oh no. i feel like if i do not consume an entire load of bread in the very near future i will simply cease to exist.
#very uh. very worried about my finances right now#like. i'm fine. i have some savings. but i also just got to put something into my savings for the first time in a VERY long time and now#now i immediately have to take it out#and i'm getting stressed out about buying groceries#because if i dip into my savings here what about there? where is the line?#and i owe so much to taxes but i can't exactly afford getting less of my pay......#my last paycheck was $0.66 more than my rent#my insurance is refusing to reimburse the last of my electrolysis visits from last year and like#i'm SO over the fight but that's $120. that i really actually kinda need?#and i'm starting to get that funny in the head feeling about wondering how i'm going to feed myself#i still feel so much shame about that funeral i went to years ago and my only thought during the reception after was about#how there was just so much food and i could actually eat my fill#i have leftovers for dinner tonight and it's fine but.... making a lovely vegan dish wasn't the best choice tbh#i feel like if i don't have a large helping of bread and meat i'm going to go insane#and it really REALLY doesn't help that i've apparently lost the ability to eat in the mornings#so i'm at quite a significant fuel deficit and it's stacking#but no matter how hungry i am in the morning the concept of processing solid food is just repulsive and daunting#eating a clif bar at 9am would take literally all of my spoons for the day#i was looking at protein shakes since i can handles *drinking* breakfast#but the cheapest one that meets my dietary requirements is $35 for a 12pack#and i'm uh. i'm worrying over spending $10 on produce this week#personal#and nevermind that i don't have the spoons to even GO shopping (:#(on an aside i switched back to my regular melatonin gummies last night and i Actually Slept. so hopefully that will continue and help some)#i just want to curl up in a ball on the floor and have someone gently place a roll of bread and hunk of cheese next to me in my enclosure#also it's photophobia season and i still feel like i haven't recovered from saturday#got too much sunlight and was nauseaus for half the day#my body feels so bad

Amnesia
An accident causes Y/N to lose her memory.  Harry takes care of her, but Y/N’s mind is still really fuzzy.  Feedback and Requests are welcomed.  Enjoy!  Lots of Love!
           The rain poured on the sleepy town.  Harry’s black umbrella dripped droplets onto his jacket. Puddles rippled, entertaining Harry during his walk home.  Harry climbed the stairs, searching for his key.  Harry stepped into the comfort of his warm house.  He shook the umbrella, releasing any leftover droplets from the fabric’s grasp.  Harry kicked off his boots, padding in his soggy socks toward the bedroom.  Harry’s stomach growled, reminding him that he skipped lunch today.  Harry searched through his fridge full of veggies and fruits.  Harry chopped the squash, noticing his phone ringing across the room. Harry huffed, wiping his hands on a nearby towel.  Harry jogged over, seeing that this was Gemma’s third call in the last two hours. Harry figured Gemma called for an opinion on her new sunglasses line.  Harry returned to his dish.  Harry added the vegetables to the tomato soup, creating an excellent scent.  Harry couldn’t wait to dive in.  Harry plopped down on his couch with the bowl in hand. Harry’s phone rang again, but this time, Anne called him.  Something in Harry’s gut forced him to answer the call. “Hello?” “Harry, why haven’t you been answering? I was worried sick.  I thought you were in the accident,” Anne choked out through sobs. Harry quirked an eyebrow, “Mom, I’m okay. What are you talking about?” “Honey, Y/N’s been in an accident.  They rushed her to the hospital.” Harry dropped the phone from his hand, standing to his feet.  Harry placed the bowl on the table, darting toward the door.  Harry stuffed his feet into his soggy boots, yanked on his coat, and gripped his car keys.  Harry stepped out into the storm without care.   *  *  *  *
