Assuming you mean New Management AU here...

I'll answer your second question first and say that no. Eclipse does not exist outside of that arcade cabinet. I never interpreted it as a separate character and while I find it incredibly impressive that people created an entire character of a very simply animated sprite in the background of a hidden arcade machine, it's not really for me. It's a cool idea, but not something I personally want to use. Though of course, the more I talk about New Management AU, the more it's gonna be a thing that other people think about and imagine for themselves with their own spins and twists and interpretations of the characters so there's nothing stopping you or anyone else from having a version of it with Eclipse in it! Eclipse can be in any AU you want them to be in buddy!

On to what Sunny and Moon would do in New Management AU...

I'll start by giving some context. In this AU, the daycare is classed as everything passed the doors in Kids Cove and the lobby. This includes the room under the daycare party rooms that connects to the cove and the Superstar Theatre. They're both considered one animatronic by Fazbear Entertainment, and thus, are given the manager role at the same time. They're the third/fourth animatronic to get this promotion so Roxy and DJ are helping them out best they can, while the others support them with floods of ideas.

The first things are obvious. Move the fucking generators out of the play structures. Why they were in there is beyond them, but they're out now and in a much safer spot. The security on daycare passes is upped as well. By this I mean that there's more details needed on parents and guardians in order to get a pass and to be in a much better position to help should a child need it. I can imagine Fazbear Ent wouldn't even ask about allergies or anything basic like that so that whole system gets improved so lunch times aren't a game of child roulette. One last thing they do for safety is remove the big water feature in the entrance and replace it with some stuff I'll get to in a mo'

Anyway, the two have them have bought an actual shit ton of toys. They've got new board games, craft supplies, picnic benches, storybooks, everything. They get more films to play in the cinema, with licenses to play films that aren't Fazbear brand, and hire more staff to help out around the daycare. They completely revive the theatre aspect of it and bring back their best friend Foxy to keep it going. There's a few problems with Foxy being back, but those are for another day. He makes a grand return to a completely revamped stage, with Sunny and Moon as his co-stars and with the new freedom to create the stories he wants to create, the new theatre is a huge hit.

They also make some changes to the small part of Kids Cove they have control over. That room has paintings of everyone on the wall so there's just some updates and editions to that to include DJ, Roxy's new look and the Minis to it all. The place is also full of things like slides and swingsets and what not that have kinda been left to rot over the years so they also go in and replace all of that... with animatronic safe versions. All the animatronics - except DJ unfortunately - can now fuck around in the Cove in all the same ways the kids can and they all fucking love it! It's the best thing they've ever done! Kids Cove is now the most frequented hangout spot now and it's great!

The entryway to the daycare gets turned into an old timey looking picnic area, with a wishing well, picnic benches and some play equipment. There's some more animatronic safe swings and a seesaw. It's chill there and it's much quieter than the Kids Cove playground. It's mostly there for the kids that are too old for the daycare to play while their guardians go drop off the toddlers and chat for an hour with their friend they just bumped into or whatever. Also, just a quieter spot in general. Moon felt they needed some more chill places in the Plex and basically everyone has agreed so far.

But you know what their favourite thing is? Sunny and Moon have brought the panto back to the PIzzaplex! And it gets bigger and bigger with everyone that gets promoted to the manager position! It's great! With the new staff, and with Foxy back, they have much more freedom about where they spend their time during the day and they love it so much! Not only do they get to bring the panto back, they give themselves wandering hours like most of the other animatronics have and it has changed their brain chemistry so much. They can only go to places that the other managers have agreed to - which is none of the human ones so to start off, it's only ever the Raceway and the Fazcade turned Golden Record Arcade - but they can have joint parties way easier now! They can join in on a casual race or just pop by to say hello! They can play different arcade games with the kids and dance in DJ's club whenever they want to now! They have options! They have choices! They love it!

On the topic of the other's though, I feel it's very important to note that Roxy and DJ advise them very heavily to make themselves an actual home. Like, Roxy has bought more stuff for her den and potentially made it bigger so she can fit her own sandpit in there (I'm undecided how far she takes the den upgrades) and DJ has turned the crossroads in the tunnels a ways behind his stage into a large room that he can comfortably exist in. Sure, these things are expensive to implement initially, but they're so adamant that it's probably the most important thing they can do to start off with that it convinces both of them to try it. They didn't really know where to start with it, but with Roxy, Chica, Monty, the Minis, DJ through a webcam and heck, even Vanessa's help, their room gets so much nicer. They get soft and springy carpets, pillows, plushies, beanbags, wallpaper, fairy lights, glow in the dark stars, lava lamps... they take a bit to take to this but once they do they go absolutely ham on an Ikea catalogue while the others loudly cheer them on, it's great. They love it. Everyone is so proud of them.

So, in short, everything gets a revamp. This includes, their merch, their play structures, the artwork, the toys, the games, the food, the theatre and the film selection. Foxy is brought back from the dead and is given free reign of the theatre and shows, they put on pantomimes together and Sunny and Moon give themselves wandering hours to do what they want through the day. There is now a kids playground big enough and sturdy enough for almost all of the animatronics to play on too, and basically everything that Foxy used to do in that specific part of Kids Cove has returned and been updated to his liking. Since I forgot to mention it earlier, all of the restrictions on when Sunny or Moon have control of their body are removed so its up to them when they switch and not up to how bright the room lights are. They get to revamp their room and make it real nice and cosy, and generally have a really great time with it. Things get safer in the daycare and their quality of life improves tenfold.

There's some like. Plot stuff going on through all of this, but in terms of what they actually accomplish? Yeah that's about the extent of it. Like the others, they're slow to start implementing things, but once they get their heads around everything, they're flying.
