meal ideas!
low energy ("do not ask me to do any prep work at all, so help me god")
mozzerella cheese wrapped in pepperoni ("pizza tacos"!)
hummus and pretzels or naan (putting the naan in the microwave for like 10 seconds...heavenly)
canned chili (with shredded cheese and sour cream if you have it! boom done!)
instant miso soup (warm and lovely! put tofu in it for protein!)
cheese and cured meat, olives, canned fish, crackers, dried fruit, or whatever easy "charcuterie" type items you like
alternate bites of apple and spoonfulls of peanut butter (mixing honey or chocolate chips to the peanut butter is my favorite)
a "deconstructed sandwich": bites of lunch meat, pickles, cheese, cherry tomato, etc (I love roast beef and white cheddar for this)
yogurt and granola or fruit
put frozen potstickers + frozen edamame in the steamer/rice cooker, chill elsewhere with a timer set, then boom
tortilla chips + canned refried beans + cherry tomatoes + cilantro + jarred salsa con queso (or warm shredded cheese on top of the chips in the microwave for 30 seconds)
bagel + cream cheese + lox
microwave scrambled eggs (add things like green onion, soy sauce, or anything else you like!)
cottage cheese and fruit (mixed together or just on the side)
bowl of shredded rotisserie chicken + buffalo sauce + a bit of mayo + green onion (use a kitchen scissors to cut them right in!)
medium energy ("I'll boil water but don't ask me to chop shit")
boiled eggs and fresh veggies (put a little salt on top of the eggs!)
buttered noodles (my go-to nausea meal, it has never failed me. ideas of things to add: frozen peas, imitation crab, roasted garlic)
baked potato with toppings (I like cheese, bacon, broccoli, green onion, and sour cream)
quesadilla (add some canned beans, cilantro, or avocado!)
pot roast (requires a lot of time but not a lot of actual work. I love it with peas!)
cuban sandwich (bread, swiss, pickle, mustard, ham... my favorite thing to panini-ify by far)
pan-fried tofu with scallion sauce (this sauce goes well with everything and tofu is no exception)
pancakes or waffles! (I love mine with jam)
ham, pickle, and cream cheese roll-ups
fried eggs (with toast and lots of butter...so comforting)
fruit smoothie (bananas, frozen strawberries, yogurt...or whatever!)
I hate salad but could write essays on this copycat olive garden salad (throw it in a bowl! chopping required if you use onion)
spaghetti (controversial maybe but angel hair > spaghetti noodles)
pasta salad (olives broccoli fresh mozerella... those little mini pepperonis... yeah)
stir-fried thai garlic shrimp (I like using the mini frozen salad shrimps, it's easy! use jarred minced garlic to avoid chopping!)
tuna mayo onigiri
slow cooker ribs
buffalo chicken wrap (or any number of other wrap options! shred pre-cooked rotisserie chicken to make it easier)
if your local grocery store sells pre-cooked gyro strips, that can turn into an easy wrap with store-bought pita & tzatziki with tomatoes and onions!
couscous and chickpeas
tortellini + pasta sauce + spinach
high energy ("I don't mind chopping some things up!")
stuffed shells with spinach
chicken and roasted garlic (oh my god.....one of my all time favorites)
beef tacos (I like mine with cilantro and onion, and when I'm feeling especially high energy I love a tomatillo salsa)
chicken alfredo
tom kha gai (a thai soup and my absolute favorite! you just need access to galangal)
lasagna! (freezes well and then boom! low energy meal for later)
pad thai! (not as hard as you'd think, as long as you have access to tamarind paste!)
potstickers! (this is a lovely group activity if you want to cook with housemates!)
rice and beans
bang bang shrimp (ogughfhgfuh I love it. you can also do bang bang tofu!)
minestrone soup (so many nice veggies!)
fried rice (put whatever you have on hand in there! broccoli, peas, carrot, and beef is my favorite combo)
broccoli cheddar soup
spring rolls and peanut sauce
skewers (such as beef, onion, zucchini, bell pepper... you don't need a grill, oven works!)
roasted turkey with garlic parmesean asparagus
pork chop with mashed potatoes
panang curry
chicken gnocchi soup (use store bought gnocchi or make your own if you have a high energy day!)
bibimbap (super customizable depending on what veggies you like best)
butter chicken
plus! things that have helped me meal plan:
whenever you think of a meal you'd like to make, take 3 seconds to google search it, take a screenshot of the image results, and put it in a "food ideas" folder. instant visual menu!
the concept of "meal prepping" makes me recoil but I've learned that it can simply mean preparing shredded chicken, boiled eggs, or some other simple protein that you can customize throughout the week. shredded chicken can turn into wraps, salads, pasta dishes, etc... you don't have to meal prep yourself into the same meal all week!
when I have difficulty working up an appetite, I'll scroll through my favorite restaurant menus! there might be some foods I can't make at home, but many times they're very simple to recreate because the ingredients are literally listed!