           Since primary school, nobody could separate Harry and Y/N.  During recess, the other girls ignored Y/N. Harry invited Y/N to join his team for soccer.  The rest was history.  Y/N survived Harry’s awkward teenage years.  Harry understood Y/N’s emo phase.  Harry supported Y/N during her time at university.  Y/N stood by Harry throughout the years spent with One Direction. Now, Harry worried that his best friend might be on her deathbed.  Harry wiped away the tears painting his pale cheeks.  Harry sped past speed limit signs, parking in the first empty spot. Harry hopped off his car, running through the hospital sliding doors.  The bright lights burned Harry’s bloodshot eyes.  Harry’s stomach churned from the scent of sanitizer.  Gemma stood up from the uncomfortable orange plastic chairs, tackling Harry in a hug.   “Is she okay?” Harry asked, holding his sobbing sister. Gemma shook her head, “The doctors didn’t look confident.” Harry pinched the bridge of his nose, following Gemma to the waiting room.  Harry sat down, listening to the story of how it all happened.  Harry cozied up in his chair.  He planned on staying here until she woke up.   *  *  *  *
           Two more hours passed until an older man in green scrubs strolled up to Harry.  Harry sat up, stretching his aching muscles. “Hello, are you with Y/N?” Harry nodded. “We would like to bring one person into the room.  There is a chance that she may not remember you.” Harry stood up, following the doctor through the hallway maze.  The doctor stopped in room 210, knocking softly on the wood.  Harry nearly cried whenever he heard her say come in.  Harry wanted to push past the doctor and embrace her, but he politely waited.   “Y/N, we have a guest for you,” The doctor grinned. Harry stood in front of Y/N holding back his sobs.  Her fragile body looked wrecked.  Her beautiful eyes were sunken into her skull.  Her hair fell flat and looked dull.  Bruises and scratches dotted her flawless skin.  Y/N stared at Harry, smiling instantly. “Are you my new nurse?  The other nurse wouldn’t give me pudding,” Y/N pouted. Harry chuckled because of course, she would be upset about pudding.  Harry’s heart sank, realizing she didn’t remember their time together.  The doctor promised Harry that one day she would remember it, but for right now, everything was hazy. “No, I’m Harry Styles.  I’m your best friend,” Harry stated. Y/N gasped, “I’m best friends with Harry Styles? How did that happen?” Harry laughed, sitting on the nearby chair next to her, “Well, it all started during primary school.” After a few days, the doctors allowed Harry to take Y/N home.  Harry planned on taking care of her all day.   *  *  *  *
          Some days were harder than the others, she would celebrate whenever she remembered something, but other days, Harry found her sobbing in frustration.  Harry never gave up.  Harry couldn’t imagine how hard it must be to relearn everything.  Harry’s pen pressed against his notebook, writing new lyrics. Y/N creaked open the door, poking her head into his office. “Hey love, are you hungry?” She asked, revealing a plate of food.   Harry spun in his chair, grinning widely, “What did you make?” “Grilled cheese.  If I do remember, you love my grilled cheeses.  Isn’t that why you started dating me?” She asked, winking at Harry. Harry ignored the butterflies bopping around his stomach from that wink.  Harry furrowed his eyebrows, shaking his head. “We aren’t dating.  We are best friends,”  Harry reminded her.   Ever since the accident, Y/N mistook their relationship as a romantic one.  Harry always reminded her that they were strictly platonic without hurting her feelings. She gasped, shaking her head, “I’m sorry Haz. Do you still want the sandwich?” Harry nodded, “Give me a minute, and I’ll join you for lunch.” *  *  *  *
           Harry snored loudly, tossing and turning in bed.  Lightning lit up the sky, thunder shook the earth, and rain pitter-pattered on the roof.  Y/N squeezed her eyes shut, calming her heavy breathing.  Flashbacks of that horrible night haunted her mind. Another strike of lightning lit up her room, causing her to squeal.  Her feet hurried to Harry’s room.  Y/N jumped in his bed, shaking his body awake. “What?  What happened?” Harry slurred out. Y/N broke down into sobs, wrapping her arms around Harry’s body.  Harry frowned, holding her tightly.  Harry ignored his racing heart whenever she squeezed him tighter.  What was happening to him?   *  *  *  *
           Y/N curled her hair, humming a happy tune.  Harry strolled into the bathroom, smiling at her beautiful face.   “What are you doing?” Harry wondered, poking at a spot on his face. She rolled her eyes, swatting his hand away from his face, “I figured we could grab dinner tonight.” Harry nodded, “Where do you want to eat?” She shrugged, “I don’t care.  Is it a date?” “It can be a date,” Harry mumbled, blushing bright red. She giggled, “I would hope my boyfriend wants to call it a date.” Harry frowned, “Love, we aren’t dating.” Y/N set down the curler, nodding solemnly to herself.  She faked a smile, acting as though it didn’t bother her.  Y/N hated whenever she couldn’t recall her life.   *  *  *  *
