I can't say enough great things about Bob's Red Mill Grain Free Brownie Mix. Having never made brownies before, I was nervous. These were really quick and easy though! I was blown away by how much they tasted like regular brownies, they were so delicious! Wow, thank you so much to everyone for all of the well wishes for my birthday! I am feeling so loved and grateful. And I just have to share about this amazing gluten-free vegan chile relleno dish that I had for dinner. It was absolutely delicious. Ingredients: 4 large poblano peppers 1 cup gluten-free all-purpose flour ½ cup flax seed milk ½ cup just egg 1 tsp baking powder 1 tsp garlic powder 1 tsp ground cumin 1 tsp salt Plant based meat substitute 2 slices of vegan cheese Avocado oil Instructions: 1. Preheat your oven to 400°F. 2. Roast the poblano peppers on a baking sheet for 15-20 minutes, until the skins are charred and blistered. 3. Remove the peppers from the oven and place them in a bowl. Cover the bowl with a kitchen towel and let the peppers steam for 10 minutes. 4. Peel the skins off of the peppers and remove the seeds. 5. In a small bowl, mix together the spices, gluten free flour, plant-based milk and just egg to make the batter. 6. In a separate bowl have the prepared vegan meat. 7. Stuff each pepper with the half slice of vegan cheese and plant-based meat, making sure not to overstuff them. 8. Heat the avocado oil in a large skillet over medium heat. 9. Dip each pepper into the batter, making sure to coat it evenly. 10. Place the battered peppers in the hot skillet and cook for 3-4 minutes on each side, until the batter is crispy and golden brown. 11. Serve the chile rellenos hot, with your choice of sides. #Recipe Details (makes 8 popovers):
Ingredients:
- 3 eggs, at room temp
- 1 cup milk of choice, at room temp (I used almond milk)
- 1/2 cup unfed sourdough starter or discard (refer to my story highlights for starter recipe)
- 1/2 tsp salt
- 1 cup all-purpose flour @bobsredmill
Whipped Honey Cinnamon Butter:
- 1/2 cup salted butter (I use grass-fed), at room temp
- 1/4 cup + 2 tosp powdered sugar
- 2 tosp honey
- 1 1/2 tsp cinnamon
- 1/4 tsp vanilla extract
Instructions:
Place a muffin pan on the middle rack in the oven and preheat the oven to 450F while making the popover batter.
In a large bowl, whisk together the eggs. Then add the milk, sourdough discard, and salt. Whisk until just combined.
Whisk in the flour until the large lumps are gone. Be careful not to over mix, they will turn out dense and hard if you do! Transfer the batter to a large measuring cup or glass.
Once the oven is preheated and the muffin pan is hot, remove it from the oven and spray with nonstick cooking spray.
Divide the batter evenly among the muffin wells, filling almost to the top.
Bake at 450F for 15 minutes. Then, reduce the oven temperature to 375F and bake for another 15-17 minutes, until golden brown.
While the popovers are baking, make the whipped honey cinnamon butter. Place the butter in a medium bowl. Using a hand or stand mixer, beat on high for 2 minutes. Then, add in the powered sugar, honey, cinnamon, and vanilla extract, and beat on high until well combined and fluffy. Save some at room temp to serve with the popovers. Then, transter the rest to a jar or container and store in the fridge.
Remove from the oven, let cool in the pan for about 2 minutes, then remove from the pan and transfer to a wire cooling rack.
Serve warm with the whipped honey cinnamon butter and sprinkle of flaky sea salt.

here is the recipe ✨
1 1/2 cup of any plant milk, I like using soy :)
3/4 cup pumpkin purée, organic
2 tablespoons melted coconut oil
2 tablespoons agave nectar
1 teaspoon vanilla extract
1 1/2 cups all purpose flour, I like using @bobsredmill
1 tablespoon baking powder
1/2 teaspoon pink Himalayan salt
1 1/2 teaspoon cinnamon
vegan butter @miyokoscreamery
coconut whipped cream @so_delicious
1. In a large bowl combine the milk, pumpkin purée, coconut oil, agave and vanilla extract. Mix until well combined
2. Add in the dry ingredients to the wet ingredients in the same bowl. First add in flour, mix with a whisk, then add a baking powder salt and cinnamon.
3. Mix until just combined, then place a pan over the stove and heat at medium for about 3 minutes
take about 1/2 cup of batter, and cook for about two minutes on each side.
4. Once the pancakes are all finished, sprinkle a little more cinnamon, top with coconut whipped cream and vegan butter.