May the 4th be with you - day 4 of Jen taking care of Jen
Today didn’t go like I had planned, but it went.
- work was busy, busy. The first week after vacation always is, I’m covering for another provider which equals double the alerts, then we had a national outage of our computerized charting program. It all comes out in the wash, just makes for a fast paced day.
I was able to walk a quick 1.5 on my lunch break and didn’t get off on time.
- food was solid. Homemade tuna fish with celery, left over roasted green beans and sweet potatoes. Feeling good about the veg, and I can already tell a positive difference in how I feel. That’s encouraging more than any other thing. I haven’t taken the care I needed for myself for a while and it’s just nice to be noticing goodness.
On the way home I stopped to pick up some queso for L’s cinco de mayo party tomorrow - Her teacher messaged me at work with the request - and impulse bought some everything bagel cashews… those bad boys are PRIMO. Can’t wait to try my hand at some home roasted ones of my own making.
- water was slow until lunch, I was hustling, overbooked, and didn’t top 40 ounces, until lunch. Had my typical coffee, kombucha, and my ride home sparkling water. I’m finishing up another 40 of water now.
- Thursday is my ‘me’ evening, C gets Wednesday. I usually hit a yoga after work, get a bath and hubs does dinner/lunches/prep for the next day. With work, I didn’t make it to yoga, which, is a super bummer, it’s something I look forward too.
To make up for it, I spent 45 minutes on the treadmill. It wasn’t a run, it wasn’t fast paced, it was a walk, it was steady, it was perfect. Instead of being discouraged that I can’t run 10 miles nonstop at this point, I’m just glad I’m able to carve out time to move my body. Happy to be consistently showing up for myself. That feels good.
- tomorrow is Friday and it’s the freakin’ weekend. Another one bites the dust.
- we are hosting a baby shower for our friends this weekend and I have a grocery pickup for the final goodies for after work and get to come home and scrub a dub bathrooms - Yeay!!!!
- realized today, I’m off next Thursday and Friday, I had taken off several months back, for a long weekend, and forgot. What a fun happenstance for me 🤘

Note: We need to make a grocery run this week, so we’re trying to eat healthy at restaurants until we can get our meals planned out and our fridge reset and ready for better groceries. I ordered lots of organizational tools, and have a plan in place. We’re just playing a bit of a waiting game so we don’t get overwhelmed. (We means myself and my boyfriend)
Calorie goal for today: 2,222 calories
Breakfast
Panera (380 calories) ⭐️⭐️⭐️⭐️⭐️
For breakfast, I ordered Panera. I got a sprouted whole grain bagel, topped with oats. It was cut and toasted, with half of a serving of plain cream cheese spread. To drink, I had their frozen strawberry lemonade, which is sweetened with agave. The meal was 380 calories. It was delicious, and I felt satisfied until lunch.

Lunch
Chipotle (1,470 calories) ⭐️⭐️⭐️⭐️⭐️
This meal is pretty calorie heavy, but it should keep me full for the rest of the day with room in my budget for a snack later tonight. I got a burrito bowl with steak, 1/2 white 1/2 brown rice, black beans, and queso. I also got a bag of chips, and a tortilla on the side. To drink, I got a Coke Zero. I’ve tried other healthier combinations, but I just can’t get behind them; they don’t satisfy my cravings like my preferred bowl does. This meal is delicious, filling, and satisfying.