           Jeff emailed Harry, scheduling an emergency meeting.  Harry groaned, realizing he would have to leave Y/N. Harry managed to stay home with Y/N since the accident.  Harry tiptoed downstairs and into the kitchen.  Y/N chopped fruit, singing along with her Spotify playlist.  Harry smiled, sitting on a nearby stool.  Y/N glanced up, grinning widely at Harry.   “Hey, I’m making you a smoothie bowl. How’d you sleep?” Harry yawned, “I slept great.  Hey, I have a meeting today.  I don’t want to go, but Jeff labeled it as urgent.” Y/N waved Harry off, “I’ll be fine.  Why are you worried?” Harry frowned, “Love, the last time I left you alone… you nearly died.” Y/N winced, “Haz, you cannot watch over me all of the time.  I survived, and I plan on being okay.  I have to call my boss, drive around my daily routine, and I plan on surprising you with dinner.” Harry chuckled, “Okay, but promise to tell me if anything goes wrong.” Y/N nodded, pushing Harry’s breakfast toward him.  The couple enjoyed their meal together before Harry left for work.   *  *  *  *
           Harry entered his house, sniffing the delicious scent.  Right away, Harry knew what Y/N was cooking. Harry walked into the kitchen, sneaking up behind Y/N.  Y/N stirred the vegetables, focusing on the dish.  Y/N felt Harry’s fingers dig into her sides, causing Y/N to jump in fear. Y/N spun around, slapping Harry’s shoulder.   “You nearly scared the life out of me,” Y/N shouted. Harry gripped his stomach, doubling over from the laughter.  Y/N rolled her eyes, pouting at Harry. “I’m sorry.  That was hilarious.  How was your day?” Harry asked, wiping away an imaginary tear. Y/N grinned, “Today was amazing.  I remembered everything.” Harry cheered, wrapping his arms around her body, “I’m proud of you.” Y/N blushed, pulling away from Harry’s grip, “I have a surprise for you.  I found a recipe for a vegan pot pie.” Harry acted as though he might fall over, “You spoil me.” Y/N giggled, rolling onto her toes, pressing her lips onto his.  Harry stood there in shock, bringing his fingertips to his tingling lips.  Why did Harry’s heart feel as though it might beat out of his chest?  Y/N returned to her dish, focusing on the vegetables.  Harry cleared his throat, trying to regain his composure.  Y/N blushed, facing Harry with wide eyes. “Harry, I forgot about it again.  We aren’t dating, and I kissed you,” She mumbled. Tears blurred her vision.  Harry frowned, watching her bottom lip tremble.  Harry reached out, pulling her shaking body into his arms.   “Hey, don’t cry.  Everything is okay,” Harry mumbled, rubbing her back. Y/N shook her head, “When will I remember everything?  Why do you put up with me?” Harry tutted, “No, I love you.  Listen, we may be best friends, but I am catching feelings.  Every time you think we are dating, I find myself desiring a romantic relationship with you.” She blushed, “Are you serious?  Harry, you can’t play with the ill.” Harry chuckled, cupping her cheeks, “I am not messing with you.  I want to fall in love with you.” She grinned, leaning up to capture Harry’s lips one more time.  The kiss tasted sweet and passionate.  Harry wondered why he hadn’t thought of this before.  Harry had feelings for his best friend.   *  *  *  *
           Y/N groaned, tossing under the sheets.  A sheen of sweat gathered on her forehead.  Y/N startled awake, screaming out of fear.  Harry jolted awake, searching around his room. His hands found her shivering body, pulling her closer to his warm body.  She curled up, cuddling into Harry’s chest. “What happened?” Harry croaked out. Y/N sniffled, “I had a nightmare.” “Do you want to talk about it?” She shook her head, “Can you hold me tighter? I need you.” Harry nodded, pressing a kiss to her head, “I love you.” “I love you.  Can I ask you something?” Harry hummed, waiting for her question. She traced Harry’s tattoos, thinking of the question floating around her mind. “Do you think you would’ve ended up with me if I hadn’t been in that accident?” Y/N asked. Harry chuckled, “Love, of course, I loved you from day one.  I was too blind to see how much you matter to me.  You are my entire world.” Y/N leaned up, kissing Harry’s soft lips. Harry’s eyes fluttered shut, enjoying the feeling of her lips on his.   “I’m lucky to have you in my life,” She whispered. Harry agreed, dreading the thought of what might have happened if she didn’t make it that day.  Harry counted his blessings every day that she stuck by his side.

