Hey Najia! I love this blog so much! I have a question. I find cooking pretty difficult sometimes. I'm chronically ill and also the kitchen stresses me out a bit because I'm very scatterbrained and there's knives and fire and stuff. I also fuck things up in the kitchen pretty easy. I can understand your stress—cooking can involve things that are objectively dangerous and also time-sensitive. I'd recommend:
Try recipes where you don't have to come into direct contact with the blades you use. Some Indian dals, for example, cook lentils in a sauce made from blended onion, tomato, and garlic; you could process them using a food processor or blender. A lot of things (fresh salsa, guacamole, a duqqa of garlic, chilies, and spices that you can throw in to cook with some lentils) can be prepared in a mortar and pestle, too.
I've never used one, but a vegetable chopper might help in a similar way that a food processor would, by reducing the amount of knifework that you have to do. There are a lot of recipes where a chopped onion is the only knifework required.
Also try recipes that are cooked in the oven, and not on the stovetop. Something that gets thrown into the oven on low heat to cook (like a casserole or fukharat dish) takes longer, but is more hands-off, than something that's cooked on the stove.
Do all of your prep work first. Read through the recipe and see what chopping, blending &c. needs to be done, prep each ingredient, and put it in its own little bowl. This includes anything in the ingredients list that says "1 onion, diced" or similar: do that right off the bat. If the recipe says "meanwhile" or asks you to do prep for anything while anything else is cooking, you might choose to disregard that and do all the prep first, depending on how long the cook time is and how much attention it needs (e.g., soup on a low simmer for half an hour can pretty much be left alone; anything in a frying pan cannot). This way you won't be rushing to chop anything quickly while worrying that something else is going to overcook.
Look for vegetables, like broccoli / cauliflower / romanesco and green beans, that can be broken up with your hands rather than chopped. Rip up cilantro and parsley rather than chopping them.
Admittedly "simple" is not the guiding principle of this blog, but here are some recipes that I think could be easily adapted:
Fukharat l3des: just one onion to chop. Cooked on low heat in the oven.
Fried tofu sandwich: just mixing sauces and spices. You can skip coating the tofu in cornstarch and frying it. Instead try freezing the whole block, thawing it, cutting into two or four pieces, and then marinating it in a plastic bag with your sauce overnight. Then bake the tofu for 15-20 minutes, turning once, at 350 °F (180 °C).
Roasted celery and potato soup: requires only very rough chopping; the cooking methods are baking and simmering. The fried tempering could be skipped by just adding those ingredients into the simmer earlier.
Carrot salad or chickpea salad or tapenade: you could throw all of the ingredients in a food processor.
Moroccan lentils: just an onion and tomato to grate or process.
Kashmiri lal chaman: the only thing you need to cut is tofu; the gravy is just water and spices. You could bake the tofu instead of frying it.
Black bean burgers: no chopping or frying if you omit the onion and carrot and elect to bake the finished patties.
'Chicken' and olive tajine: the marinade is blended or pounded, and there is no other prepwork to do other than chopping one onion. Everything can be simmered on low heat until cooked, so it's pretty hands-off.
Chana pulao: mostly rice, chickpeas, and spices. Some aromatic prep, but you could crush instead of chopping those.
Romanesco quiche: no knifework at all if you omit the aromatics and break aprt the romanesco with your hands.
Spanish garlic mushrooms: just crush garlic instead of slicing and buy pre-sliced mushrooms. There is frying, though.
Eggplant cooked salad: the eggplant is broiled and then spooned out. No knifework required if you use tomato puree.
Butternut squash soup: just roasting and simmering. No knifework required if you omit the aromatics and buy pre-cubed squash.
Dishes with a base of lentils, chickpeas, beans, rice, and/or noodles are great because there's no knifework that needs to be done to prepare the beans &c. themselves.

No, I don’t, it’s a bit bland and over-rich, Chicken Tikka Masala likewise (my last try at a highly unauthentic Ghosht Mirch Achaar (chilli pickle lamb) on the other hand...)

Having said that, here’s one you might like to try: Murgh Dahi / Chicken in Yogurt, something I've never had in a restaurant. There are numerous recipes on-line, all different in one way or another; this is mine, a homebrew combining what I think are the best bits from several seen in books.
Like the chilli pickle lamb it’s far from authentic, but tastes rather good.
1 chicken, skinned and jointed or about 1.5 kg / 3lbs of skinned chicken breasts and legs
300 ml plain yogurt 1 large onion, finely chopped 5 cloves garlic, peeled & finely chopped 5cm / 2 inch of fresh ginger, peeled / scrubbed & finely chopped 2-4 green chillis depending on heat preference, seeded & finely chopped 1 large green sweet pepper, seeded & finely chopped 2 tsp ground coriander 2 tsp ground cumin 1 tsp ground black pepper ½ tsp salt
100ml ghee / oil (not olive) 1 tsp garam masala Juice of 1 lime 100g fresh coriander leaves
Jab the skinned chicken joints all over with a fork or the point of a sharp knife, and put them in a glass or stainless steel bowl.
Combine the yogurt, onion, garlic, ginger, chillis, sweet pepper, ground coriander and ground cumin. This can be whizzed smooth in a blender, though if the chopping is fine enough it can be used as-is.
Pour this marinade over the chicken pieces, ensure they’re well coated, then cover the bowl and put it somewhere cool or in the fridge for at least 12 hours or overnight.
Turn the chicken pieces occasionally while they marinate but NB, there’s no need to set a wake-up timer if they’re left overnight. Turn over in bed and turn them next morning.
When ready to cook the chicken, remove the pieces from the marinade and put them to drip on a rack set over the bowl.
Heat the ghee or oil in a heavy saucepan until very hot.
Add the chicken pieces to the pan (watch out for spitting!) and fry briskly for a couple of minutes until the chicken begins to colour.
Reduce the heat to medium, add the marinade, cover the pan and simmer, frequently spooning the sauce over the chicken, until the sauce has reduced and thickened. This will take about 35-45 minutes.
(Don’t be tempted to speed things up with increased heat, it risks the sauce catching and scorching. If that happens, transfer everything not stuck to another pan as gently as possible; pour, don't stir, and definitely don't scrape.)
When satisfied with the texture of the sauce (thinner with rice, thicker with breads), add the garam masala and mix well, then transfer the chicken and sauce to a serving dish.
Sprinkle with lime juice, garnish with chopped coriander leaves and serve up with Basmati or pilau rice / naan, paratha, chapatti...

Though I’ve never heard of either, a vegetarian version could substitute paneer (pressed cheese) for the chicken, while a vegan version could substitute channa dhal (tinned or pre-soaked chickpeas) for the chicken and coconut milk / cream for the yogurt.
I’d pass on the marinade stage in both instances and go direct to using that mixture as the cooking sauce it becomes in the original.
If anyone tries one or the other, I’ll be interested to hear how (or if!) it worked out.

Also: here’s my recipe for naan, another combination of good bits from several.
Side-note; it’s a common joke to point out that “naan bread” means “bread bread”, which may be true in some Indian languages (there are 22 major and many more minor) but probably not in others.
In addition there are lots of different regional breads and adding an explanation to “a mysterious word not in my language” seems a courtesy.
Even so, “bread” isn’t tacked onto “chapatti” or “paratha” or “roti” or etc., so YMMV. While linguists argue, sensible people can pinch their bread and eat it. :->

Tandoori Chicken | Taste The Best

What is Tandoori Chicken?
Tandoori Chicken is a traditional Indian recipe made with a mix of masalas, spices and yoghurt. With exotic flavours, the recipe will provide you with soft, succulent, and awesome juicy poultry every time tasted—traditionally baked in a tandoor, this oven-baked dish tastes as good if no longer better.
This is an authentic tandoori chicken recipe which can be served with mint chutney/sauce, rice, tandoori bread or salads of your own choice.
Ingredients:
Chicken thighs – 4 (approx. 800 grams)
For First Marination:
Salt- 1.5 tsp
Lemon Juice- 3 tsp
Ginger Garlic Paste- 1.5 tbsp
For Second Marination:
Hung Curd- 6 tbsp
Kashmiri Chilli Powder- 5 tsp
Turmeric Powder- 1/4 tsp
Garam Masala Powder- 1/2 tsp
Cumin Powder- 1/2 tsp
Mace (Javitri) powder- 1/4 tsp
Cardamom Powder- 1/2 tsp
Roasted Kasuri methi leaves (dry fenugreek leaves) – 1 tsp
A pinch of salt
Red Food Colour (optional)- a pinch or drop
Oil- 3 tbsp
For Basting:
Butter – 4-5 tbsp
Preparation:
Wash and dry the chicken thighs
Now make slits on them as shown in the image
To make the Hung Curd, add around 300 gm of curd or plain yoghurt in a strainer kept on a bowl and allow the water to drain completely. This should take around 1 hr.
1st marination:
Take the chicken thighs into a bowl and add all the ingredients from 1st marinade.
Gently massage the chicken
Cover the bowl with a wrap and keep it in the fridge for an hour
2nd marination:
Take a separate bowl and add all the ingredients from the 2nd marinade
Mix all the ingredients until a smooth paste is formed.
Add the marinated chicken to the paste and mix very well with the paste for the chicken to absorb all the flavours from the masala and spice mix.
Cover the bowl with a wrap for a minimum of 5 hours or overnight for better flavours.
The process to make Tandoori Chicken in the oven/OTG
Preheat the oven/OTG to 482 degrees Fahrenheit.
Put the marinated chicken thighs in an oven/OTG griller
Roast the chicken thighs for 10 minutes at 482 degrees Fahrenheit
Roast for another 10 mins at 482 degrees Fahrenheit on the other side.
After 10 minutes flip the chicken again to baste with melted butter
Now reduce the oven temperature to 392 degrees Fahrenheit............read more

Method: how to make chilli chicken at home
firstly, mix well all those ingredients with water until making a thick batter. Do not add enough water, add water little by little.
If you like thick or crunchy coating like restaurant style then you need to add 1 tbsp corn flour to the marination.
heat oil in a pan and fry chicken pieces.

Make the thick sauce for seasoning in a separate bowl. Add 1 tbsp soy sauce, 2 tbsp tomato sauce, 1 tbsp chilli sauce,1 tbsp garlic sauce, and a pinch of white pepper, combine all at once these ingredients with some water, and ensure the sauce must be thick for obtaining consistency. If you are doing not have garlic sauce then you can use Deggi Mirch for the color, as a result, this chilli is a smaller amount spicy.
Note: fry the chicken doubly, the primary time for 5 minutes, and also the second time for 1 minute so that the chicken remains soft.
SEASON CHILLI CHICKEN
Heat oil in a pan and chop ginger garlic until it turns brown.
3 p c large size onion and 2 p c medium size capsicum with cube cutting.
1 tsp garlic and ginger chopped.
Green chilly and fresh green coriander leafs chopped.
Note- keep aside a cup with water and 2 tsp corn flour. Add onion, capsicum, and green chilly and saute for half a minute.” for better taste do not cook the vegetables completely.
Protips for you
To make the best chili chicken, I suggest you use Deggi Mirch and saute well in the sources on a high flame which gives a smokey flavor and gets good color.

For Preparation – (OPTIONAL) If you would like chicken more crispy so you can avoid eggs, it is good to chicken more crispy.
Add salt at last to your taste.
Use thigh pieces of chicken for softness
Toss the chicken and sauce until they are coated well.
Taste the sauce, then you can add some salt or pepper according to your taste.
Garnish with green onion leaves available.
It would be beneficial when you will refrigerate the chicken marination overnight and then use it.
It is my tip that if you add a pinch of Kasuri methi, it will enhance the taste and give a different aroma to your dish.
Tips: for the Chinese Chilli Chicken recipe
To fry chicken, fry chicken for 5 minutes first and then 1 minute for the second time, it is best for tenderness.
check the oil is hot enough and gently slide a small quantity of chicken into the hot oil because it must rise so it may cause burning.
Fry on medium-high heat until crisp and golden brown. Do not over-fry the chicken because it gets turns hard usually.
when chicken is cooked properly, drain on a colander or a tissue.
This recipe gives more taste and aroma when you make it with 1 tbsp of Amul butter with your cooking Oil.
You can make chilly chicken gravy as well if you would like to eat it with rice or noodles. To make gravy, you have to add some chilly, soy, tomato sauce, and water. For thickness in chilly chicken, you should add (1 tbsp corn flour mixed with water in an extra bowl then add it in chili chicken according to thickness as you want.

Best goat birria ever. Actually, it’s the only birria de chivo that I’ve had and it’s tender and meaty like beef birria but a little gamey, so you know it’s goat. The other goat dishes I’ve had in the past have been very bony with little goat meat. Saucy Chick gives you big pieces of tender goat and no bones. Wow.
Saucy Chick took over the space from another Mexican eatery but they have a unique Mexican-Indian fusion thing going on, plus a 100-year old recipe for Jalisco style birria de chivo.
The mains include free-range rotisserie chicken plates, bowls, burritos, tacos, nachos, chaat-chos, chicken wings, salads, sides, drinks, and locally sourced cookies.
Birria de Chivo bowl: birria, Jeera rice, Mayocoba beans, hand-pressed corn tortillas, pickled red onions, cilantro ($15): Beautifully assembled bowl, plenty of food. It tasted like food that was cooked from scratch with quality ingredients. The Mayocoba (heirloom?) beans were very tender, almost creamy, topped with a sprinkle of cojita. The Jeera rice is long grain basmati rice, flavored with cumin. Tasted Indian but complemented the Mexican flavors of the birria very well. The birria was incredibly tender, flavorful, and a bit spicy. The two corn tortillas were soft and thick. They’re thicker than usual but I don’t know if that’s a flaw or not.
The sauces are sold separately but he gave me a couple to try. Each was excellent. The macha chili oil was a bit smoky and spicy. The ambli molasses added a bit of sweetness and the flavor of tamarind. The GG sauce tasted like cilantro chutney.
Order at the register. Service was very friendly. The place is cute and casual but small. They have an outdoor patio and strip mall parking.