Dinner
Chicken with Green Beans and Potatoes (~370 calories) ⭐️⭐️⭐️⭐️⭐️
This meal was a grilled chicken breast, cooked in olive oil, seasoned with half a lemon, Cavender’s Greek seasoning, garlic, onion, rosemary, parsley, and basil, all to taste. On the side were green beans and mashed potatoes. This is one of my favorite go-to meals. I feel satisfied, though I may need a small snack later.

Log 6/29/2021
Started the day by walking around the block today with my mom. I opened the outdoor walk workout on my apple watch and was very disappointed when only 2 of the 13 minute walk went towards my exercise ring. Yesterday I changed the exercise goal to 10 minutes because I feel as though I needed to feel successful. Needless to say lesson learned and I will be using the Open Goal Workout next time.
As for the food log:
Breakfast: 
Bagel thin with whipped cream cheese and protein coffee
Lunch: 
Tequilas Mexican Restaurant: Pollo Mexicana (chicken, rice and queso); side of beans and chips, salsa and queso. *brought home leftovers for lunch*
Dinner: 
Left over Pasta House pasta con broccoli and a caesar salad.
One thing I have been working on is not feeling bad for not clearing my plate. It is okay to feel full and stop eating. It’s okay to take leftovers. I am not huge on eating left overs but one thing my nutritionist told me yesterday is “would you rather waste those 5 dollars in food or would you rather eat that food and then put the weight on your body? You’re worth more than that.”
I think that is it for now. Be back tomorrow for another day.

Week 3
June 30 
We had to be up and ready to go at 7:40am because today we were going to be driving to the Jesuit Missionaries about 3 hours away. Before the missionaries, we went to an amethyst mine. It was cool to hear about it and they said that they don't export the gems so the only way to get it is by buying directly. The gems were breathtaking!

After another two hour drive we finally arrived at the San Ignacio's missionaries and ate at the comedor right in front. I got a pollo milanesa and a salad. I crushed the salad but the pollo was average so I didn't finish it.

After lunch we toured the missionary. Our tour guide explained to us that these missionaries were sent to spread the word of God to the Guarani People. They had built multiple communities in the surrounding area including brazil and paraguay. Later they were taken out and some of the guarani people went back to living in the jungle. San Ignacio was abandoned and destroyed, so the restoration is only partial. It was cool to be able to walk through their common spaces and know that a couple hundred years ago there were indigenous people walking on the same grounds.

The tour finished and we loaded up on the bus for the three hour ride back home. We ate dinner at the hotel and I got a pumpkin soup as a starter and let me tell you I was a little on edge because I’ve never had pumpkin soup but it was sooooo delicious. Since it was a starter they only gave me a little but I would’ve been happy eating a whole bowl of it, 9/10. For my main course I got the fish of the day which was “pacu” with a side of mashed potatoes. Mashed potatoes didn’t disappoint but the fish could’ve been better. Not my cup of tea. And for dessert I got a flan.

After dinner we all went to bed since we had to get up even earlier to head to the waterfalls.
July 1
We left the hotel at about 7:30am and headed to the waterfalls that was only 30min from our hotel. We were trying to get on the first train up to the waterfalls so that it wouldn’t be as crowded on the lookout. It was perfect timing because as we wrapped up taking all of our pictures a crowd of people were walking up. If you are able to get on the first or second train in Iguazú falls it honestly will make taking pictures a lot easier.

After we saw “la garganta del diablo” we went to the little store they had and I got an empanadas de espinaca y queso (spinach and cheese). When I paid for it the guy told me to be careful with the animals. But I realized that the birds here are VERY vicious. I stayed inside to eat my empanada but my professor went out to drink her coffee and eat her empanada and got attacked by some birds! This is why they have cages specifically made for people to eat in LOL.

We did another trail to see the falls from a different angle and it was just mind blowing.

After the trails we had little time for lunch. I didn’t want to eat too much because we were going to be taking a boat tour right after. From one of the comedores I got some chicken and rice. While on this trip there are two things that I really miss: rice and beans. They have rice here but they usually eat potatoes and beans are not very popular here so my Salvadoran blood has been a little sad.

Anyway we got on the boat and I definitely recommend doing it if you are able. They give you a waterproof bag to put your stuff in and I also recommend taking your shoes off and putting them in the bag. I was also wearing a poncho which helped protect me, but regardless you will get wet. They take you really close to the falls and you can take some pictures in front but then they tell you to put your phones away because they take you sooooooo close to the falls and get soaked!!

Once the ride was over we got back on our tour bus and headed back to the hotel.
For dinner, we ate at the hotel and I got the pumpkin soup, salad and the chicken milanesa with a side of mashed potatoes. Pretty good meal, favorite of course was the soup.

After dinner some friends and I went to the store to get something to drink. I got a white boxed wine that was only 55 pesos! (~$1.30). If you were wondering, no I did not finish it.

July 2
We were able to sleep this morning till about 9am since we had to leave the hotel at 10am. We got on the plane and headed back to Buenos Aires.

 After we got off the plane and back to the resi (which I sort of missed) we dropped off laundry and got a little snack.

Later that night we went to “Caracas bar” to watch the Brazil vs Argentina game. I got this drunk called guarapanita which was rum and fruit juice. I also got some tostones de carne which really hit. The bar was a really cool and had a big screen to watch the game on but unfortunately the energy in the bar was really off. If you don’t know Argentina lost and it was really sad :(.

July 3
I was so excited to wake up today because my sister was going to be coming to Buenos Aires! I got up at around 10:30 and went to brunch with some girls at this cafe called adobo. We ended up walking but then couldn’t find it and then google maps said it was twenty min away so we got a taxi but what we didn’t realize that there were two locations #whoops. Anyway the food was bomb. The bagel sandwich just hit differently and Nutella and banana French toast was to die for!

After breakfast I went back to the resi and picked my things for our trip to Uruguay later that evening. I picked up my laundry and waited for my sister to arrive. Once my sister got there we went to exchange some money. I thought that Uruguay was going to be cheaper than Argentina for some reason but I was wrong. The exchange rate right now is about .55 Uruguayan peso for 1 Argentine peso. 
We went to a cafe near Plaza Serrano called “La Panera Rosa” and I got a Chicken Rigatti Pasta. It was honestly one of the best meals ive had. It really had a lot of sauce and contrary to what Future says you can really never have too much sauce.

After lunch we got in a taxi and headed to the port and got on a Buquebus. Which is a ferry and then a charter bus to Montevideo,Uruguay.

We checked into our hostel and then I messaged a friend I had met back in 2016 through Amigos de las Americas a nonprofit organization that I volunteered for. When my friend said he'd love to meet up I was ecstatic! We went to a random cafe near by and got a Chivito, which is a typical Uruguayan sandwhich and of course some wine.

July 4
Happy fourth of July!!
This morning we got up and checked out of our hostel since we would be traveling to Colonia later. We walked to a restaurant to get some “breakfast” even though it was 11:30 am. My sister and I shared a milanesa that came with two fried eggs and some fries and potato salad. No need to mention the restaurants' name there are probably better ones out there.

After lunch, we headed to Montevideo Shopping because my friend works around there so he said he would meet us up after he got out. Sooo in the meantime, we got to walk around and window shop.

Once my friend got out of work my friend took us to the coast to get a good view and he knew I had a blog so he wanted to make sure I got good pictures! ( Gracias Miqueas!!! <3)

After the photo session, we headed to the bus terminal and got our tickets for the bus ride to Colonia. We decided to get a quick bite to eat in the terminal to this restaurant called “La Mostaza”. My sister and I shared Ravioli, which was pretty bomb. The filling for the ravioli was like spinach and it was different but definitely tasty.

Once we finished we headed back to the hostel to pick up our luggage and then got a taxi back to the terminal and then got on the bus for Colonia. Once we arrived to Colonia I was a bit nervous because I did not see too many taxis but luckily once we walked outside there was a stand and then headed to our hostel and went to bed.
July 5
Today we got to sleep in again and then got ready to go get some breakfast. We went to this cute coffee shop called “Colonia Sandwich and coffee shop”. I got a roast beef sandwich and some tea. The place was really cute and since its winter time here they had blankets for everyone who sat outside which definitely helped.

There were a bunch of birds surrounding us it was a little scary but more cute lol.
After lunch we just walked around the town which is really small so it wasn’t too long. We saw a lighthouse and some cool views on the coast.

Later we did some more walking and found the drawbridge that we couldn’t find earlier. We also gained a new friend along the way lol.

