Sesame seared tuna with fried cauliflower rice 🥲 2 @sizzlefishfit ahi tuna steaks 1/4 cup of black & white sesame seeds (~2 tbsp per piece of tuna) 3 tbsp liquid aminos 1 tbsp sesame oil 1 tbsp avocado oil . For the rice - 3 cups of frozen riced cauliflower 1 tbsp minced garlic 2 cups of stir fry veggies (I just bought a frozen mix of broccoli, snap peas, carrots, mushrooms, water chestnuts & edamame) 1/2 of a white onion, chopped 1/4 cup of chopped green onion 2 eggs 2 tbsp liquid aminos 2 tbsp of sesame oil . DIRECTIONS Coat the tuna in liquid aminos and sesame seeds. Heat the sesame and avocado oil in a pan & add the tuna. Cook on high heat for 1 - 1 1/2 min each side then transfer to a plate. For the rice, add all the veggies to a large pan with a splash of water and put the top on. Let sit for a few min until the veggies are soft / water evaporated. Next, remove the lid and add the minced garlic, sesame oil, and green onion (save some for garnish at the end). After ~4 min, add the liquid aminos and sauté. Once done, plate the rice with the tuna on top & add green onion, sesame seeds, a little bit more of liquid aminos, and sea salt! Trader Joe’s really pulls through for easy weekday dinners!! All 7 ingredients for this creamy sun-dried tomato cauliflower gnocchi are from there, making a 20 min meal a piece of cake 🍰 Recipe inspo from @broccyourbody!!❣️ . . . Sun-dried tomato cauliflower gnocchi 👍 1 bag of @traderjoes cauliflower gnocchi ~3 tbsp nutritional yeast 2 @traderjoes sun-dried tomato chicken sausages 2 large handfuls of spinach 1/4 cup of sun-dried tomatoes 1/4 cup of grated parmesan 2 tbsp oat milk (or milk of choice) *Serves 2 . DIRECTIONS Cut up the chicken sausages. These come pre cooked so just sauté them for in some olive oil for ~2 min or until they start to brown then set aside. Heat olive oil on the stove then add the gnocchi straight from the freezer (have heat on medium ish). Add the top & let sit for ~2 min to defrost. Remove the top, add more olive oil (or cooking spray), and coat each gnocchi with nutritional yeast (start with 1 tbsp & repeat this process every 3 ish min or until crispy). Add the chicken sausage, sun-dried tomato, spinach, parm, and milk to the pan (have the heat a little lower). Stir everything tg then serve & top with more parm, salt, and pepper. Slow-roasted cinnamon sweet potatoes with an almond butter dipping sauce 👉 INGREDIENTS 1 tbsp @baseculture almond butter 3-4 tbsp vanilla yogurt 2 medium size sweet potatoes 1-2 tsp cinnamon 2 tbsp coconut oil Sea salt . DIRECTIONS Slice the sweet potatoes into big chunks. Add them to a larger bowl, along with the coconut oil (melted), cinnamon, and a sprinkle of salt. Mix well, making sure all the pieces are evenly coated. Place parchment paper on a baking sheet, add the sweet potato, and roast at 350 for 50 minutes. Once done & cooling, make your dipping sauce by combining the almond butter, yogurt, and a few shakes of cinnamon. Add 3 tbsp of yogurt at first then add more as needed for desired consistency. BBQ chicken with roasted sweet potato and sautéed broccoli and onion ⏩ INGREDIENTS 2 boneless, skinless chicken thighs @kinderssauce zero sugar roasted garlic BBQ sauce 1 small sweet potato @primalpalate meat & potatoes seasoning 1/2 of a small sweet onion (sliced) 1 cup of broccoli Olive oil . DIRECTIONS Cut up sweet potato and coat in olive oil and meat & potatoes seasoning. Bake at 400 degrees for 40 min (flip halfway through). While sp is roasting, coat chicken in bbq sauce then cook in @ninjakitchen foodi on tendercrisp bake/roast 390 for 20 min (flip halfway through). Steam broccoli & onion in a pan (I just add a splash of water, put the top on, and leave for 3 ish min on med heat). Once soft, add olive oil, and sauté until they start to brown. Chicken Cobb Salad with Honey Dijon Dressing 👉 INGREDIENTS (2 servings) Organic spinach 1/2 cup chopped cherry tomatoes 2 pieces of bacon 1 avocado 1/4 cup chopped cooked chicken 1 hard boiled egg . For the dressing: 1 tbsp honey 2 tbsp Dijon mustard 2 tbsp olive oil 2 tbsp lemon juice Sprinkle of sea salt . DIRECTIONS Cook bacon on a pan on medium heat (3min each side). I bought the chicken pre made from @sprouts. Cut up the chicken and crumble the bacon into smaller bits. Bring water to a boil then place the eggs in. Remove from heat, add the top, and let sit for 10 min. Place eggs in a bowl of iced water for about 5 min before peeling. Combine all the dressing ingredients in a mason jar and shake it up. If your honey is pretty thick, microwave for 7 ish seconds before doing this. Chop spinach then top with all the ingredients. Drizzle dressing over everything, Credit- @kissmywheatgrass_ . . . . Seared scallops with a black bean salad, pineapple, and avocado 🥑 I love incorporating fruit into different recipes. The pineapple tasted so good mixed with the black bean salad . . . INGREDIENTS @sizzlefishfit sea scallops Avocado Pineapple Romaine (chopped) . Black bean salad: 1 Can Black Beans (drained) 1 Can Yellow Corn (drained) 1/2 C Red Bell Pepper (chopped small) 1/2 C Cilantro (chopped) 8 Scallions 3 Tbls Lime Juice (juice from one whole lime) 2 Tbls White Balsamic Vinegar 1/2 tsp Ground Cumin 1/4 tsp Salt . DIRECTIONS Heat a spoonful of ghee & minced garlic in a pan on the stove. Pat dry the sea scallops then add them to the pan once hot & sear for 2 min ish on each side. Make sure to pat dry them before adding to the pan! . For the black bean salad (made by @lizkleinfeld ❣️) mix everything together and chill. Zucchini turkey lasagna INGREDIENTS 1 pound of ground Turkey breast 1-2 tbsp dried oregano 1 jar of @otamot organic essential sauce (or whatever red sauce you have on hand) 1 container of @kitehillfoods almond milk ricotta 1/2 a cup of chopped basil leaves 5 medium zucchini, thinly sliced . DIRECTIONS Preheat oven to 350. Put the zucchini with a sprinkle of salt on parchment paper & bake for 10 min (to get the water out of it). For the turkey, drizzle olive oil in a pan, add the turkey, salt, pepper, and oregano. Keep on the stove until cooked through (stirring occasionally & adding some sauce at the end). In a medium baking dish, pour some sauce as the first layer. Then add strips of zucchini from the oven, then add the turkey for another layer (more sauce if you’re feelin frisky), then another zucchini layer, and next a ricotta layer with a little more sauce. Stopped the sentence bc it was so long and nowwww add another zucchini layer (using the rest of it) and the remaining sauce + all the basil (keep a little for garish). Bake for 25-30 min. Once done, top with more basil & serve with broccoli. We air fried them and added some sauce! . This recipe was inspired by @bewellbykelly. She used pesto & beef instead of turkey so I’ll have to try that next time!!. . . Fluffy avocado & almond butter toasts with a hard boiled egg & roasted sweet potato Ingredients🥝 Two slices of @baseculture keto bread 1 egg Sweet potato EBTB seasoning @baseculture almond butter Honey Dairy free feta 1/2 an avocado . Vegan mac & cheese with brococli INGREDIENTS 1/2 box of @eatbanza chickpea pasta 1 cup @violife_foods Just Like Cheddar Shreds 2 cups of broccoli 1/4 - 1/3 cup of coconut milk 1.5 tbsp vegan butter 1 tsp garlic powder . DIRECTIONS Cook pasta as directed. Strain and then move the pot back to the burner on the lowest setting. Steam broccoli then add it to the pot along with cheddar, coconut milk, butter, and garlic. Vegan pumpkin chili recipe is here! This chili is loaded with healthy veggies and has the perfect balance of sweet and savory flavors. Ingredients: 3 bell peppers (diced) 1 yellow onion (diced) 1 Tbsp olive oil 2 cloves garlic (minced) 2 Tbsp chili powder 1 Tbsp cumin 1 Tbsp pumpkin pie spice ½ tsp salt 2 cups vegetable broth 30 oz diced tomatoes 15 oz black beans 15 oz kidney beans 15 oz pumpkin purée 2 Tbsp maple syrup Instructions: 1. Sauté the peppers and onion with the olive oil over medium heat for about 10 minutes, or until softened. Stir frequently. 2. Add the garlic and spices and sauté for another 2 minutes. 3. Add all remaining ingredients in the pot and bring to a boil. Once it has reached a boil, reduce to a simmer, cover, and let it cook for about 20 minutes. 4. MISO SAUCE: 4 tbsp grated parm 1 tbsp @coldmountainmiso miso paste @threetreesfoods almond milk or unflavored creamer of choice 1 tbsp olive oil For two servings^ . DIRECTIONS Heat 1 tbsp olive oil in a pan then add the mushrooms. Cook for 5 minutes or so then add the chicken sausage. These are already cooked so only need 2 ish mins to heat up! Lastly, throw in the spinach & once it wilts down, add in the cooked pasta & all of the miso sauce ingredients + salt & pep (taste and add more of anything to your liking). Honey sesame salmon with sweet potato fries & avocado INGREDIENTS 🥝🥝🥑🧅 1.5 lbs of salmon (this was fresh, not frozen) 1.5 tbsp @bragg liquid aminos* 2 tbsp @chosenfoods toasted sesame oil* 1 tbsp honey* 1 tsp minced garlic* @spiceislands_ Ground ginger (I just did a couple shakes)* 1 tbsp lime juice* Sweet potato @primalpalate meat & potatoes seasoning (if you don’t have this, it’s pink salt, paprika, onion, garlic, black pepper, oregano) Olive oil . . DIRECTIONS Combine all the * ingredients to make the marinade. Pour on top of the salmon (save a little) in a baking dish & let sit for an hour or more. Pour the rest of the marinade on top before baking for 15 min on 400 then broil for 3 min. Cut up the sweet potato & coat with olive oil & seasoning. Hawaiian chicken with roasted bell peppers and cilantro lime cauliflower rice ⏩ Let's do this👌 Ingredients😋 4 boneless skinless chicken thighs @primalkitchenfoods Hawaiian bbq sauce 5 chunks of pineapple (around 3/4 cup) 1/2 of a red bell pepper 1/2 of an orange bell pepper 2 cups riced cauliflower 1 lime 1 tbsp chopped cilantro (and more for garnish) Minced garlic 1 avocado *Two servings . DIRECTIONS Steam riced cauliflower. Once soft, add in juice from 1 lime, sea salt, & 1 tbsp chopped cilantro & mix. Cut up bell peppers. Line a baking sheet with parchment paper, coat peppers in avocado oil & salt, & toss on baking sheet. Bake at 400 for 20 min then add diced pineapple to the sheet and bake for another 10. You can def add just add the chicken to the baking sheet but I like it better cooked in a pan. Cut up chicken & add to a heated pan with 1/2 tbsp minced garlic. As the chicken starts to cook through, add a drizzle of oil. Once it starts to brown on the outside (prob 10-13 min total) remove from heat & add 3 tbsp (or more if you like it ~saucy~) of Hawaiian bbq sauce & mix thoroughly (I did this in a bowl). Combine with the pineapple & red bell pepper & serve with the cauli rice & avocado. Squeeze lime juice over everything then garnish with more cilantro & white sesame seeds.. . .
