I would love to be able to say that I always make 'healthier' choices when it comes to food. That doesn't always happen, though..
There are some recipes you can make lighter by substituting ingredients - and they still taste great! I actually substitute ingredients a lot in my cooking. But.. there are a few recipes of which I just can't compromise the rich flavors. Let's face it - Chicken Alfredo just isn't the same without the heavy cream. And low fat ranch dressing is gross.
So..here goes!
Ingredients:
2 tbsp Olive Oil
1 lb. Boneless Skinless Chicken Breasts
Salt, pepper, garlic, onion powder to taste
12 oz box Barilla Gluten Free Fettuccine
4 tbsp Butter
3-4 cloves of garlic
16 oz Heavy Cream
5 oz Parmesan Cheese
Steps.
Step one. Put a pot of water on to boil. When boiling, add pasta.
Step two. Pour olive oil into your pan of choice - I used a cast iron skillet on medium-low. While olive oil is heating, slice chicken into thin strips and sprinkle on salt, pepper, garlic, onion powder. Add to pan.
Step three. In a separate pan on low, melt the butter. After melted, add the garlic and saute until fragrant.
Note: Do not allow the garlic to brown - it will be bitter.
Step four. Turn chicken and stir pasta. This particular gluten free pasta will stick together if not stirred frequently.
Step five. Slowly pour the heavy cream into the pan with a butter and garlic, stirring with a rubber spatula or silicone whisk.
Step six. When the butter and heavy cream are almost at a simmer and no longer separate, slowly add parmesan cheese. Continue to stir while the cheese melts.
Step seven. By now, your chicken and pasta should be done. If I'm cooking alone, I am guilty of leaving the heavy cream and parmesan cheese mixture to simmer while I turn off the chicken and strain the pasta.
Step 8. Pour the pasta and chicken into a large bowl. When your alfredo sauce is done, pour over the pasta and chicken.
Step nine. Mix and enjoy!

Mom’s Chicken Fettuccine Alfredo (VIDEO)
Mom’s creamy Chicken Fettuccine Alfredo has been a family favorite for years. Classic Chicken Alfredo is a feel good comfort food – so creamy but light!
Mom learned how to make this “Pollo Chicken Fettuccine Alfredo” in culinary school. She made it for us when we were kids and we were crazy about it. Now I make the same alfredo recipe for my family. It’s one of my favorite comfort foods. Watch the video tutorial and learn how to make chicken alfredo.
Chicken Fettuccini Alfredo
Ingredients for Chicken Fettuccine Alfredo:
We usually use chicken breast but chicken tenders would work well if that is what you have on hand.
Fettuccini is the pasta of choice here but we’ve been known to swap with angel hair or vermicelli. You can use a variety of pastas. P.S. sometimes we sneak in the full pound of pasta when feeding a crowd. 
Substitute for Half and Half?
This recipe calls for half and half, but you can substitute with equal parts of milk and heavy whipping cream. The half and half thickens as it simmers and even more as it rests. 
How to Make Chicken Alfredo (Video below):
1. Cook fettuccini in a large pot of salted water (4 qts water with 1 Tbsp salt,) according to package instructions then drain and set aside.
2. Meanwhile, thinly slice chicken breast into strips and season all over with salt and pepper. In a large, deep skillet, heat 2 Tbsp olive oil over medium/high heat and saute chicken until light golden and cooked through (5 min). Remove chicken from the pan and cover to keep warm.
3. In the same pan over medium/high, add 1 Tbsp olive oil and 1 Tbsp butter. Add onion and sauté 3 minutes until soft. Add sliced mushrooms and sauté until soft (5-7 min), stirring frequently. Add garlic and sauté another 30 seconds until fragrant, stirring constantly.
4. Add half-n-half and simmer over medium/high heat 6-10 min, or until just barely beginning to thicken. Add chicken back to pan, along with 1/4 cup parsley and season sauce to taste (1/2 to 1 tsp salt and 1/4 tsp pepper).
5. Add cooked pasta and stir to combine. Heat another minute until warmed through then turn off the heat, cover and let pasta rest 10-15 minutes then stir to combine and serve garnished with more parsley.
After the pasta rests, you will have a creamy but light Alfredo sauce that coats the noodles perfectly.

