Curry leaves
Instruction To Make Dal Fry
Do follow every step mentioned in this recipe to make flavorful dal fry. Skipping one can affect the taste of dal fry.
Step 1:
Rinse dal two to three times until the water runs clear. This recipe requires one cup of dal. Ensure you are using soak dal to cut off cook time.
Step 2:
Next, you will have to pressure cook the dal. To pressure cook the dal, you will need two and a half cups of water. Add one cup of dal with two and a half cups of water in a pressure cooker. Pressure cook the dal for two whistles on medium flame.
Step 3:
After two whistles, open the lid and check whether dal turns soft or not. If dal is not soft, you need to pressure cook it for few more times. If you have soaked the dal, you don’t have to pressure cook it more than two times.
Step 4:
After you have pressure cook the dal, you will need to prepare masala for dal fry. Heat the pan with one tablespoon of ghee.
Step 5:
After ghee gets hots, you will need to add half teaspoon mustard seeds, half teaspoon cumin seeds, 1 dried red chili, 1/8 teaspoon hing, and 1 curry leaves. In the low-medium flame, roast all the spices for a minute.
Step 6:
Now you need to add finely chopped onion. You need one medium-size onion to prepare dal fry. Add chopped onion to the pan, then roast it on medium flame. Saute until onions turn golden brown.
Step 7:
Next, you can add one to two medium green chilies and stir them for few seconds. You can increase or decrease the pieces of chili depending upon your taste.
Step 8:
After that, you need to add one teaspoon of ginger garlic paste. Stir until the raw smell of ginger-garlic goes away. You may have to stir it until a minute or more.
Step 9:
Add half a cup of chopped tomatoes. You will need one large tomato. Stir it until tomatoes turn soft. You can also add few pinches of salt in this step.
Step 10:
Next, you need to add spice powders. Add one-fourth teaspoon turmeric powder, half teaspoon red chili powder, and half teaspoon garam masala. Stir it until the smell goes. You need to cook it for two minutes on medium flame.
Step 11:
After masala is ready, you need to add cooked dal. Add dal and mix it well.
Step 12:
Stir it well and cook the dal. Taste the dal and adjust the spices if needed. Also, you can add more water to suit your taste. When the dal cools down, it will thicken a bit, so better to add water in this step.
Step 13:
When the dal begins to bubble, you need to add kasuri methi. When the dal fry reaches the desired consistency, you can add kasuri methi. Crush half teaspoon kasuri methi on your palm and add it to the dal. Stir it well.
Step 14:
Now you need to add coriander leaves. Chop the coriander leaves and add it to the dal. Stir it for few seconds and turn off the stove.
Step 15:
To enhance the flavor of dal, you can add lemon juice. Squeeze half lemon right before serving. However, this is an optional ingredient, so you may skip the lemon.

Though the egg masala recipe looks simple dish, you will find many recipes online to prepare it. Some recipe uses many ingredients, and some recipes use few ingredients to prepare egg masala recipe.

However, that doesn’t mean a recipe that uses fewer ingredients is not delicious than a recipe that uses many ingredients. Each egg masala recipe has its own unique flavor.
Ingredients:
4 boiled eggs
2 medium-sized onions
3 medium-sized tomatoes finely chopped
1 tsp ginger-garlic paste
1 green chili
4 tablespoon cream
1 tsp sugar
1/2 teaspoon red chili powder
1 teaspoon garam masala
1/8 turmeric powder
1/2 teaspoon coriander powder
2 cloves
2 green cardamoms
1-inch cinnamon
1 bay leaf
Oil
Salt
Coriander leaves
Instructions:
In a bowl take 4 boiled eggs. Add 1 teaspoon ginger-garlic paste, 1 teaspoon red chili powder, 1/2 turmeric powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, and salt according to the taste.
Rub all the spices on the eggs. Ensure that each egg is coated with all the spices. You can use your hand so that you can evenly coat the eggs.
In a pan, add 1 tablespoon oil. Heat it in a low-medium flame. Fry the eggs until they turn golden brown on all the sides. Keep stirring in the interval so that you don’t burn only one size. Transfer it to the plate.
In the same pan, add one and a half teaspoons of oil. Add cumin seeds. Fry it for few seconds.
Then add finely chopped onion and green chili. Stir and fry until the onion turns golden brown.
After that you need to add 1 teaspoon turmeric powder, 1 teaspoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon red chili powder, chopped ginger, chopped garlic, and salt according to the taste. Fry all the spices for few minutes.
Pour one cup of water and bring the mixture to a boil. You will have to boil it for 2 minutes.
After water simmer, add finely chopped tomatoes. Allow tomatoes to cook for 3 to four minutes. Keep stirring the mixture.
Turn off the flame and let it cool.
After the mixture reaches room temperature, transfer it to the grinder. Grind it to get perfect gravy.
Transfer the gravy to the pan and heat it in low, medium flame. Then add eggs. Stir the eggs and allow them to cook for 2 minutes.
Add chopped coriander leaves. Mix it well
In another pan, add one teaspoon oil. Add hing, mustard seeds, methi seeds, and curry leaves. Fry and stir it for few seconds in medium flame.
Pour it in the pan with curry. Mix it well.
Transfer it to the bowl. It’s ready to be served.