We decided to get a little snack to hold us over so we could try and eat dinner at a “normal” time. (Dinner in Argentina and Uruguay is usually eaten around 9 or 10pm so its been something difficult to adjust too) We walked into this restaurant that was right in the center, I wish I could tell you the name but the sign outside literally just said “Restaurant”. Anyway my sister and I shared a Rice with seafood dish and some wine. I loveeeee seafood so this was a perfect combination for me.

 After we decided to walk and get some ice cream at Freddo which is a pretty popular chain here. We got a Dulce de Leche cone.

Much later we went to go get some dinner at a pizza place called “Napo” it was really delicious. You could even see them making your pizza. My sister noticed that the guy making the pizza had a hat on and said that's probably a health code violation but im still here so I guess it's not that big of an issue. My sister and I got a salad and a pepperoni pizza and some red wine. (forgot to take a picture of the pizza sorry!)

After we headed back to the hostel and went to bed.
July 6
Today we woke up and checked out of our hostel and then headed to go get some breakfast. We went to this cute cafe called “Picnic”. I got an orange juice and a caprese empanada and then my sister and I shared a donut which was nothing like ive ever had before 10/10.

Since we had basically seen all the important landmarks we walked around and went window shopping. After we decided to go do a wine tasting at a place called “Buen Suspiro”. We had tried to go there the night before but it was closed. We got some charcuterie and tasted four different wines: Rose, Sauvignon blanc, Cabernet Sauvignon, and Tempranillo. My favorite was the Tempranillo and a close second was the Sauvignon blanc.

After the taste testing, we went back to collect our belongings and headed to the port to get on the ferry back to Buenos Aires.

Once we got back I helped my sister check into her hostel and then headed back to our resi to work on this blog because it was long overdue!
After I finally caught up we went to dinner at “La Robla”. I got myself a Milanesa with a salad and my sister got a Steak with some mashed potatoes and we shared half a liter of sangria. I didn’t know sangria is literally just wine and fruits lol, the more you know.

This week we’ve done a lot of traveling so im excited to be back in BA!

Vita Benedetta’s Guide to Madison
MadTown. A city characterized by badger red, brats, burgers, and beer (at least that is what I used to think). Moving away from college made me realize just how much I love this city and inspired me to explore. Through downtown areas, Willy Street, and adjacent small towns I discovered an entirely new meaning to Madison. This is my guide to Madison to show you all of the grub goodness and hideaways in unfamiliar places. 
The Guide

Grub Goodness 
The reality today is that social settings revolve around food. Want to grab a coffee? Want to meet for drinks after work? This is practically inevitable. It is important not to settle for boring, overly pasteurized crap that will make you feel like a** in the morning. I mean really, who wants to feel gassy, post cheeseburger when on a first date? Not I. There are so many places in Madison deciding to serve up food that will make you feel bomb. This does not mean you will be eating lettuce and drinking water for a meal. Trust me. Oh and the aesthetics are totally worth the visit. 
Gotham Bagels $
Bae-goals let me tell you. Gotham bagels is located directly off the square downtown Madison and is serving up some banging bagels. The line is always out the door on weekends. You can put about anything in the galaxy on your bagel and customize it just how you like it. The atmosphere is very downtown Boston like. The owner adds a little spunk to the joint since he graduated with his PhD and decided he would rather just run a bagel joint. RAD. 
My go-to: YELLOW C.A.B.

Bowl of Heaven $$$ 
Bowl of Heaven is about as close to California as Madison can get. This quaint bar creates the most awe-worthy bowls and smoothies. The bowls are a bit pricy, but worth a try. It’s the only place in Madison where I have found a yummy açaí bowl. All of the ingredients are real and will make you feel good about your choice. 
My go-to: PEANUT BUTTER BOWL 
Organic Açaí, Bananas, Strawberries, Peanut Butter, Chocolate Almond Milk Topped with Organic Hemp Flax Seeds, Granola, Fresh Banana, and Honey

Novanta Pizza $ 
Because you cannot forget about the ZAA. This stone fired pizza is something to brag about, with all ingredients sourced from Italy. You can build your own pizza, grab a wine and sit outside on the patio (during Madison’s 3 months of warmth). You will never see much of a wait at Novanta, which makes it great for grab and go because Novanta means 90 in Italian. All of their pizzas are ready in 90 seconds. The pizzas are personally sized so you won’t feel sluggish from overeating.

Marigold Kitchen $$ 
What is better than a boozy brunch after a walk around the farmers market? Be prepared for about an hour wait. Mimosas, pancakes, breakfast sammies, oh my! Marigold Kitchen won “Best Breakfast” in Madison and your taste buds will tell you why. Even better, the customer service is phenomenal. I could not pick a favorite, so here are my best picks.

This spot is goals-AF. For someone who loves sushi as much as me, this place is a win. With the perfect location on Monroe Street you will leave wanting to come back. I am salivating just thinking about it. Poke is comprised of raw fish (tuna, salmon, scallops) on top of baby greens, topped with veggies, and all the good sauces! These bowls are truly Instagram worthy. 
My go-to: HAWAII STYLE

Bloom Bake Shop $$ 
You are what you eat, so be sweet. This cute little bakeshop is tucked away on Monroe Street. The focus is all about good food. All grub is made from locally sourced and organic ingredients. The price tag reflects this, but you are doing something good by sending dollars back into the community. Grab a coffee, some brunch, and hella baked goods and be sweet.

If you are looking for some coffee to keep you awake on these food adventures, look no further. Ancora has bomb lattes and even better outdoor seating. Their mission is to serve the best beans in the world. So you can drink that amazing cup knowing you can be proud of everything that went into it.

 Gloria’s Mexican $ 
Wasted away again in Margaritaville (literally). You cannot go wrong with any of Gloria’s margs! The restaurant is hella authentic; the only thing missing is sand underneath your toes. During happy hour, margs are only $2! DANGER. Just make sure you have an Uber ride home. My absolute favorite is their house margarita. ¡Olé!

Saints Juice Co. $$$ 
Pressed juice in Madison is hard to come by. Actually, it was impossible before Saints Juice Co. opened this year. In my favorite neighborhood of Williamson Street, you can now grab a fresh pressed juice or mylk to go! The owners are always behind the counter and are extremely passionate about what they do. Feel free to ask questions about ingredients and the process, or just pick the prettiest color drink and go at it. 
My go-to: PROPHE-SEE

Bassett Street Brunch Club $$ 
Avocado toast will always text you back. Bassett Street Brunch Club is a Madison Favorite. Make sure to make a reservation!! They are known for their wild donut flavors and their famous boozy brunch. Because brunch without booze is just a sad, late breakfast. Go check them out on Instagram to see what all the hype is about.
My go-to: TOASTEST WITH THE MOSTEST

Café Hollander $$ 
Because who doesn’t want to feel like they are drinking a bloody marry on the rooftop of a Chicago bar. VIBES. This is the #1 restaurant atmosphere in Madison, hands down. You will never want to leave and your phone battery will die from all the pictures taken. The bloody mary and mimosa selection is remarkable. It is a perfect stop for a late brunch after walking through the Hilldale farmers market. Don’t leave without ordering frites with your choice of dipping sides—basil aioli, siracha mayonnaise, Korean BBQ!!

Brussel sprouts are misunderstood—probably because people do not know how to cook them properly. Everly takes brussels to a whole new meaning. MUST TRY. This natural lit space is easily the cutest craft cocktail bar in Madison. You will feel 10x richer, classier, and straight out of New York. You might even catch your pinky in the air while sipping on a fantabulous spritzer.

Destination→Mexico. A vibrant, fast paced Mexican kitchen & bar, serving up some famous margaritas that will make you want to shake your booty. I can only vouch for the margs since I have not stayed to try the grub. It is in a great location off the square to grab a few after class or work.

Pho Nam Noodle House $ 
Serving up authentic Vietnamese that will make your taste buds go crazy! It does not look like much from the outside of the building, but the food is something to talk about. The prices are unbeatable.

Finale 
I hope my guide to Madison provides you with some inspiration to get out and explore the city. The summer is the best time to do so since just about everything is in walking or biking distance. Madison has Red Bikes placed around the city that you can rent for $6 dollars/day. Get out of your comfort zone and do something extraordinary. Try something new. Eat some grub that won’t make your body want to cry the next day. I promise, you won’t regret it.

Day 17
Morning: Definitely did not feel like celery juice again this morning--ran into the same issue with waking up hungry in the morning. I really need to make sure I eat more during the day (more high quality foods, that is. I still haven’t been taking pics of the bad foods that I’ve been eating :( and trust me there are a lot). I forget to log them too ugh I’m getting lazy with blogging throughout the day and recording accurately. Only lemon ginger water this morning.

Breakfast: Honeycrisp apple, banana, and a slice of pumpkin bread with peanut butter. Tasty!
Lunch: Tteokbokki leftovers from last night, then met a friend outside for a stroll and we split an everything bagel with lox cream cheese. Absolutely divine. And then we passed a DD so I stopped in to get that ghost pepper donut to see what all the hype is. Disappointed there but hey, a donut is a donut.

Snack: Assorted raw veggies (green beans, carrots, tomatoes) and a “queso sauce” from the Medical Medium. The consistency is pretty on but it tastes essentially like a tomato soup of sorts.

Exercise: Leg day! I got through the entire freaking workout again without stopping! I was really impressed with myself--it’s so rewarding to be able to see progress in my strength. Today was also the first day I’ve worn lipstick since the pre-COVID era. Not sure why I felt compelled to do it, but I rolled with it.

Dinner: Veggie soup and more steamed brussels sprouts. Then I had some chicken tenders and fries... and a shake from Shake Shack. Today will be better!!! My gut is so unhappy and bloated :( I can also feel that my joints are a bit swollen--my knuckles feel gross and fat and slightly achey. It’s pretty remarkable how quickly this happens for me. I really need to be more careful.
I promise to myself that I will stick to fruits and vegetables tomorrow, as well as the full 64oz of water that I’ve been neglecting.

What is nutritional yeast + 25 ways to use it

What is nutritional yeast and how do you use it? Nutritional yeast is inactive yeast, grown on molasses. It has a cheesy, nutty flavor. It’s a source of protein & B12. 
Today I’m sharing all of the details on “nooch” plus 25 ways to use it.
Some people have jars of sugar and flour on their counter for easy access. I have a jar of nutritional yeast.

