heat the oven to 180C/350F/gas mark 4. Combine the butterbeans in a large bowl with the remaining lemon zest, two tablespoons of olive oil, the tahini paste, three-quarters of a teaspoon of salt and a generous grind of black pepper, then mash with a potato masher the beans dont need to be totally smooth, just spreadable.
Spread the butterbean mix evenly over the top of the lamb, then make shallow dips here and there in the surface of the mash with the back of a tablespoon. Drizzle over the remaining tablespoon of oil and bake for 30 minutes, until nicely coloured and bubbling. Leave to rest for 10 minutes, then serve.
Easy braised lamb
As the name suggests, this is a cinch of a one-pot dish. Pretty much all the work is done in the oven, but it does require a bit of organisation to marinate the meat in advance. The joy of doing all the prep a day ahead is that, when it comes to serving, this feels like an instant supper. The fresh coconut adds a gorgeous texture, but the dish is still wonderful without. Serves six.
1 tbsp cumin seeds tsp Szechuan peppercorns tsp ground ginger 1kg diced lamb shoulder
3cm piece fresh ginger, peeled and finely grated 1 tbsp chilli flakes 2 tbsp rice vinegar 2 tbsp soy sauce 20g dark brown soft sugar 2 tbsp olive oil 2 aubergines, cut into 3cm chunks 15 spring onions, trimmed and cut into 4cm lengths 2 red peppers, core and seeds removed, then cut into 6 wedges each Salt 100g coconut milk 50g fresh coconut (ie, the flesh of small coconut), coarsely grated, optional 10g coriander leaves, whole or roughly chopped 1 lime, cut into 6 wedges
Put the cumin, peppercorns and ground ginger in a spice grinder, then blitz fine. Put the lamb in a large bowl, add the spice mix, fresh ginger and chilli flakes, then rub all over to coat, cover the bowl and marinate in the fridge for at least two hours, and ideally overnight.
Heat the oven to 160C/320F/gas mark 2. Add the vinegar, soy sauce, sugar, a tablespoon of olive oil and half a teaspoon of salt to the lamb bowl, toss to combine, then tip the lot into the base of a large, 30cm x 35cm roasting tin.
In a bowl, combine the aubergines, spring onions, peppers, remaining tablespoon of olive oil and a quarter-teaspoon of salt, then spread the vegetables on top of and around the lamb. Cover tightly with aluminium foil, then bake for two hours, stirring once; add a little water if the braise starts to look a bit dry. After the two hours are up, remove the foil, bake for a further 30 minutes, then stir in the coconut milk.
Divide the stew between six plates or bowls, and sprinkle over the fresh coconut, if using, and coriander. Serve with steamed rice and a wedge of lime.

Serves four as a first course, or two as a light lunch.
1 aubergine, cut into 5cm x 3cm chunks 75ml olive oil Salt and freshly ground black pepper 100ml pomegranate juice (ideally one that is 100% juice, such as the Pom brand) 2 limes, 1 juiced to get 1 tbsp juice, the other quartered, to serve 1 tsp light soy sauce small garlic clove, peeled and crushed 400g lamb neck fillet, cut widthways into 6cm-long pieces 100g pomegranate seeds (the seeds from 1 medium pomegranate) red onion, peeled and cut into 3mm-thick slices 30g mint leaves 40g coriander, leaves and thin stalks (dont use the thick stalks here) 1 tsp kasha (aka roast buckwheat), optional
Toss the aubergine in a medium bowl with three tablespoons of oil, a quarter-teaspoon of salt and a good grind of pepper. Heat a large nonstick frying pan on a medium-high heat, then fry the aubergine for eight to 10 minutes, turning occasionally, until golden-brown all over. Transfer to a plate lined with kitchen towel and leave to cool.
For the dressing, in a small bowl whisk the pomegranate juice, lime juice, soy sauce, garlic and a quarter-teaspoon of salt.
Toss the lamb in a bowl with the remaining two tablespoons of oil, half a teaspoon of salt and a generous grind of pepper.
Put a medium griddle pan on a high heat and ventilate the kitchen. Once the pan is very hot, turn down the heat to medium and grill the lamb (and any juices and oil from the bowl) for eight to 10 minutes, turning regularly, until charred all over. Transfer to a board, cover with foil and rest for 10 minutes, then cut into 0.5cm-thick slices (youll need a really sharp knife to get it this thin).
Put the aubergine, pomegranate seeds, onion and herbs in a large bowl with three-quarters of the dressing and toss, taking care not to crush the aubergine pieces, then divide between four (or two) plates. Arrange the lamb on top, so that half the salad is visible, then spoon over the remaining dressing. Sprinkle with buckwheat, if using, crushing some between your fingers and leaving some whole, and serve with a wedge of lime.

