インドの大豆たんぱく
私は過去にビーガン、ベジタリアンだったこともあり、大豆たんぱくを時々利用して来た。炒め物、植物性ハンバーグなどに使った。
あるときハラールショップで買ったインドのメーカーの大豆たんぱくの触感が良く、それ以来、ブランドは一定していないが、インドのものを買っている。
良かったのは、今まで大豆たんぱくを食べてくれなかった夫がインドの大豆たんぱくなら食べてくれることだ。ただし、インドの食品であることはあえて言わないでいる。
国内の会社の大豆たんぱくとは違う。インド凄い!と思った。

Soy Chunks Pulao Dehydrated Soy chunks are a common form of proteins used in Stirfries; Pulao & Subzi (Indian style wet & dry veggie preparations) The best way of using these chunks is soaked in steaming, hot water with a dash of salt and leave until cool. Drain the chunks and squeeze as best as possible & add to your dish or marinade for further flavours to develop. I did the salt water soaking & squeezing trick before adding ½ a cup full to, 1 cup of Brown Basmati rice, soaked & rinsed a few times ½ cup of Mixed Veggies (frozen) 1 large Onion, sliced thinly 1 Tomato, pureed 1 tablespoon Ginger – Garlic paste Salt & pepper, to taste Biryani Spice(homemade) 2 cups of Water In a deep sauce pan/ pressure pot, cook the onions & Biryani Spice until lightly caramelised. Add in the ginger – garlic paste, tomato & mixed veggies. Mix in the drained soy chunks and coat well with the spice mix. Gently add in the rice to prevent grains from breaking. Add the water & salt and pepper in. Cover and bring to a boil. If using a pressure pot then clip the lid & cook for 5 minutes. If using a large deep pan, leave the cover on & simmer for 12 – 15 minutes until the grains are cooked & fluffy.