I pull from it several times a day for sprinkling on a chickpea scramble, to give a cheesy flavor to air-popped popcorn, or as a treat for the kitties.
And when the jar runneth empty, it’s time to make a grocery store run. STAT. It’s not an ingredient I want to be without.
But there was a time when nutritional yeast flakes weren’t a pantry staple or part of my vegan essential spices and seasonings.
In fact, when I first went vegetarian, I’d never even heard of it before.
Nutritional yeast is dried, inactive yeast, grown on molasses. 
Since it is inactive, that means it can’t be used for making raised donuts or breads.
And the same holds true the other way around. If a recipe calls for nutritional yeast flakes, do not substitute with brewer’s yeast, torula yeast, or active yeast sold in packets. It’s not the same thing and won’t deliver the results you want.
You may wonder, is yeast vegan? <—– Find out here. But the short answer is that yeast is part of the fungus family, like mushrooms.
How does nutritional yeast taste?
I’ll admit that the name nutritional yeast flakes doesn’t sound wholly appealing.
(If you can’t bear to call it nutritional yeast, give nooch a whirl. It’s a popular slang term for it in the vegan community.)
Luckily, it makes up for it in taste. It has a cheesy, nutty flavor that is a wonderful addition to sauces, dips, or gravies.
When it comes to flavor, nutritional yeast can be a bit divisive. It seems to be one of those love it or hate it foods like cilantro or mushrooms. I fall strongly into the former camp.
It’s also important to know that the flavor of nutritional yeast can vary from brand to brand. So if you don’t like it the first time around, give it another chance with a different brand.
Is nutritional yeast good for you?
Yes! In addition to giving foods a cheesy taste, nutritional yeast is also a source of protein and vitamin B12.
(Although, I recommend taking a regular B12 supplement as well, if you’re vegan. A B12 deficiency is nothing to mess around with. That’s a link to the one I use.)
Where can you buy it?
Nutritional yeast is popping up in more and more places nowadays. In addition to being sold at Whole Foods and other natural grocery stores, Trader Joe’s sells nutritional yeast with their own branding. At $2.99 bag, that’s what I buy most of the time.
It’s also for sale at Hy-Vee (in the health market), Walmart, and Amazon. It’s usually in the natural foods section, near the baking stuff like flour, or with the supplements. You can often find it in bulk bins as well.
Other brands that I like include Bragg & KAL. 
How do you store it?
As you’d probably guess since it’s sold in bulk bins, nutritional yeast does not need to be refrigerated. It can be stored anywhere cool and dark to preserve its B vitamins. A ceramic jar in the pantry or on the countertop works fine.
Since it’s a dry product, the key is keeping moisture out. If you’d prefer, it can also be frozen in a sealed, air-tight bag. It has a shelf life of 1 to 2 years.
How do you use nutritional yeast?
So you’ve purchased nutritional yeast, and now you don’t know how to use it? Here are some ideas to get you started.
Sprinkle it on avocado toast or a toasted hummus & avocado bagel.
Use it as a popcorn topping.
How do you make nutritional yeast popcorn? Melt vegan butter, drizzle it on popcorn, add nutritional yeast, and a pinch of salt.
I’m so addicted to this, I’ve been known to smuggle my own nutritional yeast into movie theatres. (Some movie theatres have jars of their own!)
Use it instead of parmesan cheese on spaghetti.
You can use just the nutritional yeast in lieu of parmesan. Or you can blend nutritional yeast in a food processor with walnuts or cashews, and salt until it becomes a powder.
Give nutritional yeast to cats for a treat.
Most cats love it! Just put sprinkle some onto a little dish, and let them lick it up.
Make cheesy things
Vegan cheese dip
Because of its cheesy flavor, nutritional yeast adds so much to dairy-free sauces. This savory vegan chili cheese dip is loaded with three bean chili, seitan chorizo, and creamy cashew queso. 
Build-your-own vegan nacho bar
Continuing on the nacho thread, nacho bars are lots of fun for all ages. And it’s a relatively low cost way to have a dinner party!
Fill a table with toppings like spicy black beans, vegan chili cheese dip, salsa, and guacamole. Then let your guests pile them onto chips, exactly how they like.

Satisfy the kid in you with vegan chili cheese tater tots. So messy & delicious, it ticks all the pleasure sensors! Serve it as an appetizer or a full meal on its own.

something very nice: even though it’s only 9:30 in AZ, I am tired enough to be wanting to go to bed in KY at a semi-reasonable hour
I really need to get on KY time and then just ... ride the jetlag forever, because I DON’T ACTUALLY WANT TO GO TO SLEEP AT 2 AM I want to go to sleep at 11 PM or midnight like an ordinary person
anyway tomorrow I look forward to pokemoning my way around Lexington to see what’s there (and also pick up some stuff for breakfast at a grocery store, and there looks to be one about 20 minutes’ walk away)
(what do I eat for breakfast when I’m not in Europe and when overnight oats/pancakes/eggs/protein shakes/clif bars are not practical)
(I guess I could also eat a thing of yogurt and a piece of fruit and a pastry here but there won’t be any stracciatella yogurt for dessert.....................)
(also I just realized that those are basically the only things I ever have for breakfast. cool.)
also as a report, qdoba is a five-minute walk from my airbnb, which could be dangerous because unlike chipotle, I LOVE qdoba... and I have totally come to terms with the fact that outside the southwest I just can’t get good Mexican food, so I embraced being in ~The South~ and went along with the server’s idea of having BBQ sauce and queso on my brown rice-black beans-smoked brisket burrito
...it was really fucking good. I ate the whole thing in less than 20 minutes and I want another one.
I might also just be hungry, because today I have had three eggs, a bagel + cream cheese, and a smoothie, and before the smoothie I had no idea why I was having such a horrible headache, and before the burrito I was wondering why I was so grumpy. Oh right. food. I have to feed my meatsack. (actually I was genuinely worried I was about to pass out in the AZ airport this morning because I was getting very woozy and grumpy, so yes, I had to get something to eat at the airport even though I had literally just left my house an hour before)
ANYWAY SHOWERING AND THEN HEADING TO BED GOODNIGHT WISH ME LUCK ON REMAINING GOING TO SLEEP AT THIS TIME OR EARLIER