Yotam Ottolenghis recipes for Easter lamb
Traditional roast lamb has its place, but try something new this Easter by looking to China, north Africa and Thailand for inspiration
Lamb, for all its associations with anchovy, rosemary, garlic and the Easter weekend, is a wonderfully non-denominational meat. As much as I thought I was going to stick with tradition this week, Im tickled as pink as a just-cooked fillet with how global (and, therefore, pan-religious) my recipes for lamb are. Theres a salad that takes inspiration from Thai beef salad, with the meat rare and cut thin and the salad fresh and fragrant; a shepherds pie with a north African twist from the addition of harissa, olives and dried apricots; and a lamb braise that uses all sorts of Chinese cooking staples.
The food we eat at Easter is, of course, symbolic and meaningful. Theres a reason and a story behind the traditions of our tables this weekend: the 11 balls of marzipan on top of simnel cake, say, the mark on top of a hot cross bun and the sacrifice of the lamb. But we also all have our own traditions and stories that we create with family and friends. These are the traditions we return to simply because its lovely to get together to celebrate over the long weekend, and lamb is a particularly lovely thing to do that with.
Spiced lamb shepherds pie with butterbean crust
A north African take on the classic dish, with a butterbean tahini mash topping instead of a potato one. You can assemble the pie up to two days ahead, and refrigerate, in which case add five to 10 minutes to the baking time, to allow for it being cooked from cold. Serves four generously.
90ml olive oil 3 garlic cloves, peeled and crushed 3 banana shallots, peeled and thinly sliced 600g minced lamb 2 tsp cumin seeds 3 tsp ground allspice Finely grated zest of 2 lemons Salt and freshly ground black pepper 3 tbsp tomato paste 3 tbsp rose (or regular) harissa 100g dried apricots, quartered 280ml chicken stock 220ml white wine 80g pitted green olives, cut in half lengthways 670g cooked butterbeans (ie, 3 tins worth, drained; alternatively, soak 400g uncooked beans in water overnight with a teaspoon of bicarbonate of soda, drain and boil until cooked) 3 tbsp tahini paste
In a large, heavy-based pan for which you have a lid, heat three tablespoons of oil on a medium-high heat, then saute the garlic and shallots for about five minutes, stirring often, until soft and golden. Turn up the heat to high, then add the lamb, cumin, allspice, half the lemon zest and half a teaspoon of salt. Fry for five minutes or so, stirring every now and then, until browned all over, then add the tomato paste, harissa and half the apricots. Fry for two minutes more, then add the stock and wine, turn down the heat to medium, cover and leave to simmer for 30 minutes.
Once cooked, set aside the meat to cool, then stir in the olives and remaining apricots, and spoon the stew into a 20cm x 25cm high-sided ovenproof dish and refrigerate for at least half an hour. This will firm it up, making it easier to spread the mash on top.
Heat the oven to 180C/350F/gas mark 4. Combine the butterbeans in a large bowl with the remaining lemon zest, two tablespoons of olive oil, the tahini paste, three-quarters of a teaspoon of salt and a generous grind of black pepper, then mash with a potato masher the beans dont need to be totally smooth, just spreadable.
Spread the butterbean mix evenly over the top of the lamb, then make shallow dips here and there in the surface of the mash with the back of a tablespoon. Drizzle over the remaining tablespoon of oil and bake for 30 minutes, until nicely coloured and bubbling. Leave to rest for 10 minutes, then serve.
Easy braised lamb
As the name suggests, this is a cinch of a one-pot dish. Pretty much all the work is done in the oven, but it does require a bit of organisation to marinate the meat in advance. The joy of doing all the prep a day ahead is that, when it comes to serving, this feels like an instant supper. The fresh coconut adds a gorgeous texture, but the dish is still wonderful without. Serves six.
1 tbsp cumin seeds tsp Szechuan peppercorns tsp ground ginger 1kg diced lamb shoulder
3cm piece fresh ginger, peeled and finely grated 1 tbsp chilli flakes 2 tbsp rice vinegar 2 tbsp soy sauce 20g dark brown soft sugar 2 tbsp olive oil 2 aubergines, cut into 3cm chunks 15 spring onions, trimmed and cut into 4cm lengths 2 red peppers, core and seeds removed, then cut into 6 wedges each Salt 100g coconut milk 50g fresh coconut (ie, the flesh of small coconut), coarsely grated, optional 10g coriander leaves, whole or roughly chopped 1 lime, cut into 6 wedges
Put the cumin, peppercorns and ground ginger in a spice grinder, then blitz fine. Put the lamb in a large bowl, add the spice mix, fresh ginger and chilli flakes, then rub all over to coat, cover the bowl and marinate in the fridge for at least two hours, and ideally overnight.
