First rhubarb pie of the season

Sadly for me I think it’s time to invest in a rolling pin because the cold wine bottle a la Boxcar Children simply is not cutting it anymore. HOWEVER, take a look at this pie crust. I rolled out the lattice to 1/8″ and it is fully 1/2″ or more. This is a new pie crust recipe for me, and I think I will be using it for the rest of my life.
1-2/3 c flour 1 tbsp sugar 1 tsp salt Whisk/sift well. Add 1 c cold butter, cut into 1/2″ cubes. Err on the larger side. Cover each cube of butter in flour and then smash it between your forefinger and your thumb. Then set it to the side. Literally just smashy smash. Once all cubes have been smashed, coat them in the flour mixture again.
Add 1/2 c cold water. Do not add more than that. If the dough is sticky, it is too warm. If the dough is stiff, it is too cold. KNEAD IT. That’s right, knead it until it comes together and you can roll it out.
Roll it flat, then fold it like you’re putting it into an envelope (two folds, folding the dough into thirds); then fold it in half so it’s basically a square.
Cut in half. Roll it out. Put it in your pie plate. The part that goes on top you can leave flat.
Now chill for 2 hours. DO NOT SKIMP ON CHILLING. The gluten has to relax or the crust will get tough. 
After 2 hours in the fridge (not the freezer), fill it, put the top on it, and bake it at 425F for 30-40 minutes.
Optional (but I did it so it’s shown here): beat an egg with a tablespoon of water, and brush onto the top. I don’t own a brush, so I just did it with my fingers. As long as you’ve beaten the egg pretty well, it will go on fine.
LOOK AT THIS BEAUTY. I’ve always made pie crust with pea-sized pieces of butter, sometimes mixed with shortening or lard. Never giant chunks. Never KNEADING IT. What a world. Recommended.
