So is she Catherine or Evelyn now, or does she go by both/either?

The name Catherine and Evelyn are interchangeable. They're the same person and TDDAC would not change if you use Evelyn instead of Catherine.

The only reason why it's still Catherine and not Evelyn is for consistency reasons.
