Found this recipe in the @biggreenegg magazine this month. Gave it a try with a few personal tweaks. Grilled shrimp, avocado, cherry tomatoes, mozzarella and Romaine lettuce. This was all drizzled with lemon vinaigrette. Was delicious. Reverse seared Delmonico. Cooked at 250 degrees until 125. Then cranked the @biggreenegg to 550 and 2 minutes a side on @grillgrates. Came outperfect medium rare. Fat rendered beautifully.