Usually, to prepare anything delicious dishes, you will need a lot of ingredients. But this recipe just demands some basic ingredients. You can prepare mutton masala with the ingredients in your house.
Mutton Masala Recipe: Ingredients
300 boneless grams mutton
Oil
Curd
Ginger garlic paste
Turmeric powder
Red chili powder
Cardamoms
Cinnamon
Salt
Onion
Meat masala or garam masala
Tomato puree
Bay leaf
Coriander leaves
Green chili
Instruction to prepare Mutton Masala Recipe
Step 1:
The first step is to marinate mutton. Take a bowl big enough that fits all the mutton pieces. Then in the bowl, add one and a half teaspoon ginger garlic paste, one-fourth turmeric powder, half teaspoon red chili powder, two tablespoons curd, and salt as per your taste.
Step 2:
Give it a good mix. Ensure that each piece of mutton is coated with all the spices. Cover the bowl with the lid and allow it to get for an hour. The longer you marinate, the softer and tender it gets.
Step 3:
After the mutton is marinated, you need to prepare a mutton masala. For that, you need to heat the pressure cooker with two tablespoons of oil on medium flame.
Step 4:
When the oil is hot, add one bay leaf, one-inch cinnamon stick, and two green cardamoms. Let the spices roast for two minutes.
Step 5:
Then add one medium size finely chopped onion and one finely chopped green chili. Cook until the onion turns golden brown.
Step 6:
After that, turn the flame to low, and then add marinated mutton pieces. Keep stirring the mutton for about 5 minutes. You don’t have to keep stirring continuously, but you can stir in an interval for 5 minutes.
Step 7:
Then allow the mutton to cook for another 10 minutes. Cover the pressure cooker with the lid and let the mutton cook. Stir the mutton occasionally.
Step 8:
After 10 minutes, you will notice mutton is releasing moisture. If you don’t see moisture, let the cook for few minutes. The next step should be started only after moisture is released.
Step 9:
Now you need to add, two teaspoon garam masala and one teaspoon red chili. Stir it well and let it cook for about 3 minutes. Don’t increase the flame. You will be working on the low flame for half of the mutton masala preparation segment.
Step 10:
Meanwhile, you will notice oil separating from meat. It’s time to add tomato puree. You will need two medium-size tomatoes to make a puree. If you don’t want to invest your time making tomato puree, you can also use curd instead. You can replace tomato puree with two tablespoons of curd. As you have already used curd while marinating mutton, so it’s better to use tomato puree.
Step 11:
Let it cook for another seven to eight minutes until the raw smell of tomato goes away. You need to keep stirring in the interval.
Step 12:
After 7 minutes, add two cups of water. Close the pressure cooker and let the mutton cook for two whistles on medium flame. If you use mutton with bones, you will have to cook until four whistles.
Step 13:
After 2 whistles, turn off the flame and release the pressure. Open the pressure cooker and stir well. If you think the gravy is running, you can simmer for few minutes until you get the right texture.
Step 14:
Transfer the mutton masala to the bowl, then you can add chopped coriander leaves for garnishing.
Mutton masala is ready to be served.

After the onion turns golden brown, add one tablespoon ginger-garlic paste. Stir it well. Let it cook until the raw smell goes.
Step 6:
After that, you need to add one medium-sized finely chopped tomato and salt as per your taste.
Step 7:
Then you need to add all powder spices. Add one tablespoon chholey masala, half tablespoon garam masala, one teaspoon coriander powder, one teaspoon red chili powder, one-fourth turmeric powder.
Step 8:
Mix all the spices well and allow it to cook for few minutes. You will have to cook it until the spices release a good aroma. Don’t skip this step. This is a very important step that brings flavor to chholey.
Step 9:
Then add two cups of water. Use a spatula to mix spices with water. Scrub the button using a spatula if the spices are stuck. Allow it to cook for few minutes.
Step 10:
Add the soaked chickpeas and mix them well with all the spices. Put the lid on the pressure cooker and allow it to cook for 2-3 whistles on medium flame.

Chholey Recipe: Preparation
Before you start making chholey, you need to do preparation. You need to soak chickpeas and make masala for chholey.
Soaking ChickpeasIngredients:
1 cup chickpeas
3 cups of water
1 tea bag
Instructions:
Rinse chickpeas in a colander very well.
In a bowl, add three cups of water with the tea bag for a while. After few minutes, remove the teabag, then soak chickpea in it.
If you don’t have a tea bag, you can bring water to a boil and add a teaspoon of tea. Let it cool and rinse the water to another bowl. Then you can add chickpeas to soak.
Soaking chickpea in the tea water brings color to chholey. And soaking improves digestion and helps in making chickpea soft.
You will have to soak chholey at least for 8 hours, or you can leave it overnight.
Chholey Masala
While you will easily get chholey masala in the market, but you can make it at home because freshly made masala enhances the taste.
Ingredients:
1 tsp fennel seeds
2 dried chili
1 bay leaf
4 cloves
1-inch cinnamon stick
3 green cardamom
1 tbsp coriander seeds
8 peppercorn
1 black cardamom
1 tsp cumin seeds
Instructions:
In a pan, dry roast red chili, bay leaf, coriander seeds, cloves, peppercorn, green cardamom, and black cardamom. Dry roast in low-medium flame for few minutes.
When the spices release aroma, add remaining spices i.e. cumin seeds, fennel seeds, and coriander seeds.
Roast the spices until they turn into dark color. But make sure you don’t burn them.
Let the spices cool and add them to the blender. Blend them until you get a fine powder.
Chholey Making
After you are done with all the preparation, get ready to make chholey.
Ingredients:
Oil
Cinnamon
Cardamom
Cloves
Bay leaf
Onion
Green chili
Ginger-garlic paste
Tomato
Salt
Turmeric powder
Red chili powder
Chholey masala powder
Garam masala
Coriander powder
Coriander leaves
Instructions:Step 1:
