dinner last night was leftover chicken wings from Silantro Fil-Mex Cantina (6/10. it had a sauce that was on the sweeter side that I didn't expect. it was better when we took it home after lunch and microwaved.) a little white rice, and a bit of chocolate after.

breakfast is work, with a side of coffee HAHA

I have a ~complicated~ relationship with leftovers but I’m trying to get better! I have to just turn it into something completely different, and I’m realizing that I will legit eat ANYTHING if puff pastry is involved in any capacity.

That being said, chicken wings are always yes.

February 5, 2023. Intramuros, Manila. 

I’ve always wanted to go to Intramuros, I mean yes, we often pass by it on our way to Pasay or Parañaque but I have never explored Intramuros before. I find it really interesting kasi its like a they have a different world behind those intra walls. Luckily, my boyfriend, Robi went to college in Mapua (which is in intramuros) so he was able to show me around. 

We left Bulacan at around 9:30am then arrived in Intramuros just an hour and a half later. We first drove around the streets of intra, he was naming all the buildings, schools, and churches there. He was telling me stories of where he used to eat, stay and make tambay during his college days, I watched him talk and make kwento with fascination, there it is again, that smile that always makes my heart flutter. He was so happy to be back in Intra, and syempre I was equally happy too to be shown intra by the loml. We walked around the walls, and talked and talked. I suddenly had the feeling na its as if we’re back to being college students again, carefree, fun, and in love. If only we met back in college, it would’ve been perfect. 

He then took me to lunch at La Cathedral, its this super nice rooftop cafe/restaurant overlooking the Manila Cathedral. I’ve always wanted to go there kaso I never had anyone to take me or go with me at least. The food and ambiance was good but what made it better was the company, my date syempre. 

After lunch, we then went to National Museum, Robi pulled some strings para hindi hassle visit namin sa Musem (his friend Noel works there), we parked at the employee’s parking and entered at the back where we were assisted by security (lol talk about VIP treatment! Well we have Noel to thank for that, thanks Noel!) The Museum was huge, and we both really had a great time. We were both being silly and touchy at the same time, PDA much?! We even slightly made out in one of the galleries when nobody was around (pero may CCTV so, hello po sainyo! Haha)

After our museum date, I drove us to QC to meet up with my cousins for dinner. I was craving for Silantro that time so that’s where we decided to have dinner. We then dropped my cousins off to their houses/condos and went back narin to Bulacan. 

It was tiring but such a fun day! I’d def go back to intra with robi once given another chance.

One thing that seriously has to stop is calling coriander “silantro”. I hate that word.

Ingredientes ;

5 plátanos medio maduros

500 gramos de pulpa negra

500 gramos de tomate

2 cebolla

1 pimentón

Cebollín , ahí , cilantro y especies al gusto

250 gramos de jamón

250 gramos de queso parmesano

250 gramos de queso mozarella

3 cucharadas de harina de trigo

1 cucharada de maizena

100 L de leche

Preparación de la pulpa negra:

En un sartén colocamos la pulpa negra con ajo y las especies que querramos colocar, a un fuego medio , vamos mezclando hasta que esté bien cocida , luego picamos la cebolla , tomate , pimentón , aji en la licuadora , hasta hacer como una pasta de tomate, esa pasta de tomate la vamos a colocar en la carne que se está cocinando a fuego medio , allí mismo le colocamos sal al gusto, luego picamos el silantro y cebollin fina mente y lo colocamos también allí también en la carne , le damos un tiempo de cocino de 30 minutos y retiramos del fuego y reservamos en un lado.

Preparación de la salsa bechamel:

Colocamos los 100 ml de leche en una olla a fuego bajo , alli mismo se le coloca las tres cucharadas de harina de trigo y una cucharada de maizena, una cebolla en cuadritos y dos hojitas de laurel y sal y pimienta al gusto , allí le vamos dando vueltas para que se mezclen todos los ingredientes y aparte no se valla a pegar de la olla nuestra sal , esperamos unos minutos , mientras empieza a hervir nuestra salsa y empieza agarrar una consistencia homogénea y con un poco de espesor, pero que no sea muy espesa , eso tiene que ser a fuego lento, al hervir la retiramos y la reservamos.

Preparación de las tajadas de plátanos:

En un sartén colocamos 100 ml de aceite afuego medio , pelamos los plátanos y sacamos tajadas de un mismo tamaño , al empezar hervir el aceite que esté bien caliente , empezamos a sofreír las rajadas , hasta que estén doraditas...

Preparación del pasticho :

En un refractario o bandeja , empezamos colocando una primera capa de salsa bechamel para que nuestro pasticho no se pegue y quede jugoso, luego colocamos una capa de tajada y arriba de las tajadas colocamos una capa de carne luego le colocamos el jamón y el queso parmesano y el mozarella, luego le colocamos otra capa de tajada y de bechamel y así sucesivamente hasta que se nos termine nuestros ingredientes y por último cerramos nuestra última capa del pasticho con el queso mozarella para que le dé un toque especial y gratinado , cuando ya lo hemos armado lo llevamos al horno por 20 minutos y al sacarlo vamos a poder observar como esa última capa de queso mozzarella se gratino dándole un toque especial y con buena vista.
