New release! 49% Raspberry Anise, Costa Esmeraldas, Ecuador! This is a European Silver awardwinning @chocawards 2022. End of last year we made this bar for the first time. It has been a Limited Edition, but it was so very well received by you tat we decided it earned its own box! I would say it eats more like a dark milk chocolate, you will taste raspberry and anise in a chocolate that gives itself easily and will give you a lovely chocolatey warmth and melt. according to the recipe's Zeleninou

Emmanuel sponge cake with raspberry and anise
250 g eggs
130 g inverted sugar
250 g flour 45
120 g icing sugar
3 g of salt
10 g baking powder
80 g milk
200 g melted butter
70 g frozen raspberries
70 g of pine nuts (100 g cashew)
All the ingredients, except the raspberries and nuts, mix with a whisk or in a mixer with paddle attachment (no whisking, just mix thoroughly), pour into pan, cool at least 4 hours. Sprinkle with nuts and frozen raspberries, bake at 180 deg. 15 minutes.
Supreme milk chocolate and raspberry
Cream anglaise
125 g cream
125 g milk
50 g egg yolks
25 g sugar
Heat the cream and milk to 50 deg. pour the egg yolks, mashed with sugar and cook up to 82 degrees. Use immediately.
Supreme
250 g cream anglaise
250 g mashed raspberries
480 g milk chocolate
150 whipped cream
4 g gelatin
To make ganache from chocolate and hot cream anglaise with gelatin added, add the mashed raspberries. Allow to cool to 28 degrees, mix with whipped cream. Pour on sponge cake, freeze.
Raspberry coulis
375 g raspberry puree
90 g of sugar
6 g pectin NH
6 g lemon juice
For the coulis: raspberry puree heated with 60 g of sugar. 30 g of sugar mixed with the pectin, add to puree, heated to 40-45 deg. Boil, add the lemon juice. Spread over raspberry Supreme.
The white chocolate mousse with anise
300 g milk
23 g of liqueur Pastis
7 g of seeds of anise
15 g gelatin
645 g of whipped cream
480 g white chocolate
30 g of cocoa butter
Milk infused with anise mins 12 hours. Drain, to regulate the weight. Milk to heat, add gelatin. Cocoa butter melt and add the chocolate. To make the ganache, milk and white chocolate. Add the liqueur and allow to cool to 28 degrees, mix with whipped cream. Pour raspberry coulis, freeze.
Decorate the cake according to your taste.