The Palak Paneer Recipe You Should Cook Tonight

Palak paneer is power food. When translated literally it means spinach (palak) and cheese (paneer) - the two primary components. But there is a lot more to celebrate here. It's the kind of dish that when prepared with care and good ingredients, can shift perspectives. It's delicious, dynamic food to feed and power your body. The opposite of simply eating to fill up. With a spinach and tomato base, and range of spices, you're getting all sorts of nourishing goodness in each bite.

This version of palak paneer is inspired and adapted from one of my favorite new cookbooks Studio Olafur Eliasson: The Kitchen. I made some tweaks based on the spices I had on hand, and it's a great recipe to tackle on a weekend afternoon. It's also a recipe to consider doubling. Leftovers are great throughout the week, and fresh, homemade paneer never goes unappreciated.

I've made this version a few times since picking up the book in New York. Serve the palak paneer with brown basmati rice, or the paratha from the India chapter in Near & Far. Enjoy!

One note - a couple of you have had trouble getting the milk to curdle when making fresh paneer. It's an issue I've never run into in the many times I've made paneer (or ricotta) over the years. I suspect it might have something to do with some dairy being ultra-pasteurized, so please avoid that if possible, and you should be fine.
Ingredients
1 quart whole full-fat milk
3-4 tablespoons fresh lemon juice
1 pound spinach, rinsed
3 + tablespoons ghee or clarified butter
2 medium yellow onions, chopped
1 tablespoon black mustard seeds
2 medium cloves garlic, chopped
1 thumb peeled ginger, grated
scant 1 teaspoon crushed red pepper flakes
1 teaspoon cumin seeds, crushed
1 teaspoon coriander seeds, crushed
1 teaspoon ground turmeric
1/2 teaspoon fine grain salt
1 28- ounce can crushed tomatoes
1 tablespoons garam masala
To serve: basmati rice or paratha bread, toasted cashews, and/or micro greens
Instructions
Pour the milk into a large pot, and place over medium heat. Bring barely to a simmer and add the lemon juice, stir well, and continue to heat. The milk should begin to curdle, and if it doesn't, add more lemon juice a splash at a time. Drain using a fine strainer, or cheese cloth, press out as much moisture as possible, and allow to cool.
Place another pot of water over high heat, and bring to a boil. Salt well and add the spinach to the boiling water, and blanch for just a flash, 15-20 seconds. Drain, run under cool water - it should be bright green. Use a blender or food processor to puree, and set aside.
In the meantime, cut the paneer into small pieces, and, in a frying pan over medium heat, fry the cheese in a generous splash of ghee or clarified butter until golden brown. Set aside.
Heat the remaining ghee in a heavy-bottomed pot, and gently sauté the onions until golden. Add the mustard seeds and cook until they pop. Dial back the heat a bit, and add the garlic, ginger, chile flakes, cumin, coriander seeds, turmeric, and salt. Fry until fragrant. Add the tomatoes and simmer for 10-20 minutes. Add the garam masala and spinach and cook for another ten minutes. Serve topped with the paneer, some cashews, and micro greens with some rice or paratha on the side.

How do you celebrate Thanksgiving? And with who? I’m not American, I don’t live in the States, I’ve never been to the States, and I don’t plan on going to the States. What would you say is your number one priority in life right now? Studies, ensuring I graduate on time, get constant good grades. Do you know anyone who is in the hospital right now? What for? Not that I know of. Do you ever shop at Walmart? What do you get there? See first question. What do you call your parents? Mommy and Daddy.