2 lbs Chicken Breast

Creamy Broccoli Fettuccine recipe
When I need to get a quick and delicious dinner, the Creamy Broccoli Fettuccine recipe is on top of my list, since it’s a full of flavor and nutritional values pasta dish, which can be made in less than 30 minutes.
The sauce is amazing, an Alfredo version with lots of flavors where we infuse the heavy cream with chicken stock and white wine to create just the right acidity in order for this dish to shine, removing the usual heavy feeling of the cream.
The broccoli is a perfect match for any heavy cream based sauce, it absorbs all the fluids and flavors without getting soggy or breaking apart.
Cooking the broccoli is probably the most important stage in the dish, this is where we really have to keep things accurate, cooking the broccoli for 4 minutes sharp, not a second more than that. It might look a short time but the procedure is more of a bleach than actual cooking, we want the natural crunchiness of the broccoli to remain in the cooking, resolving in a firm broccoli rather than a soggy one which will break apart (and lose most of its nutritional values).
Any long pasta will do just fine for this recipe, even a short pasta like Penne will be OK, just make sure you’re cooking the pasta to an “al dente” texture which usually means you cook it one minute less than the recommended time on the package (since we will cook it with the sauce as well)
This quick pasta dish is a base for any creative thinking you might have, it’s possible to change the pasta to a short kind like Penne, Maccheroni or Rigatoni spread some parmesan on top and bake under the grill for 10-15 minutes to add a burnt crispy texture on top.

Fettuccine Alfredo

  (Canadian restaurant recipe with influence of Greece)
Ingredients:
½ lb. butter
2 small containers whipping cream
1 pint half and half
1 cup grated Romano Cheese
1- 8 ounce container sour cream (room temperature)
3 Tablespoons cornstarch with enough cold water to dissolve
½ lb. of baked ham (chopped into small pieces and sauteed in 2 Tablespoons butter)
2- 12 ounce boxes of Fettuccine noodles (prepare according to box instructions)
Directions:
Melt butter in heavy sauce pan. Add whipping cream and Half & Half. When mixture is hot, and dissolved cornstarch. Stir until cream is slightly thickened, then shut off burner. Add grated cheese and noodles. Sprinkle with sauteed ham and serve.

Making this dish in particular has been apart of my family tradition since before I was born. I chose to speak about this dish because not only is it a family tradition but it is my absolutely favorite meal to eat. If there was one meal I had to eat till I died it would be Fettuccine Alfredo with sauteed ham. If it is made right It can be a lengthy process so make we had to make sure it was being made hour or two before an event. You would know if it was being made because the whole house would smell like a delicious honey ham. This is one meal you want to make sure the recipe is spot on. I remember one year my Yiayia made this meal and had forgotten one ingredient. The sauce ended up tasting like metal because of that missing ingredient. We didn’t want to break it to my Yiayia that it was awful so we put the food in a toss away bag before she could see. I believe she realized that something was off when she was eating it. That was the only time I ever had to throw away my favorite meal away. This experience showed how important is is to make it the right way and with all the ingredients. When I was younger, this meal was only made special for major holidays and my birthday of course. I feel like any holiday wouldn’t be celebrated right without it. Now that I have grown up, I can help with the process of making the dish easier so my mom can focus on the other twenty meals were usually making at the same time. Being able to help with preparing the meal allowed for us to have it more often than just holidays. This is one meal I could eat leftovers of all week. There is one thing that surprised me that I recently found out. I assumed sauteed ham always came with the dish because that’s how it was always made. Apparently that is a foreign twist on the dish because fettuccine alfredo is normally made with chicken when you order it at a restaurant. Finding this out made me want to ask my parents where the recipe originated from. My mother told me my big Yiayia had came across a restaurant in Canada where it is common to have ham with Alfredo. My Yiayia took the recipe and switched a few things up to make it what it is today. I even asked the high end chefs I work alongside and they had no clue when it came to adding ham. That’s when I realized it’s rarer than I thought. This then made me eager to have people try it and I haven’t had a bad review since. Unlike the recipe for the sauce the ham can be different depending on how fast you need to make it. Whenever my mom was in a hurry she would make the meal with sandwich meat ham. If we have the time or want it made perfect then we use an actually ham that was cooked for hours then cut up into tiny pieces. Although you can make it with two style of ham the end result will taste so different. I think having bigger chunks from a well cooked ham can make loads difference. A big reason why I wanted to write about this dish was so people can experience this wonderful taste for themselves and realize Fettuccine is better with ham than chicken by far.

  Start off like you would any delectable pasta dish by boiling water in a large pot.

  Then drop the god lard on the skillet. I decided to use lunch meat for  my recipe but the large slow roasted hams are recommended.

  Slice and dice the ham into little squares then saute the ham for a few mins.
