I have baked a pan of brownies in a water bath yesterday, and can confirm it is a beautiful success! Their texture is sublime, and I have eaten far too many pieces already! Used a 9x13 baking pan double wrapped in tinfoil, in an oven-sized baking pan filled a bit more than half an inch deep with water. No noticeable difference between edge and center, and incredibly tender. 10000000/10 will definitely switch to this method from now on.
