I was trying to think of veggie mains for a little flat friendsgiving, and a pumpkin quiche definitely seemed in order. I took to Pinterest, and this recipe immediately jumped out on me with its gorgeous pumpkin crust and that beautiful array of beetroot on top.
I made this in full using canned pumpkin and a mix of red and white onion, as well as a mix of spinach and kale. You're essentially dealing with three different elements here, so be prepared for some multitasking and a little bit of controlled chaos.
Because I was using puree, I chose to simply whisk my crust ingredients rather than bothering with the food processor just yet. My pie pan was unfortunately almost the same color as the crust, so trying to smooth it out evenly was honestly a bit challenging. 5 minutes ended up not being near enough oven time; I think I ended up leaving it in for at least 10.
I totally should have used a bigger pot for the spinach mixture, as 120g of greens is truly a shocking amount, but I made do by adding it bit by bit until it was all nicely satueed.
The tofu filling might seem the most intimidating part, but, thanks to the food processor, it's actually the easiest. After taste testing, I ended up adding some paprika, cayenne, lemon juice, extra nutritional yeast, and a dash of nutmeg to lift the flavor a little more, all of which I think I could have gone even heavier on.
This ended up taking closer to 25 minutes to bake, but, still, for a quiche, that's practically nothing.
Overall, this was not mind-bogglingly good by any means, but it was still pretty decent. Expect a tofu-y taste and texture for sure; if you're not a tofu fan, I would definitely avoid this. The flavor overall is a bit bland, but very easy to customize as needed.
The crust, however, was divine — crisp on the outside and soft and buttery underneath, just like a good pastry version ought to be. It was also honestly ridiculously easy to make compared to a pastry version, so I will be keeping this recipe in mind for that if nothing else.

44. Describe your character’s relationship with Kinzie
I see them as having a sisterly relationship in the end, but it takes a while to get to that point. Casey sees it like that for a long time (I think the whole idea came from the idle line she has about it in-game) but doesn't really say it. Kinzie is the one more resistant to the idea which- seeing as she does look for sister figures in Viola (successful) Asha (not so much) and probably others considering Casey banned her from using that word- seems ironic but I think there's good reason for it.
Obviously Kinzie probably goes through the usual process of not recognising Casey's intelligence but I do feel like she gets past that quicker than a lot of people. It's more that I think Kinzie sees her as sort of... bland? I don't think she ever fully shakes that, but Casey does start to win her over in her own way. Like she's never going to think she's super interesting but she does like her on some level by the end of SR3.
Kinzie tends to be a lil snappy with people she likes, if she genuinely doesn't like you she just will not engage. Casey has a tendency to mirror the kind of relationship she's handed. So they do bicker a lot but it's not really an attempt to be genuinely hurtful. I do think though, that if Kinzie wanted, she's probably the person who could most devastate Casey with a 'reason you suck speech'. I kind of think she should give her one at some point. Possibly at a really bad time for maximum damage.
I guess I should briefly mention them having sex that one time in my written canon. I think Kinzie was a little surprised when Casey asked her because there wasn't really much sexual tension between them or anything, but given the situation they found themselves in it made sense. I think it really just got across that they're not very compatible in that respect, even though for a few reasons you'd think they should be but... I don't know. I feel they weren't quite on the same page with what the whole thing was.
Yes I do have a night spread across a couple of scenes of them being really cutesy together and drinking and braiding each others hair and admitting their bond is sisterly and giggling and Casey covering Kinzie with a blanket when she fell asleep and so on. But I don't really see that as a turning point for them or anything. Those times are rare compared to the reality of just having to put up with each other like any other siblings. Their weird little dynamic is just fine as it is.

When I tell you I've had this recipe on my shortlist for at least 2 years, I really do mean it. And finally this weekend, I did it!
I made about 3/4 of this (to fit the square pan I had) using desiccated coconut, half coconut cream and half almond butter, and skipping the toppings, apart from the sauce of course. My batter ended up really, really wet, at least as far as I could tell. I don't know if I mismeasured something or if my ground flaxseed wasn't pulling its weight, but this was very, very liquidy. Perhaps because of that, I don't think it rose as well as it might have. Our oven also pulled a classic move, making the top look done whilst the rest was still a little underbaked.
However, with a vegan baked oatmeal recipe, this almost seemed appropriate, still preserving some of that classic porridge texture. The coconut and the cardamom barely came through to be honest (I'd double that cardamom next time), but the overall flavor was still lovely, especially once drenched in that amazing peanut sauce, so I wasn't too upset.
I haven't dabbled enough in baked oatmeal, so it's difficult to compare the merits of this particular recipe, but I was overall pretty happy with this as a cozy, comforting halfway between the delicious warmth of oatmeal and the indulgence of a weekend baked good.