How often do you make your bed? Every morning, since my mom has mild OCD and she has to check it before she or I leave the house. What did you have for dinner tonight or what will you have? Not sure about dinner since Gab’s not coming over, so I’ll have to wait till I get home to find out what it would be. Do you always get flu shots? No. My last one was in 2010 or ‘11. Do you ever have people call your phone, trying to give a survey? Not my own cellphone, but the landline yes. Are you racist at all? If so, towards who? No but this mess about white people has been getting on my nerves. Do you have any siblings? What are their names and ages? Yeah, Nina is turning 17 this year, and Joaquin is 14. What kind of cellphone do you have? iPhone 5S. Are you hot, cold, warm, or chilly right now? It’s warm. It’s close to nighttime and it had just rained, so I don’t know why it isn’t becoming chilly right now :// Do you cook at all? What's the best thing you make? I can’t and I don’t have any signature dishes. It’s weird though because both sides of the family are culinarily inclined, so I feel like I’m expected to learn how to cook when I’m older. I’d love to do my girlfriend’s family’s recipes one day. What's in your fridge right now? A bunch of leftovers, chocolates, vegetables, tubs of ice cream, eggs, frozen food, milk...just a lot of stuff to be mentioned. Where are my manners? What is your name? ‘Tis on the bio. Do you have any children? If yes, names and ages. If no, do you want any? I don’t, but yeah the idea of having a kid excites me. I’ve always liked taking care of babies and kids, and also because I also kinda want to prove myself that I’ll be faaaaaar from becoming the mother my own mom was to me. What are your favorite TV shows? Breaking Bad and The Walking Dead up until mid-season 6 are the only ones I was ever really invested in. What kind of computer do you have? I have a laptop, and it’s a MacBook Air. Has anyone close to you died? Yes, my grandfather. I’ve also had someone I went to high school with pass away almost three months ago. Have you ever been in the newspaper or on the news? Just the school paper, never anything on a national level. What car do you drive? Or do you not have a car? I have the hatchback Mitsubishi Mirage. Big cars freak me out, so a car that small is perfect for me. Do you ever go shopping on Black Friday? I have no idea what Black Friday is. Do you do your own hair or do you go somewhere to get it done? I never get my hair done. Gabie fixes up my hair for like parties and debuts, but if it’s like a family event, sometimes my mom would step in. When's the last time you were sick? What was wrong? Earlier this year. Just suddenly got a suuuuuuuper high fever but it only lasted like six hours. That’s how all my fevers go, really - appear all of a sudden but leave overnight. I was perfectly fine the next morning. Do you have a significant other? What is their name? Yup, her name is Gabie. Do you have any medical problems? I know I’m probably not alright at all mentally, but I’ve never gotten myself checked by a psychologist/psychiatrist. Do you wear makeup? What kinds? No. How many times have you been on an airplane? That would be the time I’ve been to Palawan, Cebu, Mactan, Bohol, Singapore, Indonesia, and Shanghai, so that’s 14 times. Do you enjoy eating salads? Only if it has croutons or if it’s spicy tuna salad. What is your favorite kind of pie? I don’t really eat pie. Do you eat meat? If not, are you vegetarian or vegan? I eat meat, but the guilt is slowly getting worse over time lol. I might go full vegan when I’m capable of sustaining myself and once I can make sure I can work in the kitchen without burning my place down. What is your favorite girl's name? Isabella, and purely because of my girlfriend, Gabriela. What is your favorite boy's name? Jacob, Mason, Santi...I could never really pick. What's your favorite kind of juice? Euuuugh I hate fruit, but I can tolerate orange juice. Do you have any pets? What kind and what are their names? Kimi’s a dog. What is the last movie you saw in the theatre? Wonder Woman. What was the last thing you laughed at? We were cracking jokes in my journalism class an hour ago, so it had been one of those that I found funny. Do you always lock your front door when you're home? Not really...it’s recommended, but my village is gated and super guarded so no one would dare try anything. Plus it’s very quiet most of the time so you would know if there was a ruckus going on. Do you ever leave voice messages on the phone? I don’t think the Philippines does voice messages. When is your birthday? April 21st. Whose wedding did you last attend? LOL. My mom’s brother and his wife back in like 2007. I haven’t been to any since then. What is the temperature outside where you live right now? It says it’s 29º, but humidity is crazy high that we might as well disregard the actual temperature since IT’S SO HOT anyway. Do you play any musical instruments? Nope. I mean we had to learn the recorder in grade school, but everyone knows how to play the recorder so it doesn’t really count lol. Does it snow where you live? Is it snowing there now? Nope. I’d be so surprised if that started happening, and so would the 100 million other people living in the country.
